What an incredible sunrise this morning! I went out to get the Morning Papers and just sat outside admiring Mother Nature’s work. I went in grabbed my camera and snapped the a couple of photos, wish I had a better camera but it they came out okay. Had the new roof put on yesterday, and today is a whole lot quieter! The new roof looks great. Dad is due home tomorrow so I didn’t go see him today, Mom did and I stayed home and house clean. Found some time later to get the cart out for a while to enjoy this beautiful Fall Day. For dinner tonight I prepared a 1/4 lb. Buffalo Cheese Burger w/ Baked Fries.

When I’m having a Burger it’s a Buffalo Burger, a Wild Idea Buffalo 1/4 Buffalo Burger. I usually have the 1/3 lb. Wild Idea Buffalo Burger but I found a package of the 1/4 lb. Buffalo Patties in the freezer, so I went with that tonight. I laid it in the fridge overnight to thaw. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Extra Virgin Olive Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Sargento Ultra Thin Sharp Cheddar Cheese and Sauteed Mushrooms, served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun.

I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Ohhh Baby it’s cold out! The temperature is in the low 20’s but we have a real strong cold wind blowing which takes the wind chill around 10 degrees. Good Super Bowl last night, came down to the final seconds before New England won it. Did a couple of loads of laundry for Mom and ran the vacuum in the afternoon. I had planned a dish that has Shrimp in it but once again, I forgot to lay an item out to thaw! So instead for dinner tonight I prepared a Buffalo Burger Pattie Melt w/ Baked Fries

I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it about 3 minutes per side, and done. As my Burger was getting done I toasted 2 slices of Klosterman Wheat Bread. I served my Buffalo Burger on the Toasted Wheat Bread and topped it with a slice of Kroger Simple Truth Muenster Cheese and just a dab of Kraft Reduced Mayo w/ Olive Oil. One delicious Sandwich! Anytime when I can use Buffalo I do it and it always turns out delicious!

 

For a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Another rainy day around here. For Breakfast this morning I made a Breakfast Sandwich. I used a slice of Turkey Spam, 1 slice of Sargento Ultra Thin Extra Sharp Cheddar, and a toasted healthy Life Whole Grain Muffin. Put it all together and your starting your day off right! Also, as usual, I had a hot cup of Bigelow’s Decaf Green Tea. With all the rain not a whole lot going on today. For dinner I prepared an Extra Sharp Cheddar and Mushroom Buffalo Burger w/ Baked Fries.

 

 
I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers. It’s been a very humid and hot day out today! For Breakfast I prepared a Fried Turkey Spam, Cheddar, and Scrambled Egg English Muffin. Love that Turkey Spam! Spent the Morning at the Hospital with Dad, who is doing and looking a lot better today! In fact they are moving him from the hospital to a rehab center. He’s an amazing 92-year-old man. For dinner I prepared a Grilled Cheddar, Mushroom, and Sweet and Hot Mustard Turkey Burger w/ Baked Fries.

 

 
I’m using the Jennie – O Turkey Burger Patties. Their already pre-made Patties so all I did was season them with Sea Salt and Ground Black Pepper and fry! I was going to grill them but it is just too humid out there for me so I pan fried them. I fried them in Canola Oil about 8 1/2 minutes per side. I served the Burgers on Aunt Millie’s Reduced Calorie Hamburger Buns and topped the Pattie with some Sweet Hot Stone Ground Mustard, some sautéed sliced Baby Bella Mushrooms, and a slice of Sargento Ultra Thin Sharp Cheddar Cheese. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries for a side dish. For dessert later Jello Sugar Free Dark Chocolate Pudding.

Big Changes in our weather today, and it’s all good! No Humidity, sunny and a high of 72 degrees! Perfect day out today. We had the Kitchen and Laundry Rooms flooring replaced today, they showed up! We went with a darker color because of the Hoveround I have. We have to mop the floors a lot because of the rubber residue that builds up from the tires of the Hoveround. Fired the grill up for dinner tonight. I prepared a Grilled Cheddar, Mushroom, and Sweet Mustard Turkey Burger w/ Baked Fries

 
I’m using the Jennie – O Turkey Burger Patties. Fired the grill up and let it heat up and got the Patties ready. Their already pre-made Patties so all I did was season them with Sea Salt and Ground Black Pepper. While I had the grill heated I also grilled Mom and Dad a couple of Jennie – O Turkey Franks. Another warm and muggy day out. If you have allergies, it’s bad around here. The tree pollen is really high and I could tell it this afternoon when I was out. I had to take my Mom to the Dermatologist today. We thought she had Shingles again but it turned out to be Poison Ivy. Which isn’t good but sure better than Shingles! They put her on 2 Prescriptions and a homemade solution and said it would eventually clear up. For dinner tonight it’s a Sharp Cheddar Mushroom Buffalo Burger w/ Baked Fries.

 

 

 

 

As usual I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers. You could put a plate of these in front of me and I would be like Wimpy, of Pop Eye fame. Love these Burgers. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Canola Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Sargento Ultra Thin Sharp Cheddar Cheese and Sauteed Mushrooms, served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun.

Another morning of a lot rain, and a bit cooler too. Not much to do today. Ran a full scan for the computer and deleted some old pictures and files, and that was about it. For dinner tonight I prepared a Grilled Turkey Burger w/ Baked Fries.

 

 

 
I’m using the Jennie – O Turkey Burger Patties. Fired the grill up and let it heat up and got the Patties ready. Their already pre-made Patties so all I did was season them with Sea Salt and Ground Black Pepper. While I had the grill heated I also grilled Mom and Dad a couple of Brats and some Jennie – O Turkey Franks. I served the Burgers on Aunt Millie’s Reduced Calorie Hamburger Buns and topped the Pattie with the Sauteed Mushrooms (seasoned with Sea Salt, Rosemary, Parsley, and Roasted Cummin) and a slice of Sargento Ultra Thin Sharp Cheddar Cheese. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries for a side dish. For dessert later a Black Cherry Jello.

Today’s Menu: Grilled Buffalo Cheese Burger w/ Baked Fries

A brief shower overnight and early morning, then a beautiful Spring Day! Hit around 70 degrees again. Nice to have all the windows open, letting in all that fresh air. Some rain moving in the rest of the week, but that beats in the Teens and Snow! Put together the new grill. It’s not as big as the old one but big enough for the family. My Dad comes home finally after about 2 1/2 weeks of being in the hospital and rehab unit. For dinner it was grilling time! Grilled a Grilled Buffalo Cheese Burger with some Baked Fries.

 

 

 
As usual I used a Wild Idea Buffalo 1/4 Pound Buffalo Burger. I’ve got a couple of packs in the freezer so I let one thaw overnight in the fridge. Sprayed the grill grate with pam Grill Spray and heated it up for the first grill on the new grill. I seasoned the Buffalo Burger with McCormick Grinder Sea salt and Black Peppercorn. It only takes about 3 1/2 minutes per side for Medium Rare as Buffalo Meat gets done in an only a short amount of time, because it’s so lean. Some people like their Cheese melted, I prefer adding my Cheese after the Burger is done. I used Sargento Ultra Thin Sliced Sharp Cheddar. Served it on an Aunt Millie’s Reduced Calorie Hamburger Bun. I also baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Oh I hope winter is over, because today has really spoiled everyone around here today. Sunny and in the low 50’s! And they say the 60’s are on the way. We deserve this it’s been one long, cold, and snowy winter. Was able to get outside a couple of times today to enjoy this weather. For dinner tonight I prepared a Sharp Cheddar Turkey Burger w/ 3 Bean Salad and Baked Fries.

 

 

 

 

I used the Jennie – O Turkey Burger Patties (Lean). Only 180 calories and 9 g fat and already made into fresh patties. Pan fried Turkey Burger 3 Bean Salad Fries 006them in a 1/2 Tbs of Canola Oil and seasoned it with Sea Salt and Ground Black Pepper. I served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun and topped with sautéed sliced Baby Bella Mushrooms and a slice of Sargento Ultra Thin Sharp Cheddar. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries and had a serving of Read’s 3 Bean Salad. It comes in a can and you can prepare it various ways. I just opened the can and put it in a plastic bowl, put the lid on, and set in the refrigerator to chill for a couple of hours or so. I served these cold. For dessert later a Jello Sugar Free Double Chocolate Pudding.

Today’s Menu: Sharp Cheddar Cheese and Mushroom 1/4 lb. Buffalo Burger w/ Baked Fries

 

 

 

Still a windy and cold day around here but the sun was out all day, which helped clear our roads and driveways of snow. Plus, the forecast is looking good! Up coming days with highs in the 40’s and 50’s, which beats what we’ve been having. Sad day I went to the funeral home this afternoon for visitation of a childhood friends father. It’s sad that none of see each other anymore as the year’s have passed, not unless it’s a funeral. I moved away from the neighborhood as I was going in to my freshman year in high school, now we’re all in our 50’s. A few of the old neighborhood still lives in the area like myself and some in Tennessee and Texas. It was nice seeing everyone, just not under these conditions though. Well for dinner it was a Sharp Cheddar Cheese and Mushroom 1/4 lb. Buffalo Burger w/ Baked Fries.

As usual I used my favorite Buffalo Burger, Wild Idea Buffalo 1/4 Buffalo Burger. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Canola Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Sargento Ultra Thin Sharp Cheddar Cheese and Sauteed Mushrooms, served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun.

 

 

 

 

Then for a side dish I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.
