This week’s Soup Special of the Day is – Creamy Spinach Soup. The recipe is from the Jennie – O Turkey website (https://www.jennieo.com/). No Turkey to make the recipe but just a delicious and healthy Soup Recipe to pass along from Jennie – O! Creamy Spinach Soup
Indulgently creamy, this spinach soup recipe will have everyone “eating their vegetables”.

INGREDIENTS
2 tablespoons butter
1 onion, chopped
1 clove garlic, minced
¼ cup flour
4 cups chicken broth
4 cups packed baby spinach
1 lemon
¼ cup heavy cream
salt and pepper, to taste
cream, if desired
croutons, if desired

DIRECTIONS
1) In large saucepan over medium heat, melt butter. Add onion and cook 3 to 4 minutes or until tender.
2) Add garlic and cook 1 minute.
3) Add flour and whisk 1 minute. Gradually whisk in broth. Add spinach and stir until wilted. Simmer over low heat 10 minutes.
4) Grate peel from lemon. Juice lemon; add lemon juice to soup. Using food processor or blender, process soup to smooth puree. Return to pan. Add ¼ cup cream and lemon peel to soup. Simmer 5 minutes. Season with salt and pepper.
5) Ladle into bowls. Drizzle with additional cream, if desired and sprinkle with croutons.

Triple Corn Muffins
Cornmeal muffins featuring fresh whole kernel corn, cooked in cornhusks until golden brown.

INGREDIENTS

6 to 8 dried cornhusks (6 to 8-inches long)
1 cup yellow or blue cornmeal
1 cup flour
1 tablespoon baking powder
¼ teaspoon salt
¾ cup milk
½ cup salsa verde
¼ cup vegetable oil
2 tablespoons honey
1 egg or ¼ cup egg substitute
½ cup fresh or frozen whole kernel corn

DIRECTIONS

1) Heat oven 375°F. Grease twelve (2½-inch) muffin cups. Separate cornhusks. In large bowl, pour boiling water over cornhusk to cover. Soak 10 minutes or until soft and pliable. Drain; pat dry. Tear cornhusks lengthwise into 2-inch strips. Set aside.
2) In large, bowl, combine cornmeal, flour, baking powder and salt. In medium mixing bowl, beat milk, salsa verde, oil, honey and egg until well blended. Stir liquid ingredients into flour mixture; mix just enough to moisten dry ingredients. Stir in corn. Place 2 to 3 cornhusk strips in each muffin cup, crossing centers in bottom of cups so husk ends fan out around sides. As each cup in lined, fill with batter. Bake 20 to 25 minutes or until tops are golden brown. Remove muffin from cornhusks before eating. Makes 10 muffins.

Have a Happy Thanksgiving Everyone!

I’d like to wish you all a Happy Thanksgiving! There’s a lot going on today in the Kitchen. We have Family coming over to join us for Dinner today. A lot going on and a bit hectic. So with not a lot of time today I’ll give you Today’s Menu but didn’t have a lot of time for pictures. Jennie – O Boneless Turkey Breast, Bone – In Ham, Turkey Brown Gravy, Stuffing, Deviled Eggs, 2 Jars of Canned Green Beans, Baked Sweet Potatoes, Baked Spiced Whole Carrots, Dreamland Salad, Aunt Millie’s Dinner Rolls, and for Dessert an Apple Pie and a Pumpkin Pie.

 

I don’t think any of us will be moving too quickly tonight! Happy Thanksgiving everyone! Be back to regular Dinner post tomorrow.

Kaffir Lime and Honey Cranberry Sauce
Cinnamon, honey and citrus bring out the best in this cranberry sauce.

INGREDIENTS

2 oranges
2 lemons
2 limes
2 (12-ounce) bags fresh or frozen cranberries
2 cups honey
4 sprigs kaffir lime leaves
2 cinnamon sticks

DIRECTIONS

Remove peel from oranges, lemons and limes. Mince peel. Juice fruit. In large saucepan, combine cranberries, fruit juices, peel, honey, lime leaves and cinnamon sticks. Bring mixture to a boil. Reduce heat to medium. Cook 5 minutes. Remove from heat and cool to room temperature.
Store in refrigerator. Remove lime leaves and cinnamon sticks before serving.

Raspberry-Almond Buttermilk Coffee Cake

INGREDIENTS

1½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
¾ cup granulated sugar
½ cup butter, softened
2 large eggs, lightly beaten or 4 ounces egg substitute
1 teaspoon vanilla extract
½ teaspoon almond extract
1 cup buttermilk
2 cups frozen raspberries, thawed
⅓ cup sliced almonds
1 tablespoon turbinado sugar

DIRECTIONS

Heat oven to 350°F.
1) In large bowl, combine flour, baking powder, baking soda and salt.
2) In bowl of electric stand mixer, cream together sugar and butter, with paddle attachment until light and fluffy. Add eggs one at a time, beating after each addition; add extracts
3) Gradually add flour mixture alternately with buttermilk, beating until smooth. Spoon half batter into a lightly greased and floured 9-inch cake pan. Top evenly with 1 cup raspberries. Spoon remaining batter over raspberries and top with almonds, remaining 1 cup raspberries and turbinado sugar.
4) Bake 50 minutes or until cake tester inserted in center comes out clean.

Turkey, Onion Jam and Brie Pizza
This is pizza, all grown up. With a savory onion jam in place of pizza sauce, this taste-bud-dazzling weeknight dinner recipe is topped with Brie, Provolone and arugula. Under 500 calories per serving.

INGREDIENTS

12 ounces pizza dough
1 teaspoon chopped fresh thyme
2 tablespoons butter, melted
1 clove garlic, minced
¼ cup onion jam
¾ cup shredded JENNIE-O® Turkey Breast Roast
4 ounces Brie cheese, sliced
½ cup shredded Provolone cheese
½ cup baby arugula leaves
½ teaspoon balsamic vinegar
½ teaspoon olive oil
salt and freshly ground pepper, if desired

DIRECTIONS

1) Heat oven to 425°F. Roll or press pizza dough to 8-inch imperfect circle.
2) In small bowl, combine thyme, butter and garlic. Brush half the butter mixture over pizza dough. Spread dough with onion jam.
3) Top with turkey, Brie and Provolone cheese. Drizzle with remaining butter mixture. Bake 12 minutes or until crust is crisp and golden.
4) In small bowl, toss arugula, vinegar, oil, salt and pepper, if desired. Place on cooked pizza. Cut pizza into wedges.

Looking for an easy Holiday appetizer recipe? This delicious crostini takes less than 15 minutes to make.

INGREDIENTScranberry-goat-cheese-crostini

½ (8-ounce) package cream cheese, softened
1 (4-ounce) package goat cheese, softened
¼ teaspoon freshly ground pepper
1 (14-ounce) can whole berry cranberry sauce
¼ cup chopped fresh basil leaves
1 package deli crostini
garnish with small fresh basil leaves

 
DIRECTIONS

1) In small bowl, combine cream cheese, goat cheese and pepper until smooth.

Butternut Squash and Sweet Potato Casserole

This casserole features mashed sweet potatoes and buttery spiced squash with a sweet streusel crumble on top. While this dish takes some time in the oven, the actual hands-on prep time is very minimal.

1 small butternut squash
¼ cup butter, softened
1 egg, lightly beaten
½ teaspoon cinnamon
¼ teaspoon ground nutmeg
½ cup firmly packed light brown sugar
1 (23-ounce) container HORMEL® mashed sweet potatoes
STREUSEL TOPPING

½ cup cold butter, cut into small cubes

¾ cup firmly packed brown sugar
½ cup all-purpose flour
1 cup coarsely chopped pecans
DIRECTIONS

Heat oven to 350°F.
Cut butternut squash in half and scoop out seeds. Place on baking sheet, cut sides down and bake 1 hour or until tender. Let stand 10 minutes; scoop out flesh. Mash with potato masher until smooth. Stir in butter, egg, cinnamon, nutmeg, brown sugar and sweet potatoes. Transfer mixture to lightly greased 11-x 7-inch baking dish.
In medium bowl, combine butter, brown sugar, flour and pecans. Using pastry cutter, cut butter into mixture until coarse crumbs appear. Sprinkle mixture evenly over sweet potato mixture.
Bake 40 minutes.
