Today’s Menu: Subway 6″ Sub and Chips

 

For Breakfast this morning I prepared Skillet Diced Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s and picked up Breakfast for Mom and Dad. In the 20’s this morning and a cold wind blowing! We only had a high of 36 degrees. So not a lot going on outside. Cleaned the fridge out, then the stove and oven, then on to the pantry. Took the brushes out of the vacuum and cleaned them. Well I got everything done so I watched some TV and read a couple of Food Magazines. Tonight I’m having a Subway 6″ Sub on 9 Grain Bun w/ Turkey and Black Forest Ham.

 

 

Didn’t feel like cooking tonight and I hadn’t had Subway in a while so it just sounded good for dinner! I had a 6″ Black Forest Ham and Turkey Sub on a 9 grain Wheat Bun w/ Black Olives, Lettuce. The total calories for the sub is 270 calories and 41 net carbs. I added Hellman’s Light Mayo and French’s Yellow mustard to the Sandwich when I got home. I also had a side of Ruffle’s Reduced Fat Potato Chips and a bottle of Diet Dr. Pepper. For dessert later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

Today’s Menu: Cast Iron Skillet Pizza – Turkey Pepperoni and Turkey Sausage

 

 

I Had a Poached Egg on a Healthy Life Whole Grain English Muffin, fried 2 Jennie – O Turkey Breakfast Sausage Links, and my morning cup of Bigelow Decaf Green Tea for Breakfast. Finished up some laundry for mom and some light house cleaning around the house. The weather out is a chilly day. 19 degrees this morning, wind chill made it 15 degrees) and a high of 35 degrees. Later on I went to Kroger for Mom, she needed a few items. For dinner tonight Cast Iron Skillet Pizza – Turkey Pepperoni and Turkey Sausage.

 

 

Seen this recipe sometime back in an email update from one of my favorite blog sites, The Chunky Chef (https://www.thechunkychef.com/). I had not made this in quite some time and a Pizza sounded good for tonight! Cast Iron Skillet Pizza, it uses my favorite piece of cookware, the Cast Iron Skillet, and it’s making one of my favorite foods, Pizza. In her recipe she made her own dough for the Pizza Pie. I do not have a very good baking history using yeast, I’m down right terrible! So I just always use Pillsbury Classic Pizza Crust when making my own Pizza. For my toppings I’m using; Hormel Turkey Pepperoni, Jennie – O Turkey Ground Sausage, Sliced Mushrooms, Sliced Black Olives, Sliced Green Olives, Sargento Shredded Mozzarella Cheese, and Ragu Original Pizza Sauce. Using a medium size Skillet, I fried the Jennie – O Turkey Ground Breakfast Sausage ahead of time. When that was done I drained what little grease there was and put the Sausage in a small bowl, and set aside.

 

I preheated the oven at 425 degrees. I then took out a large Cast Iron Skillet, spraying it with Pam Cooking Spray w/ Olive Oil and added a tablespoon of Extra Light Olive Oil. Got the tube of Pillsbury Pizza Crust from the fridge and removed it from the packaging. I then got a flour board out and added a little bit of flour and Cornmeal to it. I then took the Pizza Dough on it and formed a ball with it. Sprinkled on some Cornmeal, not a lot, and rolled it half way out. I love that crunch texture Corn Meal gives the bottom of the Pizza Crust.

 

 

Ready for the oven….

I didn’t fully roll it out because I wanted to add it to Cast Iron Skillet and work it out by hand, fully covering the bottom of the Skillet. I flipped the Dough Crust one time, that way I had a light coating of the Olive Oil on both sides. I then added my toppings; Hormel Turkey Pepperoni, Jennie – O Turkey Ground Breakfast Sausage, Sliced Mushrooms, Sliced Black Olives, Sliced Green Olives, Sargento Reduced Fat Shredded Mozzarella Cheese, and Ragu Original Pizza Sauce. Slid that baby into the oven and waited for it to get done! Baked it a total of about 11 minutes.

 

 

…and done!

It came bubbling hot and just flat out delicious! All the toppings and Sauce work great together, this makes on delicious Pizza. As all Pizzas you decide what toppings you want to use. It’s my family’s favorite Pizza Recipe, thanks to Amanda of My Adventures in Dinner Time! I’ve left the link and original recipe below. When you get a chance check out her blog, full of tips and recipes. For dessert later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink.

 

 

 

 

CAST IRON SKILLET PIZZA:

INGREDIENTS

2 1/2 cups bread flour
1/2 tsp dry active yeast
1 cup + 3 Tbsp warm water
2 tsp olive oil, plus more to coat pan
Pizza sauce
Cheese
Toppings
Fresh basil, minced (optional garnish)

DIRECTIONS

* Combine flour, yeast, salt, oil, and warm water in a large bowl. Using a wooden spoon, mix until no dry flour remains. Make sure the bowl is nice and large to accommodate for rising.
* Cover bowl tightly with plastic wrap and let sit on a counter for 8-24 hours. Dough will rise quite a bit.
* Once fully rested, sprinkle top of dough with flour and turn out onto a well floured surface.
* Divide dough into 2 portions, shape each into a ball/disk… tucking dough under itself to form a tight ball.
* If desired, place one of the balls in a Ziploc bag for freezing.
* Pour some oil (a couple of tablespoons) in the bottom of the cast iron pan, place ball of dough in pan, turning to coat in the oil.
* Using your hand, push the dough around to spread the oil in the pan.
* Cover tightly with plastic wrap and let rest for 2 hours.
* Preheat oven to 550 degrees (or as high as your oven goes)
* Once dough has rested, it should have settled and puffed to fill the pan. Use your fingers to push the dough into all edges of the pan and remove large air bubbles.
* Lift up edges of the dough to eliminate any air pockets on the bottom of the dough.
* Top the dough with your pizza sauce, cheese and any desired toppings or seasonings. Drizzle with olive oil.
* Place skillet in oven and bake for 12-15 minutes. The top should be bubbly and golden brown.
* Use a spatula to lift the edge of the pizza and check to see if the bottom is nice and golden brown and crisp. If you’d like it crispier, place on a stove top burner over medium heat for a couple of minutes.
* Sprinkle pizza with grated Parmesan cheese and/or fresh basil. Slice into pieces and serve hot.

Today’s Menu: Turkey Tacos and Refried Beans

 

 

To start my morning off I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugarless Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I had to go to the local Kroger up the road for just a couple of items. I stopped by McDonald’s then to pick up Breakfast for Mom and Dad. Finished up some house cleaning and then did some work on the computer. I took the back off the processor and cleaned the inside of the computer, a lot of dust. Deleted some old files and ran all the scans. For Dinner tonight Turkey Tacos and Refried Beans.

 

 

I had been wanting Tacos for some time, and tonight is the night! When making Turkey Tacos I love using Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!

 

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Love the Taco Shells that stand! Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom and Dad. For dessert later a Blue Bunny No Sugar Added Vanilla Mini Cone.

Today’s Menu: Kitchen Closed – It’s Pizza Tonight from Domino’s

 

Early Morning and long day today. The phone rang about 5:00 this morning and it was the rehab center where Dad is at. They didn’t Dad would make it. The pneumonia along with his COPD, he was barely breathing. So we rushed over there and he seemed to get better. Dad panics if we are not around when something isn’t right. Later in the day they took more x-rays and the pneumonia had cleared up! Later in the day he was breathing good, thankfully! So it was a very long day and it ended good. Back at home I caught up on some sleep. Too tired to cook so the Kitchen is Closed! Tonight it’s Domino’s.

 

I had been wanting a Domino’s Pizza so it seemed like a perfect time for it! A few more calories and carbs than what I normally like to have for dinner but it had been a while since I had one and it sounded good for a Sunday Meal, and love the clean up afterwards! We ordered a Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. As always the Pizza arrived on time, hot and delicious! I had a Diet Dr. Pepper to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn. The Kitchen will reopen tomorrow! Happy Labor Day Weekend Everyone!

BUFFALO ANTIPASTO PASTA SALAD

Substitute ingredients according to what you have on hand or what you like.
A great summertime meal or side dish!

Ingredients:
1 – 10 oz. pkg. Buffalo Salami, cut into pieces
1 – cups, fresh mozzarella, shredded or cubed
2 – bell peppers, red, yellow or orange, diced
1 – bunch green onions, chopped
2 – 12 oz. jars artichoke hearts, drained & chopped
½ – cup Kalamata olives, halved or quartered
¾ – cup sundried tomatoes, julienned
8 – ounces pasta, cooked el dente and drained
¼ – cup basil pesto
¼ – cup olive oil
¼ – cup rice or cider vinegar
2 – teaspoons ground fennel
salt & pepper to taste.

Preparation:
Put all ingredients in large bowl and toss. Place in the refrigerator until ready to serve. The salad becomes more flavorful after the ingredients have a chance to rest. Leftovers can be kept for up to a week, refrigerated, however you may need to add a bit more olive oil or dressing before serving.

Veggie Taco Salad

Ingredients

2 cups soy crumbles (you can find these in your grocer’s freezer section or refrigerated meat section)
3/4 cup salsa
5 cups shredded lettuce
1 cup corn kernels
1 cup black beans
Topping Options

1/4 cup sliced green onions
1/4 cup shredded reduced-fat cheddar cheese
2 tablespoons sliced ripe olives
2 tablespoons fat free sour cream

Directions

1 – In large nonstick skillet coated with cooking spray, cook crumbles and salsa over medium heat about 5 minutes or until heated through, stirring frequently.
2 – In large bowl toss together lettuce, corn and black beans. Arrange on 4 serving plates. Top with crumbles mixture. Sprinkle with toppings.

I wanted to pass along a recipe for Chicken Cacciatore that I came across at the CooksRecipe website, Chicken Cacciatore over Pasta. The dish is only 210 calories and 19 net carbs. Chicken Cacciatore over Pasta

Impress the family tonight with this easy, Italian-style pasta and chicken main dish.

Recipe Ingredients:

1 pound skinless, boneless chicken breast halves
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (16-ounce) can chopped tomatoes, drained
1 (8-ounce) can tomato sauce
2 tablespoons Splenda® Granulated No Calorie Sweetener
1 1/2 teaspoons Italian seasoning
1/3 cup sliced ripe olives
1/8 teaspoon black pepper
3 cups hot cooked noodles (or any favorite pasta)

Cooking Directions:

1 – Slice chicken breasts into 32 pieces.
2 – Spray a large skillet with olive oil flavored cooking spray. Sauté chicken, onion, and green pepper for 6 to 8 minutes. Stir in drained tomatoes and tomato sauce.
3 – Add Splenda® Granulated Sweetener, Italian seasoning, olives, and black pepper. Mix well to combine. Lower heat and simmer for 10 to 15 minutes, stirring occasionally.
4 – For each serving, place 1/2 cup pasta on a plate and spoon 2/3 cup sauce over top.
Makes 6 servings. Serving Size: 1/2 cup noodles, 3/4 cup chicken cacciatore.

Today’s Menu: It’s Pizza Tonight from Domino’s

 

For Breakfast this morning I fried a couple of Jennie – O Turkey Breakfast Sausage Links, Scrambled an Egg, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After I had Breakfast and did the dishes I went to McDonald’s to pick up Breakfast for Mom and Dad. It’s not quite as hot out, 82 degrees but still a tad muggy. After Lunch I got the cart out of the shed and I to dig up an old bush that was dead and then I had to dig out some soil running along side the driveway. Still having drainage problems when it rains. Things would be a lot easier if I wasn’t in a wheel chair but you have to work with what you got! For Dinner tonight It’s Pizza from Domino’s.

 

 

I had something planned out for my Dinner tonight but Mom and Dad had been wanting a Pizza for sometime now so Pizza it is, Domino’s Pizza. A few more calories and carbs than what I normally like to have for dinner but it had been quite a while since I had one and it sounded good for a Sunday Meal, and love the clean up afterwards! We ordered a Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. As always the Pizza arrived on time, hot and delicious! I had a Diet Dr. Pepper to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn. The Kitchen will reopen tomorrow!
