Today’s Menu: Salt and Pepper Salmon Bites w/ Long Grain and Wild Rice

 

 

For Breakfast this morning I prepared a 2 Egg Bacon and Cheese Omelet. I was hungry and the Omelet hit the spot! I also had my morning cup of Bigelow Decaf Green Tea. Outside a cool breeze most of the day. A high of 58 degrees and mostly cloudy. I’m beginning to wonder if Spring or Summer will ever get here! Finally got the yard done! We raked the flower beds of leaves and the older wood chips. Then put down the new Black Wood Chips, it looks great. For the lawn, the Winter was rough on everyone’s lawn. I’ve been putting lawn seed and grass fertilizer down since early March and it’s paid off. The lawn looks great also! I have everything ready for when or if it gets warm out. For Dinner tonight I prepared Salt and Pepper Salmon Bites w/ Long Grain and Wild Rice.

 

I bought a package of Salmon Bites at Meijer the other day. It seems all stores have Salmon Bites now, which must be the new trend! To prepare them I’ll be needing Cooking Olive Oil,  McCormick Dried Cilantro, McCormick Grinder Sea Salt and Grinder Black Pepper. I’ll be cooking it in a skillet that I sprayed with Pam Non Stick Cooking Spray and 1 tablespoon of the Cooking Olive Oil on medium heat. I washed the Salmon off in cold water and dried them with a paper towel. I put the Salmon Bites in a bowl and added some Olive Oil to it. I then made sure I covered all the Salmon in the Oil. I then seasoned them with Sea Salt, Black Pepper and Cilantro.

 

With the skillet heated and ready I added the Salmon to it. I cooked it 2 minutes a side, and done. The Salmon Bites were small so it took just 2 minutes a side to get done. They turned out delicious, the Seasoning was perfect. I’ll have to have the Bites more often.

 

 

 

To go with the Salmon I prepared some Uncle Ben’s Ready Rice – Long Grain and Wild Rice. It comes in a microwavable Pouch. Just heat the pouch in the microwave and serve. Love Rice! I also had a Aunt Millie’s Live Carb Smart Dinner Roll.  For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

Today’s Menu: Buttermilk Marinated Chicken Thighs and Noodles

 

 

For Breakfast I made a Breakfast Sandwich using a toasted Thomas Light English Muffin and frying a al fresco Chicken Sausage Patty, I actually made 2 of these – 1 for Mom. The al fresco Chicken Breakfast Patties are an excellent Patty! Still a touch of Winter out there today. A high of 51 degrees, cloudy and windy out today. The wind made it feel like it was in the 30’s. After Breakfast I made a Delivery Order from Kroger, it got here about Noon. Just did some cleaning around the house and moved some of our plants outside to the shed for overnight. The say a possible frost! Will it ever change to Spring! For Dinner tonight I prepared Buttermilk Marinated Chicken Thighs and Noodles along with Dinner Rolls.

 

For the Chicken; I started at Noon today. I grabbed a large Hefty Bag and added a 1/2 Pint of Buttermilk to the bag. I then added several shakes of Frank’s Hot Sauce to it and shook the bag to blend it together. I then added my Chicken Breasts and let it Marinate in the fridge until it was time to use. I used my favorite, Katie’s Best Chicken Thighs.

 

To prepare the Chicken Thighs I grabbed a Cast Iron Skillet. Sprayed with a coat of Pam Non Stick Cooking Spray. Then I started heating the skillet on medium heat. Next I added a tablespoon and a half of Olive Oil Cooking Oil. As the skillet heated I got the Chicken out of the fridge and removed it from the bag of Marinade, shaking off the excess. Then I grabbed a pie pan and added Flour to it and seasoned the Flour with Paprika. Took the Chicken Thighs and rolled them in the Seasoned Flour until well covered.

 

Added the Chicken to the heated Skillet. I cooked the Chicken for 4 minutes and then flipped them over and cooked them for 4 more minutes, until golden brown and the meat  thermometer read 165 degrees. The Chicken turned out so very good! Cooked up perfect, nice crust, and love the seasoning! Served it with Kraft Hickory Smoked BBQ Sauce for dipping.

 

For the Noodles I used No Yolks Extra Broad Noodles. I’ve been eating the No Yolks for as long as I can remember. They are always so good! To prepare them: Bring 4 quarts of water to a rapid boil. Add salt to add flavor and reduce stickiness. Gradually stir in 6 oz of No Yolks noodles; return to rapid boil. Cook uncovered for 10-12 minutes, stirring occasionally.

 

 

To prepare the Meal I made a bed of Noodles and topped them with a shake of Salt, Dried Parsley, and I Can’t Believe It’s Not Butter. Then I topped them with the Chicken Thighs. This is my type of Dinner! The No Yolks were good as always and the Chicken Thighs were excellent. Chicken is so good when Marinated in the Buttermilk and Frank’s Red Hot Sauce! We also had some Aunt Millie’s Living Carb Smart Dinner Rolls, some of the freshest Rolls you can buy. Plus they are only 35 calories and 2 carbs per roll! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

 

 

 

Chicken Thighs – One medium, baked chicken thigh with skin provides 140 calories, 14 grams of protein, 0 grams of carbohydrate, 9 grams of fat, 3 grams of saturated fat, 4 grams of monounsaturated fat, 2 gram of polyunsaturated fat, and 275 milligrams of sodium.

Today’s Menu: Buffalo New York Strip Steak w/ Baked Potato and Dinner Roll
For Breakfast this morning I toasted a couple of slices of Aunt Millie’s Live Carb Smart Wheat Bread, heated up 2 Johnsonville Turkey Breakfast Sausage Links, made a packet of Pioneer White Peppered Gravy, and had a cup of Bigelow Decaf Green Tea. It rained all last night and till about 8:00 this morning. Cloudy and 65 degrees out. The rain really helped my Pepper and Tomato Plants! They were looking a bit sad but they seem to be coming around. All caught up today. I did run the vacuum. For Dinner tonight I prepared a 6oz.Buffalo New York Strip Steak w/ Baked Potato and Dinner Roll.

 

To prepare it I’ll need Wild Idea Buffalo Omnivore Salt Seasoning and Cooking Olive Oil. I started by preheating a Cast Iron Skillet on medium high. Then rubbed a very light coat of the Olive Oil on both sides of the Steak then seasoned both sides with the Omnivore Salt. Once the skillet is hot I added the Steak let it sear on medium heat for about 2 minutes. Then turned it once and cooked for 2 more minutes. Then I put the skillet in the oven and finished the Steak in the oven. I had to keep it in the oven a bit longer than normal because it’s a thick Steak.

 

The Steak came out a beautiful Medium Rare! Served it with some Sauteed Mushrooms. These Steaks are every bit as delicious as they look! The taste is so fresh and has that slight sweet Grass Fed Buffalo taste to it. Moist and tender and so delicious! You just can’t beat these Wild Idea Buffalo Steaks, Bison or Beef.

 

 

 

For a side dish I baked a Russet Potato. I seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley. Topped it with I Can’t Believe It’s Not Butter. We also had some Aunt Millie’s Live Carb Smart Dinner Rolls. Love these Rolls. Always fresh and only 35 calories and 1 net carb per roll. For Dessert/Snack later a bowl of Skinny Pop – Popcorn with a Diet Peach Snapple to drink.

Today’s Menu: Buffalo New York Strip Steak w/ Baked Potato and Dinner Roll

 

To start my Morning off I prepared some Buffalo Breakfast Sausage Patties, some Simply Potatoes Shredded Hash Browns, and a cup of Bigelow Decaf Green Tea. I had the Wild Idea Buffalo Breakfast Ground Sausage come as part of my order from Wild Idea Buffalo, delivered yesterday. It makes some delicious Sausage Patties! 38 degrees and cloudy out today. There Was some freezing rain overnight in some areas. There was car pile ups and roads closed all over the area. But here in our area we had nothing! How I don’t know, it hit on all 4 sides around us. Anyway I took Mom for her 7th Radiation Treatment, 13 to go! Back home I pretreated the driveway with salt. We have another chance of freezing rain and sleet tomorrow morning again. Come on Springtime! For Dinner tonight I prepared a 6oz.Buffalo New York Strip Steak w/ Baked Potato and Dinner Roll.
