Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

 

 

For Breakfast it was Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. Just love this skillet meal! Sunny and 60 degrees out today, good to see the sun. After Breakfast I went to Wendy’s and picked up Breakfast for Mom. Now we hear isolation until May 1st, wow. It has to be done till this virus passes! Hope all of you are safe and healthy! So today I did a load of laundry and cleaned the house. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

I had purchased a couple of Rainbow Trout Fillets at Meijer and them in the freezer. I laid a package of 1 fillet of them in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Creole Seasoning!

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Light Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Dish! I also heated up a can of Del Monte Cut Green Beans. I just love the trio of the Cajun Rainbow Trout, Hash Browns, and Green Beans, one of my favorites! For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Cajun Rainbow Trout w/ Red Beans and Rice

 

 

To start this day off I Poached an Egg and served it on a a slice of toasted Aunt Millie’s Light Whole Grain Bread. Also had my morning cup of Bigelow Decaf Green Tea. Mostly cloudy and 70 degrees out. It looks as though Spring is creeping in, now lets get rid of the Coronavirus!! So Isolation continues as does life. Everyone just trying to make the best of the things. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Red Beans and Rice, I also baked a loaf of La Baguette Roasted Garlic Oval Bread.

 

 

I had the Rainbow Trout Fillet, that I had purchased from Meijer, in the freezer. I laid the package of 1 fillet in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. For my Rice I used a new one for me, Uncle Ben’s Ready Rice Red Beans and Rice. It prepares as all the microwavable Ready Rices. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready. I love Rice and it pairs perfectly with any dish. This has plenty of Red Beans along with Rice, I’ll be buying more of this. As I said I also baked a loaf of La Baguette Roasted Garlic Oval Bread. Then for Dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast I had a cup of Bigelow Decaf Green Tea. Not much of an appetite this morning. Rain and 52 degrees outside. My back is still giving me some trouble. So another day of moving slow and resting. Just as well with the weather outside! For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

 

 

 

 

I had purchased a couple of Rainbow Trout Fillets at Meijer and them in the freezer. I laid a package of 1 fillet of them in the fridge overnight to thaw. To prepare it all I’ll need is; Rainbow Trout Fillet, 1 teaspoon Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Today’s Menu: Cajun Rainbow Trout w/ Hash Browns and Green Beans

Just love this skillet meal! Cloudy, rain showers and 56 degrees out today. After Breakfast I went to McDonald’s and picked up Breakfast for Mom. Back home took it easy had a problem with Phantom Pains for most of the night so I did,t get much sleep. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

Did some cleaning outside around the shed then grabbed the leaf blower and cleaned off the deck and drive way areas. Later on went and got my car washed and vacuumed the inside. For Dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

To prepare it all I’ll need is; 1 Rainbow Trout Fillet, 1 teaspoons Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Baked Creole Salmon w/ Mustard Greens and Baby Red Potatoes

Today’s Menu: Baked Creole Salmon w/ Mustard Greens and Baby Red Potatoes

 

 

For Breakfast I had a bowl of Cheerios’ and the morning cup of Bigelow Decaf Green Tea, Outside another nice day, 83 degrees, mostly sunny, but a bit more humid. Right after Breakfast I headed to Meijer, needed quite a few items. Back at home I took Mom’s Car up and had it washed and then took my car up and had it washed. Next stopped by the post office and mailed some letters and on the ATM and stopped and got gas. Nice day out today. For Dinner tonight something new, Baked Creole Salmon w/ Mustard Greens and Baby Red Potatoes.

 

 

 

Seen these dishes being made on the new Gordon Ramsay show, the “F” Word. These looked so good I had to try them. My recipes aren’t exact as the originals but both turned out delicious! So here’s my version of Creole Salmon w/ Mustard Greens and Baby Red Potatoes.

 

 

 

 

I had stopped by Meijer yesterday to pick up the ingredients for my Dinner tonight. I’m using a North Atlantic Salmon Fillet. I had purchased a 1/2 of a huge fillet that I cut into 4 smaller fillets. I froze 3 and kept one out for my Dinner tonight. To make the Salmon I’ll need; 1 Salmon Fillet, McCormick Griner Sea Salt, Zatarain’s Creole Seasoning, and Dried Thyme. To prepare it; I first preheated the oven to 400 degrees. Next I got a small baking pan and sprayed it with Pam Cooking Spray. I seasoned the Salmon  Fillet with the Thyme, Sea Salt and Creole Seasoning. I put the Fillet in the pan; skin side down. Baked it for 13 minutes; until done and fork flakey. The Salmon came out perfect! Done just right with excellent seasoning.

 

 

 

 

Now for the Mustard Greens and Baby Red Potatoes. I’ll need the following;Baby Red Potatoes, Mustard Greens (1 bunch), 1 Clove Garlic (minced), Lemon Juice, Blue Bonnet Light Butter, Extra Light Olive Oil, Sea Salt and Peppercorn Medley, and Parsley (chopped)

 

 

 

I’ll be using Baby Red Potatoes and 1 bunch of Mustard Greens. I filled a large pot 1/2 way with water, salted it, and brought it to a boil. Added the Potatoes, reduced the heat and until almost tender. Drained the water and laid the Potatoes on the cutting board. I then used the bottom of a coffee cup and lightly smashed the Potatoes. Next I grabbed a large skillet, sprayed it with Pam Cooking Spray and 1 tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was heated I added the Potatoes. After 3 minutes I added a 1//2 Clove Garlic. In another 2 minutes I added a pat of Blue Bonnet Light Butter, to brown the Potatoes, and seasoned with McCormick Sea Salt and Peppercorn Medley.

 

 

As the Butter was melted I washed my Mustard Greens and patted dry with a paper towel. I then added the Mustard Greens to the skillet. I cooked until it was wilted and tender. Be careful not overcook the Greens. Removed everything to a bowl; seasoned it with a splash of Lemon and chopped Parsley. This makes one nice side dish! I love Potatoes anyway but this is really a great way to prepare the Potatoes and the Mustard Greens, This is the first time I’ve had Mustard Greens in a very long time. The Greens came out tender and worked perfectly with the Red Potatoes. Along with the Salmon this turned out to be one delicious Dinner! For Dessert later a Dole No Sugar Added Diced Peach Cup.

Dinner Tonight: Cajun Rainbow Trout w/ Hash Browns and Green Beans

Just had a cup of Bigelow Decaf Green Tea for Breakfast. I had to take my car to the shop early this morning. You might know the weather heats up and my air conditioner doesn’t work. The air conditioner actually works fine but for some reason I get no air out of the dash vents. Just another bill! So I was without a car today so I just puttered around the house. I would have like to get the cart out but the sun was just too hot today to be out a lot, especially with my history of Melanoma. So I got some things done around the house all day. For dinner tonight I’m having a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

 

While at Meijer last week they had some beautiful Rainbow Trout Fillets, and I just couldn’t pass it up! I purchased a couple of fillets and had them in the freezer. So I grabbed one of the fillets from the freezer and let it thaw overnight in the fridge. I had prepared Cajun Trout the last time I prepared Trout and it was delicious, so why not again httpscarletandgame.com20160531urban-meyer-buckeyes-on-the-verge- 001tonight! To prepare it all I’ll need is; 1 Rainbow Trout Fillet, 1 teaspoons Extra Virgin Olive Oil, 1 Teaspoon Zatarain’s Creole Seasoning, and 1 Teaspoon chopped Parsley Flakes. To prepare it I preheated the broiler. Patted the fillets dry and lightly brush both sides with oil. Sprinkled both sides evenly with Cajun seasoning. Placed skin side down on broiler rack and broil 4-6 inches from heat for 5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Excellent recipe, you have the fresh taste of the Trout along with all the flavor from the Cajun Seasoning!

Then for one side I prepared some Simply Potatoes Hash Browns. Fried in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley. I love Hash Browns, they make the perfect side for any Fish Dish. I also reheated some Del Monte Cut Green Beans I had leftover from last night. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Another chilly morning, 41 degrees. Cloudy and in the 50’s for the day. Still a cool breeze blowing so I couldn’t get the cart out. So stayed in and got some odd and ends jobs done around the house. Also did some updating on the computer. For dinner tonight I prepared a Cajun Rainbow Trout w/ Hash Browns and Green Beans.

While at Meijer yesterday I noticed they had some beautiful Rainbow Trout Fillets, just couldn’t pass it up! I had prepared Cajun Trout one other time and it was delicious, so why not again tonight! Placed skin side down on broiler rack and broil 4-6 inches from heat for 4-5 minutes or until the Trout flakes easily when I tested it with a fork. You can add a Lemon Wedge with it if you like. Today’s Menu: Cajun Shrimp w/ Garlic Parmesan Mac & Cheese and Sour Dough Mini Boule Bread

Wow, we’ve really been getting the rain and thunderstorms around here. One right after another for the past few of days. The morning, it wasn’t raining so i took advantage of it and went to Walmart and Kroger for a few items. It started raining as I left Kroger on my way home. Walmart is getting rid of more and more national brand grocery items and replacing it with their own brands, even worse than Kroger now. Got back home and put all the vittles away and went out to some shed cleaning, just needed straightened up from stuff being piled up from the Winter. Spent the rest of the afternoon watching some Baseball, Reds Game! For dinner tonight it was Comfort Food, Cajun Shrimp w/ Garlic Parmesan Mac & Cheese and Sour Dough Mini Boule Bread.

 

 
To make tonight’s dinner; I had a bag of Kroger Brand Jumbo Shrimp in the freezer which I let thCajun Shrimp w Garlic Parmesan Mac & Cheese 002aw in the fridge overnight. To prepare the Shrimp all I’ll need is a 1/2 tablespoon of Extra Virgin Olive Oil, 1 pat of Blue Bonnet Light Stick Butter, Zatarains Creole Seasoning, and the Shrimp. I preheated a medium size skillet on medium heat, added the Oil and Butter. As the skillet was heating I drained and rinsed the Shrimp in cold water. Patted dry with a ;paper towel and seasoned them with the Zatarain’s Creole Seasoning. Added the Shrimp to the skillet and cooked them for 3 minutes per side until the Shrimp turned opaque. Removed the Shrimp from the skillet and set aside.

 

 
As the Shrimp was cooking I prepared my Mac and Cheese and Baked the Bread. I used a new Mac and Cheese I came across at our local Kroger, Stouffer’s Garlic Parmesan Mac & Cheese. I love mac and Cheese but with Diabetes 2 I very rarely have it due to the carbs. But I came across this at Kroger and had to try it. Garlic Parmesan Mac & Cheese, what is not to like! I immediately thought of Cajun Shrimp and the Garlic Parmesan MaCajun Shrimp w Garlic Parmesan Mac & Cheese 009c & Cheese. Pairing the mac and Cheese with the Shrimp keeps the calories and carbs in check, Shrimp is only 120 calories and 1 carb. The Garlic Parmesan Mac & Cheese is 340 calories and 34 net carbs. To prepare it i microwaved it a total of 8 minutes. Stouffer’s has another winner in this! Mac and Cheese is good anytime but adding the Garlic Parmesan kicks it up another notch! Nice and Cheesy with incredible flavor. I topped the Mac and Cheese with Shrimp. As I said I also Baked the California Sour Dough Mini Boule as everything else was cooking. Perfect Bread to go with everything. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

 

 

 

 

 

Stouffer’s Garlic Parmesan Mac & Cheese
SINGLE SERVING, FAMILY SIZE, SIDE DISH
Freshly made pasta in a creamy garlic parmesan cheese sauce, topped with garlic seasoned bread crumbs.
Directions
Keep frozen. Cook thoroughly. For food safety and quality, follow these cooking instructions. Microwave Oven (1100 Watts): Prep: Leave film on tray. Cook: 3 minutes on Garlic Parmesan Mac & Cheesehigh. Remove cover. Cook Again: 5 minutes on high. Let stand 1 minute. Conventional Oven (Preheat 350 degrees F). Cut film to vent. Place tray on baking sheet, center rack. Cook 42 minutes. Let stand 1 minute. Will be hot! Ensure product reaches an internal temperature of 160 degrees F. Directions developed using 1100 watt microwave oven. Ovens vary; cooking time may need adjusting. Do not prepare in toaster oven. Do not reheat tray.
