It was Gravy and Toast to jump start my day! I prepared a packet of Pioneer Peppered White Gravy, 2 toasted slices of Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Good way to start the day! Mom and Dad went to Church this morning so it was hose cleaning for me. Vacuum and dusted and then on to the kitchen, cleaning the stove and oven. not bad out today partly sunny and 50 degrees. But they say our nice days are over for a while. Cold and snow moving in tomorrow. I guess Winter wants to remind us that it’s not over yet. For dinner tonight, Fish Sandwich w/ Baked Tater Tots.

For my Fish I used Gorton’s Fish Sandwich Fillets. Love Gorton’s, one of my favorite frozen fish. To prepare them just preheat the oven on 425 degrees. Then bake them for 19 minutes, turning the fillets over after 10 minutes. Topped the filet with a slice of Kraft Sharp Cheddar and served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. Love these Gorton’s Fillets, nice breading.

Then to go with the Fish Sandwich I prepared some Tater Tots. Love those Tater Tots and I always use Ore Ida Mini Tater Tots. Just bake at 425 degrees for about 15 minutes and done! I baked these at the same time I baked my Gorton’s Fish Fillet, 1 pan and easy clean up. The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. Fish and Potatoes, a perfect pairing. For dessert later a Jello Sugar Free Dark Chocolate Mousse.

Arrange frozen Mini Tater Tots in a single layer on an 11 inch x 17 inch baking sheet. Heat for 14-16 mins. Cook to a light golden color. Season to taste. Full Bag: Preheat oven to 425 degrees F. Arrange frozen Mini Tater Tots in a single layer on an 11 inch x 17 inch baking sheet. Heat for 21-24 mins. Cook to a light golden brown. Season to taste.

 
Deep Fry: Caution: Ice crystals on frozen foods can cause spattering when added to hot oil. Add product carefully. Tips for Frying with Oil: Always preheat oil uncovered. If oil splatters, cover immediately and reduce heat. When splattering stops, remove cover and return to cooking temperature. Be careful not to spatter or spill oil onto hot burner of range. 1. Preheat cooking oil in electric deep fryer to 375 degrees F, check oil temperature. Fill deep fryer not more than half full of oil. 2. Fill fryer basket not more than half full of frozen mini tater tots. Carefully lower basket into hot oil. 3. Fry 3-4 minutes. Cook to a light golden color. 4. Drain on paper towels. Season to taste.

What a beautiful morning sky this morning! Deep blue sky along with some white and grey clouds along the horizon being lit up by the morning sun, good job Mother Nature! Started the morning with a toasted Healthy Life Whole Grain English Muffin, a fried Egg, 2 Eckrich Turkey Breakfast Sausage Links, and a hot cup of Bigelow decaf Green Tea. Not a whole lot going on today, caught up on everything. Did finish up some laundry for Mom while she was out. Not too bad out, high in the 40’s and partly sunny. Cold weather moving in though by later tonight and tomorrow. Spent the afternoon in the easy chair with the remote watching College Football. For dinner tonight I prepared a Fish Sandwich w/ Baked Tater Tots.

For my Fish I used Gorton’s Fish Sandwich Fillets. I baked them at 425 degrees for 19 minutes, turning the fillets over after 10 minutes. I served the Gorton’s Fish on a Kroger Lite Wheat Bun. Love these Gorton’s Fillets, nice breading and love the Fish.

I haven’t had Tater Tots in years and years! I had been wanting some so at Kroger the other day i picked a bag of ore Ida Mini Tater Tots. Couldn’t wait to tear into this bag and have some. Just bake at 425 degrees for about 15 minutes and done! I baked these at the same time I baked my Gorton’s Fish Fillet. The tater Tots were worth the wait, golden brown and delicious! I served them with a side of Hunt’s Ketchup. Fish and Potatoes, a natural pairing. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Had an early Breakfast and went to Kroger for a couple of items. Stopped by McDonald’s and picked Mom up something for Breakfast and home. Caught up on some house work and then went to the rehab center to see Dad. He’s just not looking very good, I’m starting to get worried. Back at home I baked some Pillsbury Nut Quick Bread. I baked them in mini loaf pans. Dad loves this so I’ll take him a couple of them over on Sunday. For dinner tonight it’s a Fish Sandwich w/ Baked Crinkle Fries.

 
I used Gorton’s Fish Fillet. They come frozen just bake at 400 degrees and serve. Served it on a Kroger Lite Wheat Bun and topped with some McCormick’s Tarter Sauce. Excellent frozen fish as all the Gorton’s Seafood Products. Then for a side I baked some Ore Ida Crinkle Fries and had a side of Hunt’s Ketchup for dipping. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

I had my eye exam for Glaucoma early this morning. It took about 1 1/2 hours for everything but it came back negative! No signs of Glaucoma. The Doc said the reason I’m getting false reports on the eye tests is that my Cornea is really thick, which gives the tests for Glaucoma a false reading. So a second health care scare comes back negative! Very humid out with afternoon heavy showers moving in. Not much going on for the day, finished up some more laundry for Mom. For dinner tonight it’s a Fish Sandwich w/ Mac and Cheese.

 

 

Sort of a stressful day so I wanted any easy prepared meal tonight, so it’s a Fish Sandwich w/ Mac and Cheese. Using the oven and microwave doesn’t get much easier than that! I used Gorton’s Fish Fillet that I baked at 400 degrees. I served the Gorton’s Fish on a Kroger Lite Wheat Bun. Then for a side I microwaved Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Today’s Menu: Fish Sandwich w/ Mac & Cheese

 

 
I had a meal planned out but as they say, “the best laid plans…..” I had went to our local Kroger and picked some Fish Sandwich w Mac & Cheese 011more coasters for furniture early this morning. So after breakfast I was putting the coasters underneath the couch in the living room and as I was sitting the end of the couch down I got my ring finger of my left hand caught underneath the leg of the couch, Ouch!! As the day went on it started to swell and a pea size ball form on the side of the finger, so I thought I better go have it checked out. Went to the Little Clinc inside Kroger and they said I had a contusion and it looked as though I had a blood blister that formed. So just keep ice on it and it should go down in a couple of days without having to lance it. By the time I got back home I really didn’t feel like cooking a big dinner so I hit the freezer and came up with the last minute, easy to prepare, dinner! Tonight it’s a Fish Sandwich w/ Mac & Cheese.

Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Happy Father’s Day to all the Dads out there! And a special Happy Father’s Day to my Dad, he’ll be 94 in September. Fish Sandwich w Baked Fries 009Finally had some sunshine today! Man oh man it rained so hard non stop yesterday. Some local flooding mostly South of us. Rain moving in later today but at least we got some sun in. Got the leaf blower out and cleaned up around the house and driveway. Cleaned up around the house then. For dinner tonight I prepared a Fish Sandwich w/ Baked Fries.

 
I used a Gorton’s Fish Fillet that I baked along with some Ore Ida Steak Fries. Baked both at the same time both at 400 degrees. I served the Gorton’s Fish on a Kroger Lite Wheat Bun and topped the Fish with a slice of Kraft Sharp Cheddar Cheese. With the Fries I had some Hunt’s Ketchup for dipping. Frozen foods to the rescue for those last minute meals or on those days where you just don’t feel like cooking a big meal! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt. Later!

It’s been one rainy day in the neighborhood today. It was in the 60’s with a little burst of sunshine everyFish Sandwich w Fries 006 now and then between storms. After getting a few things done around the house I ventured to Kroger. I was able to get in without getting rained on but leaving was an adventure, it was pouring the rain. By the time I got everything loaded in the car I was soaked, and would have been a lot worse if not for some passing West Chester Firemen. They helped me load everything and took the electric cart back in for me. And Kroger was packed, every register was opened and had several people in line at each of them. I guess people were getting their groceries for the upcoming Easter. So tonight for dinner I’m having a Fish Sandwich w/ Baked Fries.

I used a Gorton’s Fish Fillet that I baked along with some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Baked both at the same time both at 400 degrees. I served the Gorton’s Fish on a Kroger Lite Wheat Bun and topped the Fish with just a little Tarter Sauce and a slice of Sargento Ultra Thin Sharp Cheddar Cheese. With the Fries I had some Hunt’s Ketchup for dipping. Frozen foods sure come in handy for last minute meals or on those days where you just don’t feel like cooking a big meal! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt. Later!

Another frigid morning here, -1 degrees! The wind chill dropped it to -11. They are saying by the weekend it should at least be at 32 degrees, heat wave baby! Well with the weather outside I stayed inside, Did a load of laundry and then caught up on some shows I had recorded and some reading. For Breakfast It was Turkey Goetta, 1 Egg, and Wheat Toast. Lunch was a Turkey Meatloaf Sandwich on a Whole Grain Bun and for a last minute dinner substitute, a Fish sandwich w/ Baked Fries.

 

 

I had a dinner planned out but about the time I was getting ready to prepare dinner I noticed that my car was leaking antifreeze, not a good time to be leaking either with our weather! I had taken a bag of garbage out and noticed it leaking. So I took to the mechanic we always used and dropped it off. So to avoid an over crowded kitchen, Mom was wanting to prepare her dinner for her and Dad, I wanted something quickly to prepare. I used a Gorton’s Fish Sandwich Fillet that I baked along with some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. Baked both at the same time.
