Turkey Taco Cups
Impress a brunch crowd with these cute, flavorful mini-breakfast cups. Baked with eggs, Cheddar and lean turkey sausage, this recipe is under 300 calories per serving!

INGREDIENTS
3 corn tortillas
olive oil cooking spray
1 (12-ounce) package JENNIE-O® Lean Turkey Breakfast Sausage Links, casing removed, sliced
½ cup tomato salsa
2¼ cups egg whites or egg substitute
¼ cup shredded low-fat Cheddar cheese
¼ cup sliced ripe olives
2 tablespoons chopped fresh cilantro
salsa, if desired

DIRECTIONS
1) Heat oven to 400°F. Stack corn tortillas and cut into quarters. Cut quarters in half 8 wedges for each tortilla (and a total of 24 wedges). Spray muffin cups with cooking spray.
2) Cook and crumble turkey sausage links as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
3) To assemble: Place one tortilla wedge in each muffin cup, with the widest side at the bottom of the cup. Place a second tortilla wedge on the opposite side of the muffin cup so that the wide edges will be overlapping in the bottom of the cup, by about ½-inch. The tortilla wedge points will extend outside of the cup, about ½-inch straight up. Repeat with remaining. Place about 1½ tablespoon sausage (from one whole link) in each muffin cup, on top of the tortilla wedges. Place a tablespoon of salsa on top of the sausage.
4) Measure 3 tablespoons of egg white (or egg substitute) into each muffin cup. Bake 10 minutes or until eggs are just set. They will be slightly puffed. Carefully remove “muffins” from pan and place two on each serving plate. Sprinkle each “muffin” with cheese. Top each muffin with few olive slices and sprinkle with cilantro. Serve with extra salsa, if desired.
* Always cook to an internal temperature of 165°F.

Today’s Menu: Turkey Tacos and Refried Beans

 

 

To start today off I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Mostly cloudy and 43 degrees. A lot nicer than yesterday! After Breakfast I had to go to the local Kroger for just a couple of items. I then stopped by McDonald’s to pick up Breakfast for Mom and Dad. Finished up some house cleaning and then swept off the ramp and driveway area. For Dinner Tonight it’s Tacos, Turkey Tacos and Refried Beans.

 

 

We have all been wanting Tacos for some time, and tonight is the night! When making Turkey Tacos I love using Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom and Dad. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Grilled Ham, Bacon, and Muenster Cheese Sandwich w/ Baked Fries

 

 

For Breakfast this morning I broke out a can of Turkey Spam. First time I used Turkey Spam in quite a while. It’s another one of those items I love but never seem to use often. I sliced off a couple of pieces to fry. I lightly sprayed a small skillet with Pam Non Stick Spray and heated the skillet on medium heat. Since they’re already fully cooked while still in the can, so you only need to brown them slightly. About two minutes on each side. As the Spam cooked I toasted a Healthy Life Whole Grain English Muffin. I then used the same skillet I fried the Spam and fried 1 Egg Sunnyside Up. Put it all together and I had one delicious Turkey Spam and Fried Egg Breakfast Sandwich! I’ve been dealing with a Sinus Headache the last couple of days so being caught up on all the house work I rested and caught up on some shows I recorded. For Dinner tonight I prepared a Grilled Ham, Bacon, and Muenster Cheese Sandwich w/ Baked Fries.

 

When I went to Kroger the other day I picked up some Boar’s Head Sweet Sliced Ham and Boar’s Head Muenster Cheese. Which means it’s time again for Grilled Sandwiches! So for tonight Grilled Sandwich I’m making a Grilled Ham, Bacon, and Muenster Cheese Sandwich! I’ll be using Boar’s Head Sweet Slice Ham, Simple Truth Hickory Smoked Bacon, Boar’s Head Muenster Cheese, French’s Spicy Brown Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Aunt Millie’s light Whole Grain Bread. I’ll be preparing the Sandwich on my flat top griddle so I’ll also need some Blue Bonnet Light for the griddle to grill my Sandwich. That’s the ingredients for another delicious Grilled Sandwich! I also turned the oven on at 425 degrees, for the Fries.

 

I first prepared my Bacon. Again, I used Simple Truth Hickory Smoked Bacon. It fries up great and love the flavor. But AS always when preparing Bacon you have to use Bacon Math to figure out how much Bacon to fry. I needed 3 slices so by my Bacon Math that totals out 6 slices! When making Bacon always multiply the amount by 2. Because you know you’ll always eat as much as you making! Laid the Bacon on a Paper Towel lined plate until needed.

 

 

 

 

While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Aunt Millie’s Bread and topped it with some of the Kraft Mayo. Then layered the Boar’s Head Ham, the Boar’s Head Muenster Cheese, the Bacon, French’s Brown Spicy Mustard, and added the top slice of the Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! What a Sandwich, Boar’s Head Gone Wild! The Ham ,as always, was delicious and the Muenster Cheese with it’s melted creaminess made the sandwich. And of course Bacon on anything makes it better! The Simple Truth Hickory Smoked Bacon has slowly become my favorite Bacon. Last week I used Boar’s Head Gouda Cheese and I switched it up using the Boar’s Head Muenster Cheese. Both melt beautifully on Sandwiches and have that rich creamy taste. I love either one!

 

As my Grill was heating I baked my Fries. I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right. Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Muenster (English: /ˈmʌnstər/ or /ˈmʊnstər/) or munster is a semi-soft cheese from the United States. It is thought to be an imitation of the Alsatian washed-rind Munster cheese, introduced by German immigrants. It is distinct from the processed dairy food Sweet Muenster Cheese. Today’s Menu: Grilled Ham, Bacon, and Gouda Cheese Sandwich w/ Baked Fries

 

 

For Breakfast this morning I prepared Scrambled Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. It started raining yesterday and still raining this morning. We started out at 40 degrees this morning and kept dropping through the day. By the afternoon the rain turned to freezing rain, then sleet, and finally snow. Now the question is how much we end up with. Stay tuned! After Breakfast I had to go and pick up a couple prescriptions for Dad and picked up Breakfast for Mom and Dad at McDonald’s. Had everything done so I caught up on some shows I recorded. For Dinner tonight I prepared a Grilled Ham, Bacon, and Gouda Cheese Sandwich w/ Baked Fries.

 

On my last visit to Kroger they had Boar’s Head Sweet Sliced Ham and Boar’s Head Gouda Cheese. I love Grilled Sandwiches! With different Cheese, Ham, Bacon, Salami, Turkey, I love Grilled Sandwiches! So tonight Grilled Sandwich I’m making a Grilled Ham, Bacon, and Gouda Cheese Sandwich! I’ll be using Boar’s Head Sweet Slice Ham, Simple Truth Hickory Smoked Bacon, Boar’s Head Gouda Cheese, French’s Spicy Brown Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Aunt Millie’s light Whole Grain Bread. Today’s Menu: The Kitchen is closed!……..LaRosa’s MEAT DELUXE Pizza

 

 

For Breakfast this morning I tries a new Bacon I cam across at Meijer yesterday, al fresco Uncured Chicken Bacon. It fried up good and was crispy after frying. It had good taste, I’ll have this more often! So for Breakfast I had the Chicken Bacon, 1 Egg Sunnyside Up, 2 toasted slices of Aunt Millie’s Light Whole Grain Bread (lightly buttered), and that morning cup of Bigelow Decaf Green Tea. Another morning of below zero temperatures, minus 2 degrees. Mostly cloudy and 18 degrees for a high. It was good to get out for a while yesterday. I had a case of cabin fever! I’ll be glad when this weather breaks and we have days with sunshine and above freezing temperatures! So anyway I cleaned the, vacuum and dusted. Then later a load of laundry. For Dinner tonight I shut down the Kitchen and ordered a Pizza. Tonight it’s a LaRosa’s MEAT DELUXE Pizza.

 

It has been a very long time since I’ve had a Pizza from LaRosa’s Pizzeria! My Cousin’s son was selling LaRosa’s Gift Cards to earn money for their Football Team so I bought 1 for Mom and 1 for my neighbor next door. Mom and Dad wanted a Pizza so we’re using her LaRosa’s Gift Card. We ordered a LaRosa’s MEAT DELUXE Pizza.

 

 

 

 

We ordered a large Pizza. It comes with toppings of LaRosa’s Family Recipe Pizza Sauce and Provolone, topped with lots of Pepperoni, Sausage, Ground Beef, Capocolla Ham, and Bacon. We added Mushrooms and Olives to it also. The Pizza arrived right on time and piping hot! I forgot just how good the Pizza is at LaRosa’s. The Crust, LaRosa’s Sauce, and all the toppings make for one delicious Pizza and Meal! We really enjoyed this! More calories and carbs than I’m used to having but worth it. I make my Pizza, Lasagna, and Spaghetti Sauce all using the LaRosa’s Sauce. For Dessert later a Dole No Sugar Added Peach Chunk Cup. Well the Kitchen will reopen tomorrow, later!

Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Sweet Italian Turkey Sausage

 

 

For Breakfast this morning I Poached an Egg, fried a few slices of Boar’s Head Sweet Slice Ham, toasted a Healthy Life Whole Grain English Muffin, and had my morning cup of Bigelow Decaf Green Tea. Good start to a rainy Thursday morning! It started raining overnight and a few showers this morning. Cloudy and 51 degrees for a high. Stayed in most of the day and got some things done around the house. For Dinner tonight; Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Sweet Italian Turkey Sausage.

 

 

I picked up a package of Stonefire Mini Naan Ancient Grain Bread at Meijer earlier in the week. And I’m using them to make some Mini Pizzas. For my toppings I’m using Hormel Turkey Pepperoni, Jennie – O Sweet Italian Turkey Sausages, Mushrooms, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce.

 

 

 

 

 

Preheated the oven on 400 degrees. Next I grabbed a medium size skillet, sprayed it with Pam Cooking Spray, added a 1/2 tablespoon of Extra Light Olive Oil, and heated it on medium heat. As the skillet was heating I got 2 Jennie – O Sweet Italian Sausages and cut the end off each Sausage . Then squeezed the Sausage Meat out of the casing and formed that into small chunks. With the skillet heated I fried the Sausage pieces. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

The oven was heated up and I got the Naan Bread ready. I used a small baking sheet, lined it with foil, and sprayed it Pam Cooking Spray. I lined the 4 Naan Breads up on the baking sheet. I then brushed a light coat of Extra Virgin Olive oil on the top of them. I then baked then for about 2 minutes. Pulled the sheet out of the oven and let the Naan Bread cool for 5 minutes.

 

 

 

When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sweet Italian Sausage pieces, next the Black and Green Sliced Olives, sliced Mushrooms, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

 

 

 

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite I knew the Naan Bread was a perfect Pizza Crust! The Crust had excellent taste and baked up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I’ll have to get a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

* Cook covered, turning occasionally, 17 – 19 minutes.
* Always cook to well-done, 165º F. as measured by a meat thermometer.
* Always cook to an internal temperature of 165°F.

Today’s Menu: Chili and Cheese Nachos

 

 

To start my day off I toasted a couple of Eggo Nutrigrain Waffles. Also had the morning cup of Bigelow Decaf Green Tea. Not quite as cold this morning, 30 degrees. Had a high of 45 degrees and mostly sunny, not bad for this time of year. Mom went to Church and stayed home and watched Dad. So I cleaned the house and did a load of laundry. After Lunch I got the leaf blower out and cleaned the deck and driveway off, still a lot of leaves blowing around. Had everything done and caught up on some programs I had recorded. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

 

We love Chili and Cheese Nachos around here! It’s been a while since I’ve made any and they sure sounded good for Dinner tonight. To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! Also had a Diet Dr. Pepper to drink. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or until hot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.

Today’s Menu: Subway 6″ Sub and Chips

 

For Breakfast this morning I prepared Skillet Diced Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s and picked up Breakfast for Mom and Dad. In the 20’s this morning and a cold wind blowing! We only had a high of 36 degrees. So not a lot going on outside. Cleaned the fridge out, then the stove and oven, then on to the pantry. Took the brushes out of the vacuum and cleaned them. Well I got everything done so I watched some TV and read a couple of Food Magazines. Tonight I’m having a Subway 6″ Sub on 9 Grain Bun w/ Turkey and Black Forest Ham.

 

 

Didn’t feel like cooking tonight and I hadn’t had Subway in a while so it just sounded good for dinner! I had a 6″ Black Forest Ham and Turkey Sub on a 9 grain Wheat Bun w/ Black Olives, Lettuce. The total calories for the sub is 270 calories and 41 net carbs. I added Hellman’s Light Mayo and French’s Yellow mustard to the Sandwich when I got home. I also had a side of Ruffle’s Reduced Fat Potato Chips and a bottle of Diet Dr. Pepper. For dessert later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.
