Today’s Menu: Hickory Smoked Ham and Swiss Sandwich

 

Just a cup of Bigelow Decaf Green Tea to start my morning off. 89 degrees, humid, and mostly sunny outside. Not a comfortable day out. But I was in all day. I had those Phantom Pains hit me about 1:00 last night and they didn’t stop till about 11:00 this morning. So I spent the day catching up with some sleep and relaxing. For Dinner tonight I had a Hickory Smoked Ham and Swiss Sandwich.

 

I had bought the Kentucky Legend Brown Sugar Hickory Smoked Quarter Ham at Meijer. I’ve baked a few of these now and really enjoy them.

 

To prepare it; Preheat the oven to 350 degrees Fahrenheit. Remove the Kentucky Legend Ham from the packaging and place it in a baking dish that’s at least 2 inches deep. Add enough water to just cover the bottom of the pan. Cover the baking dish with aluminum foil. Crimp the edges of the foil tightly over the pan edges to prevent steam from escaping. Place the baking dish into the oven and heat the Ham until a meat thermometer shows an internal temperature of at least 140 degrees Fahrenheit. The amount of time this takes depends on the size and shape of the ham. Mine took 80 minutes. When the Ham is heated through, remove the baking pan from the oven. Leave the foil on the pan for 15 minutes to rest the meat before removing it and carving.

 

I’m using Aunt Millie’s Live Carb Smart Wheat Bread and I’ll need Emeril’s New York Deli Style Mustard, Boar’s Head Imported Switzerland Swiss Cheese. I assembled my Sandwich, Ham, French’s Spicy Brown Mustard, served on Aunt Millie’s Light Whole Grain Bread. What a Sandwich! The Ham is delicious and moist. Excellent Ham Sandwich! Love them leftovers! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

Just a cup of Bigelow Decaf Green Tea to start my morning off. Heavy rain overnight with light rain in the morning. 77 degrees with passing rain showers for the day. After my Tea I went to Kroger. On my way there all the gas stations were at $5.09 a gallon for gas!! I go to Kroger to save gas because it’s only 3 miles from the house. Then you go to the store and you are being charged 25% or more higher prices for your groceries! I hope the Whitehouse is proud of what they are doing to our Country! I’ll stop at that. On the way back I stopped and topped off the gas. Just over 1/4 of tank, $25..00! I’m going home and staying at home. Take Care and Stay Safe All! For Dinner tonight I had a Leftover Hickory Smoked Ham and Swiss Sandwich.

Just a cup of Bigelow Decaf Green Tea to start my morning off. It’s another cold and windy day out. We had a high of 44 degrees but the wind chill was in the low 30’s. Come on Springtime! Well Mom is at 100% again! I hate when she’s sick, I’d rather deal with the flu than her. Not a lot to do, I was caught up on everything so I caught up on some shows I had recorded. For Dinner tonight I had a Leftover Hickory Smoked Ham and Swiss Sandwich.

Today’s Menu: Roast Beef and Longhorn Colby Sandwich w/ Olives and Marinated Mushrooms

 

I had a cup of Bigelow Decaf Green Tea for Breakfast. 53 degrees, windy, and mostly cloudy out today. After my Tea I went to Kroger for a few items. Then on the way back home I stopped at Wendy’s and picked up Breakfast for Mom. Back home I cleaned off the Deck and Driveway, a lot of limbs and leaves from the winds overnight. I took it easy after that I had a bad Sinus Headache. For Dinner tonight I prepared a Roast Beef and Longhorn Colby Sandwich w/ Olives and Marinated Mushrooms.

 

For my Sandwich I used Boar’s Head London Broil Cap-Off Top Round Oven Roast Beef from Kroger. As usual it’s some Rare to Medium Rare Roast Beef. I’ll also be using a slice of Boar’s Head Longhorn Colby Cheese, love this Cheese! I topped those with some Emeril New York Deli Style Mustard. I served on a couple of slices of Aunt Millie’s Live Carb Smart 5 Seed Bread.

 

 

 

 

 

For a couple of sides I had some Murray’s Marinated Feta and Greek Olives, along with some Murray’s Mushrooms Marinated with Garlic and Herbs. Kroger has a great selection of Murray’s Cheese along with Marinated Olives and Marinated Peppers. A real easy Dinner to prepare along with being very good! For Dessert later a Jello Sugar Free Dark Chocolate Pudding Cup. Take Care and Stay Safe Everyone!

Today’s Menu: Flame Grilled Original Bratwurst w/ Green Onion Potato Chips

 

 

To start my morning off I made a Fried Egg Sunnyside Up, 3 Bacon Strips, heated up the leftover Potato Pancakes and had a cup of Bigelow Decaf Green Tea. I was very hungry this morning! 89 degrees mostly sunny and humid out today. I took an elderly neighbor to a local Meijer to get her 2nd COVID Shot. Back home I took Mom’s Car to the Car Wash and vacuumed it out. Cleaned up around the house. A little too humid to do a lot outside. Not complaining though, beats cold and snow! For Dinner tonight  Flame Grilled Original Bratwurst w/ Green Onion Potato Chips.

 

I came across the Johnsonville Flame Grilled Original Bratwurst at Meijer on my last visit. I also bought a package of Johnsonville Flame Grilled Italian Sausages. I’ve been looking for different items to have for Dinner. Coming up with different things for Dinner is a problem everyone seems to be having of late. So I thought I would give these a try. They come fresh in a package, 8 to a package. They are Pre-Grilled so all you have to do is heat them up. I pan heated mine.

 

To prepare them I started by spraying a skillet with Pam Cooking Spray. Added the Sausage. Cook over medium heat until browned, about 5 minutes, turning links often. I then reduced the heat to medium-low and added 3 tablespoons of water to the skillet. Cover and steam for 5 minutes until heated through. For additional browning you can remove the cover and allow any remaining water to boil off. Then continue heating the links, turning frequently, until desired color is achieved. Done!

 

This is one delicious Bratwurst from Johnsonville. Turned out plump and delicious. Served them on Aunt Millie’s Live Carb Smart Hot Dog Buns, only 2 net carbs per Bun! Topped them with Emeril’s New York Deli Style Mustard. For a side we had some Mike Sell’s Green Onion Potato Chips, love these! For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
