Today’s Menu: Leftover – Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. Only a high of 47 degrees today, big change! After my Tea I headed out to Meijer. First time in a long time that they had a lot of items that had been out of stock of back on the shelves! They even had Disinfectant Spray. Very good Beef, Chicken, Pork, and Seafood selections also. Back home did a few things around the house. For Dinner tonight I heated up the Leftover Turkey and Black Bean Mini Street Tacos and Refried Beans. I have left the original post from last night for the recipe and directions. Take Care Al!

 

We had these about a week ago but Mom loves them! So if this is what she wants, that’s what I’m fixing! When making my Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie –O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have a good selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortilla are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert later a Jello Sugar Free Dark Cherry Jello.

For Breakfast I had a cup of Bigelow Decaf Green Tea. 79 degrees with a couple of rain showers. Well in between the showers I raked the front yard again. I’m fighting a losing battle as neighbors on both sides of me never rake their yards1 So when the wind blows I get one theirs yards leaves. Some people take no pride in their yards or houses! For Dinner tonight I prepared Turkey and Black Bean Mini Street Tacos and Refried Beans.

For Breakfast I had a cup of Bigelow Decaf Green Tea. Cloudy and 76 degrees out with rain on it’s way. Got the cart out of the shed. Today I finished up some yard work and then raked leaves. After I got my yard done I gave a couple of neighbors a hand with their yards. For Dinner tonight I prepared Turkey and Black Bean Mini Street Tacos and Refried Beans.

 

When making my Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I’m not sure what’s wrong, just not feeling up to par. Did a few things outside and then rested the rest of the afternoon. Not a good day to be outside working so, I cleaned the house today, dusted and ran the sweeper. For Dinner tonight I prepared Turkey and Black Bean Mini Street Tacos and Refried Beans.

Today’s Menu: Leftover Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham, and had a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. Another repeat in our weather except its more humid! High of 94 degrees and real humid! After Breakfast I got some yard work done. I wanted to get it done before the heat and humidity got too bad. Not much else going on, stayed in and kept cool! For Dinner tonight, Leftover Turkey and Black Bean Street Tacos and Refried Beans. I reheated everything. I was going to prepare something else but Mom insisted on these leftovers. This is one of her favorites! I left the original post from yesterday below for instructions and description of the recipe. Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. 96 degrees and sunny out today, another hot one out there! Went and picked up Breakfast for Mom at Wendy’s. Back home did a load of laundry. Cleaned the house today, dusted and ran the sweeper. For Dinner tonight I prepared Turkey and Black Bean Mini Street Tacos and Refried Beans.

 

 

When making Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have a good selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortilla are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Mango/Tea Snapple.

You’ll also be needing Olive Oil, Flour Tortillas, Asadero Cheese, Pico de Gallo, and Lime. Easy to prepare and Delicious to eat! TACOS “BUFFALO STYLE”
There are many ways to put a taco together and I have tried to stay mostly authentically true. I like a little grease on the outside and a nice balance of simple ingredients on the inside. So good!

Ingredients: (makes 8 to 12 tacos based on tortilla size)

1 – 1 pound Wild Idea Buffalo Chorizo Sausage
1 – tablespoon olive oil
¼ – cup water
OR:
1 – 1 pound Ground Buffalo
1 – tablespoon olive oil
½ – package Jill’s Mexican Seasonings
¼ cup water

Accompaniment Ingredients: (as desired)

White corn or flour tortillas
Olive oil
4 – ounces asadero or other cheese, crumbled/shredded

Pico de gallo
Fresh lime
Other toppings of your choice

Preparation:

1 – In a skillet over medium high heat, heat olive oil and crumble in Chorizo or Ground Buffalo and seasoning. Push around the skillet breaking up the meat as it cooks in smallish pieces but not to where it is beady.
2 – Once browned add water and reduce the heat to low.
3 – In another skillet or on a flat top griddle over medium heat, swirl on a little oil.
4 – Place tortillas on griddle and leave just until the tortillas starts to puff up a bit. Flip the tortillas adding another drizzle of oil to the pan and top the warm side with a sprinkle of the crumbled cheese. Leave for about 45 seconds. Outside of tortilla will have light brown spots but will still be bendable.
5 – Remove and place in a tortilla holder forming a U shape (or you can make your own using foil).
6 – Divide the meat between your tortillas and top with pico de gallo
7 – Serve with fresh lime wedges and whatever else makes you happy.
