Today’s Menu: Cumin Spiced Pork Chops w/ Roasted Butternut Squash and Mixed Chili Beans

 

 

For Breakfast this morning I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Live Carb Smart Wheat Bread, and a cup of Bigelow Decaf Green Tea. Another beautiful day outside. 78 degrees and sunny out today. After Breakfast I did a load of laundry. Then I got the cart out of the shed and did some yard work. Later I rode around the neighborhood enjoying the day. So for Dinner tonight I prepared Cumin Spiced Pork Chops w/ Roasted Butternut Squash, Mixed Chili Beans, and Baked Garlic Oval Loaf Bread. Mom loves this trio for Dinner!

 

I had the Chops in the freezer and laid them in the fridge overnight to thaw. To prepare my Chops I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it, preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add pork to the pan; cook for 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

 

Then for one side I prepared some Roasted Butternut Squash, an easy recipe for some delicious Butternut Squash! I purchased 2 small packages of Diced Butternut Squash at Meijer. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, Bacon Pieces, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

 

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash.

 

 

For a 2nd side I prepared a can of Bush’s Mixed Chili Beans – Kidney and Pinto Beans in Mild Chili Sauce. For me you just can’t beat Bush’s Beans. I’ve prepared these several times now and really like them, nice combo using the Kidney and Pinto Beans. To prepare them just empty the Beans into a small sauce pan. Cover and heat to a simmer. Done! I also baked a loaf of Garlic Oval Loaf Bread. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzel Sticks with a Diet Peach Snapple to drink.

Today’s: Menu: Fried Walleye Fillet w/ Roasted Asparagus, Baked Potato, and Baked Garlic Bread Loaf

 

Just a cup of Bigelow Decaf Green Tea to start the day. Another scorcher out there, 95 degrees, humid, sunny with a heat index around 106 degrees. I got up early and watered all the plants and what’s left of my Garden. It’s going to cool down over the weekend but on Monday it’s going right back to the heat and humidity. Not much else to do today. I’m still waiting for the hospital to call for my testing, waiting is the worst part! For Dinner tonight I prepared Fried Walleye Fillet w/ Roasted Asparagus and Baked Potato.

 

I purchased the Walleye at Meijer and put it in the freezer. I placed it in the fridge overnight to thaw. To prepare it I first rinsed the fillets in cold water and patted them dry with paper towel. Then to prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

For one side dish I prepared Roasted Asparagus for one side. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Roasted Asparagus Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse and clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place the pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving.

 

For another side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread, Meijer finally had some back in stock. Perfect Bread with any Dish! Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 78 degrees and rain on and off all day. A good day to stay in and that’s what I did. After my Tea I did a load of laundry. For Dinner tonight I prepared Fried Walleye Fillet w/ Roasted Asparagus and Baked Potato.

Today’s Menu: Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans

 

I had a cup of Bigelow Decaf Green Tea for Breakfast. 81 degrees and sunny, plus low humidity and no rain! After my Tea I went to Walmart and took my car and had it washed. Also stopped by the ATM and filled the car up with gas. Back home, I got some yard work done and did some packing and clean up the Spare Room. I’ll be glad to get this new flooring in and get back to normal! For Dinner tonight I heated up the leftover Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans. Leftovers are just as good as anything, especially this Chicken. I left the original post from last night for Ingredients and Directions. Enjoy and Take Care All!

So I had picked up a package of Katie’s Best Skinless and Boneless Chicken Breasts at Meijer and had it in the freezer, laid the package in the fridge overnight to thaw. For the BBQ Sauce I’m using Kraft Hickory Smoke BBQ Sauce. I’m seasoning it with Morton’s Lite Salt and Ground Black Pepper. I went out and fired the grill up first. Next I sprayed the Chicken with Pam Non Stick Cooking Spray on both sides of the Chicken Breast, then seasoned them with the Salt and Pepper and waited for the Grill to heat.

With the Grill ready I started. Added the Chicken and shut the lid on the grill. I let the chicken cook for 7 minutes, then used the tongs to flip the breasts over. Grilled for another 7 minutes longer. With about 1 minute of cooking time left I basted the Chicken with the Kraft Hickory Smoke BBQ Sauce and finished cooking. Checked the temperature of the Chicken with a thermometer reads it read just a tad over 165°. The Chicken came out fantastic! Moist and flavorful. Love this Katie’s Best Chicken!

 

As the Chicken was cooking I prepared the side dishes. For one side to go with the Chicken I prepared a can of Meijer Sliced Potatoes. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through and done!

 

Then for another side I prepared a can of Bush’s Country Style Baked Beans. Just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Bush’s Beans! I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. And Dinner is served! The Chicken was spot on and the Potatoes and Beans work perfect with the BBQ Chicken. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Diet Dr. Pepper to drink.

To start this rainy Saturday Morning off I made a packet of the Pioneer Peppered White Gravy. Next I toasted up a couple of slices of Aunt Millie’s Live Carb Smart 1 Net Carb Wheat Bread. Then I also heated up 2 Johnsonville Turkey Breakfast Sausage Links. I also had a cup of Bigelow Decaf Green Tea. 82 degrees and thunderstorms on and off all day. After Breakfast I took Mom over to where she has her Hair done in Fairfield. It’s an every Saturday thing for Mom going to have her hair done. We stopped by my cousin’s house on the way home. Not much else going on. For Dinner tonight Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans.

Today’s Menu: Roasted Garlic and Herb Pork Loin Chops w/ Mashed Potatoes, Roasted Butternut Squash and Baked Roasted Garlic Bread

 

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. 83 degrees and cloudy out today, but no rain! I was off to Meijer after my Tea. I needed a couple of more boxes for moving some stuff out of the room that’s going to have new flooring in it. Amazing how much you gather after time! Then later I went around to gather donations to help out the family who lost family members in the fire here the other day. All the neighbors have really stepped up to help the other family members. For Dinner tonight it’s Roasted Garlic and Herb Pork Loin Chops w/ Mashed Potatoes, Roasted Butternut Squash and Baked Roasted Garlic Bread.

 

While at Meijer I picked up a new product, AdapTable Meals – Roasted Garlic and Herb Pork Loin Chops, Seasoned With: Garlic, Onion, Tomato and Olive Oil. First time that I seen these. They looked Delicious and I was looking for something for Dinner, and I found it! I’ll be preparing them by Skillet.

 

To prepare them I heat one tablespoon of Cooking Olive Oil in a skillet on medium-high. I cooked the chops in a covered skillet for 2 1/2 minutes per side until product reaches 145°F on a my meat thermometer. Removed from the heat, let them rest for 3 minutes. These came out Delicious! Very well seasoned, tender and moist. I’ll purchase more of their products!

 

 

 

For 1 side I prepared a package of Bob Evan’s Mashed Potatoes. Just microwave for 6 total minutes and serve, just as good as homemade, if not better. I could make a meal out of just Mashed Potatoes.

 

 

Then for a 2nd side I repaired some Roasted Butternut Squash, easy recipe for some delicious Butternut Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. For my Bread for the French Toast I used a new Bread from Aunt Millie’s I recently came across at Meijer, Aunt Millie’s Live Carb Smart 1 Net Carb Wheat Bread. For my Syrup I used Log Cabin Sugar Free Maple Syrup. I also had a cup of Bigelow Decaf Green Tea. Cloudy and 72 degrees outside, rain moving in tomorrow. Mom’s car had to be taken back to the Shop. The air and heat aren’t working right yet, so we dropped it off and picked it up later in the day. I dropped Mom back at home and I went to Walgreens to pick up a prescription for myself and then over to Walmart. Back home I did a few things outside around the house. For Dinner tonight Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans.

Just a cup of Bigelow Decaf Green Tea for Breakfast on this Sunday Morning. After my Tea I went to Kroger up the road from us. Wanted to get in and out before the crowd moved in. To Kroger’s credit they had everything fully stocked, which is unusual on a Holiday weekend. Back home got the cart and the yard tools out and did yard work. For Dinner tonight I prepared a Blackened Red Snapper w/ Cut Green Beans, Brown and Wild Rice, and Baked Garlic Loaf Bread.

I purchased a couple of Red Snapper Fillets from Meijer a while back and had them in the freezer. I laid them in the fridge overnight to thaw. The Red Snapper Fillets were nice size and look beautiful. I decided to Blacken it, I love all Blackened Fish and Seafood. I’ll need Zatarain’s Blackened Seasoning, Blue Bonnet Butter, and McCormick Grinder Sea Salt. Cooking it in a Cast Iron Skillet in Butter and Extra Light Olive Oil.

To prepare it I started by rinsing the Fillet off in cold water and patting dry and cut it in half. I melted a tablespoon of butter, Blue Bonnet Stick Butter. I then brushed both sides of the fillets with the Butter and then rubbed the fillets with Zatarain’s Blackened Seasoning and Sea Salt. Then I got out the Cast Iron Skillet. When the pan was fully heated I added my Snapper. Cooked it about 3 1/2 minutes per side, and it was ready for the table! The taste of the Red Snapper with the added Zatarain’s Blackening Seasoning makes it one delicious Fish Dish!

 

To go with my Blackened Snapper I opened up a can of Del Monte Cut Green Beans. I heated them up in a small saucepan on medium heat. Stirred often until heated, then served.

 

For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a microwavable package. I guess one of my favorites from the Uncle Ben’s Ready Rice, although I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! For Dessert/Snack later a bowl of Skinny Pop – Popcorn with a Diet Dr. Pepper to drink. Today’s Menu: Cumin Spiced Pork Chops w/ Roasted Butternut Squash and Mixed Chili Beans

 

To start my morning off I toasted a couple of slices of Aunt Millie’s Live Carb Smart Wheat Bread that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. Big change in our weather today! High of 52 degrees with a wind chill that kept it in the 40’s all day. Took it slow today my back was giving me problems today. Spent most of the day just lying down with a heating pad. So for Dinner tonight I prepared Cumin Spiced Pork Chops w/ Roasted Butternut Squash, Mixed Chili Beans, and Baked Garlic Oval Loaf Bread. Mom loves this trio for Dinner!

 

I had the Chops in the freezer and laid them in the fridge overnight to thaw. To prepare my Chops I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it, preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add pork to the pan; cook for 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

 

Then for one side I prepared some Roasted Butternut Squash, an easy recipe for some delicious Butternut Squash! I purchased 2 small packages of Diced Butternut Squash at Meijer. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, Bacon Pieces, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

 

 

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash.

 

 

For a 2nd side I prepared a can of Bush’s Mixed Chili Beans – Kidney and Pinto Beans in Mild Chili Sauce. For me you just can’t beat Bush’s Beans. I’ve prepared these several times now and really like them, nice combo using the Kidney and Pinto Beans. To prepare them just empty the Beans into a small sauce pan. Cover and heat to a simmer. Done! I also baked a loaf of Garlic Oval Loaf Bread. For Dessert later a Jello Sugar Free Dark Cherry Jello Cup.

Today’s Menu: Shrimp w/ Fettuccine and Baked Garlic Loaf Bread

 

 

For Breakfast this morning I had my morning cup of Bigelow Decaf Green Tea. 91 degrees, humid and partly cloudy outside. Did some yard work early before the humidity got bad. Then at 1:00 I had to take Mom over for some new hearing aids. From there we stopped by the Cemetery and put flowers on my Brother’s Grave. Back home swept up outside and the deck. For Dinner tonight I prepared Shrimp w/ Fettuccine and Baked Garlic Loaf Bread.

 

For the Shrimp part of the dish I used Meijer Brand Large Shrimp. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

 

To prepare the Buitoni Fettuccine; I filled a large Sauce Pan with 4 quarts Water and a couple of shakes of Morton’s Light Salt. Turned it on high heat. When it was a full boil I added the Fettuccine. Reduced the heat for a gentle boil of the Pasta for 2 minutes, stirred frequently. Removed from the heat and drained the water. Seasoned the Pasta with Extra Light Olive Oil, Blue Bonnet Light Butter, Morton’s Light Salt, and Dried Oregano.

 

 

 

To serve, in a bowl, I made a bed of the Fettuccine and topped it with the Shrimp. I love Shrimp and Pasta! The Fettuccine was tender and so delicious. Then with the added Shrimp it just made that much better! I topped it with some Kraft Grated Reduced Fat Parmesan Cheese.

 

 

Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.
