Examples of modern Tex-Mex dishes and ingredients: corn, tortilla chips, cheese, tacos, salsa, chilies, and beef dishes

Tex-Mex cuisine (from Texan and Mexican), also known as Mexican American cuisine, is a fusion of Mexican and American cuisines, deriving from the culinary creations of the Tejano people living in Texas. It has spread from border states such as Texas and others in the Southwestern United States to the rest of the country as well as Canada. Tex-Mex is most popular in Texas and neighboring areas, especially nearby states in both the US and Mexico. The Mexican food market is a 41 billion dollar industry within the United States.

Tex-Mex is a subtype of Southwestern cuisine found in Arizona, California, Colorado, Louisiana, New Mexico, Nevada, Texas, Oklahoma, and Utah.

Some ingredients are common in Mexican cuisine, but other ingredients not typically used in Mexico are often added. Tex-Mex cuisine is characterized by its heavy use of shredded cheese, meat (particularly beef, pork and chicken), beans, peppers and spices, in addition to flour tortillas.

Generally cheese plays a much bigger role in Tex-Mex food than in mainstream Mexican cuisine, particularly in the popularity of Chile con queso (often referred to as simply “queso”) which is often eaten with chips (alongside or in place of guacamole and salsa), or may be served over enchiladas, tamales or burritos.

Moreover, Tex-Mex has imported flavors from other spicy cuisines, such as the use of cumin, introduced by Spanish immigrants to Texas from the Canary Islands and used in Berber cuisine, but used in only a few central Mexican recipes. And in recent years Tex-Mex has incorporated elements of traditional Mexican food into the cuisine, including the more creative use of chile peppers and the serving of so-called “street tacos” (which would be simply called “tacos” in Mexico).

The word “Tex-Mex” first entered the English language as a nickname for the Texas Mexican Railway, chartered in southern Texas in 1875. In train schedules published in the newspapers of the 19th century the names of railroads were abbreviated. The Missouri Pacific was called the Mo. Pac. and the Texas-Mexican was abbreviated Tex. Mex. In the 1920s, the hyphenated form was used in American newspapers in reference to the railroad and to describe Texans of Mexican ancestry.

In the mission era, Spanish and Mexican cuisines were combined in Texas as in other parts of the northern frontier of New Spain. However, the cuisine that would come to be called Tex-Mex originated with Tejanos (Texans of Mexican descent) as a mix of native Mexican and Spanish foods when Texas was part of New Spain and later Mexico.

From the South Texas region between San Antonio, the Rio Grande Valley and El Paso, this cuisine has had little variation, and from earliest times has always been influenced by the cooking in the neighboring northern states of Mexico. The ranching culture of South Texas and Northern Mexico straddles both sides of the border, where beef, grilled food, and tortillas have been common and popular foods for more than a century. A taste for cabrito (kid goat), barbacoa de cabeza (barbecued beef heads), carne seca (dried beef), and other products of cattle culture is also common on both sides of the Rio Grande.

In the 20th century, Tex-Mex took on such Americanized elements as cheddar cheese, as goods from the United States became cheap and readily available.

In much of Texas, the cooking styles on both sides of the U.S.–Mexico border were the same until a period after the U.S. Civil War. With the railroads, American ingredients and cooking appliances became common on the U.S. side.

A 1968 Los Angeles Times feature wrote “If the dish is a combination of Old World cooking, hush-my-mouth Southern cuisine and Tex-Mex, it’s from the Texas Hill Country.”

In France, Paris’s first Tex-Mex restaurant opened in March 1983. After the 1986 release of the film Betty Blue, Tex-Mex cuisine’s popularity in Paris increased.

Carne Asada Marinated Buffalo Steak Strip Tacos

Today’s Menu: Carne Asada Marinated Buffalo Steak Strip Tacos

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. 73 degrees and sunny out today. Running short on time today so I’ll just tell you about Dinner. For Dinner tonight I prepared Carne Asada Marinated Buffalo Steak Strip Tacos.

 

For the Buffalo I used Wild Idea Premium Steak Strips. To prepare them; I first Rinsed the Wild Idea Bison Steak Strips with water and pat them dry. I then added a light amount of Extra Light Olive Oil to them, making sure the Strips were completely covered on all sides. Then I seasoned them with Wild Idea Buffalo Omnivore Salt. The Omnivore Salt is a blend of Natural Sea Salt and Organic Spices. Then I grabbed a small Hefty Storage Bag and added some Kroger Private Selection Mexican Inspired Carne Asada Marinade. Then added the Buffalo Steak Strips and let the Steak Strips Marinate in the fridge until it was time to prepare them.

 

Next I got a Cast Iron Skillet and added 1 tablespoon of the Cooking Olive Oil, heated the Skillet on Medium High Heat. I got the bag out of the fridge and shook off the excess Marinade and placed the Strips on a plate to drain. Then over Medium High heat, I cooked the Bison Strips for about 4 minutes, tossing to turn occasionally. Oh the aroma when this is cooking up, it just fills the kitchen! I removed the Strips from the skillet into a bowl. These Steak Strips are so tender and delicious! Plus the Carne Asada Marinade gives it one incredible flavor! Love these Wild Idea Buffalo Premium Steak Strips.

 

Along with the Steak Strips I added La Preferdia Mild Jalapeno Slices, Olives (Black and Green), Lettuce Blend, fresh Shredded Dutch Gouda and all served in a La Banderita Carb Counter Tortillas. These are some of the freshest Tortillas you can find and they are only 35 calories and 3 net carbs per Tortilla. Add all this together and you have some mighty tasty Tacos.

 

Next just build your Taco! An Easy and Delicious Meal to prepare. For Dessert/Snack later I had a Diet Peach Snapple to drink.

TACOS “BUFFALO STYLE”
There are many ways to put a taco together and I have tried to stay mostly authentically true. I like a little grease on the outside and a nice balance of simple ingredients on the inside. So good!

Ingredients: (makes 8 to 12 tacos based on tortilla size)

1 – 1 pound Wild Idea Buffalo Chorizo Sausage
1 – tablespoon olive oil
¼ – cup water
OR:
1 – 1 pound Ground Buffalo
1 – tablespoon olive oil
½ – package Jill’s Mexican Seasonings
¼ cup water

Accompaniment Ingredients: (as desired)

White corn or flour tortillas
Olive oil
4 – ounces asadero or other cheese, crumbled/shredded

Pico de gallo
Fresh lime
Other toppings of your choice

Preparation:

1 – In a skillet over medium high heat, heat olive oil and crumble in Chorizo or Ground Buffalo and seasoning. Push around the skillet breaking up the meat as it cooks in smallish pieces but not to where it is beady.
2 – Once browned add water and reduce the heat to low.
3 – In another skillet or on a flat top griddle over medium heat, swirl on a little oil.
4 – Place tortillas on griddle and leave just until the tortillas starts to puff up a bit. Flip the tortillas adding another drizzle of oil to the pan and top the warm side with a sprinkle of the crumbled cheese. Leave for about 45 seconds. Outside of tortilla will have light brown spots but will still be bendable.
5 – Remove and place in a tortilla holder forming a U shape (or you can make your own using foil).
6 – Divide the meat between your tortillas and top with pico de gallo
7 – Serve with fresh lime wedges and whatever else makes you happy.

Buffalo Turkey Tacos
Recipe for Buffalo Turkey Tacos from our Main Dishes recipe section.

Ingredients

1 (16-ounce) package JENNIE-O Lean Ground Turkey
1/3 cup hot pepper wing sauce
8 hard corn taco shells, heated as specified on package
1 cup shredded lettuce
2 tomatoes, diced
1 avocado, sliced
1/2 cup blue cheese dressing

Directions

1 – Cook turkey as specified on package. Always cook to well-done, 165F as measured by a meat thermometer.
2 – Add hot pepper sauce. Stir to combine.
3 – Fill tacos shells with lettuce, turkey mixture, tomatoes and avocado.
4 – Drizzle with blue cheese dressing.
