Today’s Menu: Turkey and Black Bean Tacos

 

To start the day off I had a cup of Bigelow Decaf Green Tea. 17 degrees this morning. We had a high of 31 degrees with some snow showers. Got the Salt and Snow Shovel out of the Shed in case we get any of the snow storm that’s just East of us. Cleaned and straightened the Pantry and did a few things around the house. Mom wanted one of her favorites for Dinner so I prepared Turkey and Black Bean Tacos.

 

When making Turkey Tacos I always use Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Virgin Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 can Bush’s Chili Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make some fine Tacos!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce (my favorite), Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Turkey and you have some mouth watering and delicious Tacos! Love these Taco Meal Nights. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Diet Peach Tea Snapple to drink.

Today’s Menu: Domino’s Pizza

 

I made a Breakfast Skillet this morning for Breakfast. I used a small Cast Iron Skillet to prepare it. I used 1 Egg Sunny Side Up, Simply Potatoes Diced Potatoes, Cook’s Ham (Diced), Sargento Off the Block Mozzarella, and a couple of shakes of Frank’s Hot Sauce. I also had a cup of Bigelow Decaf Green Tea. Delicious way to start a Winter’s Morning. Wind Chill was in the Teen’s this morning. For the day it’s cloudy and 31 degrees. Did a load of laundry after Breakfast. Cleaned the house today, dusted and ran the vacuum. After that an afternoon of Basketball and NFL Football Playoff Games. It was so relaxing I shut down the Kitchen and ordered a Pizza from Domino’s.

 

Mom wanted the Domino’s Sweet BBQ. Chicken with Bacon. I’ve had this many times and love it! But for me I orderd a Small 10 inch Hand Tossed Pizza. For Toppings I had Pepperoni, Extra Italian Sausage, Black Olives, Green Olives, Mushrooms, Robust Inspired Tomato Sauce, and Cheese. I had a couple of slices and saved the rest of it. Excellent Pizza and Service! For Dessert later a Jello Sugar Free Dark Chocolate Pudding. Take Care and Stay Safe All!

Today’s Menu: Turkey and Black Bean Tacos

 

To start the day off I had a cup of Bigelow Decaf Green Tea. 58 degrees and sunny outdoors today. I didn’t make a Dinner Post yesterday due to Phantom Pains, which is still going on today! I’ve had Phantom Pains many times but none that have caused me so much pain or that has lasted this long! I just hope and pray they have a cure one day for them. They hurt just as bad today but not as often. But I still have to get things done, pain or no pain. Mom needed some Spices and Pie Crusts so I went to Meijer and it was packed. Glad to get back home. I just rested the rest of the day. It’s Taco Tuesday here again! For Dinner tonight I prepared Turkey and Black Bean Tacos.

 

When making Turkey Tacos I always use Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Virgin Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 can Bush’s Chili Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make some fine Tacos!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce (my favorite), Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Meal Nights. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Diet Raspberry Tea Snapple to drink.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 46 degrees and mostly cloudy out today. Swept off the deck. Then raked a few leaves in the front lawn. Then an afternoon of College Football. Mom wanted a Pizza for Dinner tonight. So the Kitchen is closed and it’s Domino’s Pizza tonight.

 

I ordered our favorite, a Medium Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. As always the Pizza arrived on time, hot and delicious! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzel with a glass of Ice Water to drink.

Turkey Enchiladas
Start your weekend off right with this fresh take on a brunch favorite. And with only 15 minutes of prep time, the whole family can eat well without eating into your free time with this Turkey Enchiladas recipe.
Total Time – 1 Hour
Serving Size – 6 Servings

Ingredients
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast

1 cup chopped onion

1 (2-ounce) can chopped ripe olives

1 (32-ounce) can enchilada sauce, divided

12 corn tortillas, heated

1 ½ cups shredded Cheddar and/or Monterey jack cheese

Directions
1) Heat oven to 350ºF.

2) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

3) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Add onion; sauté 5 minutes. Stir in olives.

4) In small saucepan heat half enchilada sauce. Dip each tortilla in sauce. Spoon 2 tablespoons meat mixture down center of each tortilla. Fold sides over and place seam side down in 9×13-inch baking pan. Sprinkle with cheese. Bake 30 minutes or until heated through.

5) Serve with remaining sauce.

Carne Asada Marinated Buffalo Steak Strip Tacos

Today’s Menu: Carne Asada Marinated Buffalo Steak Strip Tacos

 

For Breakfast I fried up some Double Smoked Bacon and some Simply Potatoes Southwest Style Shredded Hash Browns. I also had a cup of Bigelow Decaf Green Tea. 54 degrees, cloudy and very windy out today. We had a high of 54 and it dropped from there throughout the day. Did some laundry and had the computer tuned up. I had it tuned up by Geek Squad. It runs so much quicker now. For Dinner tonight I prepared Carne Asada Marinated Buffalo Steak Strip Tacos.

 

For the Buffalo I used Wild Idea Premium Steak Strips. To prepare them; I first Rinsed the Wild Idea Bison Steak Strips and pat them dry. I then added a light amount of Extra Light Olive Oil to them, making sure the Strips were completely covered on all sides. Then I seasoned them with Wild Idea Buffalo Omnivore Salt. The Omnivore Salt is a blend of Natural Sea Salt and Organic Spices. Then I grabbed a small Hefty Storage Bag and added some Kroger Private Selection Mexican Inspired Carne Asada Marinade. Then added the Buffalo Steak Strips and let the Steak Strips Marinate in the fridge until it was time to prepare them.

 

Next I got a Cast Iron Skillet and added 1 tablespoon of the Cooking Olive Oil, heated the Skillet on Medium High Heat. I got the bag out of the fridge and shook off the excess Marinade and placed the Strips on a plate to drain. Then over Medium High heat, I cooked the Bison Strips for about 4 minutes, tossing to turn occasionally. Oh the aroma when this is cooking up, it just fills the kitchen! I removed the Strips from the skillet into a bowl. These Steak Strips are so tender and delicious! Plus the Carne Asada Marinade gives it one incredible flavor! Love these Wild Idea Buffalo Premium Steak Strips.

 

Along with the Steak Strips I added La Preferdia Mild Jalapeno Slices, Olives (Black and Green), Lettuce Blend, fresh Shredded Dutch Gouda and all served in a La Banderita Carb Counter Tortillas. These are some of the freshest Tortillas you can find and they are only 35 calories and 3 net carbs per Tortilla. Add all this together and you have some mighty tasty Tacos.

Today’s Menu: Turkey Tacos and Refried Beans

For Breakfast I had a cup of Bigelow Decaf Green Tea. 27 degrees this morning, a bit nippy out there! After my Tea I warmed the car up for a bit and then headed off to Meijer. Wow grocery items just keep going up and up in price! From what they say it’s going to get worse! Gas this morning is up to $3.35 a gallon and across town it’s $3.59 a gallon! We’ll have to make sure every trip counts. I stopped on the way home and picked up Breakfast at McDonald’s for Mom. Back home I had to get the rake and leaf blower out, we overrun with leaves. For Dinner it’s Turkey Tacos and Refried Beans. Enjoy and Take Care!

 

We love our Turkey Tacos, great Comfort food for us! When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, and Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For Breakfast this morning I had a 2 Egg Scrambled Egg, 2 Johnsonville Turkey Breakfast Sausage Links, I toasted a slice of Bread, and had a cup of Bigelow Decaf Green Tea. 69 degrees with heavy rains on and off all day. So not a lot to do outside today. After Breakfast I did a load of laundry. Next it was house cleaning day. I dusted and ran the sweeper. Then I cleaned the inside windows in all the rooms. Mom wanted a Pizza for Dinner tonight. So the Kitchen is closed and it’s Domino’s Pizza tonight.

 

I ordered our favorite, a Medium Domino’s Hand Tossed Pizza Large with Cheese, Sauce, Pepperoni, Italian Sausage, Mushrooms, and Black Olives, Green Olives. Cooking healthier………

Keep fats to a minimum. Choose lean meats and reduced-fat dairy products and limit processed foods to minimize hidden fats. Nuts, seeds, fish, soy, olives and avocado are all healthier options because they include the essential long-chain fatty acids and these fats are accompanied by other good nutrients.

If you add fats when cooking, keep them to a minimum and use monounsaturated oils such as olive and canola oil.

Today’s Menu: Italian Pasta Salad w/ Hardwood Smoked Turkey Sausage

 

For Breakfast Morning I had a cup of Bigelow Decaf Green Tea. 58 degrees and rain all day, and all last night! Cleaned the Kitchen. Counter tops and the Microwave. That is about it for my day. I almost forgot Happy 1st Day of Fall! For Dinner tonight it’s an Italian Pasta Salad w/ Hardwood Smoked Turkey Sausage.

 

 

I had not had this in quite a while. I Wanted something light today and a Pasta Salad sounded perfect! For my Sausage I used the Leftover Butterball Hardwood Smoked Turkey Sausage from yesterday. I cut the Sausage into Bite size pieces. I absolutely love the Butterball Hardwood Smoked Turkey Sausage! I just heated them up in the microwave.

 

 

Then to go with the Turkey Sausage I prepared a Italian Pasta Salad, made about noon today. It always tastes even better after chilling for a while. A Light and tasty dish that includes Ronzoni Garden Delight Tri Color Rotini Pasta, Black Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovies, Kraft Reduced Fat Grated Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Grinder Italian Seasoning. Prepared the Pasta according to the box and added all the ingredients and tossed until well mixed. Then refrigerated until ready to use.

 

 

To serve, I made a bed of the Pasta in a bowl and topped it with the sliced Turkey Sausage, and chowed down! The Pasta Salad and Turkey Sausage are a perfect combination. And the Kraft Italian Dressing provides some great flavor! I also had a slice of the some leftover Garlic Bread Loaf. For Dessert/Snack later a bowl of Skinny Pop – Popcorn with a Sprite Free to drink.
