Today’s Menu: Breakfast for Dinner – Thin Cut Pork Chops, Hash Browns, Scrambled Eggs, and Toast

 

For Breakfast this morning I toasted a Thomas Light 100% Multigrain English Muffin and topped the halves with Smucker’s Sugarless Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I had to go to the local Kroger up the road for a couple of items and then stopped by McDonald’s to pick up Breakfast for Mom. Afterward she went to Church. Had a an afternoon shower with a high of 91 degrees out today. Did a couple loads of laundry. Then got the cart out and did some yard work; weeds, cleaned off the deck and driveway areas, and trimmed the vines along the driveway. For Dinner tonight Breakfast! I prepared Thin Cut Pork Chops, Hash Browns, Scrambled Eggs and Toast.

 

While at Meijer earlier this week I picked up a beautiful package of Thin Cut Pork Loin Chops. Along with the Chops I’ll be using; 2 Eggs (Scrambled), Simply Potatoes Garlic and Herb Hash Browns, and 2 slices Aunt Millie’s Light Whole Grain Bread.

 

 

 

 

 

To prepare the Chops; I seasoned with McCormick’s Smokehouse Maple Seasoning. First time trying this Seasoning. Some of the ingredients are Brown Sugar, Molasses, Garlic, Onions, and Paprika. Perfect for Pork, Chicken, or Salmon. Next i grabbed a skillet and gave a spray of Pam Non Stick Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated on medium heat. When the skillet was ready added the Chops. I just cooked them about 2 1/2 minutes per side. Being thin cut, it didn’t take them long to cook. It was a good size package so we froze the ones left. The Chops turned out delicious! Moist and the McCormick Smokehouse Maple Seasoning was perfect for the Pork.

 

Then for a side I prepared some Simply Potatoes Garlic and Herb Hash Browns. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar.

 

 

 

 

 

As both the Chops and Hash Browns were finishing I then made the Scrambled Eggs. As soon as the Hash Browns were done I removed them from the skillet and used this skillet for my Eggs. I used 2 Medium Size Eggs; also Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Sea Salt, and Ground Black Pepper. To prepare them In a small bowl, whisked the Eggs and add just a splash of water. Added the Eggs, to the all ready heated skillet and cooked. Flipped the Eggs a couple of times and turned the heat off and finished the Eggs. When done I sprinkled the Scramble with some Sargento Reduced Fat Shredded Cheese. Finally I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, lightly Buttered with I Can’t Believe It’s Not Butter. Wow, nothing like a good Breakfast for Dinner! For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Bacon Double Cheddar Chicken Sandwich w/ Tater Tots

 

 

For Breakfast I had a bowl of Cherrio’s along with a cup of Bigelow Decaf Green Tea. After Breakfast I headed to the local Kroger up the road. Needed a few things for tonight’s Dinner. Usually when I go early to Kroger there’s hardly anyone there. But not today, I forgot it was Valentine’s Day! I was luck to find a handicap parking space, someone happened to be pulling out and they left their electric cart ou also. Kroger made a fortune on Cars, Flowers, and Candy sales! I got what I needed and headed back home. I’m glad I did go early though as it started pouring the rain as I got back home. Not much else going on today. I did put a Pork Loin Roast in the Crock Pot and let it cook on low for 7 hours for tomorrow’s Dinner. For my Dinner tonight I prepared a Bacon Double Cheddar Chicken Sandwich w/ Tater Tots.

 

I purchased a package of Tyson Thin Cut Boneless Chicken Breasts at Kroger. I’ll also need the following to make the Dish; al fresco Uncured Chicken Bacon, Boar’s Head Deli Sliced Yellow Cheddar and White Cheddar Cheese, Jack Daniel’s Honey Smokehouse BBQ Sauce, Lettuce, and Aunt Millie’s Whole Grain Mini Sub Buns.

 

 

 

 

I first fried the al fresco Uncured Chicken Bacon. I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. This Bacon fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

 

Next I fried the Thin Cut Chicken Breasts. I’m using the Tyson Thin Cut Boneless Chicken Breasts. I got a large skillet that I sprayed with pam Non Stick Cooking Spray and added a tablespoon of Extra Light Olive Oil. I then heated the skillet on medium heat. I seasoned the Chicken with Morton’s Lite Salt and Ground Pepper. Then rolled the Chicken in seasoned Flour. I had seasoned the Flour with Ground Smoked Paprika. With the skillet heated I added the Chicken. I fried it 2 minutes and flipped it over and cooked it another 2 minutes and flipped it back again. Cooked it until the Chicken had an internal temperature of 165°. Cooked it a total of 15 minutes. With about 1 minute or so of cooking time left I topped the Chicken Breasts with a slice of Yellow and slice of White Cheddar Cheese. The Chicken came out perfect. Nice browning on the outside moist and juicy inside, and the Cheese melted beautifully!

 

As my Chicken was cooking I preheated the oven on 425° to bake some Tater Tots.I used Ore Ida Golden Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup.

 

 

 

 

 


As the Tater Tots were finishing up I made my Sandwich. I got the Mini Sub Buns and took the bottom half and put Lettuce down, added the Chicken Breast, topped that with the Jack Daniel’s BBQ Sauce, the Bacon, and the top half of the Sub Bun. Quite a sandwich! I’ll have to start having this more often! With the Tater Tots it came out one delicious Dinner! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple.

We started the morning with about 1/4′ of freezing rain, which is far worse than snow. Then flurries on and off, until dinner time and the heavy snow started! We have about 2″ and it’s coming down hard. It’s been a real laid back day, can’t get out so it was Sofa City most of the day! For dinner tonight Mom and Dad wanted Sandwiches, so Sandwiches it was. I prepared Montgomery Inn Pulled Pork BBQ Sandwich w/ Baked Fries.

 

 

 
I used the Montgomery Inn Hardwood Smoked Pulled Pork w/ Barbecue Sauce. Montgomery Inn is one of the original Barbecue and Ribs Restaurant in the Cincinnati area. It has some of the finest food, love them Ribs, anywhere! They also sell their Ribs and Pulled Pork and Chicken at all Kroger. So when it’s Pulled Pork I almost always use the Montgomery Inn brand. Anyway you just heat it in a medium sauce pan until it’s warmed and you have BBQ. It’s the perfect combination of the Pork and the mouth watering Montgomery Inn Sauce that makes this so delicious! Plus it’s only 110 calories and 8 carbs per serving. I served it on an Aunt Millie’s Reduced Calorie Whole Grain Bun. I also baked up some of our favorite fries, Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries Served these with a side of Daisy Reduced Fat Sour Cream or Hunt’s Ketchup and also had an Ice-Cold Snapple Diet Peach Tea. For dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

It’s a beautiful day in the neighborhood! Sunny and a high of around 51 degrees. With the last few days of sun and warmer temps we can actually see most of the lawns instead of piles of snow. I had been wanting to try the Jennie – O Turkey Franks but could not find them sold anywhere until I was on-line and seen that Target sells them. I had never shopped at Target before and after this morning I may not again! I had read some not so kind reviews of Target as from people who are handicapped, but they are the only ones in this area that sells the Jennie – O Turkey Franks so I thought I would give them a try.

 

 

 

They opened at 8:00, so I have learned through the years if you have to rely on a stores electric carts you go early so you can use one that’s fully charged. I was the third person in as the doors opened and very disappointed right off seeing they only had 3 electric carts for the entire store, that was in sight at least. Then I noticed all 3 carts were unplugged which meant that they had set there all night without being recharged. I checked all 3 carts and all were near dead but I tried one anyway. I got about halfway to the grocery dept. and the cart died. After several minutes I got a clerk’s attention and he got me a second cart. They were still stocking and some of the aisles were blocked with boxes and pallets but I was finally able to grab a couple of packages of the Jenn O Turkey Franks. I wanted to look around but the cart was fading fast so I headed to check out line. Didn’t make it though as the 2nd cart passed away, they brought me a third cart! I was able to make it through the line and to my car before that one had the same fate as the other 2. If I go back to Target it will be for the Franks and nothing else! Needless to say if you have to rely on electric carts you might want to avoid Target and Whole Foods who don’t even supply electric carts, at least the Whole Foods here in West Chester. Sorry for the rant, on with the menu! I prepared Steamed Hot Dogs and Buns w/ Fat Free Pringle’s.

 

 

Steamed Turkey Franks 002
I’m finally getting a chance to try the Jennie – O Turkey Franks, and I’m glad I did! Nice size Turkey Franks, and steamed up plump and a whole lot of flavor! Got to give these a high rating on the Dog Scale for sure. I usually boil or grill Franks or Hot Dogs but last week I had purchased a steamer and had chance to give it a try today. It worked to perfection, good purchase. As I said the Franks came out nice and plump with lots of flavor, these will make some fantastic Chili Dogs. Served them on a Aunt Millie’s Reduced Calorie Hot Dog Bun and topped them with French’s Yellow Mustard. Served with a side of Pringle’s Fat Free Potato Chips. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

The temperature started dropping early this morning and still haven’t stopped. Along with the wind chill its below zero, with even colder temps by in the morning (-10). A lot of schools in the area have cancelled or at least the ones that don’t have full bus service. I’ll sure be glad to see Spring Weather get here! For dinner tonight it’s a Turkey Bacon and Cheddar Buffalo Burger w/ Baked Fries.

 

 

 

I prepared a Wild Idea Buffalo 1/3 lb. Burger. I seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it in Canola Oil about 3 1/2 minutes per side. Buffalo gets done rather quickly due to it’s so lean. I topped it with a slice of Jennie – O Turkey Bacon and a slice of Sargento Ultra Thin Sharp Cheddar Cheese and served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun. For dessert later a Weight Watchers Chocolate Swirl Ice Cream Cone.

Today’s Menu: Muenster and Sweet Italian Turkey Sausage Dogs w/ Baked Fries

Woke up to a another snow. Ended up with 4″ or more of new snow, with more on the way. From what I hear maybe another 1″ Sunday, 1″ to 2″ on Monday and then our coldest days of the year coming in for the next 3-4 days. A minus 10 predicted for Wednesday morning, not including the wind chill if any.Oh well thank goodness for the classic TV channels, AMC and TCM. For dinner Mom and Dad wanted Baked Chicken with all the sides, which I prepared for them, and for myself it was a Muenster and Sweet Italian Turkey Sausage Dogs w/ Baked Fries.

 

 

 
I prepared them the Perdue Whole Chicken Breast along with sides of; Mashed Potatoes, Green Beans, Sliced Carrots, and baked Pillsbury Rustic French Bread. For myself I just wanted something a bit lighter so I prepared a Muenster and Sweet Italian Turkey Sausage Dogs w/ Baked Fries.

 

 

 
I used Jennie -O Sweet Italian Turkey Sausages, is there anything else! I prepared a couple of them, I’ll have the other one for lunch tomorrow. To prepare them is very easy, I pan fried them in a medium size skillet that I sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Added the Sausages and cooked covered, turning occasionally, about 17 – 19 minutes. Always make sure you cook them to well-done, 165º F. as measured by a meat thermometer. Their just a delicious Sausage, excellent flavor and moist and juicy inside! I served them on an Aunt Millie’s Reduced Calorie Hot Dog Bun topped with French’s Spicy Brown Mustard with a slice of Murray’s Muenster Cheese wrapped around it! I love Muenster Cheese, especially Murray’s. It’s the perfect cheese for sandwiches, it melts just perfect and still has texture to it. Then for a side I baked up some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. For dessert later a Weight Watchers Chocolate Swirl Ice Cream Cone, while watching a full night of TV with TCM; Bonnie and Clyde, Jaws, and then Alien!

Welcome back to the still frozen tundra of West Chester, Ohio! I’ll be glad when this deep freeze passes, they say one more day of below zero and by Thursday a balmy 25 degrees, you have to start somewhere! I got my Mom’s car repaired and now I think the weather has taken a toll on mine, it will be in the shop some time this week. For dinner a cold winter’s day classic, Skyline Chili and Spaghetti – 3 Way w/ Chili and Cheese Coney! What better way to heat it up a bit.

I used Skyline 3 Way – Chili, Spaghetti. They sell it packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with Skyline Chili. I added a few dashes of Frank’s Red Hot Sauce and Cheese to make it a 3 Way and used Sargento Reduced Fat Shredded Sharp Cheese. The Chili Spaghetti is 270 calories and 20 carbs.

 

 

 
Then I also prepared an Oscar Mayer Extra Lean Turkey Franks, my new choice of Hot Dogs. Just boiled them for 5 minutes and they were ready. Opened a small can of Skyline Chili and heated it up, for topping for the Hot Dog. Served on a Aunt Millie’s Reduced Calorie Hot Dog Bun and topped with Skyline Chili, French’s Yellow Mustard and Sargento Reduced Fat Shredded Sharp Cheddar. For a dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Today’s Menu: Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries

It was cleaning day, computer cleaning day. Amazing how much dust can gather in and around a computer. Took the panel off and cleaned inside it, then cleaned the outside of it. Cleaned the computer desk, which is always a dumping site for everything! Then did some back up of files, deleted a lot of things and ran a day long computer scan. All is okay and back up running! For dinner I had laid some frozen Tilapia Fillets in the fridge overnight to thaw. Then for dinner it was Seasoned Tilapia Sandwich w/ Baked Cracked Black Pepper and Sea Salt Country Style Fries.

 

 

Still using the bag of Tilapia I had purchased from Walmart. Good thing to have in the freezer, their easily thawed, easy to prepare , and delicious! I rinsed the fillets off in cold water and patted dry with a paper towel. I then seasoned them a bit of Sea Salt and then rolled them in Zatarain’s Crispy Southern Fish Fri Breading Mix. Pan fried them in Canola Oil about 3 minutes per side. Served it on a Aunt Millie’s Deli Style Whole Grain Mini Sub Bun.

 

 
For a side for my Fish Sandwich I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Served these with a side Daisy Reduced Fat Sour Cream. For dessert/snack later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.
