Today’s Menu: Leftover 3 Bean Turkey Chili w/ Cornbread

 

For Breakfast I Poached an Egg and served it on a Aunt Millie’s Living Carb Smart English Muffin. I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links and a cup of Bigelow Decaf Green Tea. It’s a cool Fall morning out there, 44 degrees and windy. The rain stopped and the skies cleared. For the Afternoon it was sunny and 58 degrees. I took Mom to her Treatment Appointment then back home to a yard full of leaves. Tis the Fall Season! My Pepper Plants are still producing like crazy, everyone in the neighborhood has plenty of Green Bell Peppers. Cool Fall Day deserves Chili, 3 Bean Turkey Chili! That was my last container in the freezer. Which means I’ll be cooking up a new batch soon. Below I left the original post from last night for recipe directions and ingredients. I love making a batch of my 3 Bean Turkey Chili! To make my Chili I’m using Jennie -O Lean Ground Turkey, 2 – 1lb. packages. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, a tablespoon of Jif Creamy Peanut Butter, 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans),4 Cloves Minced Garlic, 2 tsp Ground Anchio Chile Pepper, 2 tsp Ground Paprika, 1 Tbs. Ground Chile Seasoning, 2 Tbs. Ground Roasted Cumin, 1 tsp Ground Cinnamon, 2Tbsps Jif Smooth Peanut Butter, 1 Tbsp of Cilantro Leaves and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it.

 

First thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

 

I prepared the Ground Turkey and Bean Mix last night and had it in the fridge. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it aside and mixed my Beans. I opened all 3 cans of Bush Beans into a large bowl and stirred until mixed.

 

This morning I turned the Slow Cooker on Low, sprayed the cooker liner with Pam Non Stick Spray, and added a 1/2 cup of Water to it. Let heat for about 20 minutes and I added everything to the Crock Pot. I’ll be cooking my Chili for 6 – 7 hours. Then sit back and enjoy the aroma, that usually starts after a couple of hours or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. I’ll be using the Leftover Chili in a couple of different ways for meals , can’t wait! Chili is even better after sitting in the fridge for a day! 3 Bean Turkey Chili
Ingredients
2 – 1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
4 Cloves Minced Garlic
2 Tsps Ground Anchio Chile Pepper
2 Tsps Ground Paprika
1 Tbs. Ground Chile Seasoning
2 Tbs. Ground Roasted Cumin
1 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I like to use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

Today’s Menu: Chicken, Bacon, Vermont Cheddar Cheese, Honey Mustard and Lettuce Hoagie w/ Baked Fries

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 92 degrees, humid with thunderstorms moving in later. And we need the rain, it’s so bone dry out there. After my Tea the garbage truck ran and got our can along with 7 other cans for my neighbors. Then i went out to my garden boxes and picked a plastic bag full of Jalapeno Peppers and Green Bell Peppers. My Jalapeno Plants are just full this year. I took a bag and a 1/2 on over to my cousin’s house. Then back home I went and took some pictures of a friend’s flowers. I then printed them out for her and took them up to her. She’s an elderly neighbor who can’t get outside anymore and I’ve been helping her out. She was really surprised by the pictures and really liked them. Then the heavy rains moved in. For Dinner tonight a Chicken, Bacon, Vermont Cheddar Cheese, Honey Mustard and Lettuce Hoagie w/ Baked Fries.

 

A Chicken, Bacon, Vermont Cheddar Cheese, Honey Mustard and Lettuce Hoagie sure sounded goods for Dinner tonight! I have seen a few on cooking shows recently and just thought it was time to have one. I’ll need a package of Thin Cut Chicken Breasts, Boar’s Head Vermont Cheddar, French’s Honey Mustard, Butter Lettuce, and a Meijer Perfection Wheat Mini Hoagie Bun.

 

I bought a package of Katie’s Best Thin Sliced Chicken Breasts at Meijer a day ago and I’ll be using those. To prepare them, this morning I removed a couple of them from the package and froze the remainder. I put the Chicken in a large Hefty Plastic Bag and added Buttermilk and Frank’s Hot sauce to bag. Squeezed the bag together making sure to fully cover both Chicken Breasts and sat the bag in the fridge to marinate until ready to use.

 

I turned the oven on to 400 degrees. Then to prepare the Chicken I first got a Cast Iron Skillet out. Added a 1 1/2 tablespoons of Extra Light Olive Oil to it and heated the skillet on medium heat. As the skillet was heating got the bag with Chicken marinating out of the fridge. Took the Chicken out of the bag and shook off the excess Buttermilk and Hot Sauce Marinade, I seasoned them with Salt and Pepper. I then put a couple of tablespoons of Flour, that I Seasoned with Paprika, a in pie pan and rolled the Chicken Breasts in the Flour, making sure both sides were covered with the Flour.

 

With the Cast Iron heated I added the Chicken Breasts. Cooked them 2 minutes a side and then finished them off in the oven. I flipped them over 1 more time and continued to cook them until I had a temperature reading of 165°F. As I removed them from the oven I added a slice of Boar’s Head Vermont Cheddar Cheese to them. The Chicken came out Golden Brown!

 

 

 

To make my Hoagie I’ll need Bacon, Vermont Cheddar Cheese (already added), Honey Mustard, Lettuce, and the Wheat Hoagie Buns. I used Smithfield Hickory Smoked Bacon that I had fried earlier this afternoon. I only needed about about 2 slices per Hoagie but as always when frying Bacon you have to double the amount you prepare because you end up eating half of what you fix!

 

So I split the Hoagie Buns in 1/2. On the bottom Bun I added the Honey Mustard putting a nice slathering across the Bun. I love that word slathering, it just sounds like something good is coming! So then I added the Lettuce, the Cheese topped Chicken Breast, the Bacon, and the top Bun. The Hoagie was delicious!

 

To go with Hoagie I baked some Ore Ida Crinkle Cut Fries, served with a side of Hunt’s Ketchup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder Stick Pretzels with a Coke Zero to drink.

Today’s Menu: Panko Crispy Turkey Tenderloins w/ Baked Fries

 

For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I did a load of laundry. Then I went and picked up Breakfast for Mom at Wendy’s. Back home watered all the plants and then cleaned off the deck and driveway areas. Later on I went to Walgreen’s and picked up a Prescription. For Dinner tonight I prepared Panko Crispy Turkey Tenderloins w/ Baked Fries.

 

I purchased another package of the JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins at Meijer. There’s only 120 calories, 1 gram of fat and 0 carbs per serving! I’m preparing them the same way as last time we had them. I had looked around at different recipes and I combined a couple of ideas from a few of them to prepare the Tenderloins. I’m making Panko Crispy Turkey Tenderloins. To make these I’ll be needing 1/3 of a cup Low Fat Buttermilk, 3/4 teaspoon (or more) of Frank’s Hot Sauce, 1/4 teaspoon of Garlic Powder, 1/4 teaspoon Onion Powder, Sea Salt, 1 package of JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins (sliced into smaller strips), Extra Light Olive Oil for frying, 1 cup All-Purpose Flour, 2 teaspoons Hungarian Paprika, Grinder Black Peppercorn, 2 cups Progresso Panko Breadcrumbs, 1 1/2 tablespoons Chile Powder, and 2 Large Eggs or Egg Beater’s which is what I used.

 

Then to prepare them; You’ll be needing 3 bowls. Whisk the Buttermilk, Hot Sauce, Garlic Powder, Onion Powder, and Sea salt in a small bowl. Place the sliced Turkey in a resealable plastic bag and pour in the Buttermilk Marinade. I refrigerated them for 3 hours.

 

 

 

When ready I got a large Cast-Iron Skillet and added3 tablespoons of the Olive Oil to it and heated it on medium heat. As the skillet was heating I put the Flour in a bowl and seasoned it with the Paprika and Sea Salt and Pepper. I then put the Panko in another bowl and season it with the Chile powder and Salt and Pepper. And finally I poured the Egg Beater’s in the last bowl.

 

 

I removed the Turkey from the Marinade, allowing the excess to drip off. I dredged the Turkey first in the Flour, then in the Egg Beater’s and finally coat them with the Panko. With the cast Iron Skillet heated I fried the Turkey in batches, always being careful not to overcrowd the skillet, until golden brown and an instant read thermometer inserted into the center read 160 degrees. I fried them 4 minutes per side.

 

 

These came out so delicious! They came out Golden Brown, Tender and so Flavorful. The Spices worked perfect and the Panko Breadcrumbs gave it a fantastic crunch. I served these with some Blue Cheese Dressing for dipping. I also baked some Ore Ida Crinkle Cut Fries. Then for Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Today’s Menu: Baked Chili and Cheese Nachos

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 88 degrees and sunny out. I had to break out the sunscreen. We had a heavy thunderstorm last night and more overnight tonight. Hopefully it will stay clear so we can see the Blood Moon Eclipse tonight! After my Tea I went to the Meijer Garden Center. I bought a large Planter, a bag of Potting Soil, and 3 Pepper Plants. I really didn’t need 3 more but as I said before I love growing Flowers and Vegetables! Back home I planted the new Plants. Then I added dirt to some of the other Planters and Watered everything. Beautiful outside! For Dinner tonight a real Comfort Food and Mom’s favorite, Baked Chili and Cheese Nachos.

 

Not that hungry tonight so it’s going to be an Appetizer for Dinner tonight as I prepared Baked Chili and Cheese Nachos. To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as a snack, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! I especially love the Jalapenos, nice mild heat!

 

To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a saucepan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything with the Cheese. Then just pop it in the oven for 10 minutes or until the Cheese has started to melt and everything is heated. We love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Kiwi/Strawberry Snapple.

Did Yard work, gave a neighbor a hand with his and just rode around in the cart. For Dinner tonight I heated up the Leftover Panko Crispy Turkey Tenderloins w/ Cut Green Beans and Mashed Potatoes from last night’s Dinner. This was so good I had to have the leftovers for tonight! For one side I opened up a Quart Jar of our Canned Green Beans. I love Green Beans and these Canned Green Beans are the best!

 

 

 

 

 

Next I heated up a package of Bob Evan’s Mashed Potatoes. Just microwave for 6 total minutes and serve, just as good as homemade, if not better. I could make a meal out of just Mashed Potatoes. I also had a Aunt Millie’s Live Carb Smart Dinner Roll.

For Breakfast I made some French Toast and 2 Johnsonville Turkey Breakfast Sausage Links. I also had a cup of Bigelow Decaf Green Tea. 70 degrees and sunny outside. I would like to wish all you Moms out there a Happy Mother’s Day! So after Lunch I refilled some the flower and vegetable plant boxes with Potting Soil. Then got the broom and leaf blower and cleaned up the deck and driveway areas. All caught up on everything else. For Dinner tonight I prepared Panko Crispy Turkey Tenderloins w/ Cut Green Beans and Mashed Potatoes.

 

I had purchased a package of the JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins at Meijer and had them in the freezer. I laid the package in the fridge overnight to thaw. There’s only 120 calories, 1 gram of fat and 0 carbs per serving! I’m preparing them the same way as I had before. I had looked around at different recipes and I combined a couple of ideas from a few of them to prepare the Tenderloins. I’m making Panko Crispy Turkey Tenderloins. To make these I’ll be needing 1/3 of a cup Low Fat Buttermilk, 3/4 teaspoon (or more) of Frank’s Hot Sauce, 1/4 teaspoon of Garlic Powder, 1/4 teaspoon Onion Powder, Sea Salt, 1 package of JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins (sliced into smaller strips), Extra Light Olive Oil for frying, 1 cup All-Purpose Flour, 2 teaspoons Hungarian Paprika, Grinder Black Peppercorn, 2 cups Progresso Panko Breadcrumbs, 1 1/2 tablespoons Chile Powder, and 2 Large Eggs or Egg Beater’s which is what I used.

 

Then to prepare them; You’ll be needing 3 bowls. Whisk the Buttermilk, Hot Sauce, Garlic Powder, Onion Powder, and Sea salt in a small bowl. Place the sliced Turkey in a resealable plastic bag and pour in the Buttermilk Marinade. I refrigerated them for 3 hours.

 

 

When ready I got a large cast-iron skillet and added 2 tablespoons of the Olive Oil to it and heated it on medium heat. As the skillet was heating I put Flour in a bowl and seasoned it with the Paprika and Sea Salt and Pepper. Then I poured the Egg Beater’s in the last bowl. Finally I put the Panko Bread Crumbs in another bowl and season it with the Chile powder. I removed the Turkey from the Marinade, allowing the excess to drip off. I dredged the Turkey first in the Flour, then in the Egg Beater’s and finally coat them with the Panko. With the cast iron skillet heated I fried the turkey in batches, always being careful not to overcrowd the skillet, until golden brown and an instant read thermometer inserted into the center read 160 degrees. I fried them 3 minutes per side.

 

These came out so delicious! They came out Golden Brown, Tender and so Flavorful. The Spices worked perfect and the Panko Breadcrumbs gave it a fantastic crunch.

 

 

For one side I opened up a Quart Jar of our Canned Green Beans. I love Green Beans and these Canned Green Beans are the best!

 

 

Next I heated a package of Bob Evan’s Mashed Potatoes. Just microwave for 6 total minutes and serve, just as good as homemade, if not better. I could make a meal out of just Mashed Potatoes. I also had a Aunt Millie’s Live Carb Smart Dinner Roll. Mom had Ore Ida Crinkle Fries with her Tenders. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: 3 Bean Turkey Chili w/ Cheese and Tortilla Rounds

 

For Breakfast this morning I cooked up some Simply Potatoes Shredded Hash Browns, fried 2 Johnsonville Turkey Breakfast Sausage Links, had a cup of Bigelow Decaf Green Tea. 53 degrees, partly cloudy, and a light rain shower later in the day. Still not feeling up to par, I’m just so tired. So it’s another being a Slug Day! For Dinner tonight I prepared some 3 Bean Turkey Chili w/ Cheese and Tortilla Rounds.

 

I made some of my Crock Pot 3 Bean Turkey Chili a while back and had 1 container left in the freezer. I sat the container in the fridge to thaw overnight. So it’s an easy dish to make tonight. I’ll need to heat up the leftover 3 Bean Turkey Chili, Frank’s Hot Sauce, Daisy Reduced Fat Sour Cream, Sargento Off the Block Sharp Cheddar Cheese, and Mission Tortilla Rounds. When making my Chili I use a Crock Pot and let it simmer all day! To make it I use; 2 – 1 lb. packages of Jennie – O Ground Turkey Breast, many Spices, 1 Packet McCormick Chili Mix, and Frank’s Hot Sauce. To reheat; I just added the Chili to a sauce pan and heated it on low, stirring often until heated through. Set aside until needed.

 

As I said I’m serving the Chili with some Frank’s Hot Sauce, Daisy Reduced Fat Sour Cream, and Sargento Off the Block Sharp Cheddar Cheese. For the Tortilla Chips I’m using Mission Tortilla Rounds.

 

To make it I got a bowl and made a bed of the Tortilla Rounds. Topped with some of the Chili, Hot Sauce, and Cheese. I had the Sour Cream on the side of the Bowl. Fantastic Light Meal. The Mission Tortilla Rounds are excellent Chips! I love using the 3 Bean Chili as many ways as I can, its so delicious! So for Dessert/Snack a Breyer’s 90 Calorie Chocolate Ice Cream Cup.

 

 

 

 

 

 

3 Bean Turkey Chili
Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
2 Tsps. Ground Anchio Chile Pepper
2 Tsps. Ground Paprika
1 Tbs. Ground Chile Seasoning
2 Tbs. Ground Roasted Cumin
1 Tsps. Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

Today’s Menu: Leftover 3 Bean Turkey Chili w/ Cornbread

 

Today is my Mom’s Birthday, she’s 94 years young! So I made her favorites for Breakfast this morning. I prepared French Toast, Bacon, a small glass of Orange Juice and a Coffee. Happy Birthday Mom. I also got her a box of Sugar Free Chocolates and I bought her a necklace of a Heart and Birthstone in it with her name inscribed on the side of the Heart. Love my Mom! We had a high of 31 but that quickly dropped in the afternoon to the 20’s with a few snow flurries. So not much going on today, just did a few things around the house. For Dinner tonight I heated up the Leftover 3 Bean Turkey Chili. Below I left the original post from last night for recipe directions and ingredients. Take Care and Stay Safe!

 

I love making a batch of my 3 Bean Turkey Chili! To make my Chili I’m using Jennie -O Lean Ground Turkey, 2 – 1lb. packages. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, a tablespoon of Jif Creamy Peanut Butter, 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans),4 Cloves Minced Garlic, 2 tsp Ground Anchio Chile Pepper, 2 tsp Ground Paprika, 1 Tbs. Ground Chile Seasoning, 2 Tbs. Ground Roasted Cumin, 1 tsp Ground Cinnamon, 2Tbsps Jif Smooth Peanut Butter, 1 Tbsp of Cilantro Leaves and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it.

 

First thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

 

I prepared the Ground Turkey and Bean Mix last night and had it in the fridge. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it aside and mixed my Beans. I opened all 3 cans of Bush Beans into a large bowl and stirred until mixed.

 

This morning I turned the Slow Cooker on Low, sprayed the cooker liner with Pam Non Stick Spray, and added a 1/2 cup of Water to it. Let heat for about 20 minutes and I added everything to the Crock Pot. I’ll be cooking my Chili for 6 – 7 hours. Then sit back and enjoy the aroma, that usually starts after a couple of hours or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. I’ll be using the Leftover Chili in a couple of different ways for meals , can’t wait! Chili is even better after sitting in the fridge for a day! Just a cup of Bigelow Decaf Green Tea to start the morning. A high of 51 degrees and cloudy, light rain later in the afternoon. Well I took Mom for her final Radiation meeting. The treatment begins next Wednesday, 5 days a week for 4 weeks and done. Hopefully all will go well! Long day today. For Dinner tonight it’s my 3 Bean Turkey Chili w/ Cornbread. I put my chili on this morning and it was ready when we got home.

I also prepared a small Cast Iron Skillet of Cornbread. For the Corn Bread I’m using Martha White White Corn Meal. The Cornbread goes perfect with Chili! Then for Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Shrimp Jambalaya

Today’s Menu: Shrimp Jambalaya

 

For Breakfast this morning I prepared some Breakfast Sandwiches. I baked a 5 Biscuit Can of Pillsbury Buttery Biscuits. Then heated up 4 of the Johnsonville Turkey Breakfast Sausage Patties. Together they make the perfect Breakfast Sandwiches. I also had a cup of Bigelow Decaf Green Tea. Well they finally got a Weather report right. We are Iced in here! We ended up with over a 1/4 inch of Freezing Rain, then covered with Sleet and finally Snow. And it is a mess out there due to that Freezing Rain. Almost everything is shut down. Our driveway and our street is in bad shape. A neighbor came by and got our Newspapers for us, thank you Bob! We still have power, some places have lost power. Hopefully it will stay on! For Dinner tonight I prepared Shrimp Jambalaya.

 

For the Shrimp I used a bag of Kroger Frozen Wild Caught Shrimp. I sat a bag of it out of the freezer last night and sat it in the fridge to thaw. I grabbed a skillet and sprayed it with Pam Non Stick Cooking Spray, added a 1/2 tablespoon of Olive Oil Cooking Oil, and a pat of Blue Bonnet Light Butter. I seasoned the Shrimp with a shake of Sea Salt and Zatarain’s Creole Seasoning. I heated the skillet on medium heat. When the skillet heated up I added the Shrimp. Cooked it a total of about 2 minutes and removed it from the heat. I put the semi cooked Shrimp into bowl and set aside until needed.

 

I used Zatarain’s New Orleans Style Jambalaya Mix (Mild) for my base for the Jambalaya. I use Zatarain’s Products whenever I can, love the flavor and seasoning of all their products. To prepare it I just followed the easy instructions on the box. Mixed 2 1/2 cups of Water and 2 tablespoons of Extra Virgin Olive Oil, and brought it to a boil. Added the Zatarain’s Jambalaya Mix Returned it to a boil, and then reduced the heat to low. Covered and simmered for about 25 minutes, adding the Shrimp with 2 minutes of cooking time left. Continued cooking till most of the moisture had been absorbed, 2 minutes. Removed it from the heat and let it rest for about 5 minutes before I served.

 

The Shrimp and Zatarain’s New Orleans Style Jambalaya Mix make a perfect pairing! I added a couple of shakes of Frank’s Red Hot Sauce to the mix also, nothing like a little heat to liven things up! This makes one delicious dish. For Dessert later a Breyer’s 100 Calorie Chocolate Ice Cream Cup.

 

 

 

 

 

 

 

Zatarain’s New Orleans Style Jambalaya (Mild)

Product description

Preparation instructions
