Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

 

For Breakfast this morning I had a bowl of Cheerios’s and a bit later a cup of Bigelow Decaf Green Tea. In the mid 40’s this morning when I rolled out to get the morning papers. Another beautiful day out, 75 degrees and mostly sunny. Did a load of laundry then outside to do some raking of the leaves. I’ve never seen as many Squirrels that we are seeing around here. There’s a few Oak Trees around here and they are gathering Acorns and building their Winter Dens. Later on I got the cart out of shed took a spin around the neighborhood, just out enjoying the day! For Dinner tonight its a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

 

 

I had purchased some of the Boar’s Head London Broil Cap-Off Top Round Oven Roast Beef from Kroger yesterday and it was a beautiful cooked medium rare and too good too sit in the fridge for long! So for my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Meijer Reduced Fat Potato Chips with some Lay’s Ranch Dip. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

For Breakfast this morning I prepared a Breakfast sandwich. I heated up a al fresco Chicken Sausage Patty. As that was heating I toasted a Thomas Light 100% Multi Grain English Muffin. I took the Patty put it between the Muffin halves and topped the Patty with a 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese. Love a good Breakfast Sandwich to start the day. Not bad out today, sunny and 85 degrees out today. I had to stay around the house to wait for the Carpet Installer to show up. They had to put in a new brass strip where the carpet and wood flooring butted together. They didn’t have one when they installed the new carpet. After Lunch I got the cart out of shed took a spin around the neighborhood, just out enjoying the day! For Dinner tonight its a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Meijer Reduced Fat Potato Chips with some Lay’s Ranch Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

 

For Breakfast this morning I prepared a Breakfast sandwich. I heated up a al fresco Chicken Sausage Patty. As that was heating I toasted a Thomas Light 100% Multi Grain English Muffin. I took the Patty put it between the Muffin halves and topped the Patty with a 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese. These are so good! After Breakfast I went to Kroger for Mom, she wanted some Lunch Meat. I stopped by McDonald’s to pick up her usual Breakfast of a Sausage, Egg, and Cheese on Bagel along with a medium Decaf Coffee. Got the cart out of the shed after Lunch along with a rake and the leaf blower. I went around the house and cleaned the flower beds and around the house. Not bad out today, mostly sunny and 50 degrees. For Dinner tonight its a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

 

 

 

I had fully intended to prepare a Pork Roast for Dinner tonight, until I went to Kroger. I had went to the Deli to purchase some Kahn’s Bologna and Boar’s Head Sweet Slice Ham, which I did. But I seen them slicing some Boar’s Head London Broil Cap-Off Top Round Oven Roast Beef and it looked way to good to pass up! It was a beautiful Rare and it was on sale. So the menu changed tonight to a Roast Beef and Vermont Cheddar Sandwich! So for my Sandwich I’ll be using the Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango Snapple to drink.

I had a Jimmy Dean Simple Scrambler Cup – Turkey Sausage Crumbles, Egg Whites, and Cheddar Cheese for Breakfast. I also had my morning cup of Bigelow Decaf Green Tea. 43 degrees and partly sunny outside today. After Breakfast did a load of laundry and cleaned the house this afternoon. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

 

 

 

 

 

 

I wanted something light for Dinner so a Sandwich seemed right, a Roast Beef and Vermont Cheddar Sandwich! I had picked up some Boar’s Head Rare London Broil at Jungle Jim’s yesterday. For my Sandwich I’ll be using the always delicious Boar’s Head Roast Beef, a slice of Boar’s Head Vermont Cheddar Cheese, Kraft Reduced Fat Mayo w/ Olive Oil, French’s Yellow Mustard, and served on Aunt Millie’s Light Whole Grain Bread. Now this is a Sandwich! I Can’t even describe how delicious the Boar’s Head Rare Roast Beef and Cheese is. It’s just so tender and flavorful. And of course Cheese, which makes anything better, with the Mayo and Mustard makes this the perfect Sandwich! To go with the Sandwich I’m having some Ruffle’s Reduced Fat Potato Chips with some Helluva French Onion Dip. Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

 

I had a Jimmy Dean Simple Scrambler Cup – Turkey Sausage Crumbles, Egg Whites, and Cheddar Cheese for Breakfast. I also had my morning cup of Bigelow Decaf Green Tea. It is freezing cold outside this morning, minus 9 degrees below zero! We ended up with about 7 inches of snow overnight also with a high of just 16 degrees. So it’s cold , windy, and icy outside but warm and snug inside. We had about an inch of snow on the ramp leading outside. I had to wait for my neighbor to come over to dig me out before I ventured outside to try to clean up a bit. The same neighbor used his snow blower to get some of it off the driveway, so very cold out. Cleaned the house today and then watched the NFL Playoffs the rest of the afternoon. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

Today’s Menu: Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip

 

 

For Breakfast this morning it was Ham and Eggs. I had purchased a small Meijer Sliced Pepper Ham. So I sliced several pieces up and fried them in a small skillet until heated through. Then in another skillet I fried a Sunny Side Up Egg. Then I toasted 2 slices of Aunt Millie’s Light Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. Good Breakfast to start an Icy and Cold morning. We got freezing rain overnight and snow on top of it, about 1/2 an itch. It all made for some slick roads out there, a lot of wrecks. It got to 40 degrees later and cloudy for the afternoon. I’m usually up by 6:00 am. or so but I slept in till 8:00 this morning! It felt good to get that extra sleep. Not much going on outside today so I did things around the house today. Cleaned the house and then some repairs. I replaced some of the lower wall trim around the house. I run into it sometimes in my Hoveround Mobility Chair and damage it. So a while back I bought a long strip of the wood trim at Home Depot. That way I have it on hand to replace it from time to time. So I stayed busy inside all day. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

For Breakfast this morning I prepared 2 Eggs Scrambled, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated up some Johnsonville Turkey Breakfast Sausage Links, and a cup of Bigelow Decaf Green Tea. I sprinkled some Sargento Reduced Fat Colby-Jack Shredded Cheese and Ortega Chipotle Taco Sauce on my Scrambled Eggs. I buttered the Toast with I Can’t Believe It’s Not Butter. Great Breakfast to start the day off with! Outside its Hot and Humid! A high of 98 degrees and the Heat Index had it over 100 degrees! They say we 4-5 days of this with each day getting hotter before cooling down a bit. But after last Winter I’m not complaining! Did some housework and cleaned up a bit outside. For Dinner tonight I prepared a Roast Beef and Vermont Cheddar Sandwich w/ Chips and Dip.

Today’s Menu; Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 

To start the morning of I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. After Breakfast I had to go to Kroger to pick for a couple of items. Then stopped by McDonald’s and picked up Breakfast for Mom and Dad. Mom went on to Church and stayed home and kept an eye on Dad. Did a couple of loads of laundry while she was gone and finished up cleaning the house. Then after Lunch I got the leaf blower out and cleaned off the deck and driveway areas. Everything was done so I watched some College Basketball on TV. For Dinner tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 


To prepare the Sandwiches I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Goldminer California Sourdough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

 

 


While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! I love Grilled Sandwiches!

 

 


I had already preheated the oven, so as the Sandwich was finishing cooking I baked my Fries, I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Today’s Menu; Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries

 

 

To start the morning of I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Well the rain has finally let up around here but there’s a lot of local flooding and the Ohio River is way over its banks. After Breakfast I headed up to the local Kroger to pick up a couple of items. Then stopped by McDonald’s and picked up Breakfast for Mom and Dad. Mom went on to Church and stayed home and kept an eye on Dad. Did a couple of loads of laundry while she was gone. After Mom got back I had Lunch and then headed out to Walmart and Meijer to check out prices for Wood Chips and Weed Killer Fertilizer. Getting ready for Spring! I’ll check out Menard’s and Home Depot tomorrow. For Dinner tonight I prepared a Grilled Ham and Swiss on Sour Dough Bread w/ Baked Fries.

 


To prepare the Sandwiches I’ll need; Boar’s Head Sweet Slice Ham, Sargento Reduced Fat Swiss Cheese, French’s Yellow Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Goldminer California Sourdough Bread. I used the flat top Griddle to grill it with. I sprayed the griddle with a very light coat of Pam Cooking Spray and spread about 1/2 tablespoon of Blue Bonnet Light Butter on it. Heated it on medium heat. I also turned the oven on at 425 degrees, for the Fries.

 

 

 


While the griddle was heating I got the Sandwich ready to grill. Took a slice of the Sour Dough Bread and topped it with some of the Kraft Mayo, the Boar’s Head Ham, the Sargento Swiss, French’s Mustard, and added the top slice of the Sour Dough Bread. I then Buttered the bottom and top halves of the Bread with Blue Bonnet Butter. With the griddle heated I grilled my Sandwich. Grilled the bottom half just over 3 minutes, then flipped it over and grilled the other side about 2 1/2 minutes. Until both sides were golden brown! What a Sandwich, Sour Dough Bread just makes everything that much better!

Today’s Menu: Baked Ham and Swiss Sub w/ Baked Fries

 

 

For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cooked the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea. A little better day out there than yesterday, high of 32 degrees and partly sunny. After Lunch I headed up to a local rehab center to see a friend of mine’s father. He had lost part of his foot to Diabetes and was having a rough time. It was good seeing everyone, just under better circumstances next time! For Dinner tonight, a Baked Ham and Swiss Sub w/ Baked Fries

 

For my Sub I’ll need; Aunt Millie’s Deli Style Whole Grain Mini Sub Buns, Boar’s Head Sweet Sliced Ham, al fresco Uncured Chicken Bacon, 2 slices of Sargento Ultra Thin Swiss Cheese, Kraft Light Mayo w/ Olive Oil, and Kraft Fat Free Zesty Italian Dressing.

 

 

 

 

 


I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. If you’ve never tried this Bacon you need to give it a try. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it! Sit the Bacon aside until ready to use.

 

 

To make the Sub I took the bottom half of the Bun and layered it the Mayo and a slice of Swiss Cheese. Then layered it with the Ham, 2 slices of Swiss Cheese, Chicken Bacon, a drizzle of the Italian Dressing, and topped it with the top half of the Sub Bun. Last, I drizzled more of the Italian Dressing over to of it.

 

 

 

 

I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Baked Ham and Swiss Subs!

 

 

 

 

 


I also baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later, while watching the Super Bowl, a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.
