Today’s Menu: Baked Salmon w/ Whole Grain Brown and Wild Rice and Baked Garlic Oval Bread

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 69 degrees and partly cloudy out today. A bit cooler out there today and they say a high in the 50’s by Friday. Maybe Fall has arrived! I’m glad I’m caught up with everything. I had one of those sleepless and rough nights dealing with Phantom Pains! Little to no sleep overnight. They started about 10:00 last night and finally let up about 11:00 this morning so I spent the day resting and catching up on sleep. I’m totally exhausted. For Dinner tonight I prepared a Baked Salmon w/ Whole Grain Brown and Wild Rice and Baked Garlic Oval Bread.

 

I had purchased a a North Atlantic Salmon Fillet from Meijer and had it in the freezer. I sat the fillet in the fridge overnight to thaw. To make it I’ll need the Salmon, McCormick Grinder Sea Salt and Peppercorn Medley, Dried Parsley, Dried Chive, and Extra Light Olive Oil.

To prepare it; I preheated the oven on 400 degrees. I then got a small baking pan and sprayed it with Pam Cooking Spray. I washed the Fillet off in cold water and patted dry with a paper towel. Next I put a light coat of the Extra Light Olive Oil on the Fillet and then seasoned. Layed the Fillet in the pan and baked. I baked it for 10 minutes, and done. Excellent Salmon!

 

For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a micowavable package. I microwaved it for 90 seconds and done! I guess one my favorites from the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with the Salmon.

 

Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels and a Diet Dr. Pepper to drink.

Today’s Menu: Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread

 

 

For Breakfast this Morning I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 85 degrees, humid and showers in the late afternoon. After Lunch I met a friend of mine and he showed me a couple of houses that he is flipping to sell. Good catching up with him, we’ve been friends since the 70’s! For Dinner tonight I prepared a Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Bread.

I love Gumbo and Cajun Cuisine, I always look forward to this meal! So for Dinner tonight I’m preparing a Smoked Turkey Sausage and Shrimp Gumbo. Using the Zatrain’s Gumbo Mix, Butterball Hardwood Smoked Turkey Sausage, and a bag of Meijer Frozen Shrimp (Large Size). Add all together and I’ve one Delicious Meal coming!

 

To prepare it I got a large saucepan and sprayed it with Pam Non Stick Cooking Spray. Then added 6 cups of Water, bite sized sliced 1 1/2 Sausages of the Butterball Smoked Turkey Sausage, and the Gumbo Mix. Mixed until well blended together. I brought it to a boil; covered and simmered for 25 minutes.

Next as the Gumbo was cooking I got the Shrimp out of the fridge washed then and let then drain in a colander. Then with 15 minutes of cooking time left I added the Shrimp to the Gumbo, stirring again until well mixed. Continued for 15 minutes. Removed the pot from the heat and let it stand for 5 minutes before serving.

This made one excellent Gumbo Dish! The Mix itself was flavored perfect, spicy but not over powering. Then with the added Sausage and Shrimp, it just capped everything off! I added a few shakes of Frank’s Hot Sauce to the Dish also. Lots of delicious leftovers!

 

 

 

 

 

 

 

 

 

 

Then I had baked a loaf of Garlic Bread and reheat a couple of slices to have with my Gumbo. Perfect Bread for Gumbo. For Dessert/Snack later a Coke Zero to drink.

For Seafood Gumbo: Cover. Microwave on HIGH 20 minutes, stirring occasionally. Stir in seafood. Cover. Microwave on HIGH 10 minutes longer or until rice is tender, stirring occasionally. Let stand in microwave 5 minutes.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 95 degrees, humid and had a brief passing rain shower. After I had my Tea I got the cart out and finished some yard work. Back inside before the heat and humidity kicked in for the day! Caught up on a couple of Movies I had recorded. Not much else happening. For Dinner tonight I prepared a Baked Salmon w/ Whole Grain Brown and Wild Rice and Baked Garlic Oval Bread.

 

I purchased a a North Atlantic Salmon Fillet from Meijer yesterday on my food delivery. To make it I’ll need the Salmon, McCormick Grinder Sea Salt and Peppercorn Medley, Dried Parsley, Dried Chive, and Extra Light Olive Oil.

 

To prepare it; I preheated the oven on 400 degrees. I then got a small baking pan and sprayed it with Pam Cooking Spray. I washed the Fillet off in cold water and patted dry with a paper towel. Next I put a light coat of the Extra Light Olive Oil on the Fillet and then seasoned. Lined the Fillet in the pan and baked. I baked it for 8 minutes, and done. Excellent Salmon!

For Breakfast on this Saturday Morning I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 72 degrees and mostly sunny, and no rain! After Breakfast I grabbed my mask and gloves and went to the local Kroger for a few items. They seem to be better stocked, that’s a good thing. Did some yard work, just enjoying the beautiful day out there! For Dinner tonight I prepared a Smoked Turkey Sausage and Shrimp Gumbo and Baked Garlic Loaf Bread.

Today’s Menu: Baked Salmon w/ Whole Grain Brown and Wild Rice

 

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, heated up some Kroger Diced Ham, and Fried a Sunny Side Up Egg. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Then placed the Sunny Side Egg on top of all of it. One of my favorite Breakfast Dishes. Also had a cup of Bigelow Decaf Green Tea. Rain, windy, and 54 degrees out today. Cleaned the house, did laundry, and gave the Kitchen Counters a good cleaning. For Dinner tonight I prepared a Baked Salmon w/ Whole Grain Brown and Wild Rice.

Maryland Style Crab Cakes w/ Cheddar Bake Potatoes

Today’s Menu: Maryland Style Crab Cakes w/ Cheddar Bake Potatoes

 

 

I just had a cup of Bigelow Decaf Green Tea for Breakfast. 56 degrees and rain showers this morning then cloudy in the afternoon. After Breakfast and in between showers I went to Meijer to grocery shop. Waiting for it to dry out around here, I have some things I have to get done outside. I’m going to Home Depot to pick up something to stop a Mole problem we have in the backyard. He’s tunneled through about 4 yards and has a mess going. I also have some minor repair work to our shed. I’m ready for Spring and warmer weather! For Dinner tonight I prepared Maryland Style Crab Cakes w/ Cheddar Bake Potatoes and Baked Garlic Loaf Bread.

 

I had a box of SeaPak Maryland Style Crab Cakes in the freezer and I’m having it for my Dinner tonight. I haven’t had these in a while and looking forward to them.They come frozen two to a box, individually vacuumed sealed. A serving size is both of the Crab Cakes.

 

 

To prepare these I preheated the oven to 425°f. Removed the frozen crab cakes from vacuum-pack and arranged on a baking sheet, flat side down. I then brushed them with melted Blue Bonnet Light Butter. Baked for 15 minutes on middle oven rack. Turned the Crab Cakes over and press gently to flatten them. Continued to bake for another 10 minutes. Let them cool for 3 minutes and ready to eat! I served these with a side of Louisiana Remoulade Sauce, my favorite for Seafood. Excellent Crab Cakes, lots of Crab Meat and great Seasoning. Another good item to have in your freezer.

 

Then to go with my Crab Cakes I prepared a Stouffer’s Cheddar Potato Bake. Another easy to prepare and delicious dish. To prepare this one I’m using the microwave. It comes in a microwavable tray. I just slit the film cover on the tray and microwaved it for 6 minutes, Done! I love this side by Stouffer’s! Delicious Potato Dish, really like the bread crumb topping. Then I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Perfect Bread with any Dish! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzel Sticks with a Diet Peach Snapple to drink.

PREPARATION:

Thaw crab cakes in vacuum-pack overnight in the refrigerator, or under cool running water for 30 minutes.

Preheat oven to 400°F.

Arrange thawed crab cakes flat side down on baking sheet and place on middle rack of oven.

Brush with melted butter or margarine.

Bake for 16–18 minutes.

Preheat oven to 425°F.

Remove frozen crab cakes from vacuum-pack.

Arrange frozen crab cakes on baking sheet, flat side down.

Brush with melted butter or margarine.

Bake for 15 minutes on middle oven rack.

Turn crab cakes over and press gently to flatten.

Continue to bake for another 10-12 minutes.

Today’s Menu: Leftover – Red Beans and Rice w/ Smoked Turkey Sausage and Baked Garlic Loaf Bread

 

 

For Breakfast I had a cup of Bigelow Decaf Green Tea. 53 degrees with rain all day. Did a few things around the house and that was about it. My sinuses are killing me today so I rested and caught up on some shows I had recorded. For Dinner tonight I heated up the Leftover Red Beans and Rice w/ Smoked Turkey Sausage and Baked Garlic Loaf Bread. I’ve left the original post from last night for description and recipe. Enjoy, later!

 

 

 

Well nothing better than Red Beans and Rice w/ Hardwood Smoked Turkey Sausage for this 2nd Day of 2020! For the Red Beans and Rice I used a box of Zatarain’s Reduced Sodium Red Beans and Rice Mix. For the Sausage I used Butterball Hardwood Smoked Turkey and for the Garlic Loaf I used a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread. I love these types of meals! I’m preparing 3 Bean Turkey Chili tomorrow! To prepare it I’ll need; the box of the Zatarain’s Red Beans and Rice Mix, 3 cups Water, Extra Light Olive Oil, and the Sausage. Mixed 3 cups of water, Rice Mix and 2 tbsp. of Light Olive Oil in 2-quart saucepan until it was well blended. Brought to a boil. Then reduced the heat to low and covered.

 

I got another skillet out as the Rice was cooking, sprayed it with Pam Non Stick Spray and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Sliced the Sausage into bite size slices and added them to the heated skillet until heated through. Removed them from the heat and set aside until needed.

 

 

 

 

 

Simmered the Rice for 25 minutes, until the tender. Stirred occasionally to prevent the Rice and Beans from sticking. With 4 minutes of cooking time left I added the Smoked Turkey Sausage. When done I removed the skillet from heat. Let stand 5 minutes. And done ready to serve! This makes one fantastic Meal! The Red Beans and Rice is Seasoned perfect. It made plenty of both the Red Beans and the Rice. And the Sausage works perfect with it. Plenty of great leftovers!

 

 

 

Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! I loved this dish tonight, plenty leftover for a couple of lunches! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzel Sticks with a Sprite Zero to drink.

 

 

 

 

 

 

 

 

ZATARAIN’S REDUCED SODIUM RED BEANS AND RICE

For Breakfast I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread (lightly buttered), and had a cup of Bigelow Decaf Green Tea. Cloudy and 55 degrees with rain in the afternoon. After Breakfast I went to Kroger for Mom and then stopped at McDonald’s and picked up Breakfast for her. Got the rake and leaf blower out. Cleaned off the deck and driveway areas. Then raked the front yard. Not a lot of leaves, just looking for stuff to do. For Dinner tonight I prepared Red Beans and Rice w/ Smoked Turkey Sausage and Baked Garlic Loaf Bread.

Baked Salmon w/ Whole Grain Brown and Wild Rice

Today’s Menu: Baked Salmon w/ Whole Grain Brown and Wild Rice

 

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, heated up some Kroger Diced Ham, and had a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. We ended up getting about 3 inches of snow overnight. It caused some bad roads overnight but most of it was melted by late afternoon off the roads. Cloudy and rain later in the day, high of 37 degrees. More bad weather due overnight. Not much going on today. Did a few jobs around the house. For Dinner tonight I prepared a Baked Salmon w/ Whole Grain Brown and Wild Rice.

 

I purchased a a North Atlantic Salmon Fillet from Meijer yesterday. To make it I’ll need the Salmon, McCormick Grinder Sea Salt and Peppercorn Medley, Dried Parsley, Dried Chive, and Extra Light Olive Oil.

 

 

 

To prepare it; I preheated the oven on 400 degrees. I then got a small baking pan and sprayed it with Pam Cooking Spray. I washed the Fillet off in cold water and patted dry with a paper towel. Next I put a light coat of the Extra Light Olive Oil on the Fillet and then seasoned. Lined the Fillet in the pan and baked. I baked it for 8 minutes, and done. Excellent Salmon!

 

 

 

For my Rice I’m using Uncle Ben’s Ready Whole Grain Medley – Brown and Wild Rice. It comes in a micowavable package. I microwaved it for 90 seconds and done! I guess one my favorites from the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with the Salmon.Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

Another cold morning out, 28 degrees and another heavy frost out this morning. Sunny and 55 degrees out today. After Lunch got the leaf blower, rake, and cart out of the shed and a little yard work. Not a lot of leaves today, just staying ahead of it. Helped a neighbor up the street do a few things around her yard. It feels so good to be outside in the sun doing things. Before long it will be so cold or snowy you can’t get out so I get out as much as I can. For Dinner tonight I heated up the Leftover Red Beans and Rice w/ Smoked Turkey Sausage and Baked Garlic Loaf Bread. I’ve left the original post from yesterday for the dish recipe and description.
