Today’s Menu: Hickory Smoked Ham and Swiss Sandwich

 

 

For Breakfast this morning I tried something new, a Pillsbury Toaster Scramble – Sausage, Cheese, Egg, and Potatoes. It all comes in a Pastry Crust. First you microwave on high for 15 seconds then put in the toaster for 2 cycles or until hot. It tasted great and its only 180 calories and 18 net carbs per serving. Something to add for variety at Breakfast! Also had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to Walmart for a few items and stopped by McDonald’s and picked up Breakfast for Mom. Sunny and 66 degrees, still windy out today. I would like to get some yard work done but with the wind its useless! Did a few chores around the house. For Dinner tonight I prepared a Hickory Smoked Ham and Swiss Cheese.

 

 

The other day at Walmart I bought a Kentucky Legend Hickory Smoked Ham, along with our Turkey for Thanksgiving. It was a small 4 lb. Ham, and it looked delicious as always! I’ve baked a couple of these now and really enjoy them. Having it for Dinner tonight!

 

 

 

 

 

 

To prepare it; Preheat oven to 350 degrees Fahrenheit. Remove the Kentucky Legend ham from the packaging and place it in a baking dish that’s at least 2 inches deep. Add enough water to just cover the bottom of the pan. Cover the baking dish with aluminum foil. Crimp the edges of the foil tightly over the pan edges to prevent steam from escaping. Place the baking dish into the oven and heat the ham until a meat thermometer shows an internal temperature of at least 140 degrees Fahrenheit. The amount of time this takes depends on the size and shape of the ham. Mine took 80 minutes. When the Ham is heated through, remove the baking pan from the oven. Leave the foil on the pan for 15 minutes to rest the meat before removing it and carving.

 

 

 

I then began slicing it, I sliced it somewhat thin. I’m using Aunt Millie’s Light Whole Grain Bread and I’ll need Woeber’s Horseradish Mustard, Boar’s Head Imported Switzerland Swiss Cheese. I assembled my Sandwich, Ham, French’s Spicy Brown Mustard, served on Aunt Millie’s Light Whole Grain Bread. What a Sandwich! The Ham is delicious and moist. Excellent Ham Sandwich! We have plenty of leftovers for some great sandwiches for Breakfast or Lunch.

 

 

 

 

Mom wanted some Ore Ida Tater Tots to go with her Sandwich. So I baked some Ore Ida Tater Tots. Just baked at 425 degrees for about 20 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Peach Snapple to drink.

Today’s Menu: Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip

 

 

 

To start my morning off I prepared a Poached Egg, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and made that morning cup of Bigelow Decaf Green Tea. After Breakfast I headed up to McDonald’s and picked up Breakfast for Mom. Outside it’s partly cloudy with passing showers, 75 degrees. But the pollen and mold count is sky high! My allergies kicked in this morning when I went out to grab the morning newspapers. I started sneezing all day and a headache. Stayed in all day and dealt with that. My allergies have never been this bad! For Dinner tonight I prepared a Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip.

 

 

 

 

I love Pastrami Sandwiches so when I went to Kroger the other day I purchased some more of the Boar’s Head Cap-Off Top Round Pastrami and Boar’s Head Imported Switzerland Swiss Cheese. Besides the Pastrami and Swiss Cheese I’ll need; Aunt Millie’s Light Whole Grain Bread, French’s Spicy Brown Mustard, and Blue Bonnet Light Butter.

 

 

 

 

 

To prepare it I used my flat top griddle. I gave it a light spray of Pam Non Stick Cooking Spray and a 1/2 tablespoon of the Blue Bonnet Butter. Heated the griddle on medium heat. Next I got 2 slices of the Aunt Millie’s Bread and spread the Brown Mustard on the inside of 1 slice. Added a slice of the Swiss Cheese and then the Pastrami. Top with another slice of bread. Finally I spread the Blue Bonnet Butter on the outside of both slices of Bread.

 

 

 

 

 

With the griddle heated and ready I grilled my Sandwich. Grilled each side until The Bread is toasted and the Cheese melted. Grilled and Ready! The Sandwich was delicious. The Pastrami and Swiss was so good, with the Spicy Brown Mustard adding all kinds of flavor. Swiss Cheese provides such great flavor, especially when it starts to melt. So Good!

 

 

 

 

 

To go with the Sandwich I had some Mike Sells Reduced Fat Potato Chips. I don’t have Potato Chips that often but with any Sandwich they go great! I also had some Lay’s Ranch Chip Dip for my Chip Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Peach Diet Snapple to drink.

Dinner Tonight: Grilled Pastrami and Swiss Sandwich w/ Italian Pasta Salad

 

I just had a cup of Bigelow Decaf Green Tea for Breakfast. I didn’t want anything too heavy I had to be at the Hospital for a EMG/Nerve test at 8:30 this morning. They want to make sure my Diabetes 2 isn’t creating any nerve damage. I also had blood work done. Beautiful day out today, mostly sunny and 65 degrees. Got the cart out and did some yard work and later took a spin in the cart around the neighborhood. So good to be able to get out again without having to bundle up! For Dinner tonight its a Grilled Pastrami and Swiss Sandwich w/ Italian Pasta Salad.

 

 

 

 

 

To make my Grilled Pastrami and Swiss Sandwich I’ll be using; French’s Spicy Brown Mustard, Boar’s Head Top Round Pastrami, Boar’s Head Swiss Cheese, Blue Bonnet Light Butter, and Klosterman Rye Bread to make my Sandwich.

 

 

 

 

 

 

To prepare it I started by buttering the outside half of a slice of the Rye Bread. Next spread the Mayo on the bottom slice of Bread, next layered the Pastrami, spread the Brown Mustard, and added a slice of the Swiss. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a large skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Swiss Cheese melted. Love these Grilled Sandwiches!

 

 

 

 

 

To go with my Grilled Sandwich I had prepared some Italian Pasta Salad, made about noon today. A Light and tasty dish that includes Ronzoni Smart Taste Rotini Pasta, Black Olives, Green Olives, Kalamata Olives, Hormel Turkey Pepperoni, Anchovy Paste, Kraft Reduced Fat Grated Parmesan Cheese, Kraft Zesty Italian Fat Free Dressing, McCormick Grinder Italian Seasoning, and topped with Kraft Reduced Fat Grated Parmesan Cheese. Boiled the Pasta according to the box and added all the ingredients and tossed until well mixed. Then refrigerated until ready to use. Really enjoyed the Dinner tonight of a Grilled Pastrami and Swiss Sandwich along with some Italian Pasta Salad. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Pulled Chicken Sandwich w/ Baked Fries

 

 

For Breakfast I had a Poached Egg and served it on a slice of toasted Aunt Millie’s Light Whole Grain Bread. I also had my morning cup of Bigelow Decaf Green Tea. Cloudy, passing light shower, and 44 degrees outside today. After Breakfast I did a load of laundry. Later after Lunch I went to Kroger to pick up a couple of things for tonight’s Dinner. Back home cleaned the Kitchen and the fridge. For Dinner tonight, Pulled Chicken Sandwich w/ Baked Fries

 

 

 

 

 

 

I picked a Kroger small Rotisserie Chicken at Kroger earlier. I pulled all the Meat of the Chicken to make the Sandwiches. The Kroger Rotisserie Chicken is about 1/2 the size of the Simple Truth Rotisserie Chickens, but just as good!

 

 

 

 

 

To make the Sandwiches I’ll need; 1 Kroger Rotisserie Chicken, Boar’s Head Swiss Cheese, Jack Daniel’s Hickory Barbecue Sauce, Butter Lettuce, Kroger Bakery White Slider Rolls.

 

 

 

 

 

 

After Pulling the Chicken Meat I seasoned it with just a bit of Morton’s Light Salt and Ground Black Pepper. I then heated it up in a skillet for about 4 minutes. Then to make the Sandwiches; I took a couple of the Slider Rolls and cut them in half. Next I took a leaf of the Lettuce and placed it on the bottom bun. Next a 1/2 slice of Swiss Cheese. Next the Pulled Chicken and topped all off the Jack Daniel’s Hickory Barbecue Sauce. And this is one great tasting Sandwich! I love Rotisserie Chicken, you can use it in so many different ways. Then the Jack Daniel’s Hickory Barbecue Sauce just adds that extra flavor. First time using the Kroger Bakery Slider Rolls. They are only 90 calories per roll, so not too bad. Excellent Sandwiches.

 

 

 

 


I also baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns and served.And had my morning cup of Bigelow Decaf Green Tea. Showers and then Cloudy for the day, high of 39 degrees. I ran a couple of errands for Mom and then by Meijer to pick up a couple of gifts for Christmas. I’m almost done with my Christmas shopping! Just need to pick up a few Gift Cards and I’ll be through. For Dinner tonight I prepared a Hickory Smoked Ham and Swiss Cheese

I took Mom’s car up to be washed then stopped by the ATM, the Post Office, and stopped and got gas. Back home, kicked back the rest of the afternoon. For a side I prepared some more of the Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area. Still only 1 store around here locally that sells them, so thank you Jungle Jim’s!

 

 


I also heated up some leftover Green Beans. These are the fresh Green Beans we had purchased from Jungle Jim’s Still delicious! Quite a Dinner tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

To start my Sunday morning off I prepared Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. After Breakfast I headed up to the local Kroger for a few items and picked up Breakfast for Mom at McDonald’s. Outside it’s mostly Sunny, humid, and 88 degrees. I got the cart out and did some yard work this afternoon.I had a few things to do in the front yard. The Landscaper is coming tomorrow to redo our front flower bed for us. More detail on that tomorrow. For Dinner tonight I prepared a Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip.

With the griddle heated and ready I grilled my Sandwich. Grilled each side until The Bread is toasted and the Cheese melted. Grilled and Ready! The Sandwich was delicious. The Pastrami and Swiss was so good, with the Spicy Brown Mustard adding all kinds of flavor. Swiss Cheese provides such great flavor, especially when it starts to melt. So Good!

 

 

 

 

To go with the Sandwich I had some Ruffle’s Reduced Fat Ruffle’s Potato Chips. I don’t have Potato Chips that often but with any Sandwich they go great! I also had a tablespoon of Lay’s Ranch Chip Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Mango Diet Snapple to drink.
