Today’s Menu: Kitchen Closed, Pizza Hut tonight!

 

 

To start my morning off I just had a cup of Bigelow Decaf Green Tea. Restless night, still sore from the fall I had. Still raining out. We’ve had about 3″ inches or more with the heavy rains moving in this morning. Lot of local flooding here in the area. Good chance of more rain coming in tomorrow. So not a lot going on, had everything done. So I kicked back and watched Football all day!

 

 

 

 

I was ready to prepare Dinner tonight but Mom wanted Pizza. And we all know, “What Mom wants Mom gets”. We normally order from Domino’s but she wanted Pizza Hut tonight. I ordered a medium Pizza. First one I’ve had in a very, very long time! I must admit, it was great! Plenty of toppings with Mushrooms, Pepperoni, Black Olives, Italian Sausage, Green Olives. The Pizza arrived on time and steaming hot! As I said plenty of toppings, sauce was great and cheese, well I love all cheese! Back to healthier eating tomorrow as the Kitchen reopens! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Peach Diet Snapple to drink. Take care all!

Sicilian Turkey Pizza
An easy-to-make, easy-to-love pizza recipe piled high with veggies, lean ground turkey and old-country Italian flavors. Perfectly kid-friendly, ready in under 60 minutes and under 500 calories per serving. Mangia!

INGREDIENTS
1 loaf frozen pizza dough, thawed
1 (16-ounce) package JENNIE-O® Lean Italian Seasoned Ground Turkey
1 (15-ounce) can prepared pizza sauce
1 onion, chopped
1 cup chopped red bell pepper
¼ cup sliced ripe olives
2 cups shredded mozzarella cheese
¼ cup grated Parmesan cheese

DIRECTIONS
1) Heat oven to 425°F. Roll or stretch pizza dough to fit greased 15-inch pizza pan or 10 x 15-inch jelly roll pan. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Spread pizza sauce evenly over dough. Top with ground turkey, onion, bell pepper, olives and cheeses. Bake 15 to 20 minutes or until crust is golden brown.
* Always cook to an internal temperature of 165°F.

Today’s Menu: Turkey Tacos and Refried Beans

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. I headed out this morning to Jungle Jim’s International Market. They finally got some 1/2 Runner Green Beans in. We bought enough to can 14 jars! The Beans were some of the fullest and biggest Green Beans we had found in quite some time. So back home I gave Mom a hand in getting the first 7 quarts ready and made. We’ll do the rest tomorrow. Mom loves Beets, I can’t stand them, so she’s going back to Jungle Jim’s tomorrow to get Beets to can. My leg seems to be doing better it’s not as red and the spot is somewhat smaller. Hopefully it’s just an infection. For Dinner tonight it’s Turkey Tacos.

 

Making it an official Taco Tuesday here at the house! We love our Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

 

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

For Breakfast this morning I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin, lightly fried an al fresco Country Style Chicken Sausage Breakfast Patty, and had a cup of Bigelow Decaf Green Tea. 88 degrees, humid, and scattered showers out today. After Breakfast I had to go to the local Kroger and pick up a couple of items. Then went to the Post Office, got gas, and stopped and picked up Breakfast at McDonald’s for Mom. Later on I went to Menard’s and picked up a new shower head for Mom’s Shower. So for Dinner tonight, It’s a Taco Night! I prepared Turkey Tacos and a side of Refried Beans.

 

 

Our household love’s Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Had to change our Dinner plans at the last second, small family problems. Everything good now but out of the mood to cook so it’s Domino’s tonight!

 

 

 

 

 


I ordered our favorite, Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. First Pizza in a while, and it was over due! As always the Pizza arrived on time, hot and delicious! I had a Green Tea Diet Snapple to drink. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink. Today’s Menu: Salmon Pesto Pasta and Baked Garlic Loaf Bread

 

 

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. I went to McDonald’s to pick up Breakfast for Mom. Mom went on to Church and I went to the Cemetary to put flowers on Dad’s Grave for Father’s Day. Happy Father’s Day to all the Dad’s out there! I decided to take a ride over to our old house in Ross, Ohio. When we left Ross back in the early 80’s it was just starting to grow. And now it’s still growing! A ton of changes compared to how it was back then. Still a beautiful small town though! Back home did a couple of loads of laundry and did a little cleaning outside. But it is hot and humid out. 99 degrees and a heat index well over 100 degrees today. For Dinner tonight I prepared a Salmon Pesto Pasta and Baked Garlic Loaf Bread.

This recipe was inspired by a recipe I came across on a WordPress Blog (The Cooking Diaries) and it sounded and looked delicious. Plus it looked light and fresh, which is how I like hot weather dishes! I needed a few items to make the dish so I went to Jungle Jim’s International Market yesterday. They are the only store in area anymore that carries the Ronzoni Smart or Ronzoni Healthy Harvest Pasta Products. I love shopping at Jungle Jim’s! They carry Anything and Everything, I’m serious! You could spend an entire day in there. The Deli, Produce, and Seafood Departments are my favorites.

 

 

 

So to make the Dish I’ll need; 1 can Pink Salmon (Fresh or Canned), Extra Light Olive Oil, McCormick Grinder Sea Salt and Grinder Peppercorn Medley, Lemon Juice, Ronzoni Garden Delight Trio Italiano Pasta, Sliced Black Olives, a few small Anchovy Slices in Olive Oil, Kraft Reduced Fat Grated Parmesan Cheese, and 1 tube Just Add Basil Pesto. I added a few Ingredients and dropped an Ingredient from the original recipe, the original recipe and the web link are at the end of the post.

 

 

To prepare it; I first made my Pasta. Boil the Pasta according to the box; drain the Pasta and let it cool. Once cooled add the Pasta to a large bowl and add all the ingredients and fold in everything including the can of Pink Salmon. You can warm the Salmon if you prefer before adding it. Put the Pasta Salad in a large plastic bowl with a lid and set it in the fridge until your ready to use it.

 

 

 

 

The Pasta, Salmon, and Pest went great together! Everything tasted light and fresh. Excellent Dish. I also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Salmon Pesto Pasta
Ingredients
-1/3 pound salmon

-1 tsp olive oil

-1 tsp seasoning salt

-1/3 cup frozen or fresh peas

-pinch of salt and pepper

-a few squeezes of lemon juice (1-2 tsp)

-1/2 cup pesto

-1 1/2 cups rotini pasta

-shredded parmesan for toppings

Directions
1 – Cook pasta according to directions while doing the following steps.
2 – Heat oil in a pan on medium heat. Salt salmon with seasoning salt.
3.Add salmon skin side up and let cook for 3 minutes (salmon will look golden). Flip and cook on other side for 3 more minutes (skin will crisp up).
4 – Remove salmon and break it up (removing the skin).
5 – Add peas to same pan and a little bit of water (to cover the peas). Cook for 3-5 minutes and add some salt.
6 – Drain peas and add salmon back to pan. pour cooked and drained pasta into pan along with pessto and mix well. it’s okay to add more pesto if you think it needs more too!
7 – Squeeze lemon over the top and serve. Enjoy!
