I have a recipe for a Baked Turkey Rigatoni. Baked Turkey Rigatoni
When it comes to casseroles, you really can’t beat Baked Turkey Rigatoni. Especially when you Make the Switch® to lean turkey — then you get a big, tasty Italian meal at under 500 calories per serving!

Total Time – 1 Hour
Serving Size – 8 Servings

Ingredients
1 – (16-ounce) package rigatoni pasta
1 – (16-ounce) package JENNIE-O® Lean Ground Turkey
1 – cup diced onion
2 – (26-ounce) jars spaghetti sauce
1 – cup fat-free sour cream
6 – slices provolone cheese
1 – cup shredded mozzarella cheese
2 – tablespoons finely grated Parmesan cheese

Directions
1) Heat oven to 350°F.
2) Bring large pot of lightly salted water to boil. Add pasta and cook 12 minutes or until al dente; drain. Return to same pan.
3) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.
4) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F as measured by a meat thermometer. Add onion and sauce; simmer 15 minutes or until sauce is thickened and onion is soft.
5) Mist a 9 x 13-inch baking dish with cooking spray. Add turkey mixture and sour cream to pasta. Stir to combine. Spread turkey mixture in pan. Top with provolone cheese.
6) Sprinkle with mozzarella and Parmesan cheese.
7) Bake 30 minutes or until cheese is melted and browned.
8) Garnish with additional Parmesan cheese, if desired.

Ingredients

1 – (17.6-ounce) package JENNIE-O® Extra Lean Turkey Breast Cutlets

8 – slices JENNIE-O® Turkey Bacon

1 – focaccia (Italian flat bread)

4 – pieces leaf lettuce

4 – slices of Roma tomatoes, sliced lengthwise

4 – slices Swiss cheese

4 – tablespoons light parmesan dressing

Directions

1) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat.

2) Place turkey breast cutlets in hot skillet. Cook, turning occasionally, 11 to 13 minutes. Always cook to well-done, 165°F as measured by a meat thermometer.

3) Heat slices of bacon for 6-7 minutes or until desired crispness, turning frequently. For crispier bacon; Lightly spray skillet with nonstick cooking spray before heating bacon.

4) Cut focaccia horizontally in half then into wedges. Layer lettuce, tomato, cheese, turkey, bacon and parmesan dressing onto each bottom focaccia wedge.

5) Cover with top wedge.

1 tablespoon tomato paste
1 (15-ounce) can chickpeas, rinsed and drained
1 small zucchini, chopped
1½ cups vegetable broth
1 cup coconut milk
1 tablespoon fresh lime juice
1 tablespoon brown sugar
¼ cup chopped fresh cilantro leaves

DIRECTIONS
1) Spray a skillet with nonstick cooking spray. Preheat skillet over medium-high heat.
2) Add ground turkey to hot skillet. Stir to crumble, approximately 14 to 16 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer.
3) Heat oil and add onion and carrot and cook 7 minutes or until onion is translucent.
4) Stir in curry powder and tomato paste and cook 2 minutes.
5) Add ground turkey, chickpeas, zucchini, vegetable broth, coconut milk, lime juice and brown sugar.)
6) Bring mixture to a boil.
7) Reduce heat to low and simmer 10 minutes.
8) Sprinkle with cilantro leaves.

2) Cook over medium heat, 4 to 6 minutes, or until mixture is thick and bubbly, stirring constantly.

3) Cut turkey kielbasa in ½-inch slices.

4) Fold into sauce, kielbasa, vegetables and pasta; reduce heat to medium-low.

5) Cook 8 to 10 minutes or until hot and flavors are blended.

4) Divide ground turkey into 12 equal balls. Press 1 teaspoon butter into each ball. Shape into patties.

5) Place in large skillet over medium-high heat. Cook 8 minutes covered, turning twice and internal temperature reaches 165°F. as measured by meat thermometer. Always cook to well-done.

6) Top each patty with two cheese pieces.

7) Place lettuce on bottom halves of buns. Top with onion mixture and patties; replace bun tops.

Who knew you could have comfort food without the guilt? This home cooked Roast Pepper & Turkey Stroganoff features a creamy garlic and wine sauce over lean turkey tenderloins and thick egg noodles! Under 500 calories per serving.

INGREDIENTS
2 tablespoons vegetable oil, divided
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin, cut into strips
8 ounces sliced mushrooms
4 garlic cloves, minced
½ cup dry white wine
1 cup low-sodium chicken broth
¼ cup tomato paste
2 roasted red peppers, cut into strips
¼ cup chopped fresh parsley
16 ounces thick egg noodles, cooked

DIRECTIONS
1) In large skillet, heat 1 tablespoon oil over medium-high heat. Place tenderloins in hot skillet. Brown on both sides.

2) Add ⅓ cup liquid. Reduce heat to medium-low. Cook, covered, 35 to 40 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Remove from pan; keep warm.

3) Heat remaining oil in skillet. Add mushrooms and garlic; cook 5 minutes or until softened.

4) Add wine; simmer until reduced by half. Stir in broth, tomato paste and roasted peppers. Return all turkey to pan.

5) Reduce heat to low and simmer 5 minutes. Cover and simmer for 10 minutes, stirring occasionally, until sauce is thickened.

6) Stir in parsley. Serve over hot cooked noodles.

Lean turkey simmered in a delicious homemade barbeque sauce make these messy-but-delicious turkey sandwiches a flavorful addition to your weeknight dinner line up.

NGREDIENTS
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins, cut into ½ x 2 ½-inch strips
1 tablespoon olive oil
½ cup chopped onion
1 (15-ounce) can tomato sauce
¼ cup cider vinegar
2 tablespoons packed brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon prepared mustard
4 toasted Kaiser rolls or whole grain buns, split

DIRECTIONS
1) Spray a skillet with nonstick cooking spray or add 1 to 2 teaspoons oil. Heat skillet over medium-high heat.

2) Place tenderloins in hot skillet. Brown on both sides. Add ⅓ cup liquid. Reduce heat to medium-low. Cook, covered, 35 to 40 minutes. Always cook to well-done, 165°F. as measured by a meat thermometer. Remove from skillet; set aside.

3) In skillet, heat oil. Add onion and cook until tender. Stir in tomato sauce, vinegar, brown sugar, Worcestershire sauce and mustard. Reduce heat to low and simmer 15 minutes, stirring occasionally.

4) Place cooked turkey into sauce and simmer until heated through. Serve on Kaiser rolls.
* Always cook to an internal temperature of 165°F.
