Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

 

For Breakfast this morning I prepared a Poached Egg that I served on a toasted Thomas Light English Muffin. Also had a cup of Bigelow Decaf Green Tea. Partly cloudy with a passing shower, 89 degrees and a little humid out today. Took it easy today, allergies and sinuses are bad today! My head feels like those passing thunderstorms! Did a few things around the house then rested the rest of the afternoon. For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans.

 

 

 

 

When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

 

 

 

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. I usually use the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn) when making Tacos but tonight I’m using Mission – Street Tacos Flour Tortillas. First time using these and not the last! These are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom.

Golden Tuscan Chicken

Recipe Ingredients:
4 (6-ounce) boneless, skinless chicken breasts
1 tablespoon chopped thyme
1 tablespoon chopped oregano
3/4 teaspoon kosher salt
2 tablespoons olive oil
12 ounces (4 cups) cauliflowerets, quartered and blanched
1 ounce sliced prosciutto, chopped
2 tablespoons pine nuts
3 cloves garlic, thinly sliced
6 ounces green beans, trimmed and blanched
1 cup olives, whole, pitted
1 tablespoon lemon juice
1/4 teaspoon ground black pepper

Cooking Directions:
1 – Season chicken breasts with 2 teaspoon of thyme and oregano and 1/2 teaspoon of salt.
2 – Heat 1 tablespoon of olive oil in a large sauté pan over medium high heat. Place chicken breasts in pan and brown for 2 to 3 minutes. Flip over and brown for 2 more minutes. Transfer chicken to a high sided baking sheet and cook in a 450°F (230°C) oven for 8 minutes or until cooked through.
3 – While chicken is roasting, heat remaining oil in sauté pan over medium-high heat. Add cauliflower and cook for 2 to 3 minutes until golden, stirring occasionally. Turn heat down to medium-low, add prosciutto, pine nuts and garlic and continue cooking for 1 to 2 minutes. Toss in green beans, olives, lemon juice and pepper. Cover and cook for 2 minutes until heated through.
4 – Place 5 to 6 ounces of vegetable mixture onto each serving plate. Top with chicken and serve hot.

Today’s Menu: Italian Pasta Salad w/ Hardwood Smoked Turkey Sausage

 

 

For Breakfast on this sunny Saturday Morning I Poached an Egg, toasted a Thomas Light English Muffin, and had a cup of Bigelow Decaf Green Tea. Beautiful day out there today! 69 degrees and Sunny! Had to go back to Kroger, I forgot a couple of items Mom wanted. Stopped by McDonald’s and picked up Breakfast for her. Did some yard work then later helped an older neighbor do a few things around his house. For Dinner tonight its an Italian Pasta Salad w/ Hardwood Smoked Turkey Sausage.

 

 

 

 

 

For my Sausage I used the Butterball Hardwood Smoked Turkey Sausage. I cut the Sausage Links into Bite size pieces. I absolutely love the Butterball Hardwood Smoked Turkey Sausage and I had been wanting some for a while. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! These go great with anything.

 

 

 

 

Then to go with the Turkey Sausage I prepared a Italian Pasta Salad, made about noon today. It always taste even better after chilled for a while. A Light and tasty dish that includes Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, Kraft Reduced Fat Grated Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Grinder Italian Seasoning. Prepared the Pasta according to the box and added all the ingredients and tossed until well mixed. Then refrigerated until ready to use.

 

 

 

 

 

Made a bed of the Pasta in a bowl and topped it with the sliced Turkey Sausage, and chowed down! The Pasta Salad and Turkey Sausage are a perfect combination. And the Kraft Italian Dressing provides some great flavor! I also had a slice of the left over Garlic Bread Loaf. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Kitchen Closed – It’s Pizza Tonight from Domino’s

 

 

Toasted a couple of Eggo Nutri Grain Waffles and had a cup Bigelow Decaf Tea for Breakfast this morning. Lot of rain overnight into the morning. Then partly sunny and 60 degrees out. Rested most of the day, dealing with a painful sinus headache. They say our pollen count outside is extremely high and my head can feel it! Like most plans, they are made to be broken. I was going to prepare Dinner tonight Mom wanted Pizza so…….

 

 

 

 

 

……..Pizza it is! I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! I had a Caffeine Free Diet Coke  to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet a Diet Mango Tea Snapple to drink. The Kitchen reopens tomorrow! Take care all.

To start my day off I Scrambled 2 Eggs then when done I sprinkled some Sargento Shredded Sharp Cheddar and a couple of shakes of Ortega Smoky Chipotle Taco Sauce. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and a cup of Bigelow Decaf Green Tea. Cloudy, rain, and 70 degrees outside. Cleaned the house today, dusted and ran the sweeper. Also did laundry. For Dinner tonight I prepared Turkey Tacos and Refried Beans.

Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

 

 

 

For Breakfast this morning I toasted a Thomas Light 100% Multi Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Alo had the morning cup of Bigelow Decaf Green Tea. Cloudy, raining, and 43 degrees out today. Very sad day, my Aunt passed away. She was Dad’s Sister. They lived in Florida and she was 91 years old. We’ll miss her deeply.

For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

 

 

 

 

I had this last week and it was so good I wanted it again. So I picked up another package of Stonefire Mini Naan Ancient Grain Bread and Jennie – O Turkey Lean Turkey Sausage at Meijer my last visit there. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce. I love this Stonefire Mini Naan Ancient Grain Bread, it tastes so fresh and bakes up perfect!

 

 

 

 

 

I first Preheated the oven on 400 degrees. Next I grabbed a small skillet, sprayed it with Pam No Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

 

 

 

 

When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

 

 

 

 

 

 

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite I knew the Naan Bread was a perfect Pizza Crust! The Crust had excellent taste and baked up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I’ll have to get a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

For Breakfast this morning I made a Ham, Fried Egg and Toast. I fried up 3 slices of a Blue Grass Ham that I sliced. Then I also prepared an Egg Sunny Side Up. Next I toasted 2 slices of Aunt Millie’s Light Whole Grain Bread. I also had a cup of Bigelow Decaf Green Tea. Great way to start a Sunday Morning! Rain and Thunderstorms all day also some strong winds as the day went on, high of 70 degrees. So not a lot going on outside today. Did a load of laundry and cleaned the house. Layed back and watched TV for the rest of the afternoon. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

For Breakfast on this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Did a load of laundry after Breakfast. Then later I went to Walmart for printing ink for my printer and a couple of other items. Back home I got caught up a couple of shows I had recorded. For Dinner tonight Mom wanted Pizza so…….

 

 

 

 

 

I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! I had a Diet Sprite to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink. The Kitchen reopens tomorrow! Today’s Menu: Turkey Tacos and Refried Beans

 

 

To start my day off I had a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg White, Cheddar Cheese. Another cold day out there, 13 this morning and a high of 25 degrees. After Breakfast I went to McDonald’s to pick up Breakfast for Mom. I was sort of slow today my Sinuses are really bothering me today, very bad headaches. Lot of rest and that was about it. I have to fast tonight until I go to the Family Doctor in the morning for my Blood Sugar, Cholesterol, etc. For Dinner tonight I prepared Turkey Tacos and Refried Beans.

 

 

 

 

We love our Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

 

 

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink.

Ancient Grain Mini Naan Bread Pizza

Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

 

 

 

 

For Breakfast this morning I made a Ham and Cheese Egg White Omelette. I used Meijer Diced Ham, Sagento Off the Block Shredded Mozzarella, Egg Beater’s Egg Whites, Ortega Smoked Chipotle Taco Sauce. I topped the Omelette with the Taco Sauce and a sprinkle of the Cheese. I also had a slice of Aunt Millie’s Light Whole Grain Bread and a cup of Bigelow Decaf Green Tea. 48 degrees and cloudy all day. After I had Breakfast I went to McDonald’s and picked up Breakfast for Mom, she loves those Golden Arches Breakfast Sandwiches. Back home did a few things around the house. Cleaned and straightened the pantry and replaced the brushes on the vacuum. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and  Turkey Sausage.

 

 

 

 

I had not had the Pizza that I made using Naan Bread in a while so I picked up a package of Stonefire Mini Naan Ancient Grain Bread and Jennie – O Turkey Lean Turkey Sausage at Meijer my last visit there. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce.

 

 

 

 

 

 

I first Preheated the oven on 400 degrees. Next I grabbed a small skillet, sprayed it with Pam No Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

 

 

 

 

When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

 

 

 

 

 

 

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite I knew the Naan Bread was a perfect Pizza Crust! The Crust had excellent taste and baked up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I’ll have to get a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.
