1 – pound Yukon Gold potatoes, peeled and cut into 1-inch pieces

3 – tablespoons sour cream
2 – tablespoons butter, softened

1/4 – teaspoon ground pepper
1 – tablespoon finely chopped fresh chives

Directions
1) In medium saucepan, place potatoes and cauliflower. Cover with cold water. Bring to boil over high heat. Reduce heat to medium and simmer 15 to 18 minutes or until tender. Drain. Return vegetables to pan. Cook 2 to 3 minutes over medium-high heat, stirring often, until dry.

2) Mash vegetables with a potato masher. Add sour cream and butter and mash until mostly smooth. Stir in salt and pepper. Transfer to serving bowl and sprinkle with chives.

1 – teaspoon freshly ground black pepper
3 – whole lemons, zested

Directions
1) In small bowl, add sour cream, mayonnaise, dill and garlic.
2) Mix to combine. Refrigerate until ready to serve.
3) Tip: Let sit in the refrigerator a couple hours before serving so the garlic flavor really comes out.
4) Cut the tops and bottoms of zucchini and slice into quarters, lengthwise. Place in a plastic bag.
5) Drizzle in olive oil, salt, pepper, and 1 tablespoon lemon zest and the juice of two lemons.
6) Seal bag and move them around so zucchini is coated. Set aside 15 to 20 minutes to marinate.
7) Heat grill to medium-low heat. Grill zucchini on all sides until tender. Remove zucchini to a plate as it gets done.
8) Sprinkle grilled zucchini with kosher salt and lemon zest, if desired.
9) Serve zucchini with garlic dip.

Zesty Barbeque Turkey Sandwiches
Lean turkey simmered in a delicious homemade barbeque sauce make these messy-but-delicious turkey sandwiches a flavorful addition to your weeknight dinner line up.

INGREDIENTS
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins, cut into ½ x 2 ½-inch strips
1 tablespoon olive oil
½ cup chopped onion
1 (15-ounce) can tomato sauce
¼ cup cider vinegar
2 tablespoons packed brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon prepared mustard
4 toasted Kaiser rolls or whole grain buns, split

DIRECTIONS
1) Spray a skillet with nonstick cooking spray or add 1 to 2 teaspoons oil. Heat skillet over medium-high heat.

2) Place tenderloins in hot skillet. Brown on both sides. Add ⅓ cup liquid. Reduce heat to medium-low. Cook, covered, 35 to 40 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Remove from skillet; set aside.

3) In skillet, heat oil. Add onion and cook until tender. Stir in tomato sauce, vinegar, brown sugar, Worcestershire sauce and mustard. Reduce heat to low and simmer 15 minutes, stirring occasionally.

4) Place cooked turkey into sauce and simmer until heated through. Serve on Kaiser rolls.
* Always cook to an internal temperature of 165°F.

Chock full of crispy veggies, this lean twist on a classic Asian recipe makes for a memorable dinner that’s also less than 500 calories per serving. Made with snow peas, garlic and fresh ginger.
Total Time – More than an hour
Serving Size – 6 Servings

INGREDIENTS
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin
¼ cup plus 2½ tablespoons low-sodium soy sauce, divided
2 teaspoons finely chopped garlic
2 tablespoons peanut butter
3 tablespoons vegetable oil
2 tablespoons seasoned rice vinegar
2 teaspoons dark sesame oil
½ teaspoon finely grated ginger
½ teaspoon crushed red pepper flakes
8 ounces vermicelli or thin spaghetti, broken in half
½ cup julienne-cut carrots
1 red bell pepper, cut into short, thin strips
1½ cups fresh snow pea pods, cut lengthwise into thin strips
½ cup chopped and roasted peanuts
½ cup diagonally sliced green onions

DIRECTIONS
1) Cut tenderloins into strips and place in plastic bag. Add 2½ tablespoons soy sauce and garlic; close bag securely, turning to coat. Refrigerate 30 minutes or up to 4 hours. Prepare grill.
2) In large bowl, whisk together peanut butter and vegetable oil. Whisk in remaining ¼ cup soy sauce, vinegar, sesame oil, ginger and red pepper flakes. Cook vermicelli according to package directions.
3) Combine carrots and bell pepper in microwave safe dish. Cover and cook on HIGH (100%) 1 minute. Add snow peas; cover and continue cooking 1 minute or until crisp-tender.
4) Drain tenderloins. Grill tenderloins as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Transfer to carving board; cut each tenderloin lengthwise in half and then cut crosswise into ¼-inch thick slices. Add turkey to noodle mixture. Add peanuts and green onion to noodle mixture and toss.
* Always cook to an internal temperature of 165°F.

2) Place tomato mixture in 8-inch square baking dish; cover and freeze until firm, stirring twice during first 2 hours.
3) Remove from freezer; scrape entire mixture with fork until fluffy;
4) Heat oven to 375°F.
5) Mist 9 x 13-inch baking dish with cooking spray.
6) In skillet, cook onion and butter 3 to 4 minutes or until soft.
7) Add bacon and rice; mix. Add tomato and hot chicken broth; stir.
8) Spoon into baking dish. Cover and bake 30 minutes.
9) Always cook to well-done, 165°F as measured by a meat thermometer. Remove from oven and stir in cheese.
10) Top with prepared granita.
