Today’s Menu: Turkey and Black Bean Tacos

 

 

To start the day off I prepared a Breakfast Sandwich, Mom loves these! I baked a small roll of Pillsbury Grands. As those were baking I prepared some Johnsonville Turkey Breakfast Sausage Patties. Split the biscuits in half, added 1 of the Sausage Patties, and topped with a small slice of Hoffman Super Sharp Cheese. Also had a cup of Bigelow Decaf Green Tea. 70 degrees, sunny, and windy out today. Got the cart out of the shed and spent the afternoon repotting Tomato and Pepper plants. Then Mom’s Flowers. Hard to do anything with wind, Chicago “the Windy City’ has nothing on us! So for Dinner tonight I prepared Turkey and Black Bean Tacos.

When making Turkey Tacos I always use Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Virgin Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 can Bush’s Chili Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make some fine Tacos!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce (my favorite), Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). I haven’t used the Stand Up Shells in a while, been using the Mini Street Soft Tacos. The Shells with a crunch just sounded good! Add the Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Meal Nights. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Mini Steak Tacos with Spicy Pico de GalloRecipe

Recipe Ingredients:
Spicy Pico de Gallo:
1 1/2 cup tomatoes, chopped
1/2 cup onion, chopped
1/4 cup cilantro, chopped
1 tablespoon jalapeño pepper, minced
1/4 cup hot prepared picante sauce or salsa
1 tablespoon lime juice

Marinade:
1/2 cups Italian salad dressing
1/4 cup lime juice
1 tablespoon honey
1 1/2 teaspoon ground cumin
1 teaspoon chili powder

Tacos:
1 1/2 pounds shoulder top blade (flat iron) beef steak
12 (5-inch) flour tortillas
8 ounces shredded Mexican cheese blend
Spicy Pico de Gallo (recipe follows)

Cooking Directions:
1 – For Spicy Pico de Gallo: Combine tomatoes, onion, cilantro and jalapeño pepper in large bowl. Stir in picante sauce and lime juice. Cover; refrigerate 1 hour to let flavors blend.
2 – For Marinade: Combine ingredients in medium bowl.
3 – For Tacos: Cut beef steaks lengthwise in half, then crosswise into 1/4-inch strips.
4 – Place beef and marinade in food to safe plastic bag. Close bag securely and marinate in refrigerator 30 minutes.
5 – Remove beef from marinade; discard marinade.
6 – Heat pan over medium heat until hot.
7 – Add 1/2 of beef; stir-fry 1 to 2 minutes or until outside surface of beef is no longer pink. (Do not overcook.) repeat with remaining beef.
8 – To Serve: Evenly divide beef strips over tortillas. Top with 1 tablespoon Spicy Pico de Gallo and 1 tablespoon cheese.
Makes 12 servings.

For a quick and easy Tacos use frozen fish sticks or popcorn shrimp the next time. Just cook the frozen food according to package instructions and toss it into a tortilla with your favorite taco toppings!

Turkey Tacos with Salsa

Turkey Tacos with Salsa
You haven’t really had salsa until you’ve had fresh salsa—made in just five minutes. Add it in this easy Turkey Tacos with Salsa recipe and you’ll never look back.
Total Time 30 Minutes
Serving Size 8 Servings

Ingredients

TACOS
2 – tablespoons fresh lime juice

1 – tablespoon chipotle chili powder or chili powder

1 – teaspoon ground cumin

1 ½ – teaspoons paprika

¾ – teaspoon salt

1 – teaspoon cornstarch

1 – (16-ounce) package JENNIE-O® Lean Ground Turkey

8 – corn tortillas

SALSA

1 – pint cherry tomatoes, chopped

2 – avocado, diced

2 – tablespoons chopped cilantro leaves

1 – teaspoon olive oil

TOPPINGS

½ – cup thinly sliced cabbage

½ – cup thinly sliced red onion

½ – cup thinly sliced radishes

1 – lime, cut into 8 wedges

 

Directions
1) In medium bowl, combine lime juice, chipotle powder, cumin, paprika, salt and cornstarch; stir to combine. Add turkey and mix well. Cover tightly with plastic wrap and refrigerate 5 minutes.

2) In large skillet, place turkey mixture and cook over medium-high heat stirring to crumble 11 minutes and until 165°F. as measured by a meat thermometer. Always cook to well-done.

3) Remove from heat and cover with foil. Set aside until ready to serve.

4) To prepare salsa, in medium bowl combine cherry tomatoes, avocado, cilantro, and olive oil. Mix together and transfer to a smaller serving bowl to serve with tacos.

5) Arrange toppings on large platter or in small serving dishes.

6) In medium skillet set over medium heat, warm tortillas one at a time 20 to 30 seconds per side or until soft and flexible.

7) Wrap the finished tortillas with a paper towel to keep warm between batches.

8) Divide cooked turkey evenly between the warmed tortillas and serve with salsa and toppings.

Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. 42 degrees and mostly cloudy out today. Aftewr Breakfast I took my Car to the Auto Repair we go to for repair work. I need new Brake Pads and a new Battery. So much for having my credit cards paid off! After we dropped my car off We went to Meijer, Mom needed some new paperback books to read. She goes in and picks them out and then heads back to the car. I then went ahead and picked up a few items we needed and paid out. The less time Mom is in there the better. Not much else going on today. So for Dinner tonight I prepared Turkey and Black Bean Mini Street Tacos and Refried Beans.

 

It’s going to be Taco tonight! When making my Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie –O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have a good selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortillas are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. 40 degrees and mostly cloudy out today. Another sleepless night while fighting Phantom Pains. They started about 11:00 last night and continued to around 1:00 this afternoon. So I spent the rest of the day sleeping. Wow, as I said before I wish they would come up with something to stop Phantom Pains! So for Dinner tonight I prepared Turkey and Black Bean Mini Street Tacos and Refried Beans.

 

 

It’s going to be Taco Sunday instead of Taco Tuesday! When making my Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie –O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have a good selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortillas are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Raspberry Snapple to drink.

Cooking Instructions:
