Today’s Menu: Hickory Smoked Ham and Swiss Sandwich

 

Just a cup of Bigelow Decaf Green Tea to start my morning off. 89 degrees, humid, and mostly sunny outside. Not a comfortable day out. But I was in all day. I had those Phantom Pains hit me about 1:00 last night and they didn’t stop till about 11:00 this morning. So I spent the day catching up with some sleep and relaxing. For Dinner tonight I had a Hickory Smoked Ham and Swiss Sandwich.

 

I had bought the Kentucky Legend Brown Sugar Hickory Smoked Quarter Ham at Meijer. I’ve baked a few of these now and really enjoy them.

 

To prepare it; Preheat the oven to 350 degrees Fahrenheit. Remove the Kentucky Legend Ham from the packaging and place it in a baking dish that’s at least 2 inches deep. Add enough water to just cover the bottom of the pan. Cover the baking dish with aluminum foil. Crimp the edges of the foil tightly over the pan edges to prevent steam from escaping. Place the baking dish into the oven and heat the Ham until a meat thermometer shows an internal temperature of at least 140 degrees Fahrenheit. The amount of time this takes depends on the size and shape of the ham. Mine took 80 minutes. When the Ham is heated through, remove the baking pan from the oven. Leave the foil on the pan for 15 minutes to rest the meat before removing it and carving.

 

I’m using Aunt Millie’s Live Carb Smart Wheat Bread and I’ll need Emeril’s New York Deli Style Mustard, Boar’s Head Imported Switzerland Swiss Cheese. I assembled my Sandwich, Ham, French’s Spicy Brown Mustard, served on Aunt Millie’s Light Whole Grain Bread. What a Sandwich! The Ham is delicious and moist. Excellent Ham Sandwich! Love them leftovers! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

Today’s Menu: Hickory Smoked Ham and Swiss Sandwich

 

Just a cup of Bigelow Decaf Green Tea to start my morning off. Heavy rain overnight with light rain in the morning. 77 degrees with passing rain showers for the day. After my Tea I went to Kroger. On my way there all the gas stations were at $5.09 a gallon for gas!! I go to Kroger to save gas because it’s only 3 miles from the house. Then you go to the store and you are being charged 25% or more higher prices for your groceries! I hope the Whitehouse is proud of what they are doing to our Country! I’ll stop at that. On the way back I stopped and topped off the gas. Just over 1/4 of tank, $25..00! I’m going home and staying at home. Take Care and Stay Safe All! For Dinner tonight I had a Leftover Hickory Smoked Ham and Swiss Sandwich.

Just a cup of Bigelow Decaf Green Tea to start my morning off. It’s another cold and windy day out. We had a high of 44 degrees but the wind chill was in the low 30’s. Come on Springtime! Well Mom is at 100% again! I hate when she’s sick, I’d rather deal with the flu than her. Not a lot to do, I was caught up on everything so I caught up on some shows I had recorded. For Dinner tonight I had a Leftover Hickory Smoked Ham and Swiss Sandwich.

 

 

I had bought the Kentucky Legend Brown Sugar Hickory Smoked Quarter Ham at Meijer. I’ve baked a few of these now and really enjoy them.

Today’s Menu: Baked Brown Sugar Hickory Smoked Ham w/ Green Beans, Mashed Potatoes and Deviled Eggs

 

First, Happy Easter to all of you! Well Mom has the Flu that’s going around. So I took good care of her today. Early this morning I went to the local Kroger and bought a couple of Flu and Cough Medicines. She seemed to feel a little better since last night. I’ll get her back to full speed soon! Anyway for Easter Dinner tonight I prepared Baked Brown Sugar Hickory Smoked Ham w/ Green Beans, Mashed Potatoes and Deviled Eggs. Take Care and Stay Safe Everyone!

 

Last week While at Meijer I bought another of the Kentucky Legend Hickory Smoked Ham. It was a small 2 3/4 lb. Ham, and it looked delicious as always! I’ve baked a few of these now and really enjoy them.

And what a Ham! Moist and flavorful and so moist. We love these small Hams of Kentucky Legend Brown Sugar Hickory Smoked Quarter Ham.

 

 

For one side I prepared a can of Del Monte Cut Green Beans. So I opened up a can of Del Monte Cut Green Beans in Sea Salt. Just emptied the can into a small saucepan and heated to a boil and then reduce the heat to a simmer, heat until heated through. Love those Green Beans!

 

For another side I heated some Bob Evan’s Mashed Potatoes. Just microwave for 6 total minutes and serve, just as good as homemade, if not better. I could make a meal out of just Mashed Potatoes.

 

 

 

 

 

I also prepared some Deviled Eggs. I prepared them like Mom does and they turned out delicious! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

I had to take Mom for her 2nd Radiation Treatment. Where we go the Staff and Doctor are so nice and helpful! Mom didn’t have any side effects. They said there would be little to none because the dosage is so low, which is good. 18 Treatments to go! Back home I did a few things around the house. Then for Dinner tonight I had a Hickory Smoked Ham and Swiss Sandwich.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. High of 60 degrees and mostly sunny outside today. After my Tea I went to Wendy’s and picked up Breakfast for Mom. We had to drop Mom’s car off to change the radiator fluid and she got 4 new tires put on. For Dinner tonight I had another Hickory Smoked Ham and Swiss Sandwich. I love Baked Ham! I’ve left the post from last night below for Ingredients and Description. Take Care All!

Today’s Menu: Hickory Smoked Ham and Swiss Sandwich

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. High of 84 degrees, partly cloudy and a bit humid outside today. After my Tea I went to Wendy’s and picked up Breakfast for Mom. I dropped Breakfast off to Mom and I took her car to the shop and had her Oil Changed. Back home I did a few chores around the house. For Dinner tonight I had a Hickory Smoked Ham and Swiss Sandwich with a small Side Salad.

 

The other day at Meijer I bought a Kentucky Legend Hickory Smoked Ham. It was a small 4 1/4 lb. Ham, and it looked delicious as always! I’ve baked a couple of these now and really enjoy them. I had Cooked half of it last week and I’m having the other half for Dinner tonight.

 

To prepare it; Preheat the oven to 350 degrees Fahrenheit. Remove the Kentucky Legend ham from the packaging and place it in a baking dish that’s at least 2 inches deep. Add enough water to just cover the bottom of the pan. Cover the baking dish with aluminum foil. Crimp the edges of the foil tightly over the pan edges to prevent steam from escaping. Place the baking dish into the oven and heat the ham until a meat thermometer shows an internal temperature of at least 140 degrees Fahrenheit. The amount of time this takes depends on the size and shape of the ham. Mine took 80 minutes. When the Ham is heated through, remove the baking pan from the oven. Leave the foil on the pan for 15 minutes to rest the meat before removing it and carving.

 

I then began slicing it, I sliced it somewhat thin. I’m using Aunt Millie’s Live Carb Smart Wheat Bread and I’ll need Woeber’s Horseradish Mustard, Boar’s Head Imported Switzerland Swiss Cheese. I assembled my Sandwich, Ham, French’s Spicy Brown Mustard, served on Aunt Millie’s Light Whole Grain Bread. What a Sandwich! The Ham is delicious and moist. Excellent Ham Sandwich! We had plenty of leftovers. I also had a Side Salad. For Dessert later a Jello Sugar Free Dark Cherry Jello.

High of 64 degrees, light rain on and off, and mostly cloudy out today. Not a lot to do, which was good. I had a real bad Sinus Headache all afternoon. So I just took it easy. For Dinner tonight I had another of those delicious Ham Sandwiches. I prepared a Hickory Smoked Ham and Swiss Cheese along with a Side Salad. I’ve left the original post from last night for ingredients and directions. Take Care and Stay Safe Everyone!

For Breakfast this morning I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had my morning cup of Bigelow Decaf Green Tea. 80 degrees and mostly cloudy outside today. The leaves around here are stating to turn those Autumn Colors and many are falling already. I got the cart and yard tools out after Lunch and did some raking and yard work. I love being outside! For Dinner tonight I prepared a Hickory Smoked Ham and Swiss Cheese.
