Today’s Menu: Leftover Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham, and had a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. Another repeat in our weather except its more humid! High of 94 degrees and real humid! After Breakfast I got some yard work done. I wanted to get it done before the heat and humidity got too bad. Not much else going on, stayed in and kept cool! For Dinner tonight, Leftover Turkey and Black Bean Street Tacos and Refried Beans. I reheated everything. I was going to prepare something else but Mom insisted on these leftovers. This is one of her favorites! I left the original post from yesterday below for instructions and description of the recipe. When making Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have a good selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortilla are so good and taste so fresh. For Dessert later some Honeycrisp Apple Slices.

For Breakfast I had a cup of Bigelow Decaf Green Tea. 96 degrees and sunny out today, another hot one out there! Went and picked up Breakfast for Mom at Wendy’s. Back home did a load of laundry. Cleaned the house today, dusted and ran the sweeper. For Dinner tonight I prepared Turkey and Black Bean Mini Street Tacos and Refried Beans.

 

 

When making Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have a good selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortilla are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Mango/Tea Snapple.

My allergies got the best of me today, headaches all day! So the Kitchen is closed and hello Domino’s! I ordered a Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! For Dessert/Snack later a Diet Peach Snapple. Take Care All!

Today’s Menu: Fried Oysters w/ Italian Pasta Salad

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 74 degrees and partly sunny out today. After Breakfast I went to Walmart, stopped by a local Lawn and Garden Center, and had the car washed. Mom went back to Church this morning, first time in a couple of months. She was so happy to see all her friends! Not a lot going on, just kicked around the house doing a few things. For Dinner tonight I prepared Fried Oysters w/ Italian Pasta Salad. (Camera stopped working, again. So no plate shot.)

 

As usual I used Hilton’s Fresh Farm Raised Pacific Willapoint Oysters, my favorite. To prepare them; Place shucked Oysters in a colander rinse in cold water and drain. Dredge drained Oysters in the Flour, then Egg Beater’s, and then in Panko Crumbs seasoned with Sea Salt and Pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. An easy way to coat the Oysters with the Panko Crumbs is to place the Crumbs in a resealable plastic bag, add Egg-dipped oysters, seal the bag, and then shake.

 

Next, heat the Extra Light Olive Oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot. Fry oysters until golden brown on one side, then turn over each Oyster carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from the frying pan and serve immediately. Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce. I served mine with some McCormick’s Tarter Sauce with a side of my favorite hot sauce Frank’s Hot Sauce. These are so delicious, golden brown and with an incredible fresh flavor.

 

Then to go with the Oysters I prepared an Italian Pasta Salad, made about noon today. It always tastes even better after chilled for a while. A Light and tasty dish that includes Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, Kraft Reduced Fat Grated Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Italian Seasoning. Prepared the Pasta according to the box and added all the ingredients and tossed until well mixed. Then refrigerated until ready to use.

 

Boiled the Pasta for 10 minutes and drained it. After it cooled I seasoned and added it with the Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, Kraft Reduced Fat Grated Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Italian Seasoning. I can’t wait to dig in! Oysters and Italian Pasta Salad makes a good combo! For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Light.

 

 

 

 

 

 

 

Pan-Fried Oysters Recipe:
Ingredients:

12 large-medium Oysters, shucked
1 tablespoon Flour
1 Eggs, beaten or 1/4 cup egg Beater’s
1 cup Shake and Bake Seasoned Panko Bread Crumbs
Sea Salt and Pepper, to taste
2 to 3 tablespoons Extra Light Olive Oil
Lemon Wedges, optional
Hot sauce, optional
Seafood Cocktail Sauce, optional

Preparation:

Place shucked oysters in a colander to drain.

1 – Dip drained oysters in flour, then beaten eggs, shake off excess, and in panko crumbs seasoned with salt and pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. Today’s Menu: Domino Pizza Night

 

 

 

To start my morning off I made a Fried Egg Sandwich. Cracked a couple of Eggs and fried it till the bottom browns and flip it. I then added my slice of Kraft Deli Deluxe Sharp Cheddar Cheese on top of it. As the Eggs were cooking I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, served the Eggs on the toast. I also had my morning cup of Bigelow Decaf Green Tea. Mostly cloudy and 86 degrees out to today. Got the cart out of the shed after Lunch and did a few things around the house and yard. Mom wanted Pizza tonight! So the Kitchen is closed and Domino delivered us a Pizza!

 

So what Mom wants, Mom gets! So I ordered our favorite Pizza, Domino Pizza. I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. As always the Pizza arrived on time, hot and delicious! I had a Coke Zero to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink. The Kitchen will reopen tomorrow. Take care all and have a fantastic Memorial Day Weekend!

Today’s Menu: Domino Pizza Night

 

 

To start my morning off I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Rain and 47 degrees out today. I had to make some repairs to my wheelchair that I keep in the trunk of my car. Then later replaced the rubber tips on the legs of my 2 walkers. Got the leaf blower out and cleaned off the driveway area. Just trying to stay busy! From what I hear the virus is showing signs of slowing down here in Ohio, finally! Sure hope it gets back to normal soon! The Kitchen is closed and Domino delivered Pizza!

 

I was planning on making some Gumbo for Dinner tonight but Mom wanted Pizza. So what Mom wants, Mom gets! So I ordered our favorite Pizza, Domino Pizza. I ordered Mom’s favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. As always the Pizza arrived on time, hot and delicious! I had a Coke Zero to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink. Had to move the cars out of the driveway and all outdoor furniture off the deck this morning. We are having our house sprayed down and cleaned. We get it done once a year in early Spring. They also spray down and scrub the driveway and shed. We might as well get everything in shape while we are in isolation! For Dinner tonight, Leftover Turkey and Black Bean Street Tacos and Refried Beans. I reheated some of items for this and cooked the remaining Ground Turkey. Today’s Menu: Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage

 

 

For Breakfast to start this morning off I prepared Sausage links and Scrambled Eggs. I fried up a couple of Jennie – O Turkey Breakfast Sausage Links. Next I Scrambled a couple of eggs, topped them with a sprinkle of Sargento Off the Block Cheddar Cheese and Ortega Smoky Chipotle Taco Sauce. I love the Ortega Sauce, it gives food such excellent flavor. Also had my morning cup of Bigelow Decaf Green Tea. A whole lot cooler out today! It was 31 degrees this morning and a high of 46 degrees, it was a record high of 84 degrees 2 days ago! This Ohio weather is something! Still windy out there! I got the cart, rake, and leaf blower out and did some storm cleanup from the bad storm the other night. Lot of Tree Limbs and branches, leaves, and trash all over. I got my yard and helped 3 of my neighbors out cleaning theirs. I’m so glad I’ve got the 4 wheel mobility cart so I can do things like this! For Dinner tonight Ancient Grain Mini Naan Bread Pizza – Turkey Pepperoni and Turkey Sausage.

We love these Naan Bread Pizzas so much! These are so easy to fix and so delicious! I had a package of Stonefire Mini Naan Ancient Grain Bread in the freezer, laid it in the fridge overnight to thaw. For my toppings for the Pizza I’m using Hormel Turkey Pepperoni, Jennie – O Lean Turkey Sausage, Black Olives, Green Olives, Oscar Mayer Hickory Smoked Bacon Bits, Sargento Shredded Mozzarella Cheese, and Ragu Traditional Pizza Sauce. I love this Stonefire Mini Naan Ancient Grain Bread, it tastes so fresh and bakes up perfect!

 

 

I first Preheated the oven on 400 degrees. Next I grabbed a small skillet, sprayed it with Pam No Stick Cooking Spray, and heated it on medium heat. As the skillet was heating I opened up a roll of the Jennie – O Lean Turkey Sausage. I cut off a slice of it and crumbled up. Added it to the heated skillet and fried Sausage Crumbles. When they were browned and heated through removed them from the skillet into a small bowl until ready to use.

 

With the oven preheated I lined the Naan Bread to the baking sheet and baked it for 2 minutes. When the Bread cooled I added the toppings on top. I started with the Ragu Pizza Sauce. Next slices of Hormel Turkey Pepperoni. Then the Jennie – O Turkey Sausage Crumbles, next the Black and Green Sliced Olives, Lite House Dried Oregano, Oscar Mayer Bacon Bits, and finally the Sargento Shredded Mozzarella Cheese. Slid the baking sheet back into the oven to bake.

 

I baked the Naan Bread Pizzas for about 8 minutes, until the ingredients had heated through and Cheese melted. Pulled the baking sheet from the oven and let the Pizzas cool for 3 minutes. With the first bite you’ll knew the Naan Bread is the perfect Pizza Crust! The Crust has excellent taste and bakes up perfect. Then with all my toppings had some great Pizzas. Plus a lot fewer calories and carbs than normal Pizza Pies. I keep a couple of packs of the Stonefire Mini Naan Ancient Grain Bread and keep them in the freezer. For Dessert later a Sugar Free Dark Cherry Jello.

Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

For Breakfast this morning I had a Poached Egg served on a toasted Thomas Light English Muffin. Also had my morning cup of Bigelow Decaf Green Tea. 75 degrees and mostly sunny out today. Thank goodness for the nice weather so we can at least get outside a bit! I didn’t do a thing all day but get caught up on some sleep. I had Phantom Pains all last night and into this morning till about 11:00. I’m beat! For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans.

 

 

 

When making Turkey Tacos I always use my favorite, Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have a good selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Mission Tacos together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. These Tortilla are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Sprite Zero to drink.
