Nachos with a Twist
Ranch dressing replaces the salsa and crumbled pieces of cooked turkey bacon makes a flavorful change from ground beef in this easy to prepare appetizer.

Recipe Ingredients:
Non-stick cooking spray
4 cups tortilla chips
1 cup shredded Colby/Jack cheese
2/3 cup ranch dressing
1/4 cup thinly sliced green onions
1/2 cup cooked drained crumbled Butterball® Turkey Bacon (about 8 slices)

 

Cooking Directions:
1 – Preheat oven to 350°F (175°C). Spray cookie sheet with cooking spray.
2 – Place half of the tortilla chips on cookie sheet. Top with half of the cheese, ranch dressing, onions and bacon. Repeat layers.
3 – Bake 3 to 4 minutes or until cheese is melted. Remove from oven and let stand 2 to 3 minutes. Using a large spatula, carefully slide nachos onto large serving platter to serve.
Makes 8 appetizer servings.

Slow-Cooker Turkey Chili with Butternut Squash
The sweetness of the butternut squash tames the kick from cayenne in this healthy turkey chili, making this easy crock pot chili just right for kids and adults alike, whether for weeknight dinners or tailgating parties. For those who prefer a spicier chili, just pass hot sauce at the table. This chili also freezes well, so save leftovers for hearty and healthy dinners and lunches for weeks to come……………………………

Chili con Carne
This chili con carne with ground beef is a serious crowd-pleaser, whether you’re hosting a football-watching party or just feeding a hungry family. It has a nice, beefy, beany flavor and just enough spice. You’ll be surprised that a chili that comes together in less than an hour has so much flavor. Three types of chile peppers (fresh poblanos, chili powder and chipotles in adobo) add depth and complexity. Poblanos also add some color to the chili–if you can’t find them, you can sub bell peppers of any color, though they won’t add heat. Using lean ground beef makes this chili healthier and also keeps it from being greasy. Be sure to brown the beef well for the best flavor: you want to stir to break up the chunks, but don’t stir too much or the beef won’t sear at all. Serve with cornbread and bowls of sour cream, chopped avocado, tomatoes, scallions, cilantro and hot sauce and let everyone customize their own bowl……………………..

Quick n’ Easy Turkey Nachos
Are they amazing nachos because they’re piled high with melted cheese and taco-seasoned lean ground turkey? Or because they’re ready in just under 30 minutes? We’ll let you decide.

INGREDIENTS

1 (16-ounce) package JENNIE-O® Lean Taco Seasoned Ground Turkey
½ cup baked tortilla chips
1 cup shredded Mexican blend cheese
½ cup fat-free sour cream
1 medium tomato, seeded and diced
1 jalapeño pepper, sliced into thin rounds
¼ cup chopped cilantro leaves

DIRECTIONS

1) Cook turkey as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer.
2) Spoon turkey over tortilla chips. Top with cheese, sour cream, tomato, jalapeño and cilantro leaves.
* Always cook to an internal temperature of 165°F.

This week’s Wild Idea Buffalo Recipe of the Week is – LAYERED NACHOS. Anytime is good for Nachos! These are made using your choice of Meat from Wild Idea Buffalo. You can use the Wild Idea Buffalo; Buffalo Shank, Buffalo Braised Chuck Roast, or with Buffalo Ground Meat. There are no wrong choices! LAYERED NACHOS
This layered meaty, cheesy concoction, loaded with veggies, is irresistible. I like to make this dish using the shank meat from my homemade stock recipe, but it could also be made with leftover braised chuck roast, or with ground meat. (Serves 4)

Ingredients:

Buffalo Shank meat from the Buffalo Stock recipe. I usually get about 1½ pounds of meat.
1 – tablespoon olive oil
2 – teaspoons chili powder
2 – teaspoons cumin
1½ – teaspoons salt
1 – teaspoon black pepper
1 – teaspoon garlic powder
1 – teaspoon oregano
1 – teaspoon smoked paprika
½ – teaspoon coriander
8 – ounces Colby cheese, shredded
1 – can black beans, rinsed & drained
1 – cup chopped tomatoes
1 – bell pepper, diced
3 – green onions, diced
1 – avocado, chopped, reserve a little for garnish
½ – cup chopped cilantro leaves, reserve a little for garnish
Corn Chips, thicker style
Lime wedges

Preparation:

1 – In sauté pan over medium high heat, heat oil. Add shredded shank meat and all of the spices, stirring to incorporate. Bring to full heat.
2 – Remove pan from heat, cover the meat, and set aside.
3 – Pre-heat oven to 400°.
4 – Shred your cheese and prep all of your vegetables.
5 – On 4 oven safe plates, arrange a layer of corn chips. Top chips with 1/3 of meat, and other ingredients divided between the 4 plates. Repeat layer two more times.
6 – Place prepared nachos in the oven for about 10 minutes or until the cheese is melted.
7 – Remove the nachos from the oven and place on a heat resistant surface, and allow nachos to cool slightly before serving.
8 -Top with reserved avocado and cilantro and serve with fresh lime wedges and desired condiments.
