Today’s Menu: Panko Crispy Turkey Tenderloins w/ Baked Fries

For Breakfast I Scrambled a couple of Eggs, heated up 2 Johnsonville Turkey Sausage Links, toasted a slice of Aunt Millie’s Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Nice way to start the day! 66 degrees and mostly sunny out, still windy. After Breakfast I went to Kroger for a few things for Mom and stopped by McDonald’s and picked up Breakfast for her. Did a little yard work and then later a friend of mine stopped by for a while to catch up a bit. For Dinner tonight I prepared Panko Crispy Turkey Tenderloins w/ Baked Fries.

I purchased another package of the JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins at Meijer. There’s only 120 calories, 1 gram of fat and 0 carbs per serving! I’m preparing them the same way as last time we had them. I had looked around at different recipes and I combined a couple of ideas from a few of them to prepare the Tenderloins. I’m making Panko Crispy Turkey Tenderloins. To make these I’ll be needing 1/3 of a cup Low Fat Buttermilk, 3/4 teaspoon (or more) of Frank’s Hot Sauce, 1/4 teaspoon of Garlic Powder, 1/4 teaspoon Onion Powder, Sea Salt, 1 package of JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins (sliced into smaller strips), Extra Light Olive Oil for frying, 1 cup All-Purpose Flour, 2 teaspoons Hungarian Paprika, Grinder Black Peppercorn, 2 cups Progresso Panko Breadcrumbs, 1 1/2 tablespoons Chile Powder, and 2 Large Eggs or Egg Beater’s which is what I used.

Then to prepare them; You’ll be needing 3 bowls. Whisk the Buttermilk, Hot Sauce, Garlic Powder, Onion Powder, and Sea salt in a small bowl. Place the sliced Turkey in a resealable plastic bag and pour in the Buttermilk Marinade. I refrigerated them for 3 hours.

When ready I got a large cast-iron skillet and added3 tablespoons of the Olive Oil to it and heated it on medium heat. As the skillet was heating I put the Flour in a bowl and seasoned it with the Paprika and Sea Salt and Pepper. I then put the Panko in another bowl and season it with the Chile powder and Salt and Pepper. And finally I poured the Egg Beater’s in the last bowl.

I removed the Turkey from the Marinade, allowing the excess to drip off. I dredged the Turkey first in the Flour, then in the Egg Beater’s and finally coat them with the Panko. With the cast iron skillet heated I fried the turkey in batches, always being careful not to overcrowd the skillet, until golden brown and an instant read thermometer inserted into the center read 160 degrees. I fried them 3 minutes per side.

These came out so delicious! They came out Golden Brown, Tender and so Flavorful. The Spices worked perfect and the Panko Breadcrumbs gave it a fantastic crunch. I served these with some Blue Cheese Dressing for dipping. We have found a new Keeper Recipe! I also baked some Ore Ida Crinkle Cut Fries. Then for Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Panko Crispy Turkey Tenderloins w/ Baked Fries

For Breakfast I heated up the leftover Biscuits and Gravy. Also had a cup of Bigelow Decaf Green Tea. It snowed a couple of inches overnight. Then this morning it started raining, which got rid of most of the snow, high of 39 degrees. More snow coming though. There’s not a thing to do today, I’m all caught up on housework, laundry and such. So it was kick back TV and Crossword day! For Dinner tonight I prepared Panko Crispy Turkey Tenderloins w/ Baked Fries.

I purchased a package of JENNIE-O® Extra Lean Boneless Turkey Breast Tenderloins on my last visit to Meijer. There’s only 120 calories, 1 gram of fat and 0 carbs per serving! Hey Chicken Tenders, you just got replaced! These came out so delicious! They came out Golden Brown, Tender and so Flavorful. The Spices worked perfect and the Panko Breadcrumbs gave it a fantastic crunch. I served these with some Blue Cheese Dressing for dipping. We have found a new Keeper Recipe! Today’s Menu: Chicken Tenders and Baked Fries

For Breakfast this morning I prepared a Poached Egg and served it on a Thomas Light English Muffin. I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links along with a cup of Bigelow Decaf Green Tea. 47 degrees and cloudy out all day. After Breakfast I did a load of laundry. Then outside I got the cart and did a few things around the yard and then grabbed the leaf blower and cleaned off the driveway and deck. No much else going on. For Dinner tonight I prepared Chicken Tenders and Baked Fries.

I came across a package of Simple Truth Chicken Tenderloins (Tenders) and I sat them in the fridge overnight to thaw. To prepare them I’ll need McCormick Grinders of Sea Salt and Peppercorn Medley, LiteHouse Poultry Herb Blend, Garlic Salt, Flour, Pam Cooking Spray, and Extra Light Olive Oil.

I Seasoned and Floured the Tenders and set then aside. I grabbed a large skillet and sprayed it with the Pam Spray and heated the skillet on medium heat. As the skillet heated I added 2 tablespoons of Extra Light Olive Oil. When the skillet was heated I added the Tenders, I cooked them in 2 batches so not to over crowd the skillet. I cooked them for about 5 minutes and flipped them over to continue cooking them another 4 minutes. I checked the Tenders with a meat thermometer and I had the correct reading of 165 degrees F. Removed the first batch on to a paper towel lined plate and cooked the next batch.

They came out excellent! Good Seasoning and the Flour gave it a good crust. Served these with sides of LiteHouse Lite Blue Cheese and Hidden Valley Ranch Buffalo Dressing.

To go with the Chicken Tenders I baked some Ore Ida Crinkle Cut Fries. Served those with some Hunt’s Ketchup. For Dessert/Snack later a Diet Raspberry Snapple. First time trying the Diet Raspberry Snapple and really enjoyed it!

Today’s Menu: Chicken Tenders and Baked Fries

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. Wow, what a beautiful day out there today! Sunny and 71 degrees but a possible record cold morning with snow flurries by in the morning! Yes indeed, that Ohio Weather! It’s no wonder everyone has Sinus and Allergy problems in Southwest Ohio! Hopefully they’ll miss that forecast. After Lunch I got the cart out and did a little yard work. Then later took the cart for a spin around the neighborhood, enjoying that sunshine! For Dinner tonight I prepared Chicken Tenders and Baked Fries.

I had no clue on what to prepare for Dinner tonight so I hit the freezer. I came across a package of Simple Truth Chicken Tenderloins (Tenders). So I sat them out to thaw this morning. To prepare them I’ll need McCormick Grinders of Sea Salt and Peppercorn Medley, LiteHouse Poultry Herb Blend, Garlic Salt, Flour, Pam Cooking Spray, and Extra Light Olive Oil.

Today’s Menu: Baked Chicken Wings w/ Baked Fries and Light Texas Toast

For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 68 degrees and more rain moving in later in the afternoon. I had one of those rough nights dealing with Phantom Pains! So with very little to no sleep overnight I caught up on sleep after the Phantom Pains finally let up around 11:00 this morning. For Dinner tonight its Baked Chicken Wings w/ Baked Fries and Light Texas Toast.

I’m using Kroger Oven Roasted Chicken Wings. I started by heating the oven on 425 degrees F., same temperature I’ll need for my Fries and Texas Toast. I took a small Baking Sheet and lined it with foil. Then sprayed it with Pam Non Stick Cooking Spray. Spread the Wings out across the sheet and baked them for 33 minutes, turning them once after 17 minutes. I love Wings, and these are excellent Wings! Served them with Dipping Sauces of Hidden Valley Buffalo/Ranch Dressing and Litehouse Light Blue Cheese Dressing.

With the oven already heated I baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup.

I also baked up some slices of New York Bakery Light Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

After Breakfast I went to the Kroger up the road to pick up a Prescription for Mom and a few items she needed. Then stopped by McDonald’s and picked up Breakfast for her, she loves those McDonald’s Breakfasts! Got the leaf blower out and cleaned off the deck and driveway areas. Then spent most of the afternoon on the phone with a computer problem, finally got it fixed but it took a while! Just a cup of Bigelow Decaf Green Tea for Breakfast. Happy Labor Day to everyone out there! Outside it’s mostly sunny and 94 degrees. Today’s Menu: Baked Chicken Wings w/ Baked Fries and Light Texas Toast

For Breakfast this morning I toasted a Thomas Light Multi Grain English Muffin English Muffin. I normally use Healthy Life Multi Grain English Muffins but Kroger is the only store to carry them and they haven’t had any in stock for over a month. Time to switch! The Thomas Muffins are comparable to the Healthy Life, both are 100 calories and 17 net carbs. Anyway I topped the Muffin with a Poached Egg. Also had my morning cup of Bigelow Decaf Green Tea. Sunny, hot, and very humid outside today! The normal August weather has returned! After Lunch I got the leaf blower out and cleaned off the deck and driveway areas. Too humid to be outside for me. Took it easy the rest of the day. For Dinner tonight I prepared Baked Chicken Wings w/ Baked Fries and Light Texas Toast.

For the Wings I’m using Kroger Oven Roasted Chicken Wings. I started by heating the oven on 425 degrees F., same temperature I’ll need for my Fries and Texas Toast.
