Today’s Menu: Chili and Cheese Nachos

 

 

No Breakfast this morning I had to fast overnight and be at the Family Doctor at 7:45 this morning. Checking Sugar and Cholesterol, and such. I should have the results by the end of the week. Partly cloudy with rain showers in the area, high of 92 degrees. After the Doctor visit we stopped by Kroger and then by McDonald’s to pick Mom up Breakfast. Dealing with allergies today so I didn’t do a lot today besides rest. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

 

 

 

Mom had been wanting some Chili and Cheese Nachos. So Nachos it is tonight! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

 

 

 

To prepare I preheated the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. We love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Directions:
Stove top: empty chili into saucepan. Stir occasionally while heating over medium heat, about 5 minutes or until hot. Microwave: empty chili into microwaveable bowl; cover loosely. Heat for 2 To 3 minutes or until hot, stirring once. Careful. Let chili stand in microwave 1 minute and stir before serving. All microwaves And stoves vary. Times given are approximate.

Today’s Menu: Chili and Cheese Nachos

 

 

To start the day off I prepared a sunny side up Egg, heated up a couple of Johnsonville Turkey Breakfast sausage Links, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. I was hungry! Outside its 49 degrees and sunny. With the rains finally stopping I got the leaf blower out and cleaned off the deck and driveway areas. I had bought a few Strawberry Plants and a couple of indoor plants the other day. I planted the Strawberry Plants to the side of the shed and repotted the 2 house plants I bought also. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Today’s Menu: Chili and Cheese Nachos

 

 

 

 

To start my day off I just had a cup of Bigelow Decaf Green Tea. After my Tea I went to Kroger for a few items and then to McDonald’s to pick up Breakfast for Mom – a Sausage, Egg, and Cheese Bagel with a Senior Coffee with 1 Cream. Mom went on to Church. Me, I did a couple of loads of laundry and light cleaning of the house. Later I got the leaf blower out and cleaned off the deck. After that I returned to being a slug for the afternoon! Watched NFL Football the rest of the afternoon. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Today’s Menu: Chili and Cheese Nachos

 

 


To start my day off I had one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Also a cup of Bigelow Decaf Green Tea. A bit cooler out, 80 degrees with rain showers. Bad day with my allergies today, bad headache. So I didn’t do a whole lot today. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

For Breakfast this morning I toasted a Thomas Light 100 Calorie Multi Grain English Muffin and topped it with a Poached Egg. And of course I had my morning cup of Bigelow Decaf Green Tea. Allergies and Sinuses still haven’t let up, really suffering this year! Sunny, humid and 88 degrees outside today. After Breakfast I went to Meijer, needed Bread and Buns. Stopped by the ATM and then by McDonald’s to pick up Breakfast for Mom. Back home got the leaf blower out and cleaned off the deck and driveway areas. Done for the day after that. Allergies kicking in! For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Today’s Menu: Chili and Cheese Nachos

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Meijer for a couple of items and then picked up Breakfast for Mom. Outside 79 degrees with rain showers early then clearing up for the day. After Lunch I got the cart out and sprayed for weeds around the house and shed. Everything done, I kicked back and took a short nap. I’m not sure what’s wrong, just feeling bad. Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

 

 


We love Chili and Cheese Nachos around here! To make them I’ll need: Tostitos Multi Grain Scoops for my Chips. I love these with Salsa or just as snack by their selves, they bake and hold their shape better than most chips. For my toppings I used 1 can of Mario Sliced Black Olives, sliced up some Green Olives, Mezzetta Deli Sliced Jalapeno Peppers, Hormel Turkey Chili with Beans, a few shakes (or more) of Frank’s Red Hot Sauce, and Sargento Reduced Fat Mozzarella. Put all that together and it’s nothing but good Nachos! Especially love the Jalapenos, nice mild heat!

 

To prepare I preheat the oven at 400 degrees and sprayed a glass baking dish with Pam and layer everything in. I first opened up 2 cans of the Hormel Chili with Beans and heated them up in a sauce pan, as it was heating I added about 6 shakes of Frank’s Hot Sauce to it and mixed. After the Chili was ready I added 4 tablespoons of Chili to the baking dish, then I added my Scoops (Chips). I then added the Sliced Black Olives and Sliced Green Olives, the remainder of the Chili, Sliced Jalapeno Peppers (Love These), and then top everything the Cheese. Then just pop it in the oven 10 minutes or until the Cheese had started to melt and everything heated. I love Nachos, nothing better than a big plate of Chili Cheese Nachos! For Dessert later a bowl of Skinny Pop – Pop Corn and an Ice Water to drink.

Today’s Menu: Chili and Cheese Nachos

 


For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. We have a high of 41 degrees and cloudy out today. I drove Mom and Dad to the Doctor’s, Dad had a check-up. He’s to the point where we can barely get him in and out of the car. All we can do is try to keep him comfortable here at home. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Today’s Menu: Chili and Cheese Nachos

 

 

To start my day off I toasted a couple of Eggo Nutrigrain Waffles. Also had the morning cup of Bigelow Decaf Green Tea. Not quite as cold this morning, 30 degrees. Had a high of 45 degrees and mostly sunny, not bad for this time of year. Mom went to Church and stayed home and watched Dad. So I cleaned the house and did a load of laundry. After Lunch I got the leaf blower out and cleaned the deck and driveway off, still a lot of leaves blowing around. Had everything done and caught up on some programs I had recorded. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Today’s Menu: Chili and Cheese Nachos

 

 

For Breakfast this morning I prepared Turkey Sausage and Hash Browns. I had a package of Eckrich Smoked Turkey Links in the freezer, so I put the package in the fridge to thaw overnight. They are very easy to prepare, just heat in a skillet for 6 minutes and done. For the Hash Browns I used Simply Potatoes Shredded Hash Browns. Had a very bad night of dealing with Phantom Pains. These were almost violent pains I had to deal with. I just pray that one day they come up with a cure for these! Then last night we got a call from the rehab center where Dad is at and they told us he has Shingles! So now he is under quarantine for 3-5 days! What else can happen!! Weather wise we hit about 75 degrees yesterday afternoon and the temps dropped quickly and we had snow flurries in the early morning, this weather is crazy! After Breakfast I headed up the road to the local Kroger for a few items we needed. Didn’t do a whole lot today but rest, didn’t get a lot of sleep last night. For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.

Everything done and this afternoon its NFL Football, love Football! For Dinner tonight a real Comfort Food, Chili and Cheese Nachos.
