Simple Stuffed Peppers
Stuffed peppers are a timeless recipe, and easy to make too. In less than 40 minutes you’ll be enjoying colorful bell peppers filled with turkey, black beans and cheddar cheese.
Total Time – 30 Minutes
Serving Size – Makes 4 Servings

Ingredients
4 bell peppers, tops and cores removed
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
1 packet gluten free taco seasoning
2/3 cup water
1 cup canned black beans
1 1/2 cups shredded cheddar cheese
1 cup sour cream
1/2 cup salsa

Directions
1) Heat oven to 350°F. Place peppers cut side up in baking dish just large enough to hold them upright.

2) Prepare ground turkey according to package directions. Season ground turkey with taco seasoning. Add water. Always cook to well-done, 165°F as measured by a meat thermometer. Remove from heat. Stir in black beans and cheese.

3) Fill peppers with turkey mixture. Cover baking dish with foil. Bake 30 to 40 minutes or until peppers are tender. Serve with sour cream and salsa.

Turkey Bacon Potato Skins
Cheesy and crispy potatoes topped with JENNIE-O® Turkey Bacon are the best appetizer or side dish to any meal. This appetizer will have you going back for seconds!

Ingredients
4 – slices JENNIE-O® Turkey Bacon
2 – medium potatoes, sliced into ½-inch slices
2 – tablespoons melted butter
1 – teaspoon kosher salt
1/2 – teaspoon ground pepper
1 – cup shredded cheddar cheese
1/2 – cup chopped green onion
1/2 – cup sour cream

Directions
1) Cook bacon as specified on the package, cool and finely chop. Always cook to well-done, 165°F as measured by a meat thermometer. Set aside.

2) Place potato slices on lightly greased baking sheet and brush tops with butter. Sprinkle with salt and pepper. Bake 10 minutes, flip and bake an additional 10 minutes, or until tender.

3) Remove from oven. Sprinkle with cheese, green onion, and bacon. Bake 5 minutes or until cheese is melted. Top with sour cream.

Warm, Cheesy Chili Cream Cheese Dip
This super easy warm chili and cheese dip is a real crowd-pleaser — and is a must-have dip for Super Bowl parties.

Recipe Ingredients:
1 (8-ounce) package cream cheese, softened
1 (15-ounce) can chili with or without beans
2 cups shredded cheddar cheese
1/4 cup chopped green onions for garnish (optional)
Corn chips for accompaniment

Cooking Directions:
1 – Preheat oven to 350°F (175°C).
2 – Spread the cream cheese in the bottom of a glass 9-inch pie plate.
3 – Spoon the chili on top of the cream cheese.
4 – Top with the grated cheddar cheese.
5 – Bake for 20 minutes or until hot and cheese is melted.
6 – Serve dip with corn chips.
Makes 15 (2 tablespoon) servings.

Tailgating Turkey Burger
Made with lean ground turkey and formed into a football shape, these tasty chili burgers are ready for game-day greatness. Tailgating Turkey Burgers are ready in under 30 minutes and under 500 calories per serving!

Total Time -30 Minutes
Serving Size – 6 Servings

Ingredients
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
⅓ cup finely chopped cilantro
4 cloves garlic, minced
1 teaspoon freshly ground pepper
1 teaspoon salt, if desired
6 slices garlic toast
1 (15-ounce) can HORMEL® Chili with Beans, heated according to can
¾ cup shredded Cheddar cheese
2 tablespoons fat-free sour cream

Directions
1) In large bowl combine turkey, cilantro, garlic, pepper and salt, if desired. Mix until combined. Divide turkey mixture into 6 (1/2 – inch thick) oval (football) shaped patties.

2) Spray non-stick skillet with cooking spray. Place patties in skillet over medium-high heat. Cover and cook 18 minutes, turning 2 to 3 times and until internal temperature reaches well-done 165°F as measured by a meat thermometer.

3) Heat broiler. Place turkey burger on garlic toast. Top with chili and cheese. Broil 4 to 5 inches from heat source 2 to 3 minutes or until cheese is melted. Top with sour cream.
* Always cook to an internal temperature of 165°F.

BUFFALO BEANS
Recently, a customer (thank you Suzanne) sent me a recipe for cowboy beans. It was a recipe that I was very familiar with as a kid – which we called “Hamburger Beans”. It was often dinner, or served as a side dish during outdoor cookouts. I took her suggestions, along with notes from my mother’s recipe from years back and came up with Buffalo Beans. It’s good-ole-fashioned, stick to your ribs food. A good hunger remover after a big day. Approved by Wild Idea’s Harvest Crew!

Ingredients:

1 – pound Ground Buffalo
2 – tablespoons olive oil
2 – onions, chopped
4 – cloves garlic, chopped
2 – teaspoons salt
1 – teaspoon black pepper
1 – tablespoon cumin
2 – teaspoons coriander
2 – teaspoons chili powder
1 – teaspoon oregano
½ – teaspoon smoked paprika
1 – 8 ounce can roasted and chopped green chilies
1 – cup ketchup
¼ – cup mustard
½ – cup maple syrup
½ – cup strong coffee
2 – cans beans, rinsed
Green onions or shredded cheddar cheese

Preparation:

1 – In a heavy pot over medium high heat, heat oil and crumble in ground buffalo meat and add the onions, garlic and dry seasonings. Push the meat around in the pan breaking up the meat pieces and incorporating the spices. Cook until the meat is browned, about 10 minutes.
2 – Add the remaining ingredients and stir to incorporate. Bring to a boil and then reduce the heat to low and simmer until desired consistency is reached.
3 – Garnish the beans with green onions or cheddar cheese and accompany with corn bread.

Turkey Enchiladas Casserole
This classic recipe is everything you love about enchiladas — sautéed onions, shredded cheese and spicy enchilada sauce — minus all the guilt.

Total Time – 1 Hour
Serving Size – 8 Servings

Ingredients
1 – (16-ounce) package JENNIE-O® Lean Taco Seasoned Ground Turkey

3 – (10-ounce) cans enchilada sauce

12 – (6-inch) whole wheat tortillas

1 1/2 – cups shredded cheddar cheese

Directions
1) Heat oven to 350°F.
2) Cook taco meat as specified on the package.
3) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F as measured by a meat thermometer.
4) On top of sauce, evenly space 4 tortillas. Add 1/2 taco meat evenly and top with 1/2 cup cheese.
5) Add another layer of tortillas and repeat the process. For the top layer place remaining tortilla, sauce and cheese.
6) Bake for 20 to 30 minutes or until hot.

Tuna casserole just out of the oven

Tuna casserole is a casserole primarily made with pasta (or rice) and canned tuna, with canned peas and corn sometimes added. The dish is often topped with potato chips, corn flakes, bread crumbs or canned fried onions. Tuna casserole is a common dish in some parts of the United States, prepared using only nonperishable pantry ingredients.

Casseroles became popular in American households in the 1950s mainly because the ingredients were cheap and easy to find at the supermarket. A can of tuna, a can of vegetables, a can of soup, and a package of egg noodles becomes a prepared family dinner in around half an hour. Tuna casserole can also be frozen or refrigerated and then reheated to be eaten the next day. Tuna casserole is popular to take to potlucks. In small communities, it may be taken to the home of someone who is sick or going through bereavement as a gesture of kindness.

While there are countless variations on tuna casserole, historically it is made with egg noodles, chopped onion, shredded cheddar cheese, frozen green peas, canned and drained tuna, condensed cream of mushroom or cream of celery soup, sliced mushrooms and crushed potato chips. The cooked noodles, onion, cheese, peas, tuna, soup and mushrooms are mixed in a baking dish, with the potato chips and more cheese sprinkled on top, and then baked.

Also common in most parts of Australia this casserole is also called tuna mornay and served with a Mornay sauce (Béchamel with cheese added, or cheese sauce). Peas and corn are usually added. Additionally, wheat pasta is used rather than egg noodles.

DIRECTIONS
1 – Heat oven to 400° F.
2 – Preheat a nonstick skillet or electric griddle over medium heat (375°F.). Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently.
3 – Chop 4 bacon slices. In small bowl, stir together cream cheese and chopped bacon. Spoon mixture into jalapeño halves.
4 – Sprinkle with Cheddar cheese. Chop remaining 2 bacon slices. Top jalapeños with bacon.
5 – Bake 15 minutes or until hot and bubbly.

4) In small saucepan heat half enchilada sauce. Dip each tortilla in sauce. Spoon 2 tablespoons meat mixture down center of each tortilla. Fold sides over and place seam side down in 9×13-inch baking pan. Sprinkle with cheese. Bake 30 minutes or until heated through.

5) Serve with remaining sauce.

Mexican Turkey Dip
This creamy dip can be as spicy as you want to make it. It’s a combination of shredded leftover cooked turkey, hot sauce, cream cheese, ranch dressing, cheddar and Jack cheeses. Serve dip warm with tortilla chips and celery sticks.

Recipe Ingredients:
Non-stick cooking spray
1 (8-ounce) package cream cheese, softened
1/4 cup ranch dressing
1 pound (about 4 cups) leftover Butterball® Turkey, shredded
1 (14.5-ounce) can ROT-EL Mild Diced Tomatoes with Green Chilies, drained
1/2 cup shredded Monterey Jack cheese
1/4 cup Texas Pete Hot Sauce
1/2 cup shredded cheddar cheese
Tortilla chips for accompaniment
Celery sticks for accompaniment

Cooking Directions:
1 – Preheat oven to 325°F (160°C). Spray an 8-inch square baking pan with cooking spray; set aside.
2 – Blend cream cheese and dressing until well combined. Stir in turkey, tomatoes, Jack cheese and hot sauce. Spoon mixture into prepared pan. Sprinkle Cheddar cheese over the top.
3 – Bake 20 to 30 minutes or until cheese is melted and mixture is hot.
Serve warm with totilla chips and celery sticks.
Makes 8 to 10 appetizer servings.
