X-tra protein in the tacos………..

When making Tacos I sometimes add a can of rinsed black beans to the Ground Turkey and Taco mix as it’s cooking. The black beans gives it that extra protein and added flavor. Just be sure to drain and rinse the black beans to reduce the sodium content. Enjoy those Tacos!!

The family-friendly Cincy-Cinco in Cincinnati, Ohio, is a community-wide event that promotes Latino culture with a two-day celebration. Traditionally held the weekend before Cinco de Mayo, the event features traditional Mexican mariachi bands, salsa band, authentic cuisine from across the border, a llamas and alpacas petting zoo, unique Hispanic art and clothing, a children’s area and folkloric dance performances.

This week’s Diabetic Dish of the Week is – Buffalo Turkey Tacos. Made with JENNIE-O® Lean Ground Turkey but when I make my Turkey Tacos I always use Jennie – O Extra Lean Ground Turkey Breast. By using the Ground Turkey Breast you can cut out even more od the calories and carbs! Adding Hot Pepper Wing Sauce and the Blue Cheese Dressing will give you that Buffalo flavor. Buffalo Turkey Tacos
This kid-friendly taco recipe makes for a quick and easy dinner. Featuring buffalo-style turkey and blue cheese dressing, it’s a flavorful twist on your kids’ favorite tacos. And it’s under 300 calories per serving!

INGREDIENTS
1 (16-ounce) package JENNIE-O® Lean Ground Turkey
⅓ cup hot pepper wing sauce
8 hard corn taco shells, heated as specified on package
1 cup shredded lettuce
2 tomatoes, diced
1 avocado, sliced
½ cup blue cheese dressing

DIRECTIONS
1) Cook turkey as specified on package. Always cook to well-done, 165°F as measured by a meat thermometer. Add hot pepper sauce. Stir to combine.
2) Fill tacos shells with lettuce, turkey mixture, tomatoes and avocado. Drizzle with blue cheese dressing
* Always cook to an internal temperature of 165°F.

Poblano Fajita Turkey Tacos
With grilled Poblano peppers, onions and fresh pico de gallo, this taco recipe will literally spice up your taco night. It’s quick and easy to make, too — ready in under 30 minutes!

INGREDIENTS
½ cup fat-free sour cream
1 chipotle pepper in adobo sauce
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
1 (1.25-ounce) package taco seasoning mix
½ cup water
PICO DE GALLO
1 cup chopped plum tomatoes
¼ cup white onion, chopped
3 tablespoons chopped fresh cilantro leaves
1 jalapeño, diced
2 tablespoons lime juice
salt and freshly ground pepper, if desired
10 corn or flour tortillas
4 Poblano peppers, grilled and cut into strips
2 red onions, cut into thick slices, grilled and separated into rings
1 cup queso fresco cheese, crumbled

DIRECTIONS
1) In blender, combine sour cream and chipotle pepper in adobo sauce. Blend until combined. Set aside.
2) In large skillet, cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Add taco seasoning and water. Cook until water is evaporated, stirring occasionally.
3) To make the pico de gallo, combine tomatoes, onion, cilantro, jalapeño, lime juice, salt and freshly ground pepper, if desired.
4) Spread each tortilla with sour cream mixture. Fill tacos with turkey, grilled peppers, onions, pico de gallo and queso fresco cheese.
* Always cook to an internal temperature of 165°F.
