Today’s Menu: Turkey Tacos and Refried Beans

 

 

For Breakfast this morning I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin, lightly fried an al fresco Country Style Chicken Sausage Breakfast Patty, and had a cup of Bigelow Decaf Green Tea. 88 degrees, humid, and scattered showers out today. After Breakfast I had to go to the local Kroger and pick up a couple of items. Then went to the Post Office, got gas, and stopped and picked up Breakfast at McDonald’s for Mom. Later on I went to Menard’s and picked up a new shower head for Mom’s Shower. So for Dinner tonight, It’s a Taco Night! I prepared Turkey Tacos and a side of Refried Beans.

 

 

Our household love’s Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom and Dad. We made a big plate of it for Dad and took it it to the Center for him. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu: Turkey Tacos and Refried Beans

Had to change our Dinner plans at the last second, small family problems. Everything good now but out of the mood to cook so it’s Domino’s tonight!

 

 

 

 

 


I ordered our favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! I had a Green Tea Diet Snapple to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink. The Kitchen will reopen tomorrow! Take care all.

Today’s Menu: Salmon Pesto Pasta and Baked Garlic Loaf Bread

 

 

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. I went to McDonald’s to pick up Breakfast for Mom. Mom went on to Church and I went to the Cemetary to put flowers on Dad’s Grave for Father’s Day. Happy Father’s Day to all the Dad’s out there! I decided to take a ride over to our old house in Ross, Ohio. When we left Ross back in the early 80’s it was just starting to grow. And now it’s still growing! A ton of changes compared to how it was back then. Still a beautiful small town though! Back home did a couple of loads of laundry and did a little cleaning outside. But it is hot and humid out. 99 degrees and a heat index well over 100 degrees today. For Dinner tonight I prepared a Salmon Pesto Pasta and Baked Garlic Loaf Bread.

This recipe was inspired by a recipe I came across on a WordPress Blog (The Cooking Diaries) and it sounded and looked delicious. Plus it looked light and fresh, which is how I like hot weather dishes! I needed a few items to make the dish so I went to Jungle Jim’s International Market yesterday. They are the only store in area anymore that carries the Ronzoni Smart or Ronzoni Healthy Harvest Pasta Products. I love shopping at Jungle Jim’s! They carry Anything and Everything, I’m serious! You could spend an entire day in there. The Deli, Produce, and Seafood Departments are my favorites.

 

 

 

So to make the Dish I’ll need; 1 can Pink Salmon (Fresh or Canned), Extra Light Olive Oil, McCormick Grinder Sea Salt and Grinder Peppercorn Medley, Lemon Juice, Ronzoni Garden Delight Trio Italiano Pasta, Sliced Black Olives, a few small Anchovy Slices in Olive Oil, Kraft Reduced Fat Grated Parmesan Cheese, and 1 tube Just Add Basil Pesto. I added a few Ingredients and dropped an Ingredient from the original recipe, the original recipe and the web link are at the end of the post.

 

 

To prepare it; I first made my Pasta. Boil the Pasta according to the box; drain the Pasta and let it cool. Once cooled add the Pasta to a large bowl and add all the ingredients and fold in everything including the can of Pink Salmon. You can warm the Salmon if you prefer before adding it. Put the Pasta Salad in a large plastic bowl with a lid and set it in the fridge until your ready to use it.

 

 

 

 

The Pasta, Salmon, and Pest went great together! Everything tasted light and fresh. Excellent Dish. I also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Salmon Pesto Pasta
Ingredients
-1/3 pound salmon

-1 tsp olive oil

-1 tsp seasoning salt

-1/3 cup frozen or fresh peas

-pinch of salt and pepper

-a few squeezes of lemon juice (1-2 tsp)

-1/2 cup pesto

-1 1/2 cups rotini pasta

-shredded parmesan for toppings

Directions
1 – Cook pasta according to directions while doing the following steps.
2 – Heat oil in a pan on medium heat. Salt salmon with seasoning salt.
3.Add salmon skin side up and let cook for 3 minutes (salmon will look golden). Flip and cook on other side for 3 more minutes (skin will crisp up).
4 – Remove salmon and break it up (removing the skin).
5 – Add peas to same pan and a little bit of water (to cover the peas). Cook for 3-5 minutes and add some salt.
6 – Drain peas and add salmon back to pan. pour cooked and drained pasta into pan along with pessto and mix well. it’s okay to add more pesto if you think it needs more too!
7 – Squeeze lemon over the top and serve. Enjoy!

Mostly sunny and 80 degrees outside! Beautiful day outside! After Breakfast I headed to Meijer for a few sale items and went to their Garden Center also. On the way back I stopped at McDonald’s to pick up Breakfast for Mom. Well we got Dad into his new home. It is so much nicer, it’s not even fair to compare the two! We are so happy that they had a place open for him. So for Dinner tonight, It’s a Taco Night! I prepared Turkey Tacos and a side of Refried Beans.

You need sides or toppings for a dish or fresh ingredients for a recipe but you don’t need much – Try your Grocery Salad Bar. Most have sliced Olives, Mushrooms, Bacon, Chick Peas, Beans, Chopped Lettuce, and more. Why waste money buying a full can of something that you’ll end up not using. Think Salad Bar!

To start my morning off I prepared a Poached Egg and served it on a toasted Healthy Life Whole Grain English Muffin. I also had a cup of Bigelow Decaf Green Tea. What a day outside today, 80 degrees and sunny! We were all wondering if Spring would ever get here, and I think it has finally. After Breakfast me and Mom headed out to go see Dad for a while. He was doing pretty good today! Back home did a few things around the house and outside. Then at 2:00 I had to take Mom to an eye appointment. It took a while, she has to schedule a Cataract Removal. The Family Doc called and said all my test results came back great! Diabetes 2 numbers looked good along with the Cholesterol and the rest. Back home too much running around today so the Kitchen is Closed! Tonight its Domino’s Pizza!

 

We got out favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! Partly Cloudy and 70 degrees outside today. After Breakfast i headed up to the local Kroger for a few things for me and Mom. Later on I did some light clean up of the house and then went outside to work on getting our shed in shape. I’ve been clearing it out of old tools, boxes, fishing gear, and kitchen items. Things that haven’t been used in 10 years or more. So for Dinner tonight, It’s a Taco Night! I prepared Turkey Tacos and a side of Refried Beans.

Today’s Menu: Turkey Tacos and Refried Beans

 

 

To start my morning off I Scrambled a couple of Eggs, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Wow, we have had so much rain , and more coming! Today we had a high of 60 and dry in the morning but rain moving in for the evening. Anyway after Breakfast I went grocery shopping at Meijer. It’s getting tougher and tougher to keep your grocery bill down, stuff just keeps going up! Really have to do some smart shopping and coupons. On the way back in I stopped and picked up Breakfast for Mom at McDonald’s. Dad seems to be adjusting to his new home at the assisted living center. Still wish he was home with us. But as they say “Life goes on”, and we will but its tough. For Dinner tonight, It’s a Taco Night! I prepared Turkey Tacos and a side of Refried Beans.

 

 

We had Tacos last week and they were so good, we’re having them again. When making Turkey Tacos I love using Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!

 

 


For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom and Dad. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple.

Cooking Instructions:

* Always cook to well-done, 165°F. as measured by a meat thermometer.
