Today’s Menu: Turkey and Black Bean Tacos

 

 

To start the day off I made some French Toast. I used Aunt Millie’s Live Carb Smart Wheat Bread, Egg Beaters, 2% Milk, Ground Nutmeg, and Ground Cinnamon. Mix all the ingredients, except the Bread, in a bowl until well mixed. Heat up a skillet sprayed with Pam Non Stick Spray and Blue Bonnet Light Butter. Dip the Bread in the mix and shake off the excess. Then add the Bread and fry until Golden on both sides. I love French Toast! I topped the Toast with the Butter and Log Cabin Sugar Free Maple Syrup. I also heated up 2 Johnsonville Turkey Breakfast Sausage Links and a cup of Bigelow Decaf Green Tea. Fantastic Breakfast! Outside today, 76 degrees, windy, and cloudy. I met a couple of friends at the West Chester Farmer’s Market. Only my 2nd time there. It’s a whole lot bigger and more expensive since my last visit. Back home it was the usual, watered all the plants and cleaned up the deck and driveway areas. Later I did a load of laundry for Mom. Dinner tonight, Turkey and Black Bean Tacos.

 

I know it’s not Taco Tuesday but around here it’s Taco Saturday! When making Turkey Tacos I always use Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Virgin Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, and Cilantro Flakes. As the Turkey was finishing cooking I added 1 can Bush’s Chili Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, and continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make some fine Tacos!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce (my favorite), Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Turkey and you have some mouth watering and delicious Tacos! Love these Taco Meal Nights. For Dessert later a bowl of Skinny Pop – Popcorn and a Diet Peach Snapple to drink. Take Care and Stay Safe Everyone!

Chicken Cacciatore over Pasta
Impress the family tonight with this easy, Italian-style pasta and chicken main dish.

Recipe Ingredients:

1 pound skinless, boneless chicken breast halves
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (16-ounce) can chopped tomatoes, drained
1 (8-ounce) can tomato sauce
2 tablespoons Splenda® Granulated No Calorie Sweetener
1 1/2 teaspoons Italian seasoning
1/3 cup sliced ripe olives
1/8 teaspoon black pepper
3 cups hot cooked noodles (or any favorite pasta)

Cooking Directions:

1 – Slice chicken breasts into 32 pieces.
2 – Spray a large skillet with olive oil flavored cooking spray. Sauté chicken, onion, and green pepper for 6 to 8 minutes. Stir in drained tomatoes and tomato sauce.
3 – Add Splenda® Granulated Sweetener, Italian seasoning, olives, and black pepper. Mix well to combine. Lower heat and simmer for 10 to 15 minutes, stirring occasionally.
4 – For each serving, place 1/2 cup pasta on a plate and spoon 2/3 cup sauce over top.

Today’s Menu: Turkey and Black Bean Tacos

 

 

To start the day off I had my morning cup of Bigelow Decaf Green Tea. 88 degrees and sunny outside, also a bit humid in the afternoon. I had to call the cable provider, it keeps freezing up from time to time and I have to reset the cable boxes. Usually 2 or 3 times a day. So they came over early this evening and had to replace one of the cable boxes. Stayed busy outside. I had to add planting soil and plant food to the garden and Mom’s flower boxes. Makes the day fly by when busy! Mom wanted one of her favorites for Dinner tonight, Turkey and Black Bean Tacos.

 

I know it’s not Taco Tuesday but around here it’s Taco Friday! When making Turkey Tacos I always use Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Virgin Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, and Cilantro Flakes. As the Turkey was finishing cooking I added 1 can Bush’s Chili Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, and continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make some fine Tacos!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce (my favorite), Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Turkey and you have some mouth watering and delicious Tacos! Love these Taco Meal Nights. For Dessert later a bowl of Skinny Pop – Popcorn and a Diet Peach Snapple to drink. Take Care and Stay Safe Everyone!

Today’s Menu: Kitchen closed, Domino Pizza tonight

 

 

To start this morning off I had my morning cup of Bigelow Decaf Green Tea. 69 degrees, mostly cloudy, and windy outside. After Lunch I got my cart, leaf blower and rake out of the shed for yard sprucing up. Kept the cart out for a while and took a spin around the neighborhood. Mom wanted Pizza tonight. So for Dinner tonight I shut the Kitchen down and it’s Domino’s Pizza tonight.

 

I was going to prepare Dinner but Mom wanted Pizza. I ordered a Small Hand Tossed Pizza from Dominos. We had toppings of Pepperoni, Extra Italian Sausage, Green Olives, Mushrooms, Black Olives, Robust Inspired Tomato Sauce, and Cheese. Dinner is served! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Diet Lemonade/Tea Snapple to drink.

To start the day off I Baked a small can of Pillsbury Buttery Biscuits and I fried some Johnsonville Turkey Breakfast Sausage Patties. Both together make a delicious Breakfast Sandwich. I also had my morning cup of Bigelow Decaf Green Tea. 60 degrees and mostly sunny outside. I had to cover my Garden Boxes again , we had a light frost again. So tired of this weather! Tortilla Toasts with Avocado-Olive Salsa

Recipe Ingredients:
1 1/2 cups seeded and diced tomatoes
1 cup ripe olives, halved
1 cup diced avocado
2 tablespoons lime juice
2 tablespoons chopped fresh cilantro
1 teaspoon minced garlic
1/4 teaspoon salt
2 large eggs
2 tablespoons low-fat milk
4 (6-inch) flour tortillas
Cooking spray

Cooking Directions:
1 – In a medium sized bowl, combine tomatoes, olives, avocado, lime juice, cilantro, garlic and salt. Set aside.
2 – In a separate shallow bowl, whisk together eggs and milk. Place tortilla in egg mixture and soak for 3 to 5 minutes.
3 – Heat a medium-sized sauté pan over medium heat. Lightly coat with cooking spray. Place one tortilla in the pan and cook for 2 minutes until golden, then flip and continue cooking on other side for 1 to 2 minutes. Repeat with remaining tortillas.
4 – To serve, place 1 tortilla on each plate and serve with approximately 3/4 cup of salsa.
Makes 4 servings. (1 tortilla and 3/4 cup salsa per serving.)

To start this morning off I Poached an Egg and served it on a slice of toasted Aunt Millie’s Live Carb Smart Wheat Bread. I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links along with my morning cup of Bigelow Decaf Green Tea. 54 degrees, cloudy, and rain after Noon today. Before the rain set in for the day I got some yard work done. Yesterday I had house siding washed down, gutters cleaned out, shed washed down, and the driveway cleaned and scrubbed. So that’s out of the way for the year. I grabbed a rake and the leaf blower out of the shed and cleaned off the deck and then raked the front yard. Things are starting to take shape outside! For Dinner tonight I shut the Kitchen down and its Domino’s Pizza tonight.

 

I had a good meal all planned out but after it started raining I settled down inside and watched TV and worked some CrossWord Puzzles. That was the end of the Dinner Plans. I ordered a Small Hand Tossed Pizza from Dominos. We had toppings of Pepperoni, Extra Italian Sausage, Green Olives, Mushrooms, Black Olives, Robust Inspired Tomato Sauce, and Cheese. After my Tea I headed to Kroger for a couple of items and a few for a neighbor. On the way back I stopped and picked up Breakfast for Mom. The high cost of groceries grows it seems every time I go, along with gas prices. Not a lot going on today. Mom wanted one of her favorites for Dinner so I prepared Turkey and Black Bean Tacos.

STOVE TOP METHOD:
* Spray skillet with nonstick cooking spray.
* Preheat skillet over medium-high heat.

Today’s Menu: Fried Branzino w/ Roasted Cauliflower, Cut Green Beans, and Italian Olives

 

Just a cup of Bigelow Decaf Green Tea to start the day. 77 degrees, mostly cloudy and very windy out today. After my Tea I picked up a friend of mine and we went to Jungle Jim’s International Market, the store with everything and more! She loves going there as much as I do. I picked up some Sea Scallops, Orange Roughy Fillets, and Branzino Fillets. Back home did a few chores outside. So for Dinner tonight I’m having Fried Branzino w/ Roasted Cauliflower, Cut Green Beans, and Italian Olives.

 

To prepare my Branzino I’ll need Salt, Pepper, Zatarains Seafood Breading, and Bertolli Cooking Olive Oil. First time Ive had Branzino in quite some time. I heated up a skillet that I sprayed with Pam Cooking Spray and added 2 tablespoons of the Olive Oil. Heated it on Medium Heat. As that was heating I got the Fish ready. Washed them off in Cold Water and patted them dry with a paper towel. Then seasoned them with the Salt and Pepper and then rolled them in the Zatarain’s Breading.

 

With the skillet heated I added the Fillets. Cooked them for 1 1/2 minutes per side. They fried up to Golden Brown and were Delicious! I’ll have to start buying these way more often.

 

 

 

 

To go with the Fish I roasted a bag of Cauliflower Florets. One of our favorite sides! To prepare it I’ll need a baking pan. I ‘ll be roasting it at 425 degrees until knife tender. To season it I’ll need Cooking Olive Oil, Salt and Ground Pepper. I first washed off the Cauliflower. Next I sliced the bigger florets in half, they bake better when they aren’t so big. I baked them at 425 degrees. I checked them a few times until I could stick a paring knife through them. And they did come out so tender and delicious! I served them with some Hidden Valley Buffalo Ranch Dressing for dipping. I have to start having these way more often!

 

For a second side dish I opened up a can of Del Monte Cut Green Beans in Sea Salt. Just emptied the can into a small saucepan and heated to a boil and then reduce the heat to a simmer, heat until heated through. I also had a few Italian Mixed Olives, which goes great with Branzino. For Dessert later I’ll have a Jello Sugar Free Dark Chocolate Pudding. Take care and Stay Safe Everyone!
