Today’s Menu: Leftovers – Dirty Rice with Turkey Italian Sausage and Baked Garlic Loaf Bread

 

 

For Breakfast on this morning I Poached an Egg and served it on a Thomas Light English Muffin. Also had my morning cup of Bigelow Decaf Green Tea. Afterward I went to McDonald’s and picked up Breakfast for Mom. Mostly sunny and 86 degrees out, low Humidity but high Pollen count out today. Mom went on to Church and I got a few things done around the house. Did a load of laundry and as that was finishing I went out and raked the front yard. Everything done just in time to settle back and watch a day of NFL Football! So for Dinner tonight I’m heating up the Leftover Dirty Rice with Turkey Italian Sausage and Baked Garlic Loaf Bread.

This was too good from the night before to go to waste! So I’m having the Leftovers tonight for Dinner. Have a great evening every one! I left the orignal post from the night before for directions and ingredients.

For the Dirty Rice I used a box of Zatarain’s Dirty Rice. The Mix includes a Long Grain Rice Mix with Vegetables and Spices. I added the Sausage. I always look forward to this meal!

 

 

 

 

 

 

 

To prepare it; I first prepared the Turkey Sausage. I used Johnsonville Turkey Italian Sausages. I bought these from Meijer which carries the the full line of Johnsonville Products. Started by browning the Turkey Sausages in a 3-quart saucepan. Removed them from the skillet to plate and sliced the Sausages into bite size pieces. When done I drained what little fat from the skillet. Stirred in 2 1/2 cups of Water and the Rice Mix into the saucepan until it was well blended. Brought it to a boil. Reduced the heat to low and covered. Simmered for 25 minutes until the Rice was tender. With 5 minutes of cooking time left I added the Sausage back to the skillet, stirring well to mix with Rice.

 

Removed the sauce pan from the heat. Let it stand for 5 minutes, fluffed the Rice up and served! Delicious, the Sausage is so good and Rice and Mix all made some fantastic Dirty Rice and Sausage! Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! I loved this dish tonight, plenty leftover for tomorrow’s Dinner! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet 1/2 and 1/2 Lemonade/Tea Snapple to drink. I love my Snapple!

For Breakfast on this morning I Fried 3 Fresh Johnsonville Turkey Breakfast Sausage Links, prepared some Simply Potatoes Shredded Hash Browns, and had my morning cup of Bigelow Decaf Green Tea, as always! Mostly sunny and a high of 93 degrees. But with the high humidity the heat index makes it feel like 98-100 degrees. I got some yard work done early before it was too hot. Went to Kroger for Mom later to pick up a prescription. So for Dinner tonight I’m preparing Dirty Rice with Turkey Italian Sausage and Baked Garlic Loaf Bread.

Today’s Menu: Baked Pacific Cod w/ Long Grain and Wild Rice and Baked Garlic Oval Loaf Bread

 

 

For Breakfast this morning I fried a couple of Johnsonville Turkey Breakfast Sausage Links. These are fresh Sausage Links, a new product. They fried up great and tasted just as good! Johnsonville has a full line of Turkey Sausage Products, love them all! I also made some Simply Potatoes Shredded Hash Browns and made a cup of Bigelow Decaf Green Tea. Good way to start a Sunday Morning. I went to Kroger up the road to their Seafood Dept. I wanted some Fish for Dinner. We have one of those late Summer Hot August Day out there today! 98 degrees, sunny and very humid. I’m still not 100%, allergies still bothering me. So not a lot going on again. For Dinner tonight I prepared a Baked Pacific Cod w/ Long Grain and Wild Rice and Baked Garlic Oval Loaf Bread.

 

At Kroger this morning I purchased a package of fresh California Garlic Medley Seasoned Pacific Cod Fillets. These really looked good so I purchased a package. To prepare it I’ll be baking it. First I preheat the oven at 350 degrees. Then I placed the fillets in a 13×9-in. baking dish coated with Pam Cooking Spray. When the oven was ready I baked the Cod for 25 minutes.

 

 

 

 

 

Removed the baking dish from the oven and served the Cod. It came out perfect, moist with excellent Seasoning. The Garlic Medley was a perfect Seasoning for it. I’ll have to purchase another package soon, makes a great Meal!

 

 

 

 

 

 

To go with my Cod I prepared some Uncle Ben’s Ready Rice – Long Grain and Wild Rice. It comes in a microwavable Pouch. Just heat the pouch in the microwave and serve. Love Rice! Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

For Breakfast this morning I toasted a Thomas Light Multi Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. Had my morning cup of Bigelow Decaf Green Tea, as always! Went and picked up Breakfast for Mom after I ate and back home. While Mom was at Church I did a couple of loads of laundry and cleaned the Kitchen. Cleaned the stove, oven, microwave, and fridge. Outside its partly cloudy and a high of 97. Rain moved in the late afternoon. So for Dinner tonight I’m preparing Dirty Rice with Turkey Italian Sausage and Baked Garlic Loaf Bread.

Stirred in 2 1/2 cups of Water and the Rice Mix into the saucepan until it was well blended. Brought it to a boil. Reduced the heat to low and covered. Simmered for 25 minutes until the Rice was tender.

Today’s Menu: Leftovers – Red Beans and Rice w/ Cajun Shrimp and Baked Garlic Loaf Bread

 

 

 

For Breakfast I just had a cup of Bigelow Decaf Green Tea. I had another long and painful night of the Phantom Pains. Not sure why these have been coming back so frequently of late. But it was a very painful night and I was lucky to get an hours worth of sleep. So Tea was plenty this morning. Outside a passing shower, 86 degrees and humid. It really didn’t make a difference what it was outside today. After I got a few things done around the house it was back to bed for me, so very tired. For Dinner tonight leftover Red Beans and Rice w/ Cajun Shrimp and Baked Garlic Loaf Bread. I left the original post for the recipe and directions.

 

 

 

 

 

 

Well nothing better than Red Beans and Rice w/ Cajun Shrimp to get rid of those rainy day blues! For the red Beans and Rice I used a box of Zatarain’s Reduced Sodium Red Beans and Rice Mix. For the Shrimp I used the Meijer Frozen Jumbo Shrimp and for the Garlic Loaf I used a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread. This had the makings of a delicious Meal from the start! I got the bag of Shrimp out of the freezer last night and let it thaw overnight.

 

 

 

 

 

 

To prepare it I’ll need; 1 box of the Zatarain’s Red Beans and Rice Mix, 3 cups Water, Extra Light Olive Oil, and the Shrimp. Mixed 3 cups of water, Rice Mix and 2 tbsp. of Light Olive Oil in 2-quart saucepan until it was well blended. Brought to a boil. Then reduced the heat to low and covered. I got the Shrimp out of the fridge and seasoned them with Zatarain’s Creole Seasoning.

 

 

 

 

 

 

Simmered for 25 minutes, until the rice was tender. Stirred occasionally to prevent the Rice and Beans from sticking. With 4 minutes of cooking time left I added the Shrimp. When done I removed the skillet from heat. Let stand 5 minutes. And done ready to serve! Like the Sausage and Dirty Rice I had last week, this is one fantastic Meal! The Red Beans and Rice is Seasoned perfect. It made plenty of both the Red Beans and the Rice. And the Shrimp worked perfect with it. Plenty of great leftovers!

For Breakfast this morning I prepared a Diced Ham and Cheese Egg White Omelet. I used Egg Beater’s Egg Whites, Meijer Diced Ham, and Sargento Reduced Fat Shredded Sharp Cheddar Cheese for my Omelet. I also toasted a slice of Aunt Millie’s Light Whole Grain Bread and a cup of Bigelow Decaf Green Tea. Well we had 1 sunny day and its back to rain and a high of 75 degrees. This is getting old! After I ate I went to McDonald’s and picked up Breakfast for Mom. Cleaned the kitchen today; microwave, fridge, counters and such. Later on went out to the shed and swept that out. For Dinner tonight Red Beans and Rice w/ Cajun Shrimp and Baked Garlic Loaf Bread.

Today’s Menu: Leftovers – Dirty Rice with Turkey Italian Sausage and Baked Garlic Loaf Bread

 

 


I just had a cup of Bigelow Decaf Green Tea for Breakfast. More rain and thunderstorms with a high of 78 degrees and humid. Mom needed a few things from Jungle Jim’s International Market so we went there about 8:00 this morning. It gets crowded there and being in a mobilty cart it pays to get there early to get a cart and parking spot! As always I’m like a small child in a candy store when I go! They have my favorite Deli, Produce, Meat and Seafood departments. There’s always something new at that store. We went at the right time, as we got home a monsoon hit! Timing is everything! For Dinner tonight it’s Leftovers, I’m heating up the Dirty Rice with Turkey Italian Sausage and Baked Garlic Loaf Bread leftover from last night. No way I was going to let these leftovers go to waste! I’ll be having this again before long. I’ve left the post from last night for the description and cooking directions. Enjoy!

 

 

For the Dirty Rice I used a box of Zatarain’s Dirty Rice. The Mix includes a Long Grain Rice Mix with Vegetables and Spices. I added the Sausage. Really looking forward to this meal!

 

 

 

 

 


To prepare it; I first prepared the Turkey Sausage. I used Johnsonville Turkey Italian Sausages. I bought these from Meijer which carries the the full line of Johnsonville Products. First time using these, and they look delicious! Started by browning the Turkey Sausages in a 3-quart saucepan. Removed them from the skillet to plate and sliced the Sausages into bite size pieces and returned them to the skillet. When done I drained the fat. Stirred in 2 1/2 cups of Water and the Rice Mix into the saucepan until it was well blended. Brought it to a boil. Reduced the heat to low and covered. Simmered for 25 minutes until the Rice was tender.

 

 

 


Removed the sauce pan from the heat. Let it stand for 5 minutes, fluffed the Rice up and served! Delicious, the Sausage is so good and Rice and Mix all made some fantastic Dirty Rice and Sausage! Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! I loved this dish tonight, plenty leftover for tomorrow’s Dinner! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Dirty Rice with Turkey Italian Sausage and Baked Garlic Loaf Bread

 

 

For Breakfast on this Sunday morning I toasted a couple of Eggo’s – Nutri Grain Waffles. I also fried a couple of Jennie – O Turkey Breakfast Sausage Links. Had my morning cup of bigelow Decaf Green Tea, as always! More rain and thunderstorms also gusty winds, high of 83 degrees. They are saying we are in for a lot of rain the next 3 – 4 days, about 3-5 inches! They were saying due to all the rains we’ve had this Spring that none of the Farmers have been able to get their crops out and it’s too late now for some crops to be planted. What a shame! So for Dinner tonight I’m preparing Dirty Rice with Turkey Italian Sausage and Baked Garlic Loaf Bread.

Today’s Menu: Grilled BBQ Chicken Breasts w/ Sliced potatoes and Baked Beans

 

 

For Breakfast on this Sunday Morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. And that’s how you start a Sunday Morning! After Breakfast I went to McDonald’s to pick up Breakfast for Mom and stopped by Dunkin Donuts and picked up a couple of Donuts for her. Mom usually goes to Church but she had some pre-cancer places taken off her face, she’s still recovering so she stayed home today. Sunny and 71 degrees out today! Got the cart out after Lunch and did some yard work. Then I helped out and older neighbor get caught up with his. Really nice out today! For Dinner tonight Grilled BBQ Chicken Breasts w/ Sliced potatoes and Baked Beans.

 

 

I picked the Chicken up at Meijer the other day, Katie’s Best Skinless and Boneless Chicken Breasts. For the BBQ Sauce I’m using Kraft Hickory Smoke BBQ Sauce. I’m seasoning it with Morton’s Lite Salt and Ground Black Pepper. I went out and fired the grill up first. Next I sprayed the Chicken with Pam Non Stick Cooking Spray on both sides of the Chicken Breast, then seasoned them with the Salt and Pepper and waited for the Grill to heat.

 

 

 

 

 

With the Grill ready I started. Added the Chicken and shut the lid on the grill. I let the chicken cook for 7 minutes, then used the tongs to flip the breasts over. Grilled for another 7 minutes longer. With about 1 minute of cooking time left I basted the Chicken with the Kraft Hickory Smoke BBQ Sauce and finished cooking. Checked temperature of the Chicken with a thermometer reads it read just a tad over 165°. The Chicken came out fantastic! Moist and flavorful. First time using the Kraft Sauce and it was excellent!

 

 

 

 

As the Chicken was cooking I prepared the side dishes. For one side to go with the Chicken I prepared A can of Meijer Sliced Potatoes. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through and done!

 

 

 

 

 

Ten for another side I prepared a can of Bush’s Country Style Baked Beans. Just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Bush’s Beans! I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. And Dinner is served! The Chicken was spot on and the Potatoes and Beans work perfect with the BBQ Chicken. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Smoked Salmon w/ Whole Grain Medley – Brown and Wild Rice and Baked Garlic Loaf Bread

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. I had to be at my family Doctor to discuss the results of my test that showed I have severe Diabetic Neuropathy. I think I may have the test redone. I’m just not showing the signs that the tests says I should be showing, or at least not showing right now. Either way it’s just something new I have to deal with if I do have the damage. More to come. Anyway after I left the doctor’s I picked up Breakfast for Mom at McDonald’s. Then I went and got her car washed and filled up with gas. Next I went to Meijer for a few items. It’s a beautiful Spring Day out there today! 74 degrees and Sunny! For Dinner tonight I prepared Smoked Salmon w/ Whole Grain Medley – Brown and Wild Rice and Baked Garlic Bread Loaf.

 

 

 

 

I came across a new item while at Meijer, Latitude 45 Smoke Roasted Atlantic Salmon. So I’ll be using this for the first time along with a packet of Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice.

 

 

 

 

 

 

The Salmon comes in a sealed plastic container. I sampled it at Meijer and it was Love after one taste! I bought a couple of containers of it, with more to come! It’s all ready, just open and serve. Has such a delicious and fresh taste to it, huge fan already!

 

 

 

 

 

 


For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a micowavable package. I microwaved it for 90 seconds and done! I guess one my favorites from the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with the Smoked Salmon.

 

 

 

 

To serve I made a bed of the Rice and topped it with the Smoked Salmon. I love this dish! Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert later Jello Sugar Free Dark Chocolate Pudding topped with Coll Whip Free.
