Today’s Menu: Pan Fried Salmon w/ Baked Potato

 

 

For Breakfast this morning I toasted a Thomas Light 100% Multigrain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. I had to have Mom to her Family Doctor at 9:30 this morning. They took more blood to see if the infection had cleared up and for a check up. Then we stopped and picked up Breakfast for her at McDonald’s. Morning rain and then cloudy, 47 degrees for a high. Not a lot going on, just did a few things around the house. For Dinner tonight Pan Fried Salmon w/ Baked Potato.

 

 

 

 

I had purchased a Wild Caught North Atlantic Salmon while at Meijer the other day. I’ve found Meijer has some of the lowest prices on Seafood and Fish, plus a very good selection.

 

 

 

 

 

 

I seasoned the Salmon Fillet with LiteHouse Dried Dill, McCormick Grinder Sea Salt and Grinder Peppercorn Medley. Melted 1 tablespoons of the Blue Bonnet Light Butter in a skillet over medium heat. Added the Fillet, skin down, and cooked for about 4 minutes, or until the skin was no longer sticking to the pan. Flip the Salmon and cook for 2 minutes. Remove Salmon from pan and served! This was so good! The Salmon was flavorful and so meaty. Really enjoyed it.

 

 

 

 

 


For a side with the Salmon I prepared a Baked Potato. Seasoned it with McCormick Grinder Sea Salt and Peppercorn Medley, a dab of Daisy Reduced Fat Sour Cream, and Blue Bonnet Light Butter. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

For breakfast I made a Scrambled Egg, Shredded Cheddar, Turkey Breakfast Sausage (Crumbled), Pita Bread. I used 1 medium size Egg (Scrambled), Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Jennie – O Ground Turkey Breakfast Sausage, and Joseph’s Flax Seed Whole Wheat Pita Breads. I was buying the Joseph’s Pita Bread at Walmart and they said that Joseph’s no longer made that type of pita Bread anymore. Which is usually the Walmart Code for we aren’t carrying no longer. So I got online and as I suspected they do still make it, so now I’ll order it online. At 50 calories and only 4 net carbs it’s a great alternative to Bread.

 

 
Another cold day out, about 17 degrees this morning. Sunny and cold during the afternoon. Mom went to lunch with Seniors from Church this afternoon. So glad to see her get out for a while and enjoy herself. Taking care of Dad is really wearing her down. So while she was gone I cleaned and straightened the house up and did a load of laundry for her. For dinner tonight I had some Soft Chicken Tacos.

To make these I’ll need 1 teaspoon McCormick Chili Powder, 1/2 teaspoon (each) McCormick Sea Salt and Peppercorn Medley, 1/2 teaspoon McCormick Roasted Ground Cumin, 1 pound Skinless, Boneless Rotisserie Chicken (pulled), Pam Cooking Spray, (6-inch) Old El Paso Flour Tortillas, Sliced Green and Black Olives, 1/4 cup (1 ounce) Sargento Shredded Reduced Fat Colby – Jack Cheese, Daisy Low-Fat Sour Cream (optional), and Wholly Guacamole (optional).

 

 

 

 

I purchased a Simple Truth Rotisserie Whole Roaster from the Kroger Deli earlier today. Love these Simple Truth Roasters, delicious and twice the size than most Deli Rotisserie Whole Roasters. The first thing I did was pull all the Chicken Meat; removing the skin and any bones. Put the Chicken in a bowl and set aside.

Then I prepared the skillet; Sprayed skillet with Pam Spray and 1 tablespoon of Extra Virgin Olive Oil. Heat on medium heat. Combined first 4 Ingredients in a small bowl; rubbed the spice mixture over Pulled Chicken. Placed the Chicken In the preheated skillet; cook about 7 minutes stirring frequently until heated through.

Next heated the Tortillas according to package directions. Divided the Chicken evenly among Tortillas; topped each Tortilla with Sliced Olives and Cheese. Serve with or top with Sour Cream and Guacamole, if desired. One delicious easy to prepare meal! The Old El Paso Tortillas are 150 calories and 23 net carbs per serving (2 Tortillas per serving). Just love Tacos, so versatile and so many topping combinations. For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Ingredients
1 teaspoon McCormick Chili Powder
1/2 teaspoon (each) McCormick Sea Salt and Peppercorn MedleySoft Chicken Tacos 002
1/2 teaspoon McCormick Roasted Ground Cumin
1 pound Skinless, Boneless Rotisserie Chicken (pulled)
Pam Cooking Spray
(6-inch) Old El Paso Flour Tortillas
1/4 cup (1 ounce) Sargento Shredded Reduced Fat Colby – Jack Cheese
Daisy Low-Fat Sour Cream (optional)
Preparation
Prepare the skillet; Spray skillet with Pam Spray and 1 tablespoon of Extra Virgin Olive Oil. Heat on medium heat.

Combine first 4 Ingredients in a small bowl; rub spice mixture over Pulled Chicken.

Place the Chicken In THE PREHEATED SKILLET; cook 7 minutes stirring frequently until heated through.

Heat Tortillas according to package directions. Divide Chicken evenly among Tortillas; top each Tortilla with Cheese. Serve with Sour Cream, if desired.

Today’s Menu: Chicken Enchiladas

Long morning, I finally got in to see the Dermatologist about the lump on my finger. No Melanoma, basically it’s type of cyst that should go away with time. Glad that is over and not Melanoma! After the doctor visit we stopped by Kroger for a few items and home. Not much going on, just relaxed. For dinner tonight Mom wanted Chicken Enchiladas. So tight I prepared Chicken Enchiladas.

 

 

 
Then to prepare them I preheated the oven to 350 degrees F. I used Mission Carb Friendly Tortillas, first time I used them and we loved them! One at a time, held the Tortillas over the stove top Chicken Enchiladas 001burner (heated to medium heat) to brown slightly, about 20 seconds per side. Set the warmed Tortillas aside. In a bowl, mix together the Cumin, Chili Powder, Cajun Spice, salt and pepper. Sprinkled both sides of the Chicken Breasts with the Spice Mix. Heat the oil in a skillet over medium heat and cook the Chicken on both sides until done in the middle and the juices run clear, 4 to 5 minutes per side. Set aside on a plate to cool, then shred finely with a fork. Threw the Onions into the same skillet, stir them around and cook until deep golden brown and caramelized, 4 to 5 minutes; set them aside on a plate. Pour the Enchilada Sauce into the skillet and reduce the heat to low, allowing it to warm through.

To make the enchiladas: Pour 2 cups of the Sauce (Old El Paso Enchilada Sauce) into a 9-by-13-inch Casserole Dish and leave the rest in the skillet. Dip a Tortilla into the Sauce in the skillet, then lay it on a baking sheet or plate. Sprinkle some Cheese down the middle, followed by some Chicken and finally, some of the Caramelized Onions. Roll it up tightly, then place it seam-side down in the Casserole Dish. Repeat with the rest of the Tortillas. Pour the rest of the Sauce over the Enchiladas, then sprinkle on the rest of the Cheese. Give it a final sprinkling of Chili Powder. Bake until hot and bubbly, 30 minutes. Let it sit for 15 to 20 minutes before serving.

Serve the enchiladas topped with a dollop of sour cream, a sprinkling of cilantro and a wedge of lime. And time to enjoy these Enchiladas! Hot, Cheesy, Flavorful, with nice Heat, not to over use the saying but it’s a “Winner, Winner Chicken Dinner!” Another Keeper Recipe courtesy of Ree Drummond. Chicken Enchiladas

Ingredients
10 to 12 corn tortillas
2 tablespoons cumin
2 tablespoons chili powder, plus more for sprinkling
2 tablespoons Cajun spice
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 boneless, skinless chicken breasts
1/4 cup vegetable oil
1 large onion, diced
Three 15-ounce cans green enchilada sauce (or use red if preferred!)
3 cups grated Cheddar-Jack cheese, plus more if needed
Sour cream, for serving
Diced tomatoes, for serving
Chopped fresh cilantro, for serving
Lime wedges, for serving
Directions
Preheat the oven to 350 degrees F.

One at a time, hold the tortillas over the stove top burner (heated to medium heat) to brown slightly, about 30 seconds per side. Set the warmed tortillas aside.

In a bowl, mix together the cumin, chili powder, Cajun spice, salt and pepper. Sprinkle both sides of the chicken breasts with the spice mix.

Heat the oil in a skillet over medium heat and cook the chicken on both sides until done in the middle and the juices run clear, 4 to 5 minutes per side. Set aside on a plate to cool, then shred finely with a fork.

Not much going on today, very laid back. Did a small load of laundry and ran the sweeper. It’s so much easier to vacuum since I bought the Hoover Cordless Lightweight Vacuum! It only weighs about 10 lbs., Cordless, and has as much power as a normal size vacuum. Great investment! Had everything done early so it’s Couch Potato, Remote, and Football for the day. For dinner tonight it’s Chicken Fajitas w/ Refried Beans.

 

 

 

 

The other night I had Shrimp Fajitas and they were just so delicious I decided to have Chicken Fajitas for dinner tonight. I used Ortega Fajita Skillet Sauce for my Fajita Sauce Base, I love using the Ortega Sauces. To prepare I’ll need the following; the Ortega Fajita Skillet Sauce, a bag of Simple Truth Chicken Fajita Strips, Delallo Tri-Color Pepperazzi Spicy Sweet Peppers, Chopped Jalapeno slices, Daisy Reduced Fat Sour Cream, fresh Shredded Sargento Asiago Cheese, and Mission Flour Tortillas. Same ingredients as the other night except a different Ortega Sauce and I’m using Chicken instead of Shrimp.

 

 

 

 

First time using the Simple Truth Chicken Fajita Strips. This is a fantastic item to have in the fridge or freezer. They’re 99% Fat Free, already Seasoned, and cook up in 6-8 minutes. They came out well seasoned and the strips are nice and meaty.

 

 

Chicken Fajitas Refried Beans 003

I heated up a tablespoon of Extra Virgin Olive Oil in a medium size skillet over medium heat. I started by slicing the Sweet Peppers into strips and adding them to the skillet, stirring them and cooking until tender (about 4 minutes). Stirred in the Chicken Strips and sliced Jalapenos, stirred this for about 6 minutes. Then added the Ortega Fajita Skillet Sauce, cooking another 3 minutes till everything was heated through. Heated up the tortillas in the microwave for 20 seconds and topped them with a dab of the Daisy Reduced Fat Sour Cream and the Chicken Fajita Mixture. I also topped it some fresh grated Asiago Cheese, and served. I keep packets of the Ortega Skillet Sauces in stock, it makes on delicious Fajita! Had a nice heat to it but not overpowering and the taste of the Ortega Sauce is incredible!Served with a side of Old El Paso Fat Free Refried Beans. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Beautiful morning out today! It heated up though as the day went on, mid 80’s. Had the cart out early doing some minor repair work on it and then rode around most of the morning. Went to Walmart and picked up a few items and purchased some eave drain pipe extension hoses for some of the drain pipes and back home for the day. For dinner tonight Pulled Buffalo Chuck Roast Fajitas.

 

 
Leftovers from Dinner 2 nights ago turns into tonight’s dinner! I’m using the Wild Idea Buffalo Pulled Buffalo Chuck Roast that I made a Sandwich out of and using it for Pulled Buffalo Chuck Roast Fajitas tonight! To make my Fajita I’ll be using; Wild Idea Buffalo Pulled Buffalo Chuck Roast, Ole Fajita Flour Tortillas, Wholly Guacamole, Daisy Light Sour Cream, Fresh Cilantro, Diced Red Onion, and Sliced Sweet Peppers.

 

 

 

I think you could use the Wild Idea Buffalo Pulled Buffalo Chuck Roast for any dish and it would be delicious! It comes marinated in Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. Dreary and rain on and off all day. Stopped by Walmart to pick up a couple of items and stopped by the bank, then back home. For dinner tonight I tried a new recipe from Jennie – O, Baked Turkey Rigatoni.

 

 

 
It’s a Winner, Winner, Turkey Dinner Tonight! A while back I was invited to join the Jennie-O Switch Circle, an online network of influential bloggers who will receive sneak peaks of all things Jennie-O. As a member I’m sent coupons and recipes, which is where the Baked Turkey Rigatoni Recipe that I’m preparing tonight comes from. But I’m going to lighten this recipe up, cutting the calories and carbs. I’ll be using Jennie – O Extra Lean Ground Turkey Breast, Ronzoni Healthy Harvest Whole Grain Rigatoni Pasta, Sargento Ultra Thin Provolone Sliced Cheese, Daisy Reduced Fat Sour Cream, Sargento Reduced Fat Shredded Mozzarella Cheese, and Kraft Reduced Fat Grated Parmesan Cheese. I also added some sliced Mushrooms and Dried Oregano. Fewer calories, less carbs, same great taste as the original recipe! I also only made a half order of this, using half of the ingredients. I’ve left the original recipe along with the Jennie – O Turkey web site link at the end of the post.

To prepare it start by heating the oven to 350°F. Bring large pot of lightly salted water to boil. Add pasta and cook 12 minutes or until al dente; drain. Return to same pan. In a large skillet, cook the ground turkey as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer. Add onion and sauce; simmer 15 minutes or until sauce is thickened and onion is soft. Then mist a 9 x 13-inch baking dish with cooking spray. Add turkey mixture and mushrooms to pasta. Stir to combine. Layer half of turkey mixture in dish. Top with Provolone cheese. Spread with sour cream. Top with remaining turkey mixture. Sprinkle with Mozzarella and Parmesan cheese and Oregano. Bake 30 minutes or until cheese is melted and browned. Garnish with additional Parmesan cheese, if desired.

The Jennie – O Turkey, Pasta Sauce and Mushrooms combined just right and then along with the trio of Provolone, Mozzarella, and Parmesan Cheese it’s one delicious and hearty meal! 1 (16-ounce) package rigatoni pasta
1 (20-ounce) package JENNIE-O® Lean Ground Turkey

6 slices Provolone cheese
1 cup fat-free sour cream
1 cup shredded mozzarella cheese
2 tablespoons finely grated Parmesan cheese

Today’s Menu: Black Bean and Turkey Tacos with Fiesta Flats Tacos

Incredible weather, even for Ohio! It was 80 degrees and sunny Sunday and now it’s going to be a high of 36 degrees and we got about 1/4″ of snow this morning. Wow, enough is enough! Even colder in the morning, low of 22 degrees. That’s going to kill a lot plants and trees that has started coming out.The winter was so rough it looks as though it killed everyone’s Rose plants and it took out half of huge Vine we had growing on the car port fence. Kroger got some Veal Shoulder in so I went and picked up a 3.7 lb. one for our Easter dinner, more on that Sunday. For dinner tonight, one of my favorites, it’s Taco Night! Black Bean and Jennie – O Turkey Tacos with the Ortega Fiesta Flats.

As usual when I make Turkey Tacos it’s with Jennie -O Ground Turkey Breast! Love the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey in Canola Oil and seasoned it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes, and 1 package of Old El Paso Low Sodium Taco Seasoning. As I added the Taco Seasoning Mix I also added 1 can of Bush’s Low Sodium Black Beans, I had drained and rinsed them before I added them. Black Beans with Ground Turkey is a perfect pairing for Tacos, added flavor and protein. Mixed well until everything was coated and then simmered another 5 minutes until heated through. As i said the Black Bean and Gound Turkey mix is a perfect one for Tacos, they complement each other very well.

 

 

 

For my other toppings I used 1 small can of Mario Sliced Black Olives, Sargento 4 Cheese Mexican Shredded Reduced Fat Cheese, Dole Shredded Lettuce, Diced Tomatoes, Dean’s Guacamole Dip, Old El Paso Taco Sauce, and all in a Ortega Fiesta Flats. I love Taco Nights! You can have so many different types of Tacos with so many different toppings, just endless options for dinner. The New Ortega Fiesta Flats have quickly become one of our favorite Taco Shells. They make a nice option to the regular Taco Shell. Their 150 calories and 17 net carbs per serving, 2 Shells make a serving. They’re nice size, so you can load them up with healthy toppings. Another plus is they hold their shapes, even after you add toppings and after a couple of bites. We keep box of these in the pantry. For dessert later a bowl of Del Monte No Sugar Added Mango Chunks.

Today’s Menu: Black Bean and Turkey Tacos with Fiesta Flats Tacos

We missed the damaging part of the storm that moved through the region. Got a lot of heavy rain with some strong winds from time to time. The rain did get rid of most of our snow that was left though. I actually think it’s more windy today than overnight. Went to Kroger to pick up a few items and was heading home on I-75 and it was struggle for everyone driving as the winds were very high. For dinner tonight, one of my favorites, Taco Night! Black Bean and Jennie – O Turkey Tacos with the new Ortega Fiesta Flats.
