Today’s Menu: Baked Ham and Swiss Sub w/ Baked Fries
For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cooked the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea. A little better day out there than yesterday, high of 32 degrees and partly sunny. After Lunch I headed up to a local rehab center to see a friend of mine’s father. He had lost part of his foot to Diabetes and was having a rough time. It was good seeing everyone, just under better circumstances next time! For Dinner tonight, a Baked Ham and Swiss Sub w/ Baked Fries
For my Sub I’ll need; Aunt Millie’s Deli Style Whole Grain Mini Sub Buns, Boar’s Head Sweet Sliced Ham, al fresco Uncured Chicken Bacon, 2 slices of Sargento Ultra Thin Swiss Cheese, Kraft Light Mayo w/ Olive Oil, and Kraft Fat Free Zesty Italian Dressing.
I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. If you’ve never tried this Bacon you need to give it a try. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it! Sit the Bacon aside until ready to use.
To make the Sub I took the bottom half of the Bun and layered it the Mayo and a slice of Swiss Cheese. Then layered it with the Ham, 2 slices of Swiss Cheese, Chicken Bacon, a drizzle of the Italian Dressing, and topped it with the top half of the Sub Bun. Last, I drizzled more of the Italian Dressing over to of it.
I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Baked Ham and Swiss Subs!
I also baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later, while watching the Super Bowl, a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.
Aunt Millie’s Whole Grain Mini Sub Buns

Today’s Menu: Baked Ham, Salami, and Provolone Mini Sub w/ Baked Fries
For Breakfast this morning I prepared 2 Jennie – O Turkey Breakfast Sausage Links, 1 Egg Sunnyside Up, and 2 slices of toasted Healthy Life Whole Grain Bread (Lightly Buttered). Also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I did a load of laundry for Mom and cleaned up around the house. Whole lot of rain yesterday and today, a heavier today. Rain a bit too much for me to load the wheelchair and then get it out to go see Dad. Hopefully later this week it will clear up. For Dinner tonight I prepared Baked Ham, Salami, and Provolone Mini Sub w/ Baked Fries.
To make the sandwich I’ll need; Kroger 100% Whole Wheat Hoagie Rolls, Boar’s Head Sweet Sliced Ham, Private Selection Hard Salami, Sargento Ultra Thin Provolone Cheese, Kraft Lite Italian Dressing, Kraft Reduced Fat Mayo w/ Olive Oil, and Extra Virgin Olive Oil (for brushing the tops of the buns while baking).
I used Boar’s Head Sweet Sliced Ham. I had purchased the Ham at Kroger, on sale the other day. I love all the Boar’s Head Meats and Cheese. Always fresh and lower in calories and sodium, the Ham is 60 calories per serving. Then I also used Private Selection Hard Salami, 110 calories per serving. For the Cheese I used Sargento Ultra Thin Provolone Cheese which is only 40 calories per slice. To make the Sub I put a slathering of the Kraft Mayo on the bottom half of the Bun. Then layered the Ham, the Salami, Provolone Cheese, Kraft Lite Italian Dressing, and topped with the top half of the Bun. To help the bun brown a bit I brushed the top of Bun with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Today’s Menu: Swiss and Chicken Sandwich w/ Baked Potato Puffs
I toasted a couple of Eggo’s and my morning cup of Bigelow Decaf Green Tea for Breakfast this morning. After Breakfast I did a couple of loads of laundry for Mom. Then outside did the daily sweeping of the wooden deck and driveway. This morning it was 54 degrees, a little taste of Fall there! Another nice day out. A little warmer but still low humidity but the warmer temps and high humidity are on the way back. Had everything done for the day so I got the cart out and rode around the neighborhood for a while. For Dinner tonight it’s a Swiss and Chicken Sandwich w/ Baked Potato Puffs.
It just felt like a Swiss/Chicken kind of day. I used the PERDUE® Crispy Chicken Strips, which I just had the night before. To prepare it I preheated the oven to 425°F . Sprayed a small baking sheet with cooking spray. Placed frozen strips in single layer on baking sheet. Baked for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn the Strips halfway through heating time. They come out golden brown and delicious!
I served them on an Aunt Millie’s Reduced Calorie Hamburger Bun and topped the Chicken with a slice of Sargento Ultra Thin Swiss Cheese and some Hidden Valley Ranch/Buffalo Dressing.
Then for a side dish for my Sandwich I prepared some Alexia Potato Puffs. To prepare them; Preheat the oven to 425 degrees F. Arrange the frozen potatoes in a single layer on a baking sheet lined with foil. Baked for 25, stirring halfway through the cooking time. And we have another Keeper Potato Product! Browned up perfect with excellent seasoning. Perfect Potato side dish. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Conventional/Toaster Oven (Preferred Methods) Preheat Oven to 425°F. Spray baking sheet with cooking spray. Place frozen strips in single layer on baking sheet. Bake on middle oven rack for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn patties halfway through heating time. Microwave Oven Place 4-6 frozen strips in single layer on a microwave safe plate lined with paper towel. Heat, uncovered, on high for 2 to 3 minutes, turning halfway through heating time. Let stand for 1 to 2 minutes before serving.

Today’s Menu: Buffalo Ranch Pulled Chicken Sandwich w/ Baked Fries
For Breakfast I made a Breakfast Sandwich, I had this yesterday and it was so good I had to have another! I toasted a Healthy Life Whole Grain English Muffin, fried up some Boar’s Head Deluxe Ham, and topped the Ham with a slice of Sargento Ultra Thin Swiss Cheese. And as always my morning cup of Bigelow Decaf Green Tea. After Breakfast I headed out to Walmart. If you rely on Electric Carts, like myself, when going to Walmart you have to go early to assure you get a cart that works or even get one before the few that they have are all gone! Picked up some Bigelow Tea and a few items in the hardware and yard sections. Stopped Kroger to pick up a Rotisserie Whole Roaster from the Deli. Plus I wanted to early and get back home before the heat and humidity kicks in along with passing showers. Got the cart out and finished off some yard work in between rain showers. We really need the rain, everything is too dry around the area. So for Dinner tonight its a Buffalo Ranch Pulled Chicken Sandwich w/ Baked Fries.
To make Dinner tonight I’ll need the Pulled Chicken from a Simple Truth Rotisserie Whole Roaster, Sargento Ultra Thin Swiss Cheese, Hidden Valley Buffalo Ranch Dressing, and Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun.
As I said I had purchased a Simple Truth Rotisserie Whole Roaster from the Kroger Deli earlier today. Love these Simple Truth Roasters, delicious and twice the size than most Deli Rotisserie Whole Roasters. The first thing I did was pull all the Chicken Meat; removing the skin and any bones. Put the Chicken in a bowl and set aside. I then grabbed a small skillet and heated it on medium heat. Added just enough of the Pulled Chicken to make the Sandwich. As the Chicken was heating I piled it up in the skillet and topped it with a slice of Swiss Cheese. As it melted I removed it from the skillet to the Bun. Topped it with Hidden Valley Buffalo Ranch, and done! The Hidden Valley Buffalo Ranch is a new item out, and it’s fantastic! Creamy with nice heat, another item to keep in stock! The sandwich turned out a winner. Chicken, Swiss and the Dressing are a great trio. I left more info on Hidden Valley Buffalo Ranch at the end of the post, give it a try!
To go with the Sandwich I baked some Alexia 98% Fat Free Roasted Straight Cut Fries with Sea Salt. To prepare them I baked them at 425 degrees for 17 minutes. They bake up beautifully and seasoned just right, another excellent Fry from Alexia! For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

You could tell it was going to be an uncomfortable day outside by 7:00 this morning, it was already 71 degrees and muggy out. They say we have a lot of rain moving in later, wait and see I guess. For Breakfast this morning I prepared 2 Jennie Turkey Sausages, 1 Egg Sunnyside Up, and 2 slices of toasted Healthy Life Whole Grain Bread (Lightly Buttered). Had a good first half of the night and then about 3:00 this morning I started having the Phantom Pains! So needless to say my sleep was over for the night. They finally stopped around 11:00 this morning. I was tired but I was not going to miss out on this beautiful Spring like day! It was 54 degrees at 6:00 this morning. It was a perfect day out, sunny and near 70 degrees. So I had a light Breakfast, did some light house cleaning, and I was gone outside!. Got the cart out for the afternoon. Went down by the lake and stopped and chatted with the neighbors. Good to see everyone and to be outside. For dinner tonight I prepared a Chicken, Turkey Bacon, and Swiss Sandwich w/ Hash Browns.
To make the Sandwich I’ll need; PERDUE® Crispy Chicken Strips, Jennie – O Turkey Bacon Sargento Ultra Thin Swiss Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, Aunt Millie’s Reduced Calorie Hamburger Buns.

As the Chicken Strips were baking I fried my Turkey Bacon. Used a large skillet that I sprayed with Pam Cooking Spray and heated it on medium heat. When heated, I fried up 4 slices of the Jennie- O Turkey Bacon. I only needed 2 of the slices but as always when frying Bacon you have to use Bacon math on the calculations of how much you need and how much to fry! Always cook an extra 2 slices of Bacon because you know your going to grab a slice or two as you’re frying it. When cooked set the Bacon on a paper towel lined plate until ready to use.
To build the Sandwich I took the bottom bun and started with a slice of Swiss Cheese, Kraft Mayo, Chicken Strips, Turkey Bacon, Stone Ground Mustard, and top half of bun. And Done! One very good Chicken Sandwich! Then for a side for my Sandwich I prepared some Simply Potatoes Hash Browns. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Conventional/Toaster Oven (Preferred Methods) Preheat Oven to 425°F. Spray baking sheet with cooking spray. Place frozen strips in single layer on baking sheet. Bake on middle oven rack for 16 to 18 minutes, or until heated through. Internal temperature should reach 150°F – 160°F. Turn patties halfway through heating time. Microwave Oven Place 4-6 frozen strips in single layer on a microwave safe plate lined with paper towel. Heat, uncovered, on high for 2 to 3 minutes, turning halfway through heating time. Let stand for 1 to 2 minutes before serving.

Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup

Today’s Menu: Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup
For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. You can serve this topped with a fried Egg, diced Onions, or Shredded Cheese. I topped mine this morning with Sargento Reduced Fat Shredded Colby – Jack Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea.
Cleaned the kitchen after Breakfast, did the morning work out, and then took Mom’s car up to the Car Wash and had it cleaned for her. Back home tidied up around the house. Had lunch and I headed out for a while. It’s a beautiful day out, sunny and around 50 degrees! Got out in the car and went for a drive out to my old neighborhood, Ross Ohio. It had been a while since I had been out there so I took advantage of this beautiful day and went out to the old homestead. Ross isn’t a very big place but as all small towns it’s gradually getting bigger. Back in the day when I was growing up there it was farming community. We had a Dairy Queen, an Ival’s Pizza, The Castle Bar/Diner, an IGA Market, and a small Deli Carry-Out. And that was it now there’s quite a few more places to eat and more on the way as more housing are being built and less farm land. Anyway back home and tonight I prepared a Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup.
To make the Sub I’ll need; Boar’s Head Maple Glazed Honey Coat Ham, Sargento Ultra Thin Swiss Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, and Aunt Millie’s Deli Style Whole Grain Mini Sub Buns.
I used Boar’s Head Maple Glazed Honey Coat Ham. I had purchased the Boar’s Head Maple Glazed Honey Coat Ham at Kroger, on sale the other day. I love all the Boar’s Head Meats and Cheese. Always fresh and lower in calories and sodium, the Ham is 60 calories per serving. I also used Sargento Ultra Thin Swiss Cheese which is only 40 calories per slice. Topped it with Kraft Reduced Fat Mayo w/ Olive Oil. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Ham and Swiss Subs!
Then I also heated up some Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using this a few years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I also had a Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Turkey and Veggie Roll-Ups
Makes 2 Servings
Ingredients
2 Tablespoons Hummus (any flavor)
1 (8 – Inch) Whole Grain Tortilla
1/4 Cup Sliced Baby Spinach
2 Slices Jennie – O Sliced Oven Roasted Turkey Breast
1/4 Cup Thinly Sliced English Cucumber
1 or 2 Slices of Sargento Ultra Thin Swiss Cheese
1/4 Cup Thinly Sliced Carrot
Directions
Spread Hummus on Tortilla to within 1 inch of edge. Layer with Spinach, Turkey, Cucumber, Cheese, and Carrots. Roll up Jelly-Roll Style, cut into 4 pieces. Enjoy!
