Today’s Menu: Creamy Tomato Soup w/ Grilled Cheese Sandwich

 

 

For Breakfast this morning I Scrambled a couple of Eggs and topped them with a sprinkle of Sargento Off the Block Cheddar Cheese and Ortega Smoked Chipotle Taco Sauce. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Cloudy and 47 degrees out on this St. Patrick’s Day Morning. After Breakfast I went and picked up Breakfast for Mom at McDonald’s and stopped and got gas for her car. Mom didn’t go to Church. She’s feeling a lot better today but still not up to par. I did a load of laundry and it was house cleaning today. Had everything done and watched College Basketball for the afternoon. Dinner tonight another one of those Comfort Foods Dinner, Creamy Tomato Soup w/ Grilled Cheese Sandwich.

 

 

 

 

I heated up a can of Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using for quite some time now. So creamy with a fantastic flavor and it’s 110 calories and 19 carbs. Just empty the contents into a small sauce pan and heat on medium, stirring often, until heated. And it’s ready to go!

 

 

 

 

 

 

Then for my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

I forgot to post yesterday’s Dinner Post, so here it is a bit late! To start my day off I Scrambled an Egg, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. 46 degrees and mostly sunny out today. I got the leaf blower out and cleaned off the deck and driveway areas, lot of leaves again. Then back inside I cleaned the house today and then helped Mom out the rest of day with some Thanksgiving dishes. For Dinner tonight another one of those Comfort Foods Dinner, Creamy Tomato Soup w/ Grilled Cheese Sandwich.

 

 

 

 

 

For my Soup I heated up a can of Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using for quite some time now. Another beautiful Fall Day outside, 79 degrees and sunny! All caught up on inside cleaning so it was all outside work today, and a gorgeous day to do it! First got the leaf blower out and cleaned off the deck and driveway areas, lot of leaves already blowing around. Next took the leaf blower and cleaned the floor of the shed and got rid of a few things no longer needed. Later I got the chairs off the deck and washed them off and stored them for the year in the shed. Done for the day so I took a ride around the neighborhood and down by the lake. For Dinner tonight another one of those Comfort Foods Dinner, Creamy Tomato Soup w/ Grilled Cheese Sandwich.

Today’s Menu: Grilled Ham and Cheese w/ Baked Crinkle Fries

Started my day off with a couple of Jennie- O Turkey Breakfast Sausage Links, an Egg Beater’s Egg White Scrambled Egg (topped with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese), and a Healthy Life Whole Grain English Muffin. Also my morning cup of Bigelow Decaf Green Tea. A very good start to the day! We have another gloomy and rainy day out there again, in the 50’s though. Rain outside and it was clean the house today on the inside. Dusted, vacuumed, and cleaned the oven today, For dinner tonight, broke out the comfort food to drive those rainy day blues away! I prepared a Grilled Ham and Cheese w/ Baked Crinkle Fries.

I used Boar’s Head Maple Glazed Honey Coat Ham, Kraft Sharp Cheddar Cheese, and Aunt Millie’s Whole Grain Bread. I had purchased the Boar’s Head Maple Glazed Honey Coat Ham at Kroger, on sale the other day. I love all the Boar’s Head Meats and Cheese. Always fresh and lower in calories and sodium. To make the sandwich I buttered one side of both slices of bread with I Can’t Believe It’s Not Butter and then on the unbuttered sides layered the Ham and then the Cheese. I then grilled the sandwich in a preheated pan that I had sprayed with Pam Cooking Spray. Grilling both sides until golden brown. I love a Grilled Cheese Sandwich, but the Ham makes it even better! A Classic Comfort Food Sandwich on rainy and dreary day.

For a side I baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. Also had a Diet Peach Snapple to drink. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Today’s Menu: Cubed Steak Sandwich w/ Baked Fries

 

 

 
Not a bad day out today. Still windy but sunny and in the 50’s though. Maybe more snow coming tomorrow. I actually got my first full night of sleep for the first time in quite a while. Feeling a lot better today, glad the sinus infection ran its course! Went to the store for Mom and picked up a few things for her. For dinner tonight its a Cubed Steak Sandwich w/ Baked Fries.

I used the Meijer Cubed Steak. The best Cubed Steak I have ever found or had. I purchased some earlier last year and been buying them ever since! It’s about the only Beef I ever have, normally it’s Buffalo, Fish, Chicken, or Pork. They’re good size patties so I was able to cut them in half and get 2 meals out 1 pattie. To prepare them I seasoned them with Sea Salt and Ground Black Pepper and I then rolled them in flour that I had mixed with a bit of Hungarian Paprika. Shook off the excess flour and pan fried them in Canola Oil, about 4 minutes per side. They came out delicious! Excellent flavor and very tender, especially for Cubed Steak which sometimes can be somewhat tough and stringy. Served it on a Aunt Millie’s Reduced Calorie Hamburger Bun and topped it with some Sauteed Mushrooms.

 

 

 

 

I also baked a serving of the Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Then for dessert later, while curled up in my favorite chair watching the classic movie “The Natural”, a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Today’s Menu: Turkey Meatloaf Sandwich w/ Mashed Potatoes

Spent one long night last night fighting those Phantom Pains again! Didn’t get a full nights sleep and it bothered me through out the night. It did finally let it up around 6:00 this morning. So after a night of that I was starving this morning! I usually eat a light Breakfast but being as hungry as I was I had a Breakfast with a lot more calories and carbs than I normally have, but it was one delicious Breakfast! I made a Turkey Goetta and Hash Brown Hash topped with a Sunny Side Up Egg along with Wheat Toast and a Bigelow Decaf Green Tea. After Breakfast I had to take my car back up to finish some minor repairs and caught up on some laundry. For dinner it was all leftovers! I had yesterday’s Turkey Meatloaf on a Bun and a side of Mashed Potatoes.

 

 

 

I love this Turkey Meatloaf, I need to make it a lot more often. I use Jennie – O Extra Lean Ground Turkey Breast always when I make it. To make my Sauce topping I need Ketchup, Worcestershire Sauce, and Heinz 57 Sauce. For the Meatloaf you just combine your spices, (Roasted Ground Cumin, Onion Powder, Parsley, Ground Thyme, Sea Salt, Pepper) melted Butter, and Minced Garlic with the Ground Turkey, Ketchup, and Bread Crumbs. Put equal amounts in your pans or pan and bake at 350 degrees for 50 – 55 minutes. And as all recipes you can add your own Choice of ingredients. I left the full recipe at the end of the post. So I warmed up a couple of slices of the Meatloaf and topped it with a bit more of the Meatloaf Sauce and served it on an Aunt Millie’s Reduced Calorie Whole Grain Sandwich Bun.

 

 

 
For a side I heated up the leftover Bob Evan’s Mashed Potatoes. then for dessert later tonight a Del Monte No Suagar Added Mango Chunk Cup.

 

 

 
Turkey MeatloafTurkey Meatloaf Mashed Potatoes corn 001

Ingredients

2 Tablespoons Blue Bonnet Light Stick Butter
3 Cloves Garlic, Minced
1 lb Jennie O Extra Lean Ground Turkey Breast
1 Slice of uncooked Oscar Mayer Low Sodium Turkey Bacon
1/2 Cup Progesso Italian Style Breadcrumbs
1/4 Cup Egg Substitute (Egg Beaters)
1 1/4 Cups Hunt’s Catsup
4 Tablespoons Worcestershire Sauce
3 Tablespoons Heinz 57 Sauce
2 Teaspoons Smoked Cumin
2 Teaspoons Onion Powder
2 Teaspoons Ground Thyme
2 Teaspoons Parsley
3/4 Teaspoon Sea Salt
1/2 Teaspoon Black Pepper

Directions

1. Melt butter in a skillet.
2. Add the Garlic in melted butter for 5 minutes, stirring occasionally.
3. Place mixture in a large bowl to cool for 5 minutes.
4. Combine turkey, bread crumbs, egg, 1/4 cup of the catsup, 1 table spoon Worcestershire sauce, spices, and garlic mixture.
5. Press meatloaf into a loaf pan. Place the one slice of Turkey Bacon across the top of the meatloaf.
6. Take the remaining catsup and add 3 Tablespoons Worcestershire Sauce and
3 Tablespoons Heinz 57 Sauce, and stir to well mixed. Add as a topping for the meatloaf. Baste the meatloaf with half of mixture and baste it again after 30 minutes of baking.
7. Bake in a 350 degree oven for 50-55 minutes.
8. (Internal temperature should reach 165 degrees.) Remove from oven and let stand 5 minutes before serving.

Today’s Menu: Baked Buffalo Chicken Breast Sandwich w/ Baked Potato

 

 
It’s been a cloudy and rainy day today but at least it’s warm out! For dinner I prepared one of my favorite Chicken dishes; Baked Buffalo Chicken Breast Sandwich w/ Baked Potato. I love finishing the Chicken off in the oven and the flavor and heat of the Kroger Wing Sauce along with the Litehouse Light Bleu Cheese Dressing. If you want about 5 minutes before your Chicken is done you can add a slice of Swiss or Provolone Cheese to it and let it melt over the Chicken Breast.

 

To prepare my Chicken I needed 3 (4 ounce) Boneless Skinless Chicken Breasts, 6 Tablespoons favorite Wing Sauce (I used Kroger WingBaked Buffalo Chicken 003 Sauce), and 1/2 Cup Litehouse Lite Bleu Cheese Dressing/Dip, and Aunt Millie’s Light Whole Grain Buns . To start I Preheated the oven to 400°F. Then Sprayed large non-stick skillet and 8×8″ baking dish with Pam cooking spray. Added the chicken to skillet & cooked 4-5 minutes each side until browned. Placed the chicken in dish and poured Wing Sauce over chicken and baked (uncovered) 20 minutes. I served it on an Aunt Millie’s Light Whole Grain Bun and topped it with some Litehouse Light Bleu Cheese Dressing. I made 3 Chicken Breasts 2 for dinner for myself and Mom and 1 for lunch tomorrow.

 

To go with the Baked Buffalo Chicken Breasts I had a Baked Potato seasoned with Sea Salt and Ground Black Pepper and topped with I Can’t Believe It’s Not Butter and a dab of Daisy Reduced Fat Sour Cream. For dessert/snack later some slices of Kraft 2% Sharp Cheddar along with Ritz Whole Grain Crackers.

 

 

 

Baked Buffalo Chicken Breasts

Ingredients
3 (4 ounce) Boneless Skinless Chicken Breasts
Sea Salt and Black Pepper, to taste
4 Tablespoons favorite Wing Sauce (I used Kroger Wing Sauce)
Swiss or provolone Cheese (Optional)
1/2 Cup Lighthouse Lite Bleu Cheese Dressing/Dip
Aunt Millie’s Light Whole Grain Buns
Directions
* Preheat oven to 400°F.
* Spray large non-stick skillet and 8×8″ baking dish with cooking spray.
*Season Chicken and add chicken to skillet & cook 4-5 minutes each side until browned. Place chicken in dish and…
