Grilled Turkey Meatloaf
You haven’t had meatloaf until you’ve had it with lean ground turkey. And did you know you could grill it?! Grilled Turkey Meatloaf is made with chopped onion, sage, and brown sugar, comfort food doesn’t get better than this.
Total Time – 1 Hour
Serving Size – 5 Servings

Grilled Turkey Meatloaf

Ingredients
1 (20-ounce) package JENNIE-O® Lean Ground Turkey
⅓ cup finely chopped onion
⅓ cup seasoned dry breadcrumbs
⅔ cup chili sauce, divided
¼ cup egg substitute or 1 egg
½ teaspoon dried sage leaves
2 tablespoons packed brown sugar
1 tablespoons horseradish mustard or Dijon mustard

Directions
1) In large bowl, combine turkey, onion, breadcrumbs, ⅓ cup chili sauce, egg and sage; mix well. On large plate, shape mixture into an 8 x 4-inch oval loaf about 1½-inches thick. Cover and chill 30 minutes or up to 8 hours.

2) Prepare grill. Using large spatulas, place loaf on oiled rack of grill over medium heat. Grill, covered, 12 minutes. Combine remaining ⅓ cup chili sauce, brown sugar and mustard; mix well. Carefully turn loaf over; brush top with chili sauce mixture.

3) Continue to grill, covered, 14 to 16 minutes longer or until the internal temperature reaches 165ºF as measured by a meat thermometer.

4) Using clean spatulas, transfer loaf to plate. Let stand 5 minutes before slicing.

* Always cook to an internal temperature of 165°F.

INGREDIENTS

1 cup oil
⅓ cup red wine vinegar
2 tablespoons mustard
2 tablespoons sugar
½ teaspoon pepper

¼ teaspoon red pepper flakes

DIRECTIONS

1) In large bowl, whisk oil, vinegar, mustard, sugar, pepper, tarragon and red pepper flakes. Cube turkey; add to mixture. Cover and marinate overnight. Drain turkey from marinade; discard marinade.
2) Broil turkey 5 to 6 inches from heat source 10 minutes or until turkey is heated. Fill pita pocket with turkey and tomato.
3) Drizzle ranch dressing over turkey.

INGREDIENTS

SAUCE:
2 (14.5-ounce) cans diced fire roasted tomatoes
1 cup chopped onion
1 roasted red bell pepper
1 cup fat-free low-sodium chicken broth
¼ cup chopped cilantro
1 tablespoon fresh lime juice
2 teaspoons chopped garlic
½ teaspoon chili powder
½ teaspoon ground mustard
½ teaspoon dried oregano
½ teaspoon ground cumin
1 tablespoon chipotle chile in adobo sauce, if desired
salt and pepper, if desired
CHILAQUILES:
1 (16-ounce) package JENNIE-O® Lean Mild Turkey Breakfast Sausage Roll
48 baked corn tortilla chips
½ cup thinly sliced red onion
¼ cup crumbled low-fat feta cheese
¼ cup chopped fresh
1 medium avocado, diced or ½ cup guacamole, if desired

DIRECTIONS

1) Chilaquiles is a classic Mexican dish, traditionally made with fried corn tortillas soaked in red or green salsa (sauce).

2) It is usually topped with fresh Mexican cheese (queso fresco), onions, avocado and sometimes chicken.

3) It can be served with refried beans and/or eggs, if desired.

4) This recipe features better-for-you turkey breakfast sausage.

5) Sauce:

6) In bowl of food processor or jar of a blender purée all sauce ingredients until smooth.

7) Pour into a 2 quart sauté pan, simmer sauce, stirring, 3 minutes and season with salt and pepper, if desired.

8) Keep warm. (Sauce may be made 2 days ahead and chilled, covered.) Yield 6 cups.

9) Chilaquiles:

11) Assemble Chilaquiles in shallow dishes or soup bowls.

12) Crumble 6 tortilla chips into each bowl.

13) Top with ¾ cup very hot sauce.

14) Sprinkle with ¼ cup turkey sausage crumbles.

15) Garnish with onion, feta cheese, cilantro and avocado, if desired.

6 Anaheim green chilies

1 cup shredded sharp Cheddar cheese
2 eggs or ½ cup egg substitute
¾ cup milk
⅔ cup flour
½ teaspoon salt
1 (10-ounce) can diced tomatoes and green chilies
2 tablespoons chopped fresh cilantro
1 teaspoon minced garlic
½ teaspoon dried oregano leaves
¼ teaspoon coarsely ground pepper
chopped fresh cilantro
sour cream

DIRECTIONS

1) Heat oven to 400°F.

2) Line baking sheet with foil.

3) Place chilies on baking sheet.

4) Broil 6 inches from heat source 10 minutes or until chilies are blackened and blistered, turning frequently.

5) Place blackened chilies in bowl and seal with plastic wrap. Let stand 15 minutes. Remove outer skin.

6) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

7) Place dinner sausage in hot skillet. Cook uncovered, turning occasionally, 17-19 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Cut into bite size pieces.

8) Cut slit in each chili lengthwise down one side.

9) Fill each chili with sausage and cheese.

10) Place cut-side-down in greased 8x8x2-inch baking dish.

11) In large bowl, beat together eggs, milk, flour and salt. Pour egg mixture over chilies. Bake 25 to 30 minutes or until golden brown.

12) In small saucepan, combine diced tomatoes and green chilies, cilantro, garlic, oregano and pepper. Bring to a boil. Cook 5 minutes, stirring occasionally. Spoon sauce over chilies.

13) Serve with chopped fresh cilantro and sour cream.

Grilled Turkey Kabobs with Cherry Chipotle Sauce

Grilled Turkey Kabobs with Cherry Chipotle Sauce are a saucy number that will get double takes at the next barbeque! Enjoy charbroiled skewers in a rich crimson glaze of liquefied cherries and chipotle peppers. Smokey, sweet and sure to be a backyard favorite.

Total Time 1 Hours 20 Minutes

INGREDIENTS

2 teaspoons butter
1 medium yellow onion, thinly sliced
2 cloves garlic, minced
3 cups cherries, pitted
⅓ cup orange juice
2 teaspoons apple cider vinegar
¼ cup molasses
2 teaspoons tomato paste
1½ teaspoons canned chipotle peppers in adobo sauce
1 teaspoon fresh lemon zest
2 teaspoons salt, if desired
2-(24-ounce) packages JENNIE-O® All Natural* Turkey Breast
2 yellow peppers, cut into pieces
16 small button mushrooms, cleaned

DIRECTIONS
1) To small sauce pan, add butter and onions. Simmer on low heat until the onions soften, add garlic and cook 2 minutes before adding cherries, orange juice and vinegar. Simmer 5 minutes or until cherries start to soften.

2) Add molasses, tomato paste, peppers, lemon zest and salt, if desired; stirring until blended. Allow to gently simmer 20 minutes before using your immersion blender to liquefy sauce. Allow sauce to cool before storing in a jar or applying to your turkey and vegetables.

3) Place bamboo skewers in a bowl of water until ready to use.

4) Preheat grill to medium-high heat. Place turkey on hot grill and cook approximately 45-50 minutes and until internal temperature reaches well-done, 165°F. as measured by a meat thermometer.

5) Remove turkey from grill and cut into large cubes, leaving grill on. Cut yellow peppers into large pieces. Thread turkey, yellow peppers, and mushrooms on to skewers. Cover generously with sauce. Place on hot grill and cook until peppers and mushrooms have been warmed through.

* Always cook to an internal temperature of 165°F.

1 clove garlic, minced
1 tablespoon canola oil

¾ cup chopped spinach leaves

12 small whole wheat buns
12 small lettuce leaves
2 medium tomatoes, cut into 12 slices
1 medium red onion, sliced

Directions
1) In large skillet, add onions, celery, garlic and oil. Sauté 5 minutes or until tender. Set aside.

2) In large mixing bowl combine turkey, cooked rice, cranberries, spinach leaves, egg and pepper, Worcestershire sauce, red pepper and cooked onion mixture. Divide turkey mixture into 12 equal portions and form patties ½-inch thick and 3-inch diameter. Place in large skillet on medium heat. Cover. Cook 15 minutes turning 2 to 3 times and until internal temperature reaches 165° F. as measured by a meat thermometer. Always cook to well-done.

3)Serve on buns with lettuce leaves, tomato, red onion and slider patty.
