Roast Pepper and Turkey Stroganoff
Who knew you could have comfort food without the guilt? This home cooked meal features a creamy garlic and wine sauce over lean turkey tenderloins and thick egg noodles—all for under 300 calories per serving!

INGREDIENTS
2 tablespoons vegetable oil, divided
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin, cut into strips
8 ounces sliced mushrooms
4 garlic cloves, minced
½ cup dry white wine
1 cup low-sodium chicken broth
¼ cup tomato paste
2 roasted red peppers, cut into strips
¼ cup chopped fresh parsley
16 ounces thick egg noodles, cooked

DIRECTIONS
1) In large skillet, heat 1 tablespoon oil over medium-high heat. Cook tenderloins as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Remove from pan; keep warm.
2) Heat remaining oil in skillet. Add mushrooms and garlic; cook 5 minutes or until softened.
3) Add wine; simmer until reduced by half. Stir in broth, tomato paste and roasted peppers. Return all turkey to pan. Reduce heat to low and simmer 5 minutes. Cover and simmer for 10 minutes, stirring occasionally, until sauce is thickened.
4) Stir in parsley. Serve over hot cooked noodles.
* Always cook to an internal temperature of 165°F.

Slow Cooker Spinach Dip
Your can always judge a good spinach dip by the speed in which it disappears. And though this one is cooked in a slow cooker, it moves lightning fast! This creamy and delicious Spinach Dip has two different kinds of cheese, turkey bacon and artichoke hearts for a special, tangy zing. And because it’s in a slow cooker, you can set it and forget it!

INGREDIENTS
1 (10-ounce) package frozen chopped spinach, thawed and drained
½ cup chopped green onions
2 garlic cloves, finely chopped
1 (15-ounce) can quartered artichoke hearts, rinsed and drained
1½ cups shredded white Cheddar cheese
1 cup grated Parmesan cheese
1 cup low-sodium vegetable broth
½ cup sour cream
½ cup mayonnaise
1½ teaspoons seasoned pepper
6 slices JENNIE-O® Lower Sodium Turkey Bacon made with Sea Salt
assorted sliced vegetables and crackers, if desired

DIRECTIONS
1) In lightly greased slow cooker, stir together spinach, green onions, garlic, artichoke, cheeses, vegetable broth, sour cream, mayonnaise and seasoned pepper. Cook on HIGH 4 hours.
2) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Finely chop bacon. Place bacon on top of spinach dip. Serve with sliced vegetables or crackers, if desired.
* Always cook to an internal temperature of 165°F.

Spinach Puffs
This quick and creative holiday side dish recipe is a tasty way to fill out your holiday spread. Flaky puff pastry stuffed with spinach, ricotta and tomato-basil feta cheese. Under 300 calories per serving!

INGREDIENTS
1 (10-ounce) package frozen spinach, thawed and well drained
½ cup crumbled tomato-basil feta cheese
½ cup ricotta cheese
2 teaspoons chopped fresh dill leaves
2 eggs, divided
1 (17.3-ounce) package frozen puff pastry sheets, thawed
2 teaspoons grated lemon peel
¼ teaspoon garlic salt

DIRECTIONS
1) Heat oven to 400°F.
2) Squeeze excess liquid from spinach and coarsely chop. In medium bowl, combine spinach, feta, ricotta, dill and 1 egg. Cut 1 pastry sheet into 3 equal rectangles, along seams. Cut 1 strip from remaining sheet, giving 4 rectangles. Reserve remaining cut sheet for later use. Cut each rectangle into 3 equal squares, giving 12 squares. Place each square in cup of lightly greased 12-cup muffin pan. Divide spinach mixture evenly among squares.
3) Beat remaining egg in a small bowl. Pinch edges of pastries closed and brush with egg. Bake for 25 minutes or until pastry is puffed and browned. Sprinkle with lemon peel and garlic salt.

Zesty Barbeque Turkey Sandwiches
Lean turkey simmered in a delicious homemade barbeque sauce make these messy-but-delicious turkey sandwiches a flavorful addition to your weeknight dinner line up.

NGREDIENTS
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins, cut into ½ x 2 ½-inch strips
1 tablespoon olive oil
½ cup chopped onion
1 (15-ounce) can tomato sauce
¼ cup cider vinegar
2 tablespoons packed brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon prepared mustard
4 toasted Kaiser rolls or whole grain buns, split

DIRECTIONS
1) Cook turkey strips as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Remove from skillet; set aside.
2) In skillet, heat oil. Add onion and cook until tender. Stir in tomato sauce, vinegar, brown sugar, Worcestershire sauce and mustard. Reduce heat to low and simmer 15 minutes, stirring occasionally.
3) Place cooked turkey into sauce and simmer until heated through. Serve on Kaiser rolls.
* Always cook to an internal temperature of 165°F.

Breakfast Turkey Scrambler
This breakfast pita is a tour-de-force of breakfast greatness — filled with hash browns, lean turkey ham, onion, scrambled eggs and shredded Cheddar. Under 300 calories per serving!

INGREDIENTS
¾ cup egg substitute or 3 eggs, lightly beaten
½ teaspoon paprika
½ cup milk
4-ounces JENNIE-O® Turkey Ham, cut into ¼-inch cubes
¾ cup hashbrown potatoes
1 tablespoon minced onion
1 tablespoon butter
6 Gordita or pita bread
½ cup shredded American or Cheddar cheese
salsa or hot sauce, if desired

DIRECTIONS
1) In medium bowl whisk together eggs, paprika and milk. Stir in turkey ham, potatoes and onion. In large non-stick skillet over medium heat, melt butter. Add egg and meat mixture. Cook stirring occasionally until fully cooked.
2) Lay Gordita bread on flat surface; divide turkey ham mixture and cheese evenly over bread. Fold over and serve. Serve with salsa or hot sauce, if desired.

Tropical Turkey Salad
This is a Gluten Free Recipe.

A taste of the tropics, right in your salad bowl. Enjoy fresh lime and pomegranate juice drizzled over avocado, julienned jicama and grilled turkey tenderloins. This recipe has gluten free.

INGREDIENTS
3 tablespoons pomegranate juice
3 tablespoons lime juice
1 packet sugar substitute
¼ teaspoon jerk seasoning blend
1 tablespoon olive oil
1 (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin
1½ cups julienned jicama
1 ripe avocado, pitted
1 small red onion, cut into thin wedges
8 cups mixed salad greens
cilantro sprigs, if desired

DIRECTIONS
1) In small bowl, combine pomegranate juice, lime juice, sugar, seasoning and oil; whisk until well combined. Set aside.
2) Grill turkey according to package directions. Always cook to well-done, 165°F as measured by a meat thermometer. Cut into strips.
3) In large bowl, combine jicama, avocado, turkey, onion, salad greens and dressing. Toss to combine. Garnish with cilantro, if desired.
* Always cook to an internal temperature of 165°F.

Grilled Turkey and Vegetable Kabobs
It’s time to make “kabob night” a weekly grilling tradition. This recipe features mushrooms, zucchini, bell peppers and turkey tenderloins drizzled with a marmalade glaze.

INGREDIENTS
1 large ear of corn, cleaned and cut into 1-inch pieces
8 medium whole mushrooms
1 red bell pepper, cut into 1-inch cubes
1 zucchini, cut into thick slices
2 teaspoons olive oil
½ teaspoon salt
½ (24-ounce) package JENNIE-O® Savory Roast Turkey Breast Tenderloin, cut into ¾ to 1-inch pieces
⅓ cup orange marmalade
1 tablespoon mustard
1 teaspoon fresh rosemary leaves, chopped

DIRECTIONS
1) Heat grill to medium heat. In medium microwave-safe bowl, combine corn pieces and enough water to cover. Cover with plastic wrap. Microwave on HIGH (100%) 2 to 2½ minutes or until slightly tender; drain water.
2) In medium bowl, combine corn, mushrooms, red pepper and zucchini. Drizzle with oil and salt; toss to coat.
3) On kabob skewers, alternately thread turkey tenderloin pieces and vegetables. In small bowl, combine orange marmalade, mustard and rosemary; mix well. Set aside.
4) Grill kabobs 8 to 10 minutes, turning occasionally. Cook the turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer and vegetables are tender. Brush kabobs with marmalade glaze. Grill 1 to 2 minutes longer; turning once.
* Always cook to an internal temperature of 165°F
