Tomato soup with basil

Tomato soup is a soup made with tomatoes as the primary ingredient. It may be served hot or cold in a bowl, and may be made in a variety of ways. It may be smooth in texture, and there are also recipes which include chunks of tomato, cream and chicken or vegetable stock. Popular toppings for tomato soup include sour cream or croutons. In the United States, the soup is frequently served with crackers, which may be crumbled onto the soup by the diner, and a grilled cheese sandwich. Tomato soup is one of the top comfort foods in Poland and the United States. It can be made fresh by blanching tomatoes, removing the skins, then blending them into a puree.

The first published tomato soup is mentioned by Eliza Leslie in 1857 in her final publication New Cookery Book. Joseph A. Campbell’s recipe for condensed tomato soup in 1897 further increased its popularity.

Commercially prepared tomato soup is available in a variety of forms, including canned, condensed and in dehydrated powder form. “Tomato” ranks among the top three flavors of soup produced by the Campbell Soup Company.

The main ingredients for tomato soup are tomato puree and wheat flour.

The cell wall structural importance for the plant’s growth and stability in the ripening process is equally as important to the quality of the tomato products it can produce. The pectin and cellulose are what determine the apparent viscosity of the tomato product. If they are broken at higher temperatures more enzymes are deactivated than if they are broken at lower temperatures.

High-fructose corn syrup is sometimes added to tomato soup to make it sweeter. HFCS is composed of both glucose and fructose in their free monosaccharide from that doesn’t crystallize readily. HFCS is also important in binding water, the monosaccharaides of fructose and glucose have the ability to bind to water in the product. The binding of water helps to reduce microbial growth by removing available water from the product it can also prevent the separation of water in products like sauces and soups.

Wheat flour is composed of six main groups, carbohydrates, proteins, enzymes, lipids, minerals and vitamins. Flour is added to tomato soup to increase its viscosity. The starch in the flour acts as a gelling agent and increases the viscosity of the product. When starch granules found in the flour are heated in solution they become less ordered and begin to gel. During this process of gelatinization the crystal like structures of the starch granules disappear and the swelling starts creating a viscoelastic product.

Gazpacho is a tomato soup of Spanish origin, served cold. It originates in the region of Andalucía in southern Spain. Gazpacho is widely consumed in Spanish cuisine, as well as in neighboring

Portugal, where it is known as gaspacho. Gazpacho is mostly consumed during the summer months, due to its refreshing qualities and cold serving temperature. Many variations of gazpacho exist.

Tomato soup is often paired with a grilled cheese sandwich, toast, crumpet or English muffin.

Today’s Menu: Creamy Tomato Soup w/ Grilled Cheese Sandwich

 

 

For Breakfast this morning I had a bowl of Cheerios. Had a cup of Bigelow Decaf Green Tea afterward.Outside it’s sort of windy, cloudy and a high of 44 degrees. Had another bout with Phantom Pains last night. They finally stopped around 4:00 this morning. So painful and it just drains me of any strength. So not a lot going on today. It’s a Comfort Food Sunday Dinner tonight, Creamy Tomato Soup w/ Grilled Cheese Sandwich.

 

 

 

 

Not feeling quite up to par so I wanted something light tonight so what better than Creamy Tomato Soup with a Grilled Cheese Sandwich. I heated up a can of Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using for quite some time now. So creamy with a fantastic flavor and it’s 110 calories and 19 carbs. Just empty the contents into a small sauce pan and heat on medium, stirring often, until heated. And it’s ready to go and so good!

 

 

 

 

Then for my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

SANTA FE CHICKEN
Ingredients

2 teaspoons chili powder
1 teaspoon ground cumin
1 tablespoon vegetable oil
6 skinless, boneless chicken breast halves (about 1-3/4 pounds)
1 teaspoon minced garlic
4 green onions, minced (about 1/2 cup)
1 can (10 3/4 ounces) Campbell’s Healthy Request Condensed Healthy Request Tomato Soup
1/2 cup Pace Picante Sauce
1/2 cup water
1 can (about 15 ounces) black beans, rinsed and drained
1 cup whole kernel corn
2 tablespoons chopped fresh cilantro leaves

Directions

1 – Stir the chili powder and cumin in a small bowl. Season the chicken with the chili powder mixture.
2 – Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 6 minutes or until browned on both sides. Add the garlic and onions and cook and stir for 1 minute.
3 – Stir in the soup, picante sauce and water and heat to a boil. Reduce the heat to medium-low. Add the beans and corn. Cover and cook for 15 minutes or until the chicken is cooked through. Sprinkle with the cilantro.

NOTES:
This Santa Fe Chicken is a flavorful one-skillet dish and it’s a snap to make. Serving size is 1 piece of chicken and 3/4 cup sauce.

Today’s Menu: Creamy Tomato Soup w/ Grilled Cheese Sandwich

 

 

For Breakfast this morning I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam and had a cup of Bigelow Decaf Green Tea. Mostly sunny and 62 degrees out, very windy also. After Breakfast I headed out to Walmart. Then stopped by McDonald’s and picked up Breakfast for Mom. Back home too windy to get any yard work done but with all this wind I’ll have a ton of leaves to rake tomorrow. Cleaned the house today. It’s a Comfort Food Dinner tonight, Creamy Tomato Soup w/ Grilled Cheese Sandwich.

Dinner tonight another one of those Comfort Foods Dinner, Creamy Tomato Soup w/ Grilled Cheese Sandwich.

Turkey Tortilla Stew
Turn lean ground turkey into a hearty and satisfying Southwestern stew with onion, garlic, tomatoes, pinto beans, corn, green chiles and crispy corn tortilla strips.

Recipe Ingredients:
1 1/2 pounds ground turkey
1 medium onion, finely chopped
2 garlic cloves, minced
2 teaspoons vegetable oil
2 1/2 cups water
1 (14.5-ounce) can diced tomatoes
1 (15-ounce) can pinto beans in chili sauce, undrained
1 (10.75-ounce) can condensed tomato soup
1 cup loose-pack frozen whole corn kernels
1/4 teaspoon ground black pepper
1 (4-ounce) can diced green chiles
12 (6-inch) corn tortillas, cut into 1/4-inch strips
2 tablespoons vegetable oil

Cooking Directions:
1 – In a large Dutch oven over medium-high heat sauté turkey, onion and garlic in oil for 5 minutes or until turkey is no longer pink. Add water, tomatoes, beans, soup, corn, chiles and black pepper. Heat until mixture is bubbly; reduce heat to low and simmer for 30 minutes.
2 – In a large skillet over medium-high heat, sauté tortilla strips in the 2 tablespoons oil for 30 seconds or until lightly browned and crisp. Drain on paper towels. Add tortilla strips to turkey stew just before serving to let them soften.

Today’s Menu: Creamy Tomato Soup w/ Grilled Cheese Sandwich

 

 

For Breakfast this morning I Scrambled a couple of Eggs and topped them with a sprinkle of Sargento Off the Block Cheddar Cheese and Ortega Smoked Chipotle Taco Sauce. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Cloudy and 47 degrees out on this St. Patrick’s Day Morning. After Breakfast I went and picked up Breakfast for Mom at McDonald’s and stopped and got gas for her car. Mom didn’t go to Church. She’s feeling a lot better today but still not up to par. I did a load of laundry and it was house cleaning today. Had everything done and watched College Basketball for the afternoon. Dinner tonight another one of those Comfort Foods Dinner, Creamy Tomato Soup w/ Grilled Cheese Sandwich.

SANTA FE CHICKEN
Ingredients

Heat the oil in a 12-inch skillet over medium-high heat. Add the chicken and cook for 6 minutes or until browned on both sides. Add the garlic and onions and cook and stir for 1 minute.
Stir in the soup, picante sauce and water and heat to a boil. Reduce the heat to medium-low. Add the beans and corn. Cover and cook for 15 minutes or until the chicken is cooked through. Sprinkle with the cilantro.

NOTES:
This Santa Fe Chicken is a flavorful one-skillet dish and it’s a snap to make. Serving size is 1 piece of chicken and 3/4 cup sauce.

Today’s Menu: Creamy Tomato Soup w/ Grilled Cheese Sandwich – (yesterday’s Dinner Post)

 

 

I forgot to post yesterday’s Dinner Post, so here it is a bit late! To start my day off I Scrambled an Egg, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. 46 degrees and mostly sunny out today. I got the leaf blower out and cleaned off the deck and driveway areas, lot of leaves again. Then back inside I cleaned the house today and then helped Mom out the rest of day with some Thanksgiving dishes. For Dinner tonight another one of those Comfort Foods Dinner, Creamy Tomato Soup w/ Grilled Cheese Sandwich.

 

 

 

 

 

For my Soup I heated up a can of Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using for quite some time now. So creamy with a fantastic flavor and it’s 110 calories and 19 carbs. Just empty the contents into a small sauce pan and heat on medium, stirring often, until heated. And it’s ready to go!

 

 

 

 

 

 

Then for my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.
