Today’s Menu: Kitchen Closed – It’s Pizza Tonight from Domino’s

 

Early Morning and long day today. The phone rang about 5:00 this morning and it was the rehab center where Dad is at. They didn’t Dad would make it. The pneumonia along with his COPD, he was barely breathing. So we rushed over there and he seemed to get better. Dad panics if we are not around when something isn’t right. Later in the day they took more x-rays and the pneumonia had cleared up! Later in the day he was breathing good, thankfully! So it was a very long day and it ended good. Back at home I caught up on some sleep. Too tired to cook so the Kitchen is Closed! Tonight it’s Domino’s.

 

I had been wanting a Domino’s Pizza so it seemed like a perfect time for it! A few more calories and carbs than what I normally like to have for dinner but it had been a while since I had one and it sounded good for a Sunday Meal, and love the clean up afterwards! We ordered a Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. As always the Pizza arrived on time, hot and delicious! I had a Diet Dr. Pepper to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn. The Kitchen will reopen tomorrow! Happy Labor Day Weekend Everyone!

BUFFALO ANTIPASTO PASTA SALAD

Substitute ingredients according to what you have on hand or what you like.
A great summertime meal or side dish!

Ingredients:
1 – 10 oz. pkg. Buffalo Salami, cut into pieces
1 – cups, fresh mozzarella, shredded or cubed
2 – bell peppers, red, yellow or orange, diced
1 – bunch green onions, chopped
2 – 12 oz. jars artichoke hearts, drained & chopped
½ – cup Kalamata olives, halved or quartered
¾ – cup sundried tomatoes, julienned
8 – ounces pasta, cooked el dente and drained
¼ – cup basil pesto
¼ – cup olive oil
¼ – cup rice or cider vinegar
2 – teaspoons ground fennel
salt & pepper to taste.

Preparation:
Put all ingredients in large bowl and toss. Place in the refrigerator until ready to serve. The salad becomes more flavorful after the ingredients have a chance to rest. Leftovers can be kept for up to a week, refrigerated, however you may need to add a bit more olive oil or dressing before serving.

Veggie Taco Salad

Ingredients

2 cups soy crumbles (you can find these in your grocer’s freezer section or refrigerated meat section)
3/4 cup salsa
5 cups shredded lettuce
1 cup corn kernels
1 cup black beans
Topping Options

1/4 cup sliced green onions
1/4 cup shredded reduced-fat cheddar cheese
2 tablespoons sliced ripe olives
2 tablespoons fat free sour cream

Directions

1 – In large nonstick skillet coated with cooking spray, cook crumbles and salsa over medium heat about 5 minutes or until heated through, stirring frequently.
2 – In large bowl toss together lettuce, corn and black beans. Arrange on 4 serving plates. Top with crumbles mixture. Sprinkle with toppings.

Chicken Cacciatore over Pasta

Impress the family tonight with this easy, Italian-style pasta and chicken main dish.

Recipe Ingredients:

1 pound skinless, boneless chicken breast halves
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (16-ounce) can chopped tomatoes, drained
1 (8-ounce) can tomato sauce
2 tablespoons Splenda® Granulated No Calorie Sweetener
1 1/2 teaspoons Italian seasoning
1/3 cup sliced ripe olives
1/8 teaspoon black pepper
3 cups hot cooked noodles (or any favorite pasta)

Cooking Directions:

1 – Slice chicken breasts into 32 pieces.
2 – Spray a large skillet with olive oil flavored cooking spray. Sauté chicken, onion, and green pepper for 6 to 8 minutes. Stir in drained tomatoes and tomato sauce.
3 – Add Splenda® Granulated Sweetener, Italian seasoning, olives, and black pepper. Mix well to combine. Lower heat and simmer for 10 to 15 minutes, stirring occasionally.
4 – For each serving, place 1/2 cup pasta on a plate and spoon 2/3 cup sauce over top.
Makes 6 servings. Serving Size: 1/2 cup noodles, 3/4 cup chicken cacciatore.

Today’s Menu: It’s Pizza Tonight from Domino’s

 

For Breakfast this morning I fried a couple of Jennie – O Turkey Breakfast Sausage Links, Scrambled an Egg, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After I had Breakfast and did the dishes I went to McDonald’s to pick up Breakfast for Mom and Dad. It’s not quite as hot out, 82 degrees but still a tad muggy. After Lunch I got the cart out of the shed and I to dig up an old bush that was dead and then I had to dig out some soil running along side the driveway. Still having drainage problems when it rains. Things would be a lot easier if I wasn’t in a wheel chair but you have to work with what you got! For Dinner tonight It’s Pizza from Domino’s.

Today’s Menu: Turkey Tacos and Refried Beans

 

 

 

For Breakfast I prepared some Pioneer Peppered White Gravy along with 2 slices of toasted Healthy Life Whole Grain Bread. I love Gravy!! Also fried up 2 Jennie – O Turkey Breakfast Sausage Links and topped it off with that morning cup of Bigelow Decaf Green Tea. I also baked up a pan of Pillsbury Biscuits for Mom and Dad to have with the gravy. I love Biscuits but 2 slices of toast has way less carbs and calories than one Biscuit. Not a lot going on today, caught up on everything. I took a ride later over to Home Depot to look at some plants and trees. Not sure what I’m going to do yet for some new shrubbery. It’s our warmest day of the year so far, high near 90 degrees and mostly sunny. For Dinner tonight its Turkey Tacos and Refried Beans for Taco Tuesday!

 

I had been wanting Tacos for some time, and tonight is the night! When making Turkey Tacos I love using Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom and Dad. For dessert/Snack later a bowl of Smart Pop – Pop Corn.

Today’s Menu: Turkey Pepperoni and Turkey Sausage Pita Bread Pizza

 

 

 

For Breakfast I prepared some Glier’s Turkey Goetta and prepared some Simply Potatoes Hash Browns. I just love the combination of Turkey Goetta and Hash Browns. I also had my morning cup of Bigelow Decaf Green Tea. What a beautiful day today! No Rain finally, mostly sunny and 72 degrees. Well Dad will be coming home tomorrow, finally! He’s been in the hospital and rehab center for most of this year so far. I just hope he’s able to stay healthy enough to remain here. It will be good to have him home. After Breakfast I went to Walmart and then on to Kroger to pick some items up for Mom. Back home I repaired one of our outdoor chairs. Then got the cart out for the rest of the afternoon. For Dinner tonight I prepared a Turkey Pepperoni and Turkey Sausage Pita Bread Pizzas.

 

I used Joseph’s Flax/Oat Bran and Stone Ground Whole Wheat Pita Bread for my Pizza Pie instead of regular Dough Pizza Pie. I love using Joseph’s Pita Breads, always fresh and they’re only 60 calories, 1.5 grams fat, and 5 net carbs! But I can only find them online so I have to order them now. A huge saving of calories and carbs over using normal Pizza Crust, without sacrificing taste. I preheated the oven on 400 degrees. To bake the Pita Pizzas I used a large Cookie Sheet. To prepare them I brushed them with a light coat of Extra Virgin Olive Oil, the coating of Oil browns it up just right. I then baked it for 5 minutes, just to brown it up a bit. Removed them from the oven and made my Pizzas.

 

For my toppings I used Ragu Homestyle Pizza Sauce, Jennie – O Lean Turkey Ground Breakfast Sausage, Hormel Turkey Pepperoni, Sliced Black and Green Olives, sliced Baby Bella Mushrooms, 2 Anchovies Fillets, and Sargento Reduced Fat Shredded Mozzarella Cheese.

 

 

 

 

It took less than 10 minutes in the oven until everything heated up and the Cheese melted.Pizza is served! Everything combined makes one delicious Pizza! And the good thing is you can load these Pita Bread Pizzas up with toppings and still not have a lot of calories and carbs, my type of Pizza! Bakes up ans tastes like a Thin-Crust Pizza For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Mini Flatbread Pepperoni and Sausage Pizza

 

 

For Breakfast on this 1st day of April I had a Poached Egg that I served on a Healthy Life Whole Grain English Muffin. They moved Dad from the hospital back over to the Rehab Center he was just at last week. They are going to try more therapy and if that doesn’t work he will have to stay in an assisted living center, hope it doesn’t come to that. So after Breakfast I went to Kroger and picked up a few snacks that Dad likes. Then after Lunch I went on over to see Dad. Back home took it easy and watched a few shows that I had recorded. For my dinner tonight I’m preparing a Mini Flatbread Pepperoni and Sausage Pizza.

 

 

 

 

While at Jungle Jim’s Market the other day I picked up a package of Kontos Pre­Grilled Mini Oval Flatbread. I had used these once before and really liked the way they came out. It’s pregrilled so it’s ready to eat or reheat. What I liked about it was they were the perfect size to make mini Pizzas with, plus they’re only 140 calories and 24 net carbs for a whole one (one serving)!

 

 

 

 

 

To make the Pizzas I’ll need; the Kontos Pre­Grilled Mini Oval Flatbread, Hormel Turkey Pepperoni, Johnsonville Turkey Sausage Links, Sliced Black and Green Olives, Ragu Pizza Sauce, Sargento Reduced Fat Shredded Mozzarella Cheese.

 

 

 


To prepare it I started by preheating the oven on 400 degrees. The Johnsonville Turkey Sausage is precooked so all I had to do was heat up in a small skillet for 5 minutes on medium heat. Removed from the heat and sliced the Links up into small bite pieces. I then got a small baking sheet and lined it with foil and sprayed it with Pam Cooking Spray. I then took one of the Flatbreads and brushed a very light coat of Extra Virgin Olive Oil on the top of them.

 

 

 

 

Next I made my Pizza! I started by spreading 2 tablespoons of the Ragu Pizza Sauce across the top of the Flatbread. Then added the sliced Olives, Turkey sausage, Mozzarella Cheese, and topped it all with Turkey Pepperoni. Then I made a second one the same way. Laid the Flatbreads on the baking sheet and put it in the oven. I baked them for about 8 minutes, until the Cheese was melted and all items heated through.

 

 

 

 

 

The Flatbread provides a perfect Crust (Pizza Pie). It browned up great and had a fantastic flavor with a nice crunch! I’ll have to try different toppings, like Ham or Chicken, using the Kontos Pre­Grilled Mini Oval Flatbread. I’ve found a good Pizza Pie Crust and it’s only 140 calories per serving! For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Turkey Sausage, Turkey Pepperoni 7″ Whole Grain Crust Pizza

 

 
For Breakfast this morning I reheated the leftover Pork Chop from last night. Then I prepared some Simply Potatoes Shredded Hashbrowns, toasted 2 slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. Went out to get the Sunday Papers and its a cold one out there this morning, 18 degrees! For the day it was sunny and 39 degrees. After I ate I went to McDonald’s and picked up Breakfast for Mom. Finished up some laundry Mom had started before she went to Church. After Lunch I headed over to see Dad at Rehab. He’s wanting to come home, he’s homesick and bored. It shouldn’t be too much longer before they’ll release him. Hopefully he can stay home once he gets here. Back home watched some College Basketball and relaxed. For Dinner tonight I prepared a Turkey Sausage, Turkey Pepperoni 7″ Whole Grain Crust Pizza.

 


To make the Pizza I used a Mama Mary’s 7″ Whole Grain Pizza Crust. For toppings I used Jennie – O Ground Mild Breakfast Sausage, Hormel Turkey Pepperoni, Mushrooms, Sliced Green and Black Olives, Sargento Shredded Mozzarella Cheese, and Ragu Homestyle Pizza Sauce.

 

 

 

 

To prepare my Pizza; I first preheated my oven to 450 degrees. I then got a medium size skillet, sprayed it with Pam Cooking Spray and heated it on medium heat. Next I got the roll of Jennie – O Turkey Sausage out and sliced about 1/4 of the roll off. I put the remainder in a plastic bag and put it back in the fridge to use later for a meal. I crumbled the Sausage and fried until done. Removed it from the skillet onto a paper towel lined plate and set aside.

 

 

 

I removed the pizza crust from package. Lightly brushed crust with Extra Light Olive Oil. I then gathered my toppings up. The Black Olives are already sliced but the Green Olives come whole and I had to slice them. I then topped the crust with with; the Ragu Pizza Sauce, the Sargento Mozzarella Cheese, Hormel Turkey Pepperoni, Jennie – O Turkey Sausage, and finally the Black and Green Olives. The order of layers is all up to you.

 

 

 

Next I lowered the oven temperature to 425 degrees F. Then baked on oven Pizza Pan (middle position) for about 10 minutes. You can turn the oven on broil if you want to get the crust crisper if you want. I stopped at 10 minutes and it came out perfect! The Crust baked up with a nice crunch to it and all the ingredients worked great together. I love adding these Pizza Nights! For Dessert tonight a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Jennie – O Lean Mild Turkey Breakfast Sausage Roll
Breakfast Sausage Rolls contain less fat than regular pork sausage.

Product Features:
* Gluten Free
* 16-oz package (1 lbs)

Cooking Instructions:
SLICE:
* Remove casing and slice roll into 1/2 inch thick patties.

TO BAKE:
* Preheat oven to 400 °F.
* Spray shallow baking pan with nonstick cooking spray.
* Place patties in pan.
* Bake approximately 20 to 25 minutes.
* Always cook to well-done, 165º F. as measured by a meat thermometer.

STOVETOP METHOD:
* Spray skillet with nonstick cooking spray.
* Preheat skillet over medium-high heat.
* Place patties in hot skillet.
* Turn occasionally and cook approximately 15 to 17 minutes.
* Always cook to well-done, 165º F. as measured by a meat thermometer.
