Today’s Menu: 3 Bean Turkey Chili w/ Johnny Cakes

 

 
For Breakfast this morning I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a Sunnyside Up Fried Egg. Just love these skillet Meals! Also had the morning cup of Bigelow Decaf Green Tea. It was house cleaning day today, vacuumed and dusted. I wanted everything looking good because I think they will be releasing Dad from rehab! He’s made great progress the past week and has regained a lot of his strength. Looking forward to his return. Tonight’s Dinner, 3 Bean Turkey Chili w/ Johnny Cakes.

 

Rainy day outside today. Had a high of 62 degrees along with a couple of passing Thunderstorms. A good day to stay in and make some Chili!! I’m making my 3 Bean Turkey Chili for Dinner tonight! I prepared the Turkey and mixed the Beans last night. So this morning I already had the Crock Pot set up and ready along having the Turkey and Beans ready also. So its my 3 Bean Turkey Chili and I made some Johnny Cakes. For Dessert later a bowl of Del Monte No Sugar Added Diced Mangos. Below is the ingredients and cooking directions for the 3 Bean Turkey Chili and the Johnny Cakes.

 

 

To make this I’m using Jennie -O Lean Ground Turkey. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it and it turns out delicious.

 

 

 

First thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

 

 

I prepared the Beans and Ground Turkey last night. I started by opening all 3 cans of Bush Beans into a large bowl and stirred until mixed. Then in the morning, I added the Beans to Crock Pot. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the Seasonings and Tomato Paste, stirring often. When the Turkey has browned I put it in a large plastic container and on into the fridge after it had cooled a bit. Then this morning I added to the Crock Pot. Throw in a 1/2 cup of Water, stirred twice, and put the lid on the Crock Pot and set on low for 5-6 hours. The full recipe and list of ingredients is at the end of the post.

 

Then sit back and enjoy the aroma, that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and Spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes, recipe below.

 

 

 

 

To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. The Cornbread works perfect with Chili! I had a Diet Peach Snapple to go with my Dinner.I forgot, did I tell you how much I love this Chili!

 

 
3 Bean Turkey Chili
Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1/2 Tsp Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

 

 

 

Johnny Cakes (My way)

Ingredients:

Pam w/ Olive Oil Non – Stick Spray
1/4 cup Extra Virgin Olive Oil
1 3/4 cups Buttermilk
2 cups Martha White Self Rising Enriched White Corn Meal Mix

Directions:

Just mix all your ingredients in a large bowl.
Spray your Pam on a Flat Griddle or large Skillet and preheat on medium low, I use the Flat Griddle.
When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. Serve while warm and enjoy!

Today’s Menu: Turkey Tacos and Refried Beans

 

 

For Breakfast I prepared some more of the Pioneer Peppered White Gravy along with 2 slices of toasted Healthy Life Whole Grain Bread. I love Gravy!! Also fried up 2 Jennie – O Turkey Breakfast Sausage Links and topped it off with Turkey Tacos 002that morning cup of Bigelow Decaf Green Tea. Our area here in West Chester has run the full gauntlet of weather! In the last 2 days its been 80 degrees and sunny, heavy rain and thunder storms, dropping temperatures with snow and sleet, and now this morning snow flurries and in the 20’s! All 4 seasons in 2 plus days! After Breakfast it was house cleaning day. Dusted (my least favorite chore), vacuumed, and cleaned the stove and oven. Had a very restless night last night. Dealing with the Phantom Pains, first time in a while. I had a bad case of them lasted for almost the entire day and night. Sure wish they come up with a cure for these. Anyway after Lunch I went up and seen Dad at the rehab center. It looks as though he may be released sometime next week, hope so! For Dinner tonight Turkey Tacos and Refried Beans.

Well Taco Tuesday came early! I had been wanting Tacos for some time, and tonight is the night! When making Turkey Tacos I love using Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, and Shredded Lettuce. For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: 3 Bean Turkey Chili w/ Johnny Cakes

 
For Breakfast this morning I Scrambled some Egg Beater’s Egg Whites seasoning it with Lite Salt, Ground Black Pepper, and a dash of Ortega Smoky Chipotle Taco Sauce. I like using the Smoky Chipotle whenever I can, nice heat and a lot of flavor. Then I heated up a few slices of Boar’s Head Sweet Sliced Ham and toasted a Healthy Life Whole Grain English Muffin. Loaded the Egg Whites, Ham, and a slice of Sargento Reduced Calorie Swiss Cheese on to the English Muffin and I had a delicious Breakfast Sandwich to start this day! Also had the morning cup of Bigelow Decaf Green Tea. It was house cleaning day today, vacuumed and dusted. After Lunch went over to the rehab center to spend some time with Dad. He seems to be getting stronger and he’s working hard in therapy. Just don’t know if he’ll be strong enough to return home, sure hope so. Tonight’s Dinner, 3 Bean Turkey Chili w/ Johnny Cakes.

 
It’s been a long time since I’ve felt a wind as cold as yesterday’s was, stayed in the teens all day! It was windy all day 3 Bean Turkey Chili w Johnny Cakes 006and the wind was so cold it would take your breath away! Not as windy today and a high in the 40’s. But these cold days make me want to have Chili, nothing better than Chili! And I’m ready for some Chili! You can use Jennie – O Extra Lean Ground Turkey Breast or Wild Idea Ground Buffalo. Either version turns out great! I had 2 containers left in the freezer that I sat in the fridge overnight to thaw. So its my 3 Bean Turkey Chili and I made some Johnny Cakes. For Dessert later a bowl of Dole Sliced Peaches. Below I’ve left a post that has the ingredients and full recipe for both the 3 Bean Turkey Chili and Johnny Cakes. Enjoy!

Today’s Menu: Beans and Smoked Turkey Sausage (Beans and Weenies)

 

 
For Breakfast I toasted a couple of slices of Healthy Life Whole Grain Bread that I lightly buttered with I Can’t Beans and Smoked Turkey Sausage (Beans and Weenies) 014Believe It’s Not Butter. Then I fried up a couple of Jennie – O Turkey Breakfast Sausage Links and prepared the morning cup of Bigelow Decaf Green Tea. After Breakfast i went up the road to the local Kroger to pick up a few items for Mom and myself. Back home, put everything away and went over to Rehab to see Dad, I was lucky to find this place, they are so nice and Dad is real happy with it! So Monday starts the therapy and building his strength back up. Back home I did some laundry and some light cleaning. For Dinner tonight it’s Beans and Smoked Turkey Sausage (Beans and Weenies). Comfort Food!

 

 

Beans and Smoked Turkey Sausage (Beans and Weenies) 001
I’ve been wanting the Sausage and Beans for a while now. So tonight it’s Beans and Weenies, but I kicked this version up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into thin bite size pieces), 3 slices of Jennie – O Turkey Bacon (Fried and Crumbled), 1 can of Bush’s White Chili Beans, 1 can Bush’s Vegetarian Reduced Sodium Baked Beans, 1/4 cup of Red Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 teaspoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and 2 cups of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).
I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Beans and Smoked Turkey Sausage (Beans and Weenies) 003Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let it simmer. Another set it and forget recipe! After I got the Beans started I fried up 1 1/2 Butterball Hardwood Smoked Turkey Sausages. I first sliced them up into bite size pieces then fried them on medium until they started to brown and removed them from the heat and put them in a small bowl and set aside.

 

 
Then using the same skillet I fried the Sausage in I fried 3 slices of Jennie – O Turkey Bacon, actually I fried 5 slices turkey-bacon-and-muenster-cheese-buffalo-burger-w-baked-fries-002actually. Always remember when preparing Bacon to always add 2 extra slices. Because you know you’ll grab a couple of slices, it’s called the Bacon Factor or Bacon Math. I fried it up nice and crisp and when done crumbled it up into small pieces and added it to the Beans. Sausage, Bacon, and Beans are such a natural combo, Bacon gives it that wonderful smoky flavor.

 

 

 
I love dishes that you can set and let them simmer, to me it seems to give food a much richer and deeper flavor. AfterBeans and Smoked Turkey Sausage (Beans and Weenies) 007 a couple of hours I added the Butterball Hardwood Smoked Turkey Sausages to the Beans. Kept the heat on low until it was time for dinner. A good Hearty Meal tonight. You have the smokiness of the Bacon and Liquid Smoke, the Sweetness and Tang of the BBQ Sauce, the Spices, along with the Smoked Turkey Sausage and Beans. I just love all the flavors, a real comfort food favorite! Another plus is the cleanup, just one dutch Oven and 1 skillet to clean. Also baked a loaf of Pillsbury French Bread and had a Diet Dr. Pepper to drink. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

 

 

 
Butterball Hardwood Smoked Turkey Sausage

Today’s Menu: 3 Bean Turkey Chili w/ Johnny Cakes

 

 
For Breakfast this chilly morning I Scrambled some Egg Beater’s Egg Whites seasoning it with Lite Salt, Ground Black Pepper, and a dash of Ortega Smoky Chipotle Taco Sauce. I like using the Smoky Chipotle whenever I can, nice3 Bean Turkey Chili w Johnny Cakes 006 heat and a lot of flavor. Then I heated up a few slices of Boar’s Head Sweet Sliced Ham and toasted a Healthy Life Whole Grain English Muffin. Loaded the Egg Whites, Ham, and a slice of Sargento Reduced Calorie Swiss Cheese on to the English Muffin and I had a delicious Breakfast Sandwich! Also had a cup of Bigelow Decaf Green Tea. Went out to get the morning papers and it was snowing pretty good out there. I salted the driveway, which is on a hill, last night before I went to bed. Which helped somewhat. Not long after Breakfast I got the Crock Pot ready and put my Chili on. Which is tonight’s Dinner, 3 Bean Turkey Chili w/ Johnny Cakes.

Picked a perfect day to make Chili, our first snow of the Winter is falling. They call for 2-3 inches, what better on a Winter’s Day than Chili! And I’m ready for some Chili! You can use Jennie – O Extra Lean Ground Turkey Breast or Wild Idea Ground Buffalo. Either version turns out great! I had none left of the last batch in the freezer so it was time for a new batch!

 

 
To make this I’m using Jennie -O Lean Ground Turkey. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Black Beans), 1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) 3 Bean Turkey Chili w Johnny Cakes 001drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Seeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste (2 cans), 1/2 Tsp Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). What’s good about this recipe you can use your own favorite Spices and make your own tweaks to it and it turns out delicious.

First thing I do is get the Crock Pot out and put in a Glad Crock Pot Liner. The Liners are incredible, just line your Crock Pot with one and spray it with Pam Cooking Spray. Now you are set to go. It makes for one easy clean up, just remove it when done and give the inside of your Crock Pot a quick wipe down and your clean up is done! On with the recipe.

 

 
I started by opening all 3 cans of Bush Beans into a large bowl and stirred until mixed. I then added the Beans to the3 Bean Turkey Chili w Johnny Cakes 005 Crock Pot. To prepare the Turkey, I started by browning the Jennie -O Ground Turkey. Using a large skillet sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Turkey and all the seasonings and Tomato Paste, stirring often. When the Turkey has browned I add from the skillet to the Crock Pot. Throw in a 1/2 cup of Water, stirred twice, and put the lid on the Crock Pot and set on low for 5-6 hours. The full recipe and list of ingredients is at the end of the post.

Then sit back and enjoy the aroma that usually starts after an hour or so of simmering! I love a thick Chili and this one works! The Jennie – O Ground Turkey combined with all those Beans and spices is a perfect match. Served it topped with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a couple of shakes of Frank’s Red Hot Sauce. Also a side of Johnny Cakes, recipe below.

 

 
To prepare the Johnny Cakes (I love these…) all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Light Virgin Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn 3 Bean Turkey Chili w Johnny Cakes 004Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. The Cornbread works perfect with Chili! I had a Diet Dr. Pepper to go with my Dinner. For dessert later a slice of the Hill and Valley Sugar Free Angel Food Cake, purchased at Meijer, topped with Cool Whip Free. I forgot, Did I tell you how much I love this Chili!

Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast3 Bean Turkey Chili w Johnny Cakes 001
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1/2 Tsp Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

Today’s Menu: Cincinnati Style 4 Way – Spaghetti, 3 Bean Turkey Chili, and Cheese

 

 
For Breakfast on this Sunday Morning I prepared Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Ham, Diced Potato, Egg, Hash 002Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped everything with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar. After Breakfast I headed to Walmart, we needed a bigger plant bowl for one of the plants. Back home did my morning out and then grabbed a shower. After Lunch I got the leaf blower out of the shed and got the daily leaves cleaned up from the deck and driveway. I had everything done for the day and settled back and watched NFL Football the rest of the afternoon. For Dinner tonight its a Cincinnati Style 4 Way – Spaghetti, 3 Bean Turkey Chili, and Cheese.

 

3 Bean Turkey Chili 002
Usually when making a Cincinnati Style 4 Way I’m using Skyline Chili or Hormel Turkey Chili w/ Beans as my Chili, which all make a delicious Cincinnati Style 4 Way. But when I have some made I love using 3 Bean Turkey Chili to make a Cincinnati Style 4 Way. I had made the Crock Pot 3 Bean Turkey Chili a while back and had a container in the freezer. I sat the container in the fridge to thaw overnight. I reheated it in a small sauce pan on medium heat. When heated it removed it from the heat and put a lid on the pan and set it aside.

For the Spaghetti I’ll be using my regular Pasta, the Ronzoni Healthy Harvest Whole Grain Spaghetti. The Spaghetti is 180 calories and 34 net carbs, which isn’t too bad for Pasta. While at Meijer the other day I picked a few boxes of different Ronzoni Healthy Harvest Pastas, one being Spaghetti. Meijer is the only store where I can find all the Healthy Harvest Pasta Products anymore. Easy to prepare; Using a large sauce pot half way filled with water. Salted the Water and brought it to a boil and added the Spaghetti. Boiled it for 11 minutes; drained and served.

 

 
For the Cheese I’m using Sargento Reduced Fat Shredded Sharp Cheddar. To serve I used a bowl and made a bed of cincinnati-style-4-way-spaghetti-3-bean-turkey-chili-and-che-007Spaghetti, topped it with the 3 Bean Buffalo Chili, and topped everything with Sargento Cheese. I also added a few shakes of Frank’s Red Hot Sauce to the Chili as it was being heated. Some mighty fine Chili Spaghetti! Some people like adding fine diced Onions also, which would make it a 5 Way. Then for a side, one of the most important parts, Oyster Crackers! Chili Spaghetti is always served with a bowl of Oyster Crackers. I used Skyline Chili Oyster Crackers with a side of Frank’s Red Hot Sauce. To properly eat an Oyster Cracker you have to put 2 or 3 drops of Hot Sauce on it! It’s a Cincinnati thing! At the end of the post I’ve left the Crock Pot 3 Bean Turkey Chili Recipe. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

So to start this Saturday Morning I fried 2 Jennie – O Turkey Breakfast Sausage Links, toasted 2 slices Healthy Life Whole Grain Bread (lightly buttered), and that morning cup of Bigelow Decaf Green Tea. I had went to Kroger up the road but as usual they were out of most everything I needed. Back home got my Chili cooking and finished up some house cleaning. Then settled in for an afternoon of College Football. For Dinner tonight I prepared some Crock Pot 3 Bean Turkey Chili with a side of Johnny Cakes.

Ingredients
1 lb. package Jennie – O Extra Lean Ground Turkey Breast
2 Cans (6 oz.) Hunt’s Tomato Paste
1 Can (16 oz.) Bush’s Chili Beans (Red Beans)
1 Can (16 oz.) Bush’s Chili Beans ( Kidney Beans)3 Bean Turkey Chili w Johnny Cakes 001
1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans), drained and rinsed
1 Packet McCormick Chili Mix
1/2 Red Onion (medium), Chopped or Minced
1 Jalapeno Pepper, Unseeded and Chopped
4 Cloves Minced Garlic
1/2 Tsp Ground Cocoa Chili Blend (McCormick)
1/2 Tsp Ground Chipotle Chili Pepper (McCormick)
2 Tbs. Ground Roasted Cumin
2 Tsps Ground Cinnamon
1 Tbs of Cilantro Leaves
5 Dashes of Frank’s Hot Sauce or to taste.
1/2 Cup of Water
Shredded Cheese, I use Grated Dutch Gouda or Sargento Reduced Fat Shredded Cheddar Cheese (Topping)
Oyster Crackers
Frank’s Hot Sauce or to taste.

Directions:
*Brown Turkey in large saucepan on medium-high heat 10 min. or until no longer pink, stirring occasionally. Add all remaining spices and ingredients except 1 can of the tomato paste and water.
*ADD to slow cooker and add in the remaining 1 can of tomato paste and 1/2 cup of water.
*COVER with lid. Cook on HIGH 3 to 4 hours (or on LOW 5 to 6 hours).

*Serve in bowl or mug with cheese and oyster crackers, A Tablespoon of fat-free sour cream, Chopped Onions, or serve with some home made cornbread.

Today’s Menu: Baked Turkey Taco Nachos

 

 
To start the morning off for Breakfast I had a toasted 2 slices of Healthy Life Whole Grain Bread, topped with I Can’t baked-turkey-taco-nachos-016Believe It’s Not Butter. Then I fried 2 Jennie – O Turkey Breakfast Sausage Links and also prepared some Simply Potatoes Shredded Has Browns. And had the morning cup of Bigelow Decaf Green Tea. After Breakfast I went the local Kroger and picked up some Lettuce and stopped by McDonald’s to pick up Breakfast for Mom and Dad. Later in the day I went and had the car washed. Around the house I ran the vacuum and dusted. Then outside just the daily cleaning. Another hot Fall Day out there again. Sunny, Muggy, and 90 degrees. Not real Fall like out there! So for Dinner it was leftovers. I used the Turkey and Black Bean Taco Mixture and topped Tostitos Multi Grain Chips with it, for Baked Turkey Taco Nachos.

To prepare them I first preheated the oven to 400 degrees. Then I reheated the leftover Turkey and Black Bean Mixture. I took the Chips and topped it with Daisy Light Sour Cream, Lettuce, Turkey and Bean Mix, sliced Olives, Smoked Chipotle Taco Sauce, and the Sargento Reduced Fat Shredded Fat 4 Cheese Mexican.

I put the loaded Chips on a foil lined baking sheet and baked the Taco Nachos till heated through and the Cheese started to melt. Really like how these came out. All the ingredients on a crispy Tostitos Chip. The Tacos were excellent last night but I’m enjoying these Taco/Nachos a bit more! The Ortega Smoky Chipotle Taco Sauce that I use has to be the best Taco Sauce I’ve ever had! Love this stuff. It has a fantastic taste to it with just the right amount of heat. Below are the ingredients and preparation directions. Tacos or Nachos, it works great with either! I’ve left yesterday’s post of Turkey Nachos below that list full instructions, Enjoy!

I used the Jennie -O Ground Turkey I received from Jennie – O this afternoon! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes.

Today’s Menu: Turkey Tacos

For Breakfast I had a toasted Healthy Life Whole Grain English Muffin, topped with I Can’t Believe It’s Not Butter. Also had the morning cup of Bigelow Decaf Green Tea. I started a load of laundry for Mom and then I headed out to Meijer. After Meijer I headed to Kroger, Mom had a list of things she needed from there. It may be the first day of the Fall Season but it was still feeling like a hot August Summer day out there. Sunny, 88 degrees, and muggy. I had no clue on what to have for Dinner tonight. Up until around 12:30, this is when Fed – Ex dropped a package off from Jennie – Turkey. Tonight its Turkey Tacos!

I had no clue on what Dinner was going to be and then as if Jennie – O read my mind, a Fed -Ex truck pulled up and brought out the Green and White shipping box. When I see that headed to the door I know Jennie – O Turkey has sent me some Turkey Products to use! As a member of the Jennie -O Switch Club they send me Jennie – O Turkey products, coupons, and recipes to try and blog about. This shipment had a package of Jennie – O Ground Turkey and a package of Jennie – O Turkey Breast Tenderloins. My Dinner problem was solved! Ton ight I’m using the Ground Turkey and its going to be a Taco Night!

For my Taco Shells I used the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn). Add the Jennie – O Turkey and you got you some mouth watering and delicious Tacos! Love these Taco Nights. For Dessert later a bowl of Dole Sliced Peaches.
