DAKOTA TACOS “INDIAN TACOS”
My secret ingredient in the preparation of the fry bread, is club soda, which makes the dough and bread lighter. I also use coconut oil, which has a good nutritional profile, and is great for deep frying. Be sure to fry at a high enough heat, 375° to limit oil absorption and to give the edges a nice crispiness. The slightly spicy, seasoned meat balances nicely with the creamy, Zesty Sour Cream Dressing.

Taco Ingredients:
1 – pound Wild Idea Ground Buffalo Meat
1 – small onion, chopped
1 – tablespoon olive oil
2 – teaspoons chili powder
2 – teaspoons cumin
1½ – teaspoons salt
1 – teaspoon black pepper
1 – teaspoon garlic powder
1 – teaspoon oregano
1 – teaspoon smoked paprika
½ – teaspoon coriander
2 – cups lettuce leaves, or chopped lettuce
1 – cup grated cheddar cheese
Zesty Sour Cream Dressing, recipe below

Preparation:

1) Measure all spice ingredients, and set aside.

2) In a sauté pan over medium high heat, heat the olive oil.

3) Add the chopped onion and crumble in the ground buffalo.

4) Sprinkle seasonings over the meat, and stir to incorporate, breaking up the meat into smaller pieces as you stir.

5) Cook until meat is browned, about 7 minutes. Cover, set aside, and re-heat when the fry bread is ready.

6) To assemble, place warm fry bread on plates, and top with the hot seasoned meat, lettuce, and cheese. Drizzle with the Zesty Sour Cream Dressing and enjoy!

 

Fry Bread *Recipe makes 4 fry bread servings, with 275 calories per each.
Ingredients:
2 – cups unbleached organic flour, plus a half cup more for handling and rolling out
2 – teaspoon baking soda
¼ – teaspoon salt
½ – cup 2% milk
½ cup club soda
3 – cups coconut oil
Preparation:

1) Mix flour, baking soda, and salt together in a bowl and sift to incorporate.

2) Add milk and soda and stir in until incorporated. The dough will be slightly sticky.

3) Flour hands and pat dough into a ball, place the dough on a floured surface and divide into 4 equal servings. Using floured hands press portions into a disk shape and roll out into about a six-inch diameter with a floured rolling pin.

4) In a 8 inch diameter saucepan, over medium high heat, heat coconut oil. Oil is at the right temperature when at 375°, or you can test by inserting a wooden spoon into the oil, the oil is ready if it bubbles up around the spoon.

5) Drop fry bread disk into oil carefully, one at a time, cooking about one minute each side or until golden. Place cooked fry breads on a paper bag or paper towels until ready to serve.

*Fry Bread is best served soon after cooking, or while still warm.

Zesty Sour Cream Dressing

Ingredients:
¾ – cup sour cream
2 – tablespoons fresh squeezed lime juice
2 – tablespoons canned, roasted, peeled green chilies with juice, puréed
¼ – teaspoon cayenne pepper, optional or to taste
salt to taste
Preparation: Mix all ingredients together and whisk to incorporate. Store in refrigerator until needed.

Today’s Menu: Buffalo Steak Strip Street Tacos

 

For Breakfast I Scrambled a couple of Eggs and toasted a slice of Aunt Millie’s Live Carb Smart Bread that I buttered with I Can’t Believe It’s Not Butter. I also had a cup of Bigelow Decaf Green Tea. Very humid and 86 degrees. Had a passing shower or two. After Breakfast I got the leaf blower out and cleaned off the deck and driveway. Watered the plants and picked a few Bell Peppers and gave them to a neighbor. And that was my day, just not feeling up to par. I’m not sick, a few aches and pains, but I just don’t feel 100%. Anyway for Dinner tonight I prepared Buffalo Steak Strip Street Tacos.

 

We had these a while back and they were so good! Great flavor and the Buffalo Strips would just melt in your mouth! I was going to order more from Wild Idea Buffalo but they were out of stock until this past Friday. Ordered 3 more packages and they arrived Monday! So I was saying for the Buffalo I used Wild Idea Premium Steak Strips. To prepare them; I first Rinsed the Wild Idea Bison Steak Strips and pat them dry. I then added a light amount of Extra Light Olive Oil to them, making sure the Strips were completely covered on all sides. Then I seasoned them with Wild Idea Buffalo Omnivore Salt. The Omnivore Salt is a blend of Natural Sea Salt and Organic Spices. Then I left the Strips rest. Next I got a Cast Iron Skillet and added 1 tablespoon of the Extra Light Olive Oil, heated the Skillet on Medium High Heat.

 

Over Medium High heat, I cooked the Bison Strips for about 4 minutes, tossing to turn occasionally. I removed the Strips from the skillet into a bowl. These Steak Strips are so tender and delicious! I’ve prepared these a few times now and they just keep getting better! Easily prepared also.

 

Along with the Steak Strips I added La Preferdia Mild Jalapeno Slices, Olives (Black and Green), Shredded Lettuce, Ortega Chipotle Taco Sauce, Ortega Taco Seasoning Mix (Less Sodium) and all served in a Mission Street Tacos Carb Balance Whole Wheat Tortillas. Add all this together and you have some mighty tasty Street Tacos. I love using the Mission Street Tacos Carb Balance Whole Wheat Tortillas. Always so fresh and soft. Plus they are only 70 calories and 3 net carbs per serving – 2 Tortillas. I also prepared a jar of Roasted Red Peppers and I sliced up 2 home grown Jalapeno Peppers that I grew.

 

Next, just build your Taco! An Easy and Delicious Meal to prepare. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Buffalo Steak Strip Street Tacos

 

For Breakfast I toasted a Thomas Light English Muffin and topped it with I Can’t Believe It’s Not Butter. I also had a cup of Bigelow Decaf Green Tea. Hot and Humid out there today! It was 91 degrees, sunny, and humid. The Cicadas in a tree across the street are deafening, you can’t hear anything out there but the Cicadas. Not a thing to do today. I watered all the flowers and shrubs early and again after the sunset this evening. Besides that I just laid around. For Dinner tonight I prepared Buffalo Steak Strip Street Tacos.

 

For the Buffalo I used Wild Idea Premium Steak Strips. To prepare them; I first Rinsed the Wild Idea Bison Steak Strips and pat them dry. I then added a light amount of Extra Light Olive Oil to them, making sure the Strips were completely covered on all sides. Then I seasoned them with Wild Idea Buffalo Omnivore Salt. Today’s Menu: Turkey and Black Bean Tacos

 

To start the day off I had a cup of Bigelow Decaf Green Tea. We had a high of 71 degrees with rain moving in late afternoon, temperature dropped to 62 degrees after the rain.  After my Tea we had to drop Mom’s car off at the shop. Her air conditioner went down. Then I went to Menard’s and then stopped and got Mom Breakfast at McDonald’s. Later on we had to pick her car back up, the air was up and running again. So for Dinner tonight I prepared Turkey and Black Bean Tacos.

 

When making Turkey Tacos I always use Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Virgin Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 can Bush’s Chili Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make some fine Tacos!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce (my favorite), Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). I haven’t used the Stand Up Shells in a while, been using the Mini Street Soft Tacos. The Shells with a crunch just sounded good! Add the Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Meal Nights. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Turkey and Black Bean Tacos

 

 

To start the day off I prepared a Breakfast Sandwich, Mom loves these! I baked a small roll of Pillsbury Grands. As those were baking I prepared some Johnsonville Turkey Breakfast Sausage Patties. Split the biscuits in half, added 1 of the Sausage Patties, and topped with a small slice of Hoffman Super Sharp Cheese. Also had a cup of Bigelow Decaf Green Tea. 70 degrees, sunny, and windy out today. Got the cart out of the shed and spent the afternoon repotting Tomato and Pepper plants. Then Mom’s Flowers. Hard to do anything with wind, Chicago “the Windy City’ has nothing on us! So for Dinner tonight I prepared Turkey and Black Bean Tacos.

Mini Steak Tacos with Spicy Pico de GalloRecipe

Recipe Ingredients:
Spicy Pico de Gallo:
1 1/2 cup tomatoes, chopped
1/2 cup onion, chopped
1/4 cup cilantro, chopped
1 tablespoon jalapeño pepper, minced
1/4 cup hot prepared picante sauce or salsa
1 tablespoon lime juice

Marinade:
1/2 cups Italian salad dressing
1/4 cup lime juice
1 tablespoon honey
1 1/2 teaspoon ground cumin
1 teaspoon chili powder

Tacos:
1 1/2 pounds shoulder top blade (flat iron) beef steak
12 (5-inch) flour tortillas
8 ounces shredded Mexican cheese blend
Spicy Pico de Gallo (recipe follows)

Cooking Directions:
1 – For Spicy Pico de Gallo: Combine tomatoes, onion, cilantro and jalapeño pepper in large bowl. Stir in picante sauce and lime juice. Cover; refrigerate 1 hour to let flavors blend.
2 – For Marinade: Combine ingredients in medium bowl.
3 – For Tacos: Cut beef steaks lengthwise in half, then crosswise into 1/4-inch strips.
4 – Place beef and marinade in food to safe plastic bag. Close bag securely and marinate in refrigerator 30 minutes.
5 – Remove beef from marinade; discard marinade.
6 – Heat pan over medium heat until hot.
7 – Add 1/2 of beef; stir-fry 1 to 2 minutes or until outside surface of beef is no longer pink. (Do not overcook.) repeat with remaining beef.
8 – To Serve: Evenly divide beef strips over tortillas. Top with 1 tablespoon Spicy Pico de Gallo and 1 tablespoon cheese.
Makes 12 servings.

Heat those Taco Shells…………

Many people use either pre-packaged taco shells or create their own shells using tortillas. In either case, taco shells are best when they’re heated before adding the fillings because cold taco shells filled with warm meat or miss the mark.

Taco Tuesday idea…………..

For a quick and easy Tacos use frozen fish sticks or popcorn shrimp the next time. Just cook the frozen food according to package instructions and toss it into a tortilla with your favorite taco toppings!
