Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

For Breakfast I toasted a Thomas Light English Muffin, fried some slices of Boar’s Head Sweet Slice Ham and topped that with a 1/2 slice of Boar’s Head Swiss Cheese. I love Breakfast Sandwiches! Also had a cup of Bigelow Decaf Green Tea. Mostly sunny and 42 degrees out. Not much going on, did a few things around the house just to try to stay busy. Still in house isolation. For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans. We are having the leftover Turkey and Black Bean Tacos from Thursday night, that we served on the Old El Paso Stand n’Stuff Taco Shell. Well tonight I’m having Turkey Tacos but served in the Mission Street Taco Flour Tortillas. Anymore I prefer these over the Hard Shells. So I just reheated everything for my Dinner tonight. Below I’ve left the recipe and instructions from having these previously. Enjoy and Stay Healthy!

 

When making Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortilla are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

Today’s Menu: Turkey Tacos and Refried Beans

 

 

For Breakfast I Scrambled a couple of Eggs, fried up some Glier’s Turkey Goetta, and had a cup of Bigelow Decaf Green Tea. Well Isolation continues. Both me and Mom are fine but Mom being 92 its not a good idea for her to be out, but most everything is shutdown around here anyway but a few Grocery Stores. Then its hard for me to go out and possibly pick up something and then she gets it. Just best to in for a couple of weeks. We’ll sure be glad when this virus finally passes! Cleaned the house today, dusted and ran the sweeper. For Dinner tonight I prepared Turkey Tacos and Refried Beans.

 

We love our Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Today’s Menu: Kitchen Closed – It’s Pizza Tonight from Domino’s

 

 

 

I had to be at my Family Doctor this morning at 7:45. In for my 4 month checkup for Sugar, Cholesterol, and such. 57 degrees and partly cloudy out today. After my Doctor’s Appointment I went Home Depot to buy some paint and a few other things to spruce up our place. I bought paint for myself and my neighbor. He’s doing the painting on my shed and he was going to paint his also and I bought his paint for him. I was amazed at all the people at Home Depot taking cart after cart of Toilet Paper, Paper Towel, Sanity Wipes, Clorox, and Water. The Household Department was the busiest department at Home Depot! I was all day so I’m shutting the Kitchen down. Its Domino Pizza tonight!

 

So Pizza it Pizza for Dinner tonight. I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink. Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

 

 

 

For Breakfast to start this morning off I prepared Spam and Scrambled Eggs. I used Turkey Spam that I sliced width wise. Grabbed a skillet and gave it a spray of Pam Non Stick Cooking Spray and fried my Spam on medium heat. Cooked each side until browned, and done. Next I Scrambled a couple of eggs, topped them with a sprinkle of Sargento Off the Block Cheddar Cheese and Ortega Smoky Chipotle Taco Sauce. I love the Ortega Sauce, it gives food such excellent flavor. Also had my morning cup of Bigelow Decaf Green Tea. 56 degrees and partly cloudy out today. Painted the trim I replaced around the shed. Got the water hose out of the shed and sprayed down the driveway, it needed cleaning bad. Had to drain and store the hose. Tomorrow, after several Spring like days, the high is only going to be about 39 degrees but back near 60 degrees by Sunday. This Ohio weather is something! This is why so many people in this area have sinus problems. Oh well, it’s Home Sweet Home! For Dinner tonight Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

I love these Naan Bread Pizzas so much! These are so easy to fix and so delicious! I had a package of Stonefire Mini Naan Ancient Grain Bread in the freezer, laid it in the fridge overnight to thaw. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce. I love this Stonefire Mini Naan Ancient Grain Bread, it tastes so fresh and bakes up perfect!

 

I first Preheated the oven on 400 degrees. Next I grabbed a small skillet, sprayed it with Pam No Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

With the oven preheated I lined the Naan Bread to the baking sheet and baked it for 2 minutes. When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Lite House Dried Oregano, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

 

 

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite you’ll knew the Naan Bread is the perfect Pizza Crust! The Crust has excellent taste and bakes up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I keep a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

 

 

A delicious hot Breakfast for a cold Winter’s Morning! I prepared my Skillet Potatoes and Ham Breakfast Skillet. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham. Just cooked the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Also had my morning cup of Bigelow Decaf Green Tea. Partly cloudy, windy, and 51 degrees out today. Got the cart out of the shed along with a rake and leaf blower. Cleaned off the deck and and cleaned off the driveway area. Not much else to do today. I did do a load of laundry for Mom a bit later. For Dinner tonight Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

Today’s Menu: Kitchen Closed – It’s Pizza Tonight from Domino’s

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 37 degrees and cloudy out today. We had company over most of the day and when it came time to prepare Dinner neither myself or Mom felt like cooking so the Kitchen is Closed! Mom wanted Pizza tonight so, Pizza it is!

 

 

 

 

 

So Pizza it was and my Dinner I had planned was put on hold. I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! For Breakfast this morning I toasted a Thomas Light English Muffin that I topped with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. Partly cloudy and 53 degrees out today. After Breakfast I went to Kroger for a couple of items and stopped by McDonald’s and picked up Breakfast for Mom. Back home did a load of laundry and did a few things around the house. Later on I drove to the airport and picked up a friend of mine who was coming into town for a couple of weeks. For Dinner tonight Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite you’ll knew the Naan Bread is the perfect Pizza Crust! The Crust has excellent taste and bakes up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I keep a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert/Snack later a small bowl of Chex Mix with a Coke Zero to drink.

Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

 

 

 

For Breakfast this morning I toasted a Thomas Light 100% Multi Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also a cup of Bigelow Decaf Green Tea. Had some showers in the morning and then cloudy and 48 degrees and cloudy all day. After Breakfast I went to the ATM, filled the car up with gas, and stopped by McDonald’s and picked up Breakfast for Mom. Back home cleaned and straightened the freezer and pantry. Then did some online Christmas shopping. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

 

I love these Naan Bread Pizzas! I’m having them more often, so easy to fix and so delicious! So I picked up another package of Stonefire Mini Naan Ancient Grain Bread and Jennie – O Turkey Lean Turkey Sausage at Meijer my last visit there. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce. I love this Stonefire Mini Naan Ancient Grain Bread, it tastes so fresh and bakes up perfect!

 

 

I first Preheated the oven on 400 degrees. Next I grabbed a small skillet, sprayed it with Pam No Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

 

 

With the oven preheated I lined the Naan Bread to the baking sheet and baked it for 2 minutes. When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Lite House Dried Oregano, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

Today’s Menu: Kitchen Closed – It’s Pizza Tonight from Domino’s

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 41 degrees and sunny out today. Well most of our snow is gone except for a few spots. Cleaned the house today and that was about it as my sinuses are going crazy today. Settled back and watched College Football for the afternoon. Mom wanted Pizza tonight so, Pizza it is!

 

 

 

 

 

 

I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink. The Kitchen reopens tomorrow!
