One of America’s Favorites – Tater Tots

A tater tot is a side dish made from deep-fried, grated potatoes. They are widely recognized by their crispness, cylindrical shape, and small size. Tater Tots is a registered trademark of Ore-Ida (a division of the H. J. Heinz Company), which has become genericized.
The product was created in 1953 when Ore-Ida founders F. Nephi Grigg and Golden Grigg were trying to figure out what to do with leftover slivers of cut-up potatoes. They chopped up the slivers, added flour and seasoning, then pushed the mash through holes and sliced off pieces of the extruded mixture. The product was first offered in stores in 1956.
Originally, the product was very inexpensive. According to advertising lectures at Iowa State University, people did not buy it at first because there was no perceived value. When the price was raised, people began buying it. Today, Americans consume approximately 70 million pounds of tater tots per year.
When the tater tot product was first produced, there was no name for them. The owners of Ore-Ida decided to hold a contest among the employees that would help determine the product name. Clora Lay Orton, then a young house mother, submitted the name “tater tots”. The name was a hit and she won the contest.
In the United States, tater tots are common at school-lunch counters and cafeterias. They are also sold in the frozen food sections of grocery stores. Some fast-food restaurants also offer them.
The supermarket chain Safeway Inc. sells a generic brand of tater tots known as “Tater Treats”. Sonic drive-in also features tater tots on their regular menu; available toppings include cheese and chili. Sonic also sells “Cheesy Tots”, coin-shaped tots that contain melted cheese and potatoes. Several restaurants in the Pacific Northwest offer a nacho version of tots (“totchos”), covered in nacho cheese sauce and toppings.
Some Mexican-style fast-food restaurants offer seasoned Tater Tots: Taco Time and Señor Frog’s call them “Mexi-Fries”, while Taco Bell used to sell them as “Mexi-Nuggets” and “Border Fries”. Taco Mayo in the Southwest offers round disc-shaped tater tots called “Potato Locos.” Taco John’s also has coin shaped tots called “Potato Olés”.
In some areas of the Northeast, however, they are often called “juliennes” or “potato puffs”. In the Midwest states, Tater Tot Hotdish is a very popular soup-based casserole consisting of tater tots, ground beef, and various vegetables. Tater Tots are extensively referenced in the film Napoleon Dynamite.
In Australia, they are known as “potato gems”, “potato royals” or “potato pom-poms” (also used in New Zealand). In the United Kingdom, Ross Frozen Foods once produced “oven crunchies” which are no longer available, but are still produced and sold under the name “potato crunchies” by supermarket chain Morrisons. In Canada, McCain Foods Limited calls its line “Tasti Taters”. Cascadian Farm calls its line “Spud Puppies”.
Here’s a recipe for Tater Tots that my Mom uses.
Homemade Potater Tots
Ingredients
2 russet potatoes
1/4 cup chopped fresh chives (optional)
2 teaspoons salt
1 teaspoon white pepper
vegetable oil for frying
Directions
1 -Place the potatoes in a saucepan of water to cover, and bring to a boil over medium heat. Reduce heat, and simmer until the potatoes are cooked through but still firm, about 20 minutes. Remove from the water, and peel the cooked potatoes while still hot.
2 – Line a baking sheet with parchment paper and set aside.
3 – Shred the potatoes with a box grater, and place the shredded potatoes in a bowl. Lightly mix in the chives, salt, and white pepper. Spoon the potato mixture into a piping bag with a 1/2-inch round tip.
4 – Pipe the potato mixture onto the parchment paper in a long, 1/2-inch wide rope. Place the baking sheet into the refrigerator until the potato mixture has cooled and set, about 1 hour. Cut the potato strip into 1-inch lengths.
5 – Heat vegetable oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Working in batches, deep-fry the potato pieces until crisp and golden brown.

Today’s Menu: Grilled Applewood Smoked Bratwurst w/ Baked Fries
Our streak of beautiful weather continues around here. Some say it’s an early Indian Summer. Unless my Dad can get stronger I’m afraid we’ have to put him in an assisted living center. I hope not but we may not have a choice. i do all I can but I’m in a wheel chair and Mom is 86 so it’s getting harder and harder for her to do it. Hopefully things will work out. We’re having some water drainage problems next to drive-way so I guess that’s my next project. For dinner tonight, trying them for the first time, Buffalo Applewood Smoked Bratwurst. I prepared Grilled Applewood Smoked Bratwurst w/ Baked Fries.
I hadn’t ordered anything from Wild Idea Buffalo in a while and my Buffalo stock was very low. So I placed an order last Thursday and it arrived late yesterday afternoon. I ordered some Buffalo Steaks, Ground Buffalo, and their new Grilled Applewood Smoked Bratwurst. They’re nice size plump Brats. They slow smoke these new bratwurst with rich applewood chips for a deep smoked taste that really brings out the sweetness of our grass-fed buffalo meat, and it really does! They’re made with Grass-Fed Buffalo, Water, Sea Salt, Organic Black Pepper, Garlic Powder, Pure Cane Sugar, Onion Powder, Coriander, Celery Seed, and Marjoram. Then encased in an organic pork casing. To prepare them I first boiled them in water for about 4 minutes and then finished them off on the grill. I Grilled them about 5 minutes, turning often. These bad boys were just bursting with flavor! Another delicious Buffalo Product from Wild Idea Buffalo. Served them on a Healthy Life Whole Grain Bun topped with French’s Spicy Brown Mustard.
Then I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side of Hunt’s Ketchup. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with a dab of Cool Whip Free.

Today’s Menu: Montgomery Inn Pulled Pork BBQ Sandwich w/ Baked Fries
We started the morning with about 1/4′ of freezing rain, which is far worse than snow. Then flurries on and off, until dinner time and the heavy snow started! We have about 2″ and it’s coming down hard. It’s been a real laid back day, can’t get out so it was Sofa City most of the day! For dinner tonight Mom and Dad wanted Sandwiches, so Sandwiches it was. I prepared Montgomery Inn Pulled Pork BBQ Sandwich w/ Baked Fries.
I used the Montgomery Inn Hardwood Smoked Pulled Pork w/ Barbecue Sauce. Montgomery Inn is one of the original Barbecue and Ribs Restaurant in the Cincinnati area. It has some of the finest food, love them Ribs, anywhere! They also sell their Ribs and Pulled Pork and Chicken at all Kroger. So when it’s Pulled Pork I almost always use the Montgomery Inn brand. Anyway you just heat it in a medium sauce pan until it’s warmed and you have BBQ. It’s the perfect combination of the Pork and the mouth watering Montgomery Inn Sauce that makes this so delicious! Plus it’s only 110 calories and 8 carbs per serving. I served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. I also baked up some of our favorite fries, Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries Served these with a side of Daisy Reduced Fat Sour Cream or Hunt’s Ketchup and also had an Ice-Cold Snapple Diet Peach Tea. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Smoked Cajun Turkey, Rosemary Ham, and Swiss Grilled Sandwich w/ Baked Fries
Our nice weather left real quickly, snow flurries and a wind chill in the 20’s. Went to the grocery early and then spent most of the afternoon cleaning my Hoveround Chair and then catching up on laundry. For dinner tonight, Smoked Cajun Turkey, Rosemary Ham, and Swiss Grilled Sandwich w/ Baked Fries.
I picked up a Jennie – O Premium Portions Hickory Smoked Cajun Style Turkey Breast, try saying that five times real fast! I love these, great sliced, for sandwiches, and just the right size for 1 or 2 people (1.39 lbs). Plus it’s only it’s only 50 calories and 1 carb per serving! It comes already seasoned and precooked. Just serve cold or heated up. I heated up a few slices in the oven for the sandwich. So I had the Turkey and I also had a couple of slices of Kroger Private Selection Oven Roasted Rosemary Ham. Topped it with Sargento Ultra Thin Swiss Cheese and Hidden Valley Spicy Chipotle Spread. Served it on a couple of slices of Klosterman Wheat Bread and then grilled in a medium size skillet with a 1/2 Tbs of Blue Bonnet Light Stick Butter.
Then for a side I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served with a side of Hunt’s Ketchup. For dessert later a Del Monte No Sugar Added Pech Chunk Cup.

Today’s Menu: Mushroom and Sharp Cheddar Turkey Burger w/ Baked Fries
Well the Holiday’s are over and time to get things back to normal. We didn’t have a lot of decorations so we’ll keep what we have up till this weekend. It’s been a cold but sunny day out today. Ran a couple of errands for Mom and that’s been about it for today. I warmed up the leftovers from the Christmas Feast for Mom and Dad for dinner. Myself, I really didn’t want leftovers so I prepared a Mushroom and Sharp Cheddar Turkey Burger w/ Baked Fries.
I used Jennie – O Turkey Burger Patties (Lean). Only 180 calories and 9 g fat and already made into patties. Pan fried them in a 1/2 Tbs of Canola Oil and seasoned it with Sea Salt and Ground Black Pepper. I served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun and topped with some sauteed sliced Baby Bella Mushrooms and a slice of Sargento Reduced Fat Sharp Cheddar. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. The rains and storms finally ended, we ended up with over 2″ of rain. We avoided any storm damage like some of the area had. Had to go to Walmart and pick up several items. It just still amazes me on Walmarts prices compared to Kroger! A box of Bigelow Decaf Green Tea at Walmart $1.28 – Kroger $1.98, Tide Detergent Walmart $11.49 – Kroger $12.39, Ball Park Turkey Franks, Fisher Nuts, Del Monte Products, it all keeps adding up. Look before you buy! For dinner tonight I prepared Mushroom and Sharp Cheddar Turkey Burgers w/ Baked Fries for everyone.

Blackened Tilapia Fish Sandwich w/ Baked Fries

Today’s Menu: Blackened Tilapia Fish Sandwich w/ Baked Fries
Another very cold start to the day, 1 degree this morning! Had a bad case of cabin fever coming on so I got out today before it got any worse! Picked up items at Meijer and Walmart, groceries and finished up my Christmas shopping list. Then dropped a gift and a bag of my Mom’s Buckeyes off to one of my best friends, got gas, and ran the car through the car wash to get the dirt and salt off of it, then home. Felt good to get out for a while! For dinner tonight I prepared a Blackened Tilapia Fish Sandwich w/ Baked Fries.
I had the Tilapia in the freezer and let it thaw in the fridge overnight. To prepare it I rinsed the fillet off in water and patted dry with a paper towel. I seasoned it with a bit of Sea Salt. Then I melted a 1/2 tablespoon of Blue Bonnet Light Stick Butter down and rubbed the fillet down with it, covering both sides. I then covered both sides, with Zatarain’s Blackening Seasoning. I added Canola Oil to my Cast Iron Skillet and preheated it until the Oil was almost ready to start smoking and I added the Tilapia. Just a word of warning have your window open and overhead stove fan a working, it will smoke! I cooked the fillet for 3 minutes each side and it was fork tender and ready. I love the smokey and heated flavor the Zatarain’s Seasoning provides. The fillet just melted in my mouth. I served it on an Meijer Bakery Wheat Mini Sub Bun. I topped it with some Hidden Valley Spicy Chipotle Pepper Sandwich Spread & Dip. If you haven’t tried this Spread, and you like some added heat this is your Spread! It’s not that over powering heat but it is Spicy. It’s a creamy and thick Spread so if you like Spicy give it a try.
I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Oh yeah it was about 12 degrees this morning! Sunny but a cold day today. I hadn’t been to Costco in a while so they open at 10:00 am. so I was there when they opened, best time to get an electric cart that’s fully charged. Picked up 2 big and beautiful Walleye Fillets, after cutting them down I’ll get at least 6 nice size smaller fillets. Picked up some other bulk items that I was running low on and picked up some items that always gets me in the Holiday Spirit. I bought a case of Green Beans, Baked Beans, and a case of Turkey Stuffing and delivered to our local food shelter. I’m a firm believer that it is better to give than receive. And with so many people in need it feels good to help when you can. For dinner tonight, Mushroom and Sharp Cheddar Turkey Burger w/ Baked Fries.
