Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

 


For Breakfast this morning I had a Poached Egg that I served on a toasted Thomas Light English Muffin. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s to pick up Breakfast for Mom. Its 85 degrees and partly sunny out today, humid also. Today was my Aunt’s Funeral. Its a shame that we don’t see a lot our relation except for Funerals. But everyone is all spread out through Ohio, Indiana, and Kentuckey so it makes it tough to see everyone. Feeling down today. For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans.

 

 

 

 


When making Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

 

 


For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. I usually use the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn) when making Tacos but tonight I’m using Mission – Street Tacos Flour Tortillas. First time using these and not the last! These are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert later a bowl of sliced South Carolina Peaches, love these Peaches!

Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

 

 

 

 

For Breakfast this morning I toasted a Thomas Light 100% Multi Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had the morning cup of Bigelow Decaf Green Tea. Mostly sunny and 87 degrees out today. Hotter and a bit more humid. After Breakfast I went to Meijer to buy Mom a couple of new lawn chairs and a small table for outside. Not much else going on so I got the cart out of the shed and rode around the neighborhood for a while. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

 

 

 

 

Been a while since I’ve had this and sounded perfect for Dinner tonight. So I picked up another package of Stonefire Mini Naan Ancient Grain Bread and Jennie – O Turkey Lean Turkey Sausage at Meijer my last visit there. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce. I love this Stonefire Mini Naan Ancient Grain Bread, it tastes so fresh and bakes up perfect!

 

 

 

 

 


I first Preheated the oven on 400 degrees. Next I grabbed a small skillet, sprayed it with Pam No Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

 

 

 

 

When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Lite House Dried Oregano, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

 

 

 

 

So Good!

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite you’ll knew the Naan Bread is the perfect Pizza Crust! The Crust had excellent taste and baked up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I keep a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Another day of 95 degrees and humid weather outdoors today. 81 degrees and sunny, low humidity and a pollen alert out for our area. I have to wear a surgical mask if the pollen count gets real high if I’m outside. Here the last few years my allergies have gotten worse. After Breakfast I went to McDonald’s to pick up Breakfast for Mom. All caught up on everything I loafed all day, and it felt great! For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans.

Today’s Menu: Cast Iron Skillet Pizza – Turkey Pepperoni and Turkey Sausage

 

 

 


I Had a Poached Egg on a Thomas Light Multi Grain English Muffin and my morning cup of Bigelow Decaf Green Tea for Breakfast. 97 degrees and humid outside today. We have an excessive heat warning out for the next few days. Highs in and around 100 degrees with the heat index up around 110 degrees and more! Say hello to my air conditioner! I found out through Facebook that a friend of mine lives a few streets over from me. It was so good seeing him and his wife. I had not seen them since I quit a printing place in Springdale, Ohio back in 1987. So good catching up with them. They had lived there for 7 years and we did’t know the other was living so close by! Good to have a good friend living close by! For dinner tonight Cast Iron Skillet Pizza – Turkey Pepperoni and Turkey Sausage.

 

 

 


Seen this recipe sometime back in an email update from one of my favorite blog sites, The Chunky Chef (https://www.thechunkychef.com/). I had not made this in quite some time and a Pizza sounded good for tonight! Cast Iron Skillet Pizza, it uses my favorite piece of cookware, the Cast Iron Skillet, and it’s making one of my favorite foods, Pizza. In her recipe she made her own dough for the Pizza Pie. I do not have a very good baking history using yeast, I’m down right terrible! So I just always use Pillsbury Classic Pizza Crust when making my own Pizza. For my toppings I’m using; Hormel Turkey Pepperoni, Jennie – O Turkey Ground Sausage, Sliced Mushrooms, Sliced Black Olives, Sliced Green Olives, Sargento Shredded Mozzarella Cheese, and Ragu Original Pizza Sauce. Using a medium size Skillet, I fried the Jennie – O Turkey Ground Breakfast Sausage ahead of time. When that was done I drained what little grease there was and put the Sausage in a small bowl, and set aside.

 

 


I preheated the oven at 425 degrees. I then took out a large Cast Iron Skillet, spraying it with Pam Cooking Spray w/ Olive Oil and added a tablespoon of Extra Light Olive Oil. Got the tube of Pillsbury Pizza Crust from the fridge and removed it from the packaging. I then got a flour board out and added a little bit of flour and Cornmeal to it. I then took the Pizza Dough on it and formed a ball with it. Sprinkled on some Cornmeal and rolled it out and shaped it by hand I love that crunch texture Corn Meal gives the bottom of the Pizza Crust.

 

 

 

 

Ready for the oven…

I added it to the Cast Iron Skillet and worked it out by hand, fully covering the bottom of the Skillet. I flipped the Dough Crust one time, that way I had a light coating of the Olive Oil on both sides. I then added my toppings; Hormel Turkey Pepperoni, Jennie – O Turkey Ground Breakfast Sausage, Sliced Mushrooms, Sliced Black Olives, Sliced Green Olives, Sargento Reduced Fat Shredded Mozzarella Cheese, and Ragu Original Pizza Sauce. Slid that baby into the oven and waited for it to get done! Baked it a total of about 11 minutes.

 

 

 

 

 

…and done!

It came bubbling hot and just flat out delicious! All the toppings and Sauce work great together, this makes on delicious Pizza. As all Pizzas you decide what toppings you want to use. It’s my family’s favorite Pizza Recipe, thanks to Amanda of My Adventures in Dinner Time! I’ve left the link and original recipe below. CAST IRON SKILLET PIZZA:

INGREDIENTS

2 1/2 cups bread flour
1/2 tsp dry active yeast
1 cup + 3 Tbsp warm water
2 tsp olive oil, plus more to coat pan
Pizza sauce
Cheese
Toppings
Fresh basil, minced (optional garnish)

DIRECTIONS

* Combine flour, yeast, salt, oil, and warm water in a large bowl. Using a wooden spoon, mix until no dry flour remains. Make sure the bowl is nice and large to accommodate for rising.
* Cover bowl tightly with plastic wrap and let sit on a counter for 8-24 hours. Dough will rise quite a bit.
* Once fully rested, sprinkle top of dough with flour and turn out onto a well floured surface.
* Divide dough into 2 portions, shape each into a ball/disk… tucking dough under itself to form a tight ball.
* If desired, place one of the balls in a Ziploc bag for freezing.
* Pour some oil (a couple of tablespoons) in the bottom of the cast iron pan, place ball of dough in pan, turning to coat in the oil.
* Using your hand, push the dough around to spread the oil in the pan.
* Cover tightly with plastic wrap and let rest for 2 hours.
* Preheat oven to 550 degrees (or as high as your oven goes)
* Once dough has rested, it should have settled and puffed to fill the pan. Use your fingers to push the dough into all edges of the pan and remove large air bubbles.
* Lift up edges of the dough to eliminate any air pockets on the bottom of the dough.
* Top the dough with your pizza sauce, cheese and any desired toppings or seasonings. Drizzle with olive oil.
* Place skillet in oven and bake for 12-15 minutes. The top should be bubbly and golden brown.
* Use a spatula to lift the edge of the pizza and check to see if the bottom is nice and golden brown and crisp. If you’d like it crispier, place on a stove top burner over medium heat for a couple of minutes.
* Sprinkle pizza with grated Parmesan cheese and/or fresh basil. Slice into pieces and serve hot.

MOROCCAN CHICKEN WITH EGGPLANT-ZUCCHINI RAGOUT

Ingredients

1-1/2 to 2 pounds chicken leg quarters
3 tablespoons olive oil, divided
1 teaspoon salt, divided
1 teaspoon freshly ground black pepper, divided
1 small eggplant, cut into 1/2-inch dice
1 medium zucchini, cut into 1/2-inch dice
1 small onion, diced
2 cloves garlic, minced
1/4 cup white wine or water
1 (14.5 ounce) can diced tomatoes with juices
1/4 cup pimento-stuffed green olives, roughly chopped
2 tablespoons capers, rinsed
2 tablespoons red wine vinegar
1 teaspoon sugar
2 tablespoons parsley, minced

Directions

1 – In large skillet over medium high-heat, warm 2 tablespoons olive oil. Season leg quarters with 1/2 teaspoon salt and 1/2 teaspoon black pepper. Add leg quarters to pan, skin-side down. Brown chicken, turning once, 8 to 10 minutes per side. Remove chicken to plate and drain off all but 2 tablespoons oil.
2 – Add eggplant to hot pan and cook, stirring, 5 minutes. Add remaining tablespoon olive oil, along with zucchini, onion and garlic. Cook 5 minutes, stirring occasionally.
3 – Raise heat to high and add white wine to pan, stirring to scrape up any browned bits. Add all other ingredients, except parsley, and place chicken legs in mixture. Bring to boil, reduce heat to medium-low, cover and simmer for 35 to 40 minutes or until cooked through or until an instant read thermometer reads 170F.
4 – To serve, place some of the eggplant ragout onto plates, top with a leg quarter and sprinkle with parsley.

NOTES:
The word ragout refers to a main dish, French-style stew. It is typically hearty and features well-seasoned meat or fish, often stewed along with vegetables. This is a very flavorful ragout which features chicken, eggplant, zucchini, tomatoes and olives.

Today’s Menu: Leftover – Italian Pasta Salad w/ Hardwood Smoked Turkey Sausage

 


Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. Not much of an appetite when the weather is this hot and humid. Went and picked up Breakfast for Mom at McDonald’s; Sausage, Egg and Cheese McMuffin and a Coffee. Mom went on to Church afterward. Humid and 90 degrees out today. Got the cart out of the shed and cleaned up around the yard. Then got the leaf blower out and cleaned off the deck and driveway. That was about it for the day. For Dinner tonight Leftover Italian Pasta Salad w/ Hardwood Smoked Turkey Sausage. Just couldn’t let these leftovers go to waste, they are so good! Something light to eat through this heat we have. I’ve left the original post from last night for descriptions and recipe. Enjoy!

 

 

 

 

For my Sausage I used Butterball Hardwood Smoked Turkey Sausage. I cut the Sausage Links into Bite size pieces. I absolutely love the Butterball Hardwood Smoked Turkey Sausage and I had been wanting some for a while. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! These go great with anything.

 

 

 

 

Then to go with the Turkey Sausage I prepared a Italian Pasta Salad, made about noon today. It always taste even better after chilled for a while. A Light and tasty dish that includes Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, Kraft Reduced Fat Grated Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Grinder Italian Seasoning. Prepared the Pasta according to the box and added all the ingredients and tossed until well mixed. Then refrigerated until ready to use.

 

 

 

 

To serve made a bed of the Pasta in a bowl and topped it with the sliced Turkey Sausage, and chowed down! The Pasta Salad and Turkey Sausage are a perfect combination. And the Kraft Italian Dressing provides some great flavor! I also had a slice of the some left over Garlic Bread Loaf. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Italian Pasta Salad w/ Hardwood Smoked Turkey Sausage

 

 


For Breakfast on this sunny Saturday Morning I had a cup of Bigelow Decaf Green Tea. Humid and a high of 88 degrees. Same old weather around here! Rain moving in this evening. Went to Meijer after Breakfast for a few items. Back home did a couple of loads of laundry and cleaned the house today. For Dinner tonight its an Italian Pasta Salad w/ Hardwood Smoked Turkey Sausage.

 

 

 

 


For my Sausage I used Butterball Hardwood Smoked Turkey Sausage. I cut the Sausage Links into Bite size pieces. I absolutely love the Butterball Hardwood Smoked Turkey Sausage and I had been wanting some for a while. It’s got such a fantastic flavor and always cooks up just right. To prepare them I used a large skillet, added about a 1/2 tablespoon of Extra Virgin Olive Oil and preheated it on medium heat. Put the Sausage in the skillet when it was heated up and covered with a lid. I turned the Sausage every few minutes to get an even char on them, cooked about 11 minutes total. As always they came out just bursting with flavor and flat-out delicious! These go great with anything.

 

 

 


Then to go with the Turkey Sausage I prepared a Italian Pasta Salad, made about noon today. It always taste even better after chilled for a while. A Light and tasty dish that includes Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, Kraft Reduced Fat Grated Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Grinder Italian Seasoning. Prepared the Pasta according to the box and added all the ingredients and tossed until well mixed. Then refrigerated until ready to use.

 

 

 

 


To serve made a bed of the Pasta in a bowl and topped it with the sliced Turkey Sausage, and chowed down! The Pasta Salad and Turkey Sausage are a perfect combination. And the Kraft Italian Dressing provides some great flavor! I also had a slice of the some left over Garlic Bread Loaf. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Another day of 95 degrees and humid weather outdoors today. Better chance of rain, which we now could use. After Breakfast I went to Mejier and then stopped at McDonald’s to pick up Breakfast for Mom. We had our Cable worked on again yesterday. Hopefully they have repaired the problem. Our picture has been freezing up and then I have to reboot the system. Anyway back home I finished cleaning and straightening up both freezers. For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans.

 

 

 

 

 


When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

 

 


For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. I usually use the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn) when making Tacos but tonight I’m using Mission – Street Tacos Flour Tortillas. First time using these and not the last! These are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert later a Dole Diced Peaches Cup.

Today’s Menu: Kitchen Closed – It’s Pizza Tonight from Domino’s

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. Mostly Sunny and 72 degrees out today. We went to pick up the vacuum at repair shop and then I dropped Mom off back at home and went to the Bank and ran an errand. Back home as I was coming down the street I seen a neighbor run over to our house. I pulled up and Mom had tripped and fell in the driveway. I didn’t want to move her because she said her shoulder and left hip were hurting. I called 911 and they were here in about 5 minutes or so. They got her up and sat her in a chair. She had bruises on left arm and a scrape on her left knee. She wouldn’t go the hospital so they helped her into the house. Our 911 Responders in this area are the best, thank you guys! They told me to call them back and they would take her to the hospital if needed. She’s sore but doing good and nothing broken! So anyway not a lot of time to cook so she said she would like to have a Pizza.

 

 

 

 

So Pizza it was and my Dinner was put on hold. I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! I had a Caffeine Free Diet Coke to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Sprite Zero to drink. The Kitchen reopens tomorrow! Take care all.
