This week’s recipe is made using JENNIE-O® Lean Taco Seasoned Ground Turkey, Tostadas, Refried Beans, Lettuce, Roma Tomatoes, Red Onion, Grated Monterrey Jack Cheese, Cilantro, Limes, and Avocado. Taco Seasoned Ground Turkey Tostadas
You are less than 30 minutes from tasty turkey tostadas! Save some prep-time with JENNIE-O® Taco Seasoned Ground Turkey and customize with your family’s favorite toppings.

Total Time 30 Minutes
Serving Size Makes 5 Servings

Ingredients
1 – (16-ounce) package JENNIE-O® Lean Taco Seasoned Ground Turkey
1 – (4.8-ounce) package tostadas
1 – (15-ounce) can refried beans
1 – head of lettuce, chopped
2 – Roma tomatoes, diced
½ – red onion, diced
1 – (8-ounce) Monterrey jack cheese, grated
1 – bunch cilantro, chopped, if desired
2 – limes, diced, if desired
1 – avocado, diced, if desired

Directions
1) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Add ground turkey to hot skillet. Stir to crumble, approximately 14-16 minutes. Always cook to well-done, 165°F as measured by a meat thermometer.

2) Heat tostadas and refried beans according to package directions.

3) Spread tostadas with refried beans. Top with ground turkey. Add lettuce, tomatoes, onion, and cheese. Top with cilantro, limes and avocado, if desired.

Zest me later………………..

Don’t discard the rinds of limes, lemons, oranges, or other citrus. Grate them, then store in tightly covered glass jars in the fridge. They make excellent flavorings for cakes, and can be sprinkled over chicken ans fish as well.

Lemons and Limes………..

When buying lemons or limes remember that lemons will have no green to them and limes will have no yellow. Make sure the fruits are firm and not spongy. Also bruise free! Pucker up and enjoy!

Kaffir Lime and Honey Cranberry Sauce
Cinnamon, honey and citrus bring out the best in this cranberry sauce.

INGREDIENTS

2 oranges
2 lemons
2 limes
2 (12-ounce) bags fresh or frozen cranberries
2 cups honey
4 sprigs kaffir lime leaves
2 cinnamon sticks

DIRECTIONS

Remove peel from oranges, lemons and limes. Mince peel. Juice fruit. In large saucepan, combine cranberries, fruit juices, peel, honey, lime leaves and cinnamon sticks. Bring mixture to a boil. Reduce heat to medium. Cook 5 minutes. Remove from heat and cool to room temperature.
Store in refrigerator. Remove lime leaves and cinnamon sticks before serving.

Where’s the Lemon…….

 

When grilling fish the skin will inevitably will get stuck to the grate, particularly when cooking salmon. Avoid this by placing a few thin slices of lemon or lime on the grill, and then the fish on top. Not only will your grill cleanup be easier, but the citrus flavor will also taste great with seafood.
