Today’s Menu: Chicken Sausage Breakfast Sandwich w/ Hash Browns

 

 

For Breakfast this morning I fried up a couple of the new Johnsonville Turkey Breakfast Sausage Links, prepared an Egg Sunny Side Up, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Another hot one out there today, 94 degrees and humid. After Breakfast I got the 4 wheel cart out of the shed and got some yard work done before the heat got bad. After Lunch I went to see a friend of mine. He was recently diagnosed with Liver Cancer and I took him for his treatment. After everything I went through with my fight with Melanoma Cancer it really bothers me watching a friend go through it because I know what a toll it can take on you and your family. Hopefully a Cure for Cancer one day! For Dinner tonight its a Chicken Sausage Breakfast Sandwich w/ Hash Browns.

 

 

It has been a while since I’ve had Breakfast for Dinner so it sounded perfect for Dinner tonight! I prepared a Thomas Light 100% Multigrain English Muffin and lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty. I topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Along with Simply Potatoes Shredded Hash Browns.

 

 

 

 

 

 

To prepare the Chicken Sausage Patty; The Patties are fully cooked so all you have to do is reheat them. I used a small skillet, sprayed it with Pam Non Stick Cooking Spray, and heated it on medium heat. Added the Patty to the heated skillet and cooked it for 6 minutes a side. Easy to prepare and delicious! These have such a good taste to them. They’re seasoned with Sage and Thyme. They also have some that are Maple Flavored but these are my favorites!

 

 

 

 

 

 

As the Sausage was cooking I toasted the Thomas Light English Muffin. I love using these, for Breakfast Sandwiches, Muffin Pizzas, and much more! They’re 100 calories and 16 net carbs per Muffin. I served the Chicken Sausage Patty on the Muffin and topped it with a 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese.

 

 

 

 

 

 

To go with my Dinner/Breakfast Sandwich I prepared some Simply Potatoes Shredded Hash Browns. To prepare these I took a small skillet, sprayed it with Pam Cooking Spray, added a tablespoon of Extra Light Olive Oil, and heated the skillet. Add potatoes to skillet; Cook 6-7 minutes, or until golden brown on the bottom. Drizzle with an additional 1/4 tbsp Extra Light Olive Oil. Turn potatoes over with a spatula. Continue to cook 6-8 minutes, and done! I sprinkled some Sargeto Reduced Fat Shredded Sharp Cheese over top of them and served. Really enjoy these Breakfast/Dinners! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango/Tea Snapple to drink.

Today’s Menu: Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

 

 


Just a cup of Bigelow Decaf Green Tea for Breakfast. Allergies and Sinuses bothered me all night. Both let up as the morning went on. Had to break out my cart, leaf blower and rake out. It’s amazing the leaves that keep falling around here! I swear I think most of them blow into our yard! So I raked the yard and cleaned off the deck and driveway areas. Filled up a large Hefty Yard Bag with the leaves. I’m tired! Its no fun and double the work raking the yard and picking up leaves from a wheel chair or mobility cart. But I’m thankful that I have the tools so I can get things done around the house. For Dinner tonight I prepared some Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers.

 

 

 


So I wanted something easy to prepare after working out in the yard but I still wanted a hot good meal. So since I’m always in the mood for some Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers that’s what we had tonight. Nothing says comfort food more than a Skyline 3 Way! As always I used my favorite, the Skyline 3 Way – Chili, Spaghetti. It comes packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those that want a few lower calories and carbs than the normal size. It comes with Spaghetti topped with Skyline Chili. To prepare it, it couldn’t be easier!

 

 

 


It now comes in a microwavable pouch instead of microwavable bowl. Easily prepared – Just shake the pouch. Then tear the corner off to vent while cooking. Place the pouch standing upright in the microwave. Then microwave on high for 2 1/2 minutes. Let stand for 1 minute and it’s ready! And I needed this. I had not had this in a while and it really hit the spot!

 

 

 

 

 


Poured the Chili into a bowl, added a couple of shakes of Frank’s Hot Sauce, topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I also had a side of Skyline Oyster Crackers. And if you’re having Oyster Crackers, then Frank’s Red Hot Sauce is a must! Just add a few drops on top of the Crackers, it’s the local way to have your Oyster Crackers. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Sprite Zero to drink.

For Breakfast this morning I toasted a Thomas Light 100 Calorie Multi Grain English Muffin and topped it with a Poached Egg. Also had my morning cup of Bigelow Decaf Green Tea. Partly cloudy, 93 degrees, and humid out there today. Went to McDonald’s to pick up Breakfast for Mom. Did a load of laundry. Cleaned up and swept the shed. Then got the leaf blower out and cleaned off the deck and driveway areas. Later got the rake out and raked the front yard. There’s about 7 trees that shed the leaves this time of year and they all seem to settle in our yard! It just doesn’t seem right to have to rake leaves in Summer! For Dinner tonight I prepared some Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers.

 

 

 


I have to fast after midnight tonight, Doctor’s appointment at 7:45 in the morning. So I wanted something easy to prepare but I still wanted a hot good meal. Today’s Menu: Chicken Sausage Breakfast Sandwich w/ Hash Browns

 

 

For Breakfast this morning I heated up the leftover Buffalo Gal Tenderloin, Scrambled an Egg, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. I got some sleep early but around 4:00 this morning I started having the Phantom Pains. It wasn’t a bad case, it let up around 10:00 this morning. Left me very tired though. Cloudy and 35 degrees out, good day to stay in and get caught up on sleep. For Dinner tonight its a Chicken Sausage Breakfast Sandwich w/ Hash Browns.

 

 

 

 

I wanted a hot meal but one easy to prepare. So I I made a little Breakfast. I prepared a Thomas Light 100% Multigrain English Muffin and lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty. I topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Along with Simply Potatoes Shredded Hash Browns.

Also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I had to follow Mom and she dropped her car off to finish up some work. They had to order parts and they came in yesterday. Afterward we delivered some Gifts and Candy to some relatives and friends. Then by the Oncologist and dropped off candy to the staff and some Packaged snacks to the Cancer Treatment Center there in the building. Next we stopped at McDonald’s and Mom got a late Breakfast. For Dinner tonight I prepared some Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers.

Today’s Menu: Egg Sandwich and Hash Brown

 

 

To start my morning off I had a cup of Bigelow Decaf Green Tea, just hungry this morning. Had just a trace of frost this morning. I wish we would get a freeze so it would kill off some of ragweed, it would be a lot better for my allergies! Sunny and 53 degrees out today. After Breakfast I went up the road to the nearby Kroger for a few items and my regular stop at McDonald’s to pick up Breakfast for Mom. Spent most of the day in the Kitchen. Baked some Pillsbury Halloween Cookies for all my cousins little ones. I also got their Halloween Bags ready for them. Then both Mom and me had been wanting some Pig in the Blankets so I picked up the ingredients for them. They are great to snack on!. I used Turkey Sausages and a can of Pillsbury Reduced Calorie Crescent Rolls to make them. So for Dinner tonight it’s an Egg Sandwich and Hash Browns.

 

I love Egg Sandwiches! hadn’t made for quite a while. And made a couple a while back and been having them more often. To make it all I’ll need is 2 Eggs, Salt and Pepper, a slice of Kraft Sharp Cheddar, a bit of Blue Bonnet Light Butter, and 2 slices of Aunt Millie’s Light Whole Grain Bread. Just get a mixing cup or coffee cup and crack open both Eggs into it. Season it with the Salt and Pepper and whisk it all together.

 

 

 

 


Heat a small skillet on medium heat, I sprayed it with Pam Cooking Spray. I added the Butter, and when heated added the Egg Mixture. Fry it till the bottom browns and flip it. I then added my slice of Cheese on top of it. Cook until dome, and it’s ready! You can toast the Bread if you like, I didn’t toast mine.

 

 

 

 


To go with my Egg Sandwich I prepared some Simply Potatoes Shredded Hash Browns, which I love having anytime. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Diet Peach Snapple to drink.

Today’s Menu: Chicken Sausage Breakfast Sandwich w/ Hash Browns

 

 

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. It was one of those long nights dealing with Phantom Pains. They started last night around 10:00 and didn’t finally let up till around 9:00 this morning. I had to be up early anyway I had to have Mom to the Eye Doctor for a follow up on her cataracts removal. She’s already seeing better and the Doc said everything looked fine! The heat wave has started back up! 92 degrees and humid, the heat index is around 101 degrees! I was going to start the touch-up painting on the shed and shutters but just too tired to do it today. Spent the the day catching up on some sleep. For Dinner tonight its a Chicken Sausage Breakfast Sandwich w/ Hash Browns.

 

It’s my 3rd day of Breakfast for Dinner Meals. I made a Breakfast Sandwich using; a toasted Healthy Life Whole Grain English Muffin and lightly fried a al fresco Country Style Chicken Sausage Breakfast Patty. I topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese.

 

 

 

 

 

To prepare the Chicken Sausage Patty; The Patties are fully cooked so all you have to do is reheat them. I used a small skillet, sprayed it with Pam Non Stick Cooking Spray, and heated it on medium heat. Added the Patty to the heated skillet and cooked it for 6 minutes a side. Easy to prepare and delicious! These have such a good taste to them. They’re seasoned with Sage and Thyme. They also have some that are Maple Flavored but these are my favorites!

 

 

 

As the Sausage was cooking I toasted a Healthy Life Whole Grain English Muffin. I love using these by their self, Breakfast Sandwiches, Muffin Pizzas, and much more! They’re 100 calories and 16 net carbs per Muffin. I served the Chicken Sausage Patty on the Muffin and topped it with a 1/2 slice of Cheese.

 

 

 

 

To go with my Dinner/Breakfast Sandwich I prepared some Simply Potatoes Shredded Hash Browns. To prepare these I took a small skillet, sprayed it with Pam Cooking Spray, added a tablespoon of Extra Light Olive Oil, and heated the skillet. Add potatoes to skillet; Cook 6-7 minutes, or until golden brown on the bottom. Drizzle with an additional 1/4 tbsp Extra Light Olive Oil. Turn potatoes over with a spatula. Continue to cook 6-8 minutes, and done! I sprinkled some Sargeto Reduced Fat Shredded Sharp Cheese over top of them to serve. Really enjoy these Breakfast/Dinners! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

 

 

To start my day off I Scrambled a couple of Eggs, topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese, toasted a Healthy Life Whole Grain English Muffin, and had my morning cup of Decaf Green Tea. Beautiful outside, sunny and 801 degrees but very windy. Long day today. I had to take Mom to 3 different places to get needed paper work for my Dad’s Medicaid started. It’s a lot of work to get it approved. Then about 1:00 this afternoon the center where Dad is at called and asked if we could come over. He was yelling and ranting out of control. We finally got him settled down. Really didn’t feel like cooking after all that so I prepared some Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers.

 

I wanted a hot good meal without a lot of effort, plus I’m always in the mood for some Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers. Nothing says comfort food more than a Skyline 3 Way! As always I used my favorite, the Skyline 3 Way – Chili, Spaghetti. It comes packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with Skyline Chili. To prepare it, it couldn’t be easier!

 

 

It now comes in a microwavable pouch instead of microwavable bowl. Easily prepared – Just shake the pouch. Then tear the corner off to vent while cooking. Place the pouch standing upright in the microwave. Then microwave on high for 2 1/2 minutes. Let stand for 1 minute and it’s ready!

 

 

 

 

Poured the Chili into a bowl, added a couple of shakes of Fran’s Hot Sauce, topped it with Sargento Reduced Fa Shredded Sharp Cheddar Cheese. I also had a side of Skyline Oyster Crackers. And if you’re having Oyster Crackers, then Frank’s Red Hot Sauce is a must! Just add a few drops on top of the Crackers, it’s the local way to have your Oyster Crackers. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.
