Turkey Vegetable Stew
Stew is more than just a thick soup — it’s special. Especially this one. Aromatic, savory and packed to the brim with veggies, this hearty stew makes a great weeknight dinner at under 300 calories per serving.

INGREDIENTS
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins
½ cup all-purpose flour
1 tablespoon vegetable oil
2 cups sliced fresh mushrooms
1 cup chopped carrots
1 cup chopped onion
½ cup chopped celery
4 minced garlic cloves, divided
1 cup dry white wine
¼ cup tomato paste
1 tablespoon chopped fresh rosemary
¼ cup chopped fresh Italian parsley
1 teaspoon finely grated lemon zest

DIRECTIONS
1) Cube turkey tenderloin and toss in flour. In large saucepan, heat oil over medium-high heat. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.
2) Add mushrooms, carrots, onion, celery and 2 garlic cloves. Cook 5 minutes or until vegetables are softened, stirring occasionally. Add wine, tomato paste and rosemary. Bring to boil. Reduce heat to medium-low. Simmer, covered, 25 minutes or until vegetables are tender, stirring occasionally. Simmer, uncovered, 5 minutes or until thickened.
3) In small bowl combine parsley, remaining 2 garlic cloves and lemon zest. Sprinkle over turkey stew.
* Always cook to an internal temperature of 165°F.

Slow Cooker Turkey Pot Pie
For a nutritious meal that’s pure comfort, try slow cooker turkey tenderloin in a creamy mushroom and chicken broth. Topped with biscuits and veggies, it’s a fall favorite that takes only 15 minutes to prep. This easy weeknight meal saves great for leftovers!

INGREDIENTS
2 large carrots, peeled and sliced
2 celery stalks, chopped
1 medium onion, chopped
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins
1 can cream of mushroom soup
1 cup chicken broth
1 (16-ounce) can refrigerated biscuits

DIRECTIONS
1) In slow cooker, place carrots, celery and onion. Top with turkey breast tenderloin. In medium bowl, stir together cream of mushroom soup and chicken broth. Pour mixture over turkey. Cover and cook on HIGH 1:45 hours or LOW 2:25 hours.
2) Meanwhile, cook biscuits according to package directions.
3) Shred turkey with 2 forks, stirring to combine. Top with biscuits and return to slow cooker. Cook, covered an additional 30 minutes or until mixture is hot. Always cook turkey to well-done, 165°F as measured by a meat thermometer.
* Always cook to an internal temperature of 165°F.

Turkey Bacon and Potato Soup

This easy slow cooker recipe lets you enjoy thick and creamy potato soup, featuring crisp JENNIE-O® Turkey Bacon, even on the busiest of weeknights. Simply prep it the night before, start in the morning, and return to a delicious, ready-to-eat dinner.

INGREDIENTS

4 cups low-sodium chicken broth
3 medium potatoes, peeled, diced
1½ cups chopped cabbage
1 leek, diced
1 onion, chopped
2 carrots, diced
¼ cup chopped fresh parsley
1 teaspoon salt, if desired
½ teaspoon black pepper
½ teaspoon caraway seeds
1 bay leaf
½ cup sour cream
1 (12-ounce) package JENNIE-O® Turkey Bacon
DIRECTIONS

1) In Slow Cooker combine broth, potatoes, cabbage, leek, onion, carrots and parsley. Stir in salt, pepper, caraway seeds and bay leaf. Cover; cook on LOW 8 to 10 hours or on HIGH 4 to 5 hours.
2) Remove and discard bay leaf. In small bowl, combine ¼ cup hot liquid from slow cooker with sour cream; mix. Add mixture to slow cooker; stir.
3) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Chop bacon. Top soup bowl with turkey bacon.
* Always cook to an internal temperature of 165°F.

Turkey Tenderloin Crostini
The term “crostini” in Italian means “little toast”. With various toppings, they’re the perfect appetizer before any meal. Our Turkey Tenderloin crostinis combine sweet and savory with whole canberry sauce, blue cheese crumbles and tender turkey on top. Make them, and you might be the toast of your next dinner!

INGREDIENTS
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins
1 teaspoon seasoned salt
½ teaspoon garlic powder
½ teaspoon freshly ground pepper
15 crostini bread slices
¾ cup whole-berry cranberry sauce
1 tablespoon country-Dijon mustard
⅓ cup blue cheese crumbles
fresh marjoram leaves, if desired

DIRECTIONS
1) Season turkey with seasoned salt, garlic powder and pepper. Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Let stand 15 minutes and slice into about 15 ¼-inch slices.
2) In small bowl, stir together cranberry sauce and mustard.
3) Place 1 tenderloin slice on each crostini bread slice and top with cranberry mixture and blue cheese crumbles.
4) Garnish with fresh marjoram leaves, if desired.
* Always cook to an internal temperature of 165°F.

Turkey Singapore Rice Noodles
Singapore knows noodles. We know turkey. Together, you get an Asian dinner worthy of the history books. Garlic, ginger, curry, turkey, shrimp and veggies comprise this tasty recipe.
INGREDIENTS
½ (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins, thinly sliced
1 (8.8-ounce) package thin, dried rice stick noodles
2 tablespoons vegetable oil; divided
½ cup egg substitute or 2 eggs, lightly beaten
4 cloves garlic, minced
1 tablespoon finely chopped ginger
1 teaspoon mild Indian curry paste
1 (8-ounce) can sliced water chestnuts, drained
8 ounces medium raw shrimp, peeled and deveined
2 tablespoons low-sodium soy sauce
2 tablespoons hot chili sauce
2 tablespoons dry sherry
1 teaspoon sesame oil
½ cup chopped green onion

DIRECTIONS
1 – Cook turkey according to package directions; set aside. Always cook to well done, 165°F as measured by a meat thermometer.
2 – Put noodles in bowl and cover with hot water. Let stand 20 minutes or until softened. Drain and set aside.
3 – Heat 1 tablespoon oil in skillet or wok over medium-high heat. Add eggs and cook, stirring occasionally, 3 minutes or until just cooked. Remove from skillet; set aside. Wipe skillet clean.
4 – Heat remaining oil in same skillet over medium-high heat. Add garlic, ginger and curry paste. Stir-fry 1 to 2 minutes until fragrant.
5 – Add water chestnuts and shrimp. Cook, stirring 3 minutes or until shrimp are just cooked. Do not overcook.
6 – In bowl, combine soy sauce, chili sauce, sherry and sesame oil. Add to skillet.
7 – Add turkey, noodles and green onion and stir until hot and well combined.
* Always cook to an internal temperature of 165°F.

Lean turkey simmered in a delicious homemade barbeque sauce make these messy-but-delicious turkey sandwiches a flavorful addition to your weeknight dinner line up.

NGREDIENTS
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins, cut into ½ x 2 ½-inch strips
1 tablespoon olive oil
½ cup chopped onion
1 (15-ounce) can tomato sauce
¼ cup cider vinegar
2 tablespoons packed brown sugar
1 tablespoon Worcestershire sauce
1 teaspoon prepared mustard
4 toasted Kaiser rolls or whole grain buns, split

DIRECTIONS
1) Cook turkey strips as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Remove from skillet; set aside.
2) In skillet, heat oil. Add onion and cook until tender. Stir in tomato sauce, vinegar, brown sugar, Worcestershire sauce and mustard. Reduce heat to low and simmer 15 minutes, stirring occasionally.
3) Place cooked turkey into sauce and simmer until heated through. Serve on Kaiser rolls.

Grilled Turkey with Pineapple Citrus Relish
Sweet and savory — who knew they’d pair so well? This recipe features extra lean turkey tenderloins grilled in a delicious marinade, topped with a fresh, crunchy relish and served over rice.

INGREDIENTS
1 (20-ounce) package JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins
1 (8-ounce) can pineapple tidbits in juice, drained and juice reserved
3 tablespoons plus 2 teaspoons lime juice, divided
2 teaspoons olive or vegetable oil
2 cloves garlic, minced
2 oranges, peeled, segmented and chopped
½ cup finely diced red bell pepper
2 tablespoons chopped red onion
1 tablespoon chopped fresh cilantro
cooked rice, if desired

DIRECTIONS
1) In 13 x 9 x 2-inch baking dish, place tenderloin. In small bowl, mix pineapple juice, 3 tablespoons lime juice, olive oil and garlic. Pour over turkey. Cover and refrigerate for 30 minutes, turning turkey occasionally.
2) Meanwhile, chop pineapple and place in medium bowl. Add remaining 2 teaspoons lime juice, oranges, red bell pepper, red onion and cilantro; mix well and set aside.
3) Remove turkey from marinade. Discard marinade. Grill turkey as specified on the package. Always cook to well-done, 165ºF as measured by a meat thermometer. Serve turkey with pineapple-citrus relish and cooked rice, if desired.
* Always cook to an internal temperature of 165°F.

INGREDIENTS
1 tablespoon vegetable oil
1 large onion, thinly sliced
2 green bell peppers, sliced

4 baguettes, split and toasted
2 slices Provolone cheese, halved

DIRECTIONS
1) In skillet, heat oil on medium. Add onion. Cook 10 minutes until softened and golden brown. Add peppers; cook 5 minutes or until softened; set aside.
2) Grill turkey tenderloin as specified on the package. Always cook until well done, 165°F as measured by meat thermometer. Slice turkey into thin strips.
3) On baguette, place turkey, onion mixture and cheese.
* Always cook to an internal temperature of 165°F.
