BUFFALO ITALIAN SAUSAGE PIADINA

Piadina is an Italian flatbread that is delicious by itself or used in place of bread to make a sandwich or pizza. The dough is wonderful to work with and the aroma when it cooks will bring volunteer taste testers to your door. It’s great for making ahead of time for easy entertaining or casual family meals. Simply prepare your crust in advance, have toppings ready to go and have your guests create their own!

(Serves 8 )
Piadina Dough

Ingredients:

1 pkg. quick yeast
½ cup warm water
½ cup flour
3 ½ cups flour
1 teaspoon salt
1 cup cold water
2 tablespoons olive oil

Buffalo Piadina Toppings:

8 oz. fresh mozzarella, sliced
1 portabella mushroom, sliced
1 lb. Wild Idea Buffalo Italian Sausage, coarse crumbled and sautéed
4 Roma Tomatoes, sliced, sprinkle with salt & pepper
1 cup fresh basil, julienned
4 oz. parmesan, grated + more for passing

Directions

1 – Mix yeast, water and ½ cup flour together.
2 – Cover and let rest for 20 minutes. Mixture will be double in size and bubble.
3 – Add remaining flour, salt, water and olive oil, knead together for 5 minutes.
4 – Place in lightly oiled bowl, cover and allow dough to double in size. About 2 hours.
5 – Divide dough into 8 pieces and roll out on a lightly floured surface into 8 inch circles.
6 – Place grill tiles or bricks on grill grates and turn heat to 400*.
7 – Place rolled dough on tiles and grill for 1 minute each side, or until dough has puffed slightly and become lightly browned. Keep grill lid closed during cooking.
8 – Place crust on pizza stone or make individual pans of foiled parchment and top with favorite toppings. Keep toppings in balance so all flavors are equally represented.
9 – Return prepared pizza to 400* grill. Close lid and continue to cook for 5 minutes or until cheese is melted.
* Remove from grill. Cut each pizza into 4. Serve with green salad for a complete meal.

Taco Seasoned Ground Turkey Tostadas
You are less than 30 minutes from tasty turkey tostadas! Save some prep-time with JENNIE-O® Taco Seasoned Ground Turkey and customize with your family’s favorite toppings.

Total Time 30 Minutes
Serving Size Makes 5 Servings

Ingredients
1 – (16-ounce) package JENNIE-O® Lean Taco Seasoned Ground Turkey
1 – (4.8-ounce) package tostadas
1 – (15-ounce) can refried beans
1 – head of lettuce, chopped
2 – Roma tomatoes, diced
½ – red onion, diced
1 – (8-ounce) Monterrey jack cheese, grated
1 – bunch cilantro, chopped, if desired
2 – limes, diced, if desired
1 – avocado, diced, if desired

Directions
1) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Add ground turkey to hot skillet. Stir to crumble, approximately 14-16 minutes. Always cook to well-done, 165°F as measured by a meat thermometer.

2) Heat tostadas and refried beans according to package directions.

3) Spread tostadas with refried beans. Top with ground turkey. Add lettuce, tomatoes, onion, and cheese. Top with cilantro, limes and avocado, if desired.

Italian Ground Turkey Stuffed Peppers
Time for a flavorful update to your go-to stuffed pepper recipe with Italian seasoned ground turkey, pepper jack cheese, Roma tomatoes and zucchini.

Total Time 1 Hour
Serving Size Makes 6 Servings

Ingredients
6 – bell peppers, any color
1 – (16-ounce) package JENNIE-O® Lean Italian Seasoned Ground Turkey
2 – tablespoons olive oil
1 – onion, finely diced
2 – cloves garlic, chopped
1 – medium zucchini, finely diced
4 – Roma tomatoes, seeded and finely diced
red pepper flakes, if desired
salt and freshly ground black pepper, if desired
1 – cup cooked long-grain and wild rice
1 ½ – cups grated pepper jack cheese, divided

Directions
1) Preheat oven to 350°F.
2) Cut tops off peppers. Remove and discard stems. Finely chop tops; set aside. Scoop out seeds and membrane. Place peppers cut side up in baking dish just large enough to hold them upright.
3) Spray skillet with nonstick cooking spray. Preheat skillet over medium-high heat. Add ground turkey to hot skillet. Stir to crumble, approximately 14-16 minutes. Always cook to well-done, 165°F as measured by a meat thermometer. Remove ground turkey from skillet and set aside.
4) Wipe out skillet and add olive oil. Add onions, chopped peppers and cook 3 to 4 minutes, until soften. Add garlic, zucchini and cook another minute. Add tomatoes and season with red pepper flakes and salt and black pepper, if desired. Cook until heated through. Stir in ground turkey, rice and 1 cup cheese.
5) Fill peppers with rice mixture and top with remaining ½ cup cheese. Pour a small amount of water into the bottom of the baking dish. Cover with foil and bake 30 minutes. Uncover and bake 15 to 20 minutes or until the peppers are soft and the cheese is melted.

Chili Pepper Turkey Panini
The Chili Pepper Deli Turkey Panini will have you up to your knees in spicy flavor. It’s a taste you’ll want to put on a pedestal. Or a plate.

INGREDIENTS
1 teaspoon olive oil
1 Roma tomato, cut in half
salt and pepper, to taste
2.5 ounces JENNIE-O® Chili Pepper Turkey Breast, thinly sliced, from the service deli
2 slices sourdough bread
2 slices buffalo mozzarella cheese

DIRECTIONS
1) In small skillet, heat oil over medium-high heat. Cook tomato halves 2 minutes on each side or until slightly charred. Sprinkle with salt and pepper to taste.
2) Place turkey on one bread slice. Top remaining slice with cheese and tomato halves. Press halves together.
3) Heat panini press. Place sandwich in press and cook until golden and cheese is melted.

Caprese Turkey Flatbread
There’s nothing flat tasting about this flatbread! Our Caprese Turkey Flatbread comes layered with mozzarella,
JENNIE-O® Turkey Breast Roast, Roma tomatoes and a balsamic glaze on top of fresh Naan. And with turkey as the main protein, it’s all the delicious with less guilt!

INGREDIENTS

2 Naan flatbreads
1 tablespoon olive oil
½ teaspoon garlic powder
8 ounces fresh sliced mozzarella
4 ounces JENNIE-O® Turkey Breast Roast, grab-n-go dinner from the service deli
2 roma tomatoes, sliced thin
10 fresh basil leaves, torn
1 teaspoon balsamic glaze

DIRECTIONS

1) Heat oven to 350°F.
2) Mist baking sheet with non-stick cooking spray.
3) Rub flatbreads with olive oil; sprinkle with garlic powder. Top with mozzarella, shredded turkey, and sliced tomatoes.
4) Bake 30 minutes or until cheese is melted and flatbreads are golden brown.
5) Remove from oven. Sprinkle basil leaves on top of flatbread and drizzle with balsamic.
