Today’s Menu: Chili and Cheese Nachos

 

 

For Breakfast this morning I prepared some Simply Potatoes. As they were cooking I cooked up some Meijer Cubed Ham and I fried an Egg Sunny Side Up. Made a bed of the Hash Browns, sprinkled some Sargento Off the Block Sharp Cheddar Cheese. Then topped that with the Ham and then the Egg. One of favorite Breakfast Dishes! I also had a cup of Bigelow Decaf Green Tea. Wild weather outside! The morning started off at 50 degrees but heavy wind and rain. We have wind gusts of 40 mph today! So nothing going on outside today. Cleaned the house then cleaned the fridge. Later caught up on some shows I had recorded. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

 

Mom had been wanting some Chili and Cheese Nachos, me too! So Nachos it is tonight! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

 

To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. We love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Directions:
Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or until hot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.

Today’s Menu: Chili and Cheese Nachos

 

 

No Breakfast this morning I had to fast overnight and be at the Family Doctor at 7:45 this morning. Checking Sugar and Cholesterol, and such. I should have the results by the end of the week. Partly cloudy with rain showers in the area, high of 92 degrees. After the Doctor visit we stopped by Kroger and then by McDonald’s to pick Mom up Breakfast. Dealing with allergies today so I didn’t do a lot today besides rest. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Today’s Menu: Chili and Cheese Nachos

 

 

To start the day off I prepared a sunny side up Egg, heated up a couple of Johnsonville Turkey Breakfast sausage Links, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. I was hungry! Outside its 49 degrees and sunny. With the rains finally stopping I got the leaf blower out and cleaned off the deck and driveway areas. I had bought a few Strawberry Plants and a couple of indoor plants the other day. I planted the Strawberry Plants to the side of the shed and repotted the 2 house plants I bought also. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

To start my day off I just had a cup of Bigelow Decaf Green Tea. After my Tea I went to Kroger for a few items and then to McDonald’s to pick up Breakfast for Mom – a Sausage, Egg, and Cheese Bagel with a Senior Coffee with 1 Cream. Mom went on to Church. Me, I did a couple of loads of laundry and light cleaning of the house. Later I got the leaf blower out and cleaned off the deck. After that I returned to being a slug for the afternoon! Today’s Menu: Chili and Cheese Nachos

 

 


To start my day off I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Also a cup of Bigelow Decaf Green Tea. A bit cooler out, 80 degrees with rain showers. Bad day with my allergies today, bad headache. So I didn’t do a whole lot today. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

For Breakfast this morning I toasted a Thomas Light 100 Calorie Multi Grain English Muffin and topped it with a Poached Egg. And of course I had my morning cup of Bigelow Decaf Green Tea. Allergies and Sinuses still haven’t let up, really suffering this year! Sunny, humid and 88 degrees outside today. After Breakfast I went to Meijer, needed Bread and Buns. Stopped by the ATM and then by McDonald’s to pick up Breakfast for Mom. Back home got the leaf blower out and cleaned off the deck and driveway areas. Done for the day after that. Allergies kicking in! For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

We love Chili and Cheese Nachos! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

 

To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert later a Jello Sugar Free Dark Chocoilate Pudding topped with Cool Whip Free.

Directions:
Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or until hot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.

Today’s Menu: Chili and Cheese Nachos

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Meijer for a couple of items and then picked up Breakfast for Mom. Outside 79 degrees with rain showers early then clearing up for the day. After Lunch I got the cart out and sprayed for weeds around the house and shed. Everything done, I kicked back and took a short nap. I’m not sure what’s wrong, just feeling bad. Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

All we can do is try to keep him comfortable here at home. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Today’s Menu: Chili Dog Casserole

Wow, what a long night! Had a bad bout with those Phantom Pains all last night and into the early afternoon today. It started last night around 7:00 and as the night wore on the pain kept getting worse. I ended with maybe an hours worth of sleep. So most of my afternoon was catching up on some much needed sleep. Sure wish they would come up with a cure to battle Phantom Pains, but no proven cures out there. We had another day in the 40’s but it gradually got colder as the day went on. For dinner tonight I tried a new recipe, Chili Dog Casserole.

 

 
I came across the recipe from a Kraft Foods Recipe Email, 4-Ingredient Chili Dog Casserole. To Chili Dog Casserole 006prep it I’ll need just 4 Ingredients; 2 cans (15 oz. each) Hormel Turkey Chili with Beans, 3 Ball Park Smoked White Turkey Franks, 3 Flour Tortillas (6 inch), 1/4 cup Sargento Reduced Calorie Shredded Sharp Cheddar. To prepare it couldn’t be much easier. Place 1 Turkey Frank on each Tortilla; roll up. Place, seam sides down, over chili. Sprinkle with cheese; cover. Baked for about 25 min., the Chili and Franks were are heated through and cheese melted. This makes one delicious Casserole dish! Just like having a Cincinnati Style 3 Way Coney, only with a Tortilla instead of a Bun. A Keeper Recipe! The original Kraft Recipe and web link is at the end of the post. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

What you need
2 cans (15 oz. each) chili with beans
5 OSCAR MAYER Wieners
5 corn tortillas (6 inch)
1/2 cup KRAFT Shredded Mild Cheddar Cheese
Make it
* HEAT oven to 425ºF.

* SPREAD chili onto bottom of 8-inch square baking dish.

* PLACE 1 wiener on each tortilla; roll up. Place, seam sides down, over chili. Sprinkle with cheese; cover.

* BAKE 25 min. or until wieners are heated through and cheese is melted.

SERVING SUGGESTION Don’t let the fun stop at the entrée! Round out the meal with a fun salad bar. Set out a large bowl of torn mixed salad greens and small bowls filled with chopped fresh vegetables. Then let everyone pick their favorite salad toppers and make their own fun salad.
MAKE AHEAD This is a perfect make-ahead recipe. Throw this four-ingredient family pleaser together the night before, then refrigerate until ready to bake as directed.
NO BEANS PLEASE Prepare using chili without beans.

Another night and another round of not a lot of sleep, fighting with Phantom Pains for a second night in a row. I sure wish the medical world would come up with a treatment or drug that could control these. Well the weather finally broke, we actually have some sunshine! Beautiful sunny but cold Winter’s Day. Breakfast, a quick workout, and a load of laundry and my day was done. The afternoon will be the remote and my easy chair watching Football! Not a lot of sleep again last night so I wanted to prepare something that didn’t require a lot of effort, but still a hot meal. So tonight it’s one of my favorites, Chili and Cheese Nachos.

I used Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape real good. For my toppings I used 1 can of Mario Sliced Black Olives. Before I go any further a bit about these Olives, anyone that uses small cans of Sliced Black Olives know what a pain they can be opening sometimes. Not these, they come in a can with a pull tab! About time. For my other toppings I used some Sliced Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella.
