Today’s Menu: Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs

 

 

For Breakfast I made a Ham and Cheese Egg White Omelet. I used Bob Evan’s Egg Whites, Meijer Cubed Ham, and Sargento Off the Block Cheddar Cheese. I also had a cup of my favorite Tea, Bigelow Decaf Green Tea. More rain today and every day until next Monday. So rain today and a high of 54 degrees. Well its week 2 of isolation. The Governor of Ohio has shutdown everything but Hospitals, Doctor’s Offices, Grocery Stores, essential Repair shops, and Drive Thru or Curb Side Restaurants. My cousin has been bringing us food and such when she ventures out. Also I’ve been ordering what food and needs on line but its tough finding it anymore. Most Stores are out of a lot of items but its starting to better. So wait is what we’ll do until the virus passes or a cure comes along. I hope all of you stay healthy! For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni.

 

Thank goodness for our 2 freezers! We have a good supply of items in the freezer. So for the Shrimp part of the dish I used Meijer Brand Frozen Jumbo Shrimp. This is my frozen Shrimp of choice, best I’ve found. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

 

I love having Shrimp with the Pasta Roni – Angel Hair Pasta with Herbs. It comes with the Pasta Special Seasonings Packet and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box, leftovers coming tomorrow. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one easily prepared and delicious Shrimp and Pasta Dish! Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert/Snack later a bowl of Smart Pop – Pop Corn with a Diet Peach Snapple to drink.

 

 

 

 

 

Pasta Roni Angel Hair Pasta with Herbs

Our Pasta Roni Angel Hair Pasta with Herbs flavor blends delicate angel hair pasta in a creamy herb sauce with other natural flavors. This delicately flavored dish is the perfect complement to your family’s favorite Italian-inspired recipes.

What You’ll Do

Today’s Menu: Leftover – Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread

 

 

To start the morning off I had a cup of Bigelow Decaf Green Tea. Well the my Hoveround Mobility Chair that i use broke down and I had to get out my other one out. One of my best friends came over and we worked on it and have it back up and running! This poor old chair is beat up but I love it! Luckily I had the spare parts to repair it. I go on Ebay and buy spare parts for my Hoveround when I can find them. So for Dinner tonight I reheat the Leftover Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread. I’ve left the original post from yesterday below for description and instructions. Enjoy!

I had bought a box of Zatarain’s Gumbo Mix with Rice while at Meijer last week. So for Dinner tonight I’m preparing a Smoked Turkey Sausage and Shrimp Gumbo. Using the Zatrain’s Gumbo Mix, Butterball Hardwood Smoked Turkey Sausage, and a bag of Meijer Frozen Shrimp (Large Size). Add all together and I’ve one Delicious Meal coming!

 

 

 

 

To prepare it I got a large saucepan and sprayed it with Pam Non Stick Cooking Spray. Then added 6 cups of Water, bite sized sliced 1 1/2 Sausages of the Butterball Smoked Turkey Sausage, and the Gumbo Mix. Mixed until well blended together. I brought it to a boil; covered and simmered for 25 minutes.

 

 

 

 

 

Next as the Gumbo was cooking I got the Shrimp out of the fridge washed then and let then drain in a colander. Then with 15 minutes of cooking time left I added the Shrimp to the Gumbo, stirring again until well mixed. Continued for 15 minutes. Removed the pot from the heat and let it stand for 5 minutes before serving.

 

 

 

 

This made one excellent Gumbo Dish! The Mix itself was flavored perfect, spicy but not over powering. Then with the added Sausage and Shrimp, it just capped everything off! I added a few shakes of Frank’s Hot Sauce to the Dish also. Lots of delicious leftovers for tomorrow!

 

 

 

 

Then I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Perfect Bread with any Dish! I loved this dish tonight, plenty leftover for a couple of lunches! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzel Sticks with a Diet Peach Snapple to drink.

Today’s Menu: Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread

 

 

To start the morning off I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had my morning cup of Bigelow Decaf Green Tea. 44 degrees and cloudy out. After Breakfast I went to Walmart, needed ink and paper for the printer. Back home I did laundry and then just watched some TV. For Dinner tonight i prepared a Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread.

 

I had bought another box of Zatarain’s Gumbo Mix with Rice while at Kroger. So for Dinner tonight I’m preparing a Smoked Turkey Sausage and Shrimp Gumbo. Using the Zatrain’s Gumbo Mix, Butterball Hardwood Smoked Turkey Sausage, and a bag of Meijer Frozen Shrimp (Large Size). Add all together and I’ve one Delicious Meal coming!

Today’s Menu: Barbecue Turkey Meatloaf w/ Mashed Potatoes and Green Beans

 

 

To start this Monday off I Poached an Egg and served it on Thomas Light English Muffin. I also had a cup of Bigelow Decaf Decaf Green Tea. 64 degrees and partly cloudy out today. 62 degrees on the 2nd day February! After Breakfast I headed to Menard’s. I needed a new Rake and a new Broom. I stopped by McDonald’s and picked up Breakfast for Mom. Back home I took both cars up and had them Washed. Then back home I ran our portable vacuum in both cars and cleaned the inside windows. For Dinner tonight I’m preparing a Barbecue Turkey Meatloaf w/ Mashed Potatoes and Green Beans.

 

 

 

Over the weekend I was watching Dinners, Drive-Ins, and Dives and they were at BBQ place in Kansas City and they served Barbecue Turkey Meatloaf. I knew right away I had to try this! I’ll need the following to make the Meatloaf; one 1 lb. package of Jennie – O Extra Lean Turkey Breast, 1 tablespoon Extra Light Olive Oil, 1 1/2 teaspoons of Dijon Mustard, 2 teaspoons Minced Garlic, 1 tablespoon Reduced Sodium Worchestershire Sauce, 1 Egg, 1/4 cup Bread Crumbs, 1 1/2 teaspoons Onion Powder, 1 teaspoon Cumin, 1 teaspoon Garlic Powder, 1 tablespoon Dried Parsley, Sea Salt, Black Pepper, Jack Daniel’s Honey Barbecue Sauce (1/4 cup plus 1/2 cup for topping). Sounding pretty good! To prepare it; I preheat the oven to 400 degrees. I got a small Glass Pyrex Baking Dish and sprayed it with Pam Non Stick Cooking Spray. Next I mixed the Turkey, Onion Powder, Cumin, Garlic Powder, Garlic, Parsley, Mustard, Worcestershire Sauce, Bread Crumbs, Egg, Barbecue Sauce, Sea Salt and Pepper. Then I formed the Turkey mixture into a loaf and formed into the baking dish. Brushed the top of Meatloaf with 1/2 cup Barbecue Sauce.

 

Baked Meatloaf for 1 hour, until the internal temperature reached 160 degrees. Brushed the top of Meatloaf with additional Jack Daniel’s Barbecue Sauce, sliced and served with a side of the Barbecue Sauce. BBQ Meatloaf has just earned a place here in my kitchen! Really enjoyed this. Plus its Mom approved, she loved it! Thank you Food Network for the idea!

 

 

 

 

For a side dish I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

 

 

 

 

 

 

 

I also opened up a jar of our Canned Green Beans, I could make a meal out of these by their self! We still have about 9 quarts left of the Green Beans. I heated up a 1/2 a roll of the leftover La Baguetterie Roasted Garlic Oval Bread. Wow what a delicious Dinner! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a glass of Ice Water to drink.

Today’s Menu: Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast

 

 

For Breakfast this morning I microwaved a Jimmy Dean Simple Scrambles Cup – Crumbled Turkey Sausage, Egg Whites, and Shredded Cheddar Cheese. I also had a cup of Bigelow Decaf Green Tea. Back to cloudy and 40 degrees outside today. We need a few days of Sunshine! After Breakfast I headed out to Meijer, needed quite a few items. Back home it was freezer purge day. We have a stand up freezer that Mom uses and she wanted me to go through it and get rid of any items that were outdated. Had everything done so I took a late afternoon nap, my sinuses are running wild today. For Dinner tonight I prepared Whole Wheat Spaghetti and Turkey Meatballs w/ Texas Toast.

 

 

Wasn’t sure what to have for Dinner till I came across the Meatballs in the freezer. So it’s Spaghetti and Meatballs tonight! And you can always make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. For the Meatballs I’m using Meijer Turkey Meatballs. These Meatballs are 150 calories and 5 carbs per serving (6 Meatballs). For the Spaghetti I’ll be using Ronzoni Healthy Harvest Whole Grain Spaghetti.

 

 

 

 

I’ll be cooking the Meatballs in LaRosa’s Original Pasta Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. I grabbed a small Sauce Pan, sprayed it Pam Non Stick Cooking Spray, added the sauce to it, and heated on medium low heat. As the sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Cooked them for 7 minutes and then reduced the heat to low until I was ready to use them.

 

 

 

 

As I said I’m using Ronzoni Healthy Harvest Whole Grain Spaghetti. It’s my favorite and I use all the Ronzoni Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. To prepare the Spaghetti; I cooked the Spaghetti as to the package instructions. I used a large Sauce Pan and filled it 1/2 way up with water. Turned the burner on high and brought the water to a rapid boil. Added the Spaghetti and stirred, returning it to the rapid boil. Cooked it uncovered, stirring it occasionally. Cooked it for a total of 8 minutes and done! Love this Pasta so tender and tasty. As the Spaghetti was cooking I baked the New York Bakery Light Texas Toast. For Dessert tonight a cup of Bigelow Decaf Green Tea.

For Breakfast I made a cup of Bigelow Decaf Green Tea. Snow flurries this morning but turned to rain later, a high of 39 degrees. After my Tea I went and picked up Breakfast for Mom. Caught up on everything today so I relaxed and caught up on some reading and some shows I have recorded. For Dinner tonight I reheat the Leftover Shrimp w/ Pasta Roni. I love having Shrimp with the Pasta Roni – Angel Hair Pasta with Herbs. It comes with the Pasta Special Seasonings Packet and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. There’s 2 servings per box, leftovers coming tomorrow. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one easily prepared and delicious Shrimp and Pasta Dish! Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

Today’s Menu: Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs

 

 

For Breakfast I made a cup of Bigelow Decaf Green Tea. Cloudy and 39 degrees out today. After my Tea I headed out and picked up a couple of friends of mine and dropped them off at the airport, Florida Bound! Wish I was going too! Stopped at Kroger for Mom and picked up her Breakfast at McDonald’s on the way back. I got the Cord Free Vacuum out and changed the roller brushes. not my favorite chore! Then vacuumed and cleaned the house. For Dinner tonight a favorite of mine, Shrimp w/ Pasta Roni.

 

 

 

For the Shrimp part of the dish I used Meijer Brand Frozen Jumbo Shrimp. This is my frozen Shrimp of choice, best I’ve found. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

Today’s Menu: Leftover – Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread

 

 

To start the morning off I toasted a Thomas Light English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. Not too active today down with a bad sinus headache. This weather is killing me! First cold then warm. 36 degrees yesterday and back up to 58 degrees today! Not much I can do. For Dinner tonight I reheat the Leftover Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread. I’ve left the original post from yesterday below for description and instructions. Enjoy!

 

I had bought a box of Zatarain’s Gumbo Mix with Rice while at Meijer last week. So for Dinner tonight I’m preparing a Smoked Turkey Sausage and Shrimp Gumbo. Using the Zatrain’s Gumbo Mix, Butterball Hardwood Smoked Turkey Sausage, and a bag of Meijer Frozen Shrimp (Large Size). Add all together and I’ve one Delicious Meal coming!

 

 

 

 

To prepare it I got a large saucepan and sprayed it with Pam Non Stick Cooking Spray. Then added 6 cups of Water, bite sized sliced 1 1/2 Sausages of the Butterball Smoked Turkey Sausage, and the Gumbo Mix. Mixed until well blended together. I brought it to a boil; covered and simmered for 25 minutes.

 

 

 

 

Next as the Gumbo was cooking I got the Shrimp out of the fridge washed then and let then drain in a colander. Then with 15 minutes of cooking time left I added the Shrimp to the Gumbo, stirring again until well mixed. Continued for 15 minutes. Removed the pot from the heat and let it stand for 5 minutes before serving.

 

 

 

 

This made one excellent Gumbo Dish! The Mix itself was flavored perfect, spicy but not over powering. Then with the added Sausage and Shrimp, it just capped everything off! I added a few shakes of Frank’s Hot Sauce to the Dish also. Lots of delicious leftovers for tomorrow!

 

 

 

 

Then I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Perfect Bread with any Dish! I loved this dish tonight, plenty leftover for a couple of lunches! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzel Sticks with a Diet Peach Snapple to drink.

To start the morning off I prepared a Sunny Side Up Egg, 4 strips of al fresco Chicken Bacon, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. 34 degrees, sunny, and windy out today. After Breakfast I went to Menard’s for a couple of things and stopped by McDonald’s and picked up Breakfast for Mom. Did a few things around the house and then caught up on some programs I had recorded. For Dinner tonight i prepared a Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread.

 

I had bought a box of Zatarain’s Gumbo Mix with Rice while at Meijer last week. So for Dinner tonight I’m preparing a Smoked Turkey Sausage and Shrimp Gumbo. Today’s Menu: Leftovers – Meatball Pasta Bake w/ Baked Garlic Oval Loaf Bread

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 37 degrees and mostly cloudy out today. After I had my Tea I headed out to the Grocery Store. I first went to Kroger for Mom and then on to Meijer for a few items. Back home cleaned the house today, dusted and ran the vacuum. Spent the rest of the day watching NFL Football. For Dinner tonight I prepared a Meatball Pasta Bake and Baked Garlic Loaf Bread. I didn’t want the leftovers to go to waste from Thursday night’s Dinner so I reheat the Meatball Pasta Bake. Just as good the 2nd time! I left the original post from the other night for directions and description. Enjoy!

 

To make this recipe I’ll be needing: Ronzoni Healthy Harvest Whole Grain Penne Rigate Pasta, LaRosa’s Sauce, Meijer Turkey Meatballs, LiteHouse Dried Oregano, Morton’s Lite Salt, Sargento Off the Block Mozzarella Cheese, Extra Light Olive Oil, and Kraft Reduced Fat Grated Parmesan Cheese.

 

 

 

I first turned the oven on to 425 degrees. To prepare it was easy! I used the Leftover Meijer Turkey Meatballs in the LaRosa’s Sauce. I put those in a sauce pan and reheated them on medium low, stirring often.

 

 

 

 

As the Meatballs and Sauce was heating I made my Pasta. I grabbed a large sauce pan and filled it 3/4 full of water, added the Salt to the water. Brought the water to a rapid boil. Added the Pasta and stirred; return to rapid boil. Cook uncovered for 8 minutes, stirring occasionally. I removed the Pasta just before it was done. It will finish in the oven without getting over cooked. Drain well.

 

 

 

I added the Pasta to casserole glass dish. Reseason with the Salt and added the Oregano and a tablespoon of Extra Light Olive Oil. Stirred until well mixed. Next I added Meatballs and Sauce and stirred until the Pasta was well coated with the Sauce and the Meatballs mixed in.

 

 

 

Topped everything with the Mozzarella Cheese and Oregano. Popped it in the preheated oven. and baked for about 20 minutes. I really wanted all those flavors to marry together. Before removing from the oven I switched it on to the broiler and left it in the oven another 3 minutes to get the Cheese a little brown on top. Done and ready to serve!

 

 

 

Served it in a bowl, I topped it with a sprinkle of the Grated Parmesan Cheese. One delicious dish! By making extra Meatballs in Sauce I got 2 delicious meals out of it. I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish, especially Pasta Dishes!
