Today’s Menu: Creamy Potato Soup w/ Grilled Cheese Sandwich

For Breakfast on this cold Sunday Morning I had a toasted Healthy Life Whole Grain English Muffin. I then got out the Egg Beater’s Egg Whites and Scrambled a 1/2 cup of it, 1/2 equals 2 Eggs. Next I fried some al fresco Uncured Chicken Bacon and I also used a slice of Sargento Ultra Thin Swiss Cheese. Put it all together and I had one delicious Breakfast Sandwich! Also had my morning cup of Bigelow Decaf Green Tea. The al fresco Uncured Chicken Bacon I used is some of the best Bacon I’ve come across in a while. It fries up so crisp and has an excellent taste! As I said its cold, 15 degrees and a wind chill of 10 degrees. It was mostly sunny but only got up to 25 degrees. Did a load of laundry after Breakfast. Then after Lunch I cleaned the house, vacuum and dusted. Not much else going on so I kicked back and watched some College Basketball. So for Dinner tonight I’m having Creamy Potato Soup w/ Grilled Cheese Sandwich.

Nothing like a easily made Comfort Food Dinner! Creamy Potato Soup w/ Grilled Cheese Sandwich. I’m using one of my favorite Soups, Bear Creek Creamy Potato Soup Mix. I really love using all the Bear Creek Products! So delicious and easy to prepare.

To prepare a package of it; In a 2 quart sauce pan bring 8 cups of water to a rolling boil. Whisk in the soup mix. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally. Salt and pepper to taste and serve! Perfect seasoning, thickened up just right, plenty of Diced Potato and a fantastic Potato flavor. The package makes 8 cups and very easy to prepare and makes one delicious Potato Soup.

To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert a Jello Sugarfree Dark Chocolate Pudding topped with Cool Whip Free.

Bear Creek Creamy Potato Soup Mix

A favorite original Bear Creek® soup. Very creamy and delicious with a delicate blend of parsley, herbs and spices to give it a little kick.

Yields about 8 one-cup servings.

Try adding crumbled bacon, sour cream and shredded cheddar cheese for variety.
While they simmer on the stove, you can smell the hearty goodness of Bear Creek® soups. They’re quick and easy to make and come in 15 delicious varieties. These soups have a homemade taste that will satisfy every appetite.

Try a little Parm on your Grilled Cheese…….

Try a little Parmesan Cheese on your Grilled Cheese; Sprinkle a little freshly grated Parmesan cheese on the outside of the bread while it’s cooking then flip it over in the pan so the cheese will cook/stick to the bread.

Today’s Menu: Creamy Tomato Soup w/ Grilled Cheese Sandwich

To start my day off I Scrambled a couple of Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Another beautiful Fall Day outside, 79 degrees and sunny! All caught up on inside cleaning so it was all outside work today, and a gorgeous day to do it! First got the leaf blower out and cleaned off the deck and driveway areas, lot of leaves already blowing around. Next took the leaf blower and cleaned the floor of the shed and got rid of a few things no longer needed. Later I got the chairs off the deck and washed them off and stored them for the year in the shed. Done for the day so I took a ride around the neighborhood and down by the lake. For Dinner tonight another one of those Comfort Foods Dinner, Creamy Tomato Soup w/ Grilled Cheese Sandwich.

For my Soup I heated up a can of Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using for quite some time now. So creamy with a fantastic flavor and it’s 110 calories and 19 carbs. Just empty the contents into a small sauce pan and heat on medium, stirring often, until heated. And it’s ready to go!

For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Creamy Potato Soup w/ Grilled Cheese Sandwich

Foggy morning out there today. So for Breakfast I made a packet of Pioneer Peppered White Gravy. I also toasted a couple of slices of Healthy Life Whole Grain Bread, fried 2 Jennie – O Turkey Breakfast Sausage Links, and my morning cup of Bigelow Decaf Green Tea. Outside it started of foggy and from there a cloudy and dreary day, a high in the 40’s with rain on and off with a little sleet. My thumb I burnt is a mess, burned it pretty good. I have to change the dressing twice a day. Hope it heals up good but I think it will be scared up. Stayed home all day and caught up on some house cleaning. Also did a load of laundry for Mom. Everything done, spent the rest of the day watching the NCAA March Madness Basketball. For Dinner tonight I’m having Creamy Potato Soup w/ Grilled Cheese Sandwich.

It’s a Comfort Food Dinner tonight, Creamy Potato Soup w/ Grilled Cheese Sandwich! I’m using one of my favorite new foods, Bear Creek Creamy Potato Soup Mix. I really love all the Bear Creek Products I’ve tried so far. So delicious and easy to prepare. I had made a package of this for Lunch the day before, this is how I got my thumb burned. I had a container of it in the fridge so I just reheated it on medium heat in a small sauce pan.

The package makes 8 cups and very easy to prepare. I have several in my pantry now, trying a Minestrone Soup next.

To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. A perfect meal for a dreary day! For Dessert later a bowl of Del Monte No Sugar Added Diced Mangos.

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with some Boar’s grilled-cheese-and-baked-fries-008Head Sweet Sliced Ham and a 1/2 slice of Sargento Reduced Fat Swiss Cheese, for a Breakfast Sandwich. Also had my morning cup of Bigelow Decaf Green Tea. It’s another Spring like Winters day here, 63 degrees and partly cloudy. From what they are saying the upcoming week is going to be in the 60’s! So nice out that the flowers are already coming up around the neighborhood. After Lunch I headed over to spend some time with Dad at the rehab care center. He continues getting stronger and walking a lot better! Back home finished up some housework and took it easy the rest of the day. For Dinner tonight I prepared a Grilled Cheese and Baked Fries.

Today’s Menu: Grilled Cheese and Baked Fries

For Breakfast this morning I prepared some Buffalo Sausage, a Scrambled Egg, 2 slices of toasted Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. While rummaging through the freezer I came across a Breakfast Scrambled Egg Buufalo Sausage 003package of Wild Idea Buffalo Ground Breakfast Sausage. Formed it into patties and fried it. I loved them, excellent seasoning! Went on-line to buy some more and they no longer make it. They have it in Buffalo Sausage Links now. Which I’ll have to try, love Wild Idea Buffalo. Outside we have another hot and humid day going on. In the 90’s and high humidity. So I spent my day inside again because of my allergies, another day of high Pollen and mold. Finished up some housework and took it easy today. For Dinner tonight I prepared a Grilled Cheese and Baked Fries.

Grilled Cheese and Baked Fries 002
It was Ham and Cheese Slider and Soup yesterday and tonight it’s more comfort food, Grilled Cheese and Baked Fries. When it’s hot and humid outside I like to eat light, nothing too heavy. To make my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread.

It’s easy to grab takeout when you’re busy, but these low-calorie recipes are just as easy and quick to prepare so you can have a healthy dinner on the table in no time!

Hot Chile Grilled Cheese
This deconstructed version of a chile relleno turned sandwich packs some heat and an ooey-gooey filling. We like the flavor of sourdough, but any kind of bread will work well. Serve with: Coleslaw and sliced pineapple…….

Shrimp Po’ Boy
This twist on the Louisiana favorite piles grilled shrimp and creamy-dressed cabbage onto a crusty bun. Bread that’s soft on the inside and crusty on the outside is perfect for a Po’ Boy sandwich. We grill both sides of a whole-wheat bun for that added crunch. You may need a few extra napkins to enjoy it, but this quick and easy sandwich is well worth it. Serve with: Sauteed corn and bell peppers……

Chicken & White Bean Salad
Zucchini and celery give this chicken-and-bean salad a nice crunch. We like serving it over a bed of slightly bitter escarole and radicchio, but any type of salad greens will work. Recipe by Nancy Baggett for EatingWell…….
