Today’s Menu: Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans

I had a cup of Bigelow Decaf Green Tea for Breakfast. 81 degrees and sunny, plus low humidity and no rain! After my Tea I went to Walmart and took my car and had it washed. Also stopped by the ATM and filled the car up with gas. Back home, I got some yard work done and did some packing and clean up the Spare Room. I’ll be glad to get this new flooring in and get back to normal! For Dinner tonight I heated up the leftover Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans. Leftovers are just as good as anything, especially this Chicken. I left the original post from last night for Ingredients and Directions. Enjoy and Take Care All!

So I had picked up a package of Katie’s Best Skinless and Boneless Chicken Breasts at Meijer and had it in the freezer, laid the package in the fridge overnight to thaw. For the BBQ Sauce I’m using Kraft Hickory Smoke BBQ Sauce. I’m seasoning it with Morton’s Lite Salt and Ground Black Pepper. I went out and fired the grill up first. Next I sprayed the Chicken with Pam Non Stick Cooking Spray on both sides of the Chicken Breast, then seasoned them with the Salt and Pepper and waited for the Grill to heat.

With the Grill ready I started. Added the Chicken and shut the lid on the grill. I let the chicken cook for 7 minutes, then used the tongs to flip the breasts over. Grilled for another 7 minutes longer. With about 1 minute of cooking time left I basted the Chicken with the Kraft Hickory Smoke BBQ Sauce and finished cooking. Checked the temperature of the Chicken with a thermometer reads it read just a tad over 165°. The Chicken came out fantastic! Moist and flavorful. Love this Katie’s Best Chicken!

As the Chicken was cooking I prepared the side dishes. For one side to go with the Chicken I prepared a can of Meijer Sliced Potatoes. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through and done!

Then for another side I prepared a can of Bush’s Country Style Baked Beans. Just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Bush’s Beans! I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. And Dinner is served! The Chicken was spot on and the Potatoes and Beans work perfect with the BBQ Chicken. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Diet Dr. Pepper to drink.

Today’s Menu: Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans

To start this rainy Saturday Morning off I made a packet of the Pioneer Peppered White Gravy. Next I toasted up a couple of slices of Aunt Millie’s Live Carb Smart 1 Net Carb Wheat Bread. Then I also heated up 2 Johnsonville Turkey Breakfast Sausage Links. I also had a cup of Bigelow Decaf Green Tea. 82 degrees and thunderstorms on and off all day. After Breakfast I took Mom over to where she has her Hair done in Fairfield. It’s an every Saturday thing for Mom going to have her hair done. We stopped by my cousin’s house on the way home. Not much else going on. For Dinner tonight Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans.

For Breakfast this morning I prepared French Toast. For my Bread for the French Toast I used a new Bread from Aunt Millie’s I recently came across at Meijer, Aunt Millie’s Live Carb Smart 1 Net Carb Wheat Bread. For my Syrup I used Log Cabin Sugar Free Maple Syrup. I also had a cup of Bigelow Decaf Green Tea. Cloudy and 72 degrees outside, rain moving in tomorrow. Mom’s car had to be taken back to the Shop. The air and heat aren’t working right yet, so we dropped it off and picked it up later in the day. I dropped Mom back at home and I went to Walgreens to pick up a prescription for myself and then over to Walmart. Back home I did a few things outside around the house. For Dinner tonight Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans.

Today’s Menu: Grilled BBQ Chicken Breasts w/ Roasted Butternut Squash and Green Beans

For Breakfast this morning I was starving so I made favorite of mine, Hash Browns and Diced Ham. I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham, and had a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s to pick up Breakfast for Mom. Rain and thunderstorms out today, high of 82 degrees. Not a lot going on today with the rain outside. Did a few things around the house. For Dinner tonight its Grilled BBQ Chicken Breasts w/ Roasted Butternut Squash and Green Beans.

I picked the Chicken up at Meijer, Katie’s Best Skinless and Boneless Chicken Breasts, and had the package in the freezer. Sat the package in the fridge overnight to thaw. I had the Dinner Trio a while back and it was so good having it again tonight. For the BBQ Sauce I’m using Kraft Hickory Smoke BBQ Sauce. I’m seasoning the Chicken with Morton’s Lite Salt and Ground Black Pepper.

Checked temperature of the Chicken with a thermometer reads it read just a tad over 165°. The Chicken came out fantastic! Moist and flavorful. Love that Kraft Sauce, and it was excellent! The Katie’s Best Skinless and Boneless Chicken Breasts has become our favorite Chicken Breasts.

Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious Butternut Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, add the Walnut Pieces, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash. I really love Butternut Squash!

As the Squash was roasting I had also opened up a Mason Jar of our Canned Green Beans, canned last summer, and had them cooking. Love these Beans, they taste just as fresh as the day we bought them. Just heat them up in a large sauce pan and serve. Fresh Green Beans any time you want. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Grilled BBQ Boneless Pork Top Loin Chops w/ Mashed Potatoes and Green Beans

For Breakfast this Sunday Morning I prepared Turkey Sausage, Egg White Scrambled Eggs, Toast, and Tea. I picked up a package of the Jennie – O Turkey Breakfast Sausage Links while at Meijer. Meijer finally has started to have them in stock all the time now! Love these, so fresh and fry up perfect. Plus they are only 70 calories for 2 links! I also Scrambled some Egg Beaters Egg Whites, topped them with a sprinkle of Sargento Off the Block Sharp Cheddar Cheese. Next toasted a slice of Aunt Millie’s Light Whole Grain Bread and made a cup of Bigelow Decaf Green Tea. That’s a great Breakfast to start any day of the week! 85 degrees, humid, and rain and thunderstorms out today. I went and got Breakfast for Mom at McDonald’s and afterward she went on to Church. For me I did a load of laundry and cleaned the house today. Watched TV then the rest of the afternoon. For Dinner tonight I prepared Grilled BBQ Boneless Pork Top Loin Chops w/ Mashed Potatoes and Green Beans.

I purchased the Boneless Pork Top Loin Chops from Meijer yesterday. I wasn’t sure what I wanted and the Meat and Seafood manager asked me what I was looking for and I told him “Not sure but looking for something to grill”. He said stay right here and I’ll cut you something fresh. Then he brought out the Boneless Pork Top Loin Chops. They looked fantastic and I had what I was going to grill. Thank you Meijer Meat Department! I love Meijer, everything so fresh and the prices are some of the best!

To prepare them I seasoned them with Morton’s Lite Salt and Ground Black Pepper. I went out and fired the the grill up next. I’ll be using Kraft Hickory Smoke BBQ Sauce on the Chops. With the Chops Seasoned and the Grill fired up I started grilling the Chops. I grilled them for 3 minutes and then rotated them a 1/4 turn to get those beautiful grill marks and continued to cook them another 2 minutes. Turn the Chops over cooked them 2 minutes and rotated a 1/4 turn again. Continued to cook them for 2 minutes. With a minute of cooking time left I basted the Chops with the BBQ Sauce. Removed them from the grill and shut the grill down. The Chops were fantastic! Moist and tasted great!

As the Chops were being grilled I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Mashed Potatoes are perfect to go with any meal!

When having Mashed Potatoes you have to have Green Beans! I had also opened up a Mason Jar of our Canned Green Beans, canned last summer, and got them cooking. Love these Beans, they taste just as fresh as the day we bought them. Just heat them up in a large sauce pan and serve. Fresh Green Beans any time you want, I love it! For Dessert later a Breyer’s 100 Calorie Cup of Oreo Vanilla ice Cream, love these little cups!

Pork Facts….
One serving of pork is 3 ounces, or about the size of a deck of cards, according to the National Heart, Lung and Blood Institute. An image of the portion size is important because a thick pork chop can be twice that size and without realizing it you can eat double the calories. You’ll get 137 calories and 4 grams of fat from a 3-ounce pork chop. Pork is similar to chicken, with 3 ounces of chicken breast containing 140 calories and 3 grams of fat. A pork chop has 65 milligrams of cholesterol, compared to 72 grams in chicken breast, but they both have just 1 gram of saturated fat.

Today’s Menu: Cumin Spiced Pork Loin Chops w/ Maple and Cured Bacon Baked Beans, Sliced Potatoes, and Baked Garlic Loaf Bread

For Breakfast this morning I prepared some Breakfast Tacos. I used these Mission Street Taco Flour Mini Tortillas the other day and loved them! So I decided to make some Breakfast Tacos with them. To make them; I Scrambled and Egg, heated up a couple of Johnsonville Turkey Breakfast Sausage links, Sargento Reduced Fat Shredded 4 Cheese Mexican, and Ortega Smoky Chipotle Taco Sauce. One delicious Breakfast! I also had a cup of Bigelow Decaf Green Tea. Mom went to Breakfast with a neighbor. Cloudy and humid, 84 degrees. Had rain moving in later in the day. I had bought 3 Tomato Plants last week and had to get them out and planted on the side of our shed. I had to put up some wire mesh also, Rabbit problems! For Dinner tonight Cumin Spiced Pork Loin Chops w/ Maple and Cured Bacon Baked Beans, Sliced Potatoes, and Baked Garlic Loaf Bread.

I had bought a package of Center Cut Pork Loin Chops from Meijer earlier in the week. I had broke the package down and had the individual Chops in plastic bags, in the freezer. I grabbed a couple of the bags and laid them in the fridge overnight to thaw. To prepare my Chop I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150°, turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

For 1 side I prepared a can of the Bush’s Maple and Cured Bacon Baked Beans. First time using these. You taste the hint of the Maple Syrup and nice portions of the Cured Bacon, nice combo! To prepare them just emptied the contents into a sauce pan. Heat to simmer and serve! As all the Bush’s Beans they were fantastic! Another Bush’s product to have in the pantry.

For another side to go with the Chops I prepared a can of Del Monte Sliced Potatoes. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through and done. Beans and Potatoes are great with the Pork Chops! Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and Sprite Zero to drink.

Today’s Menu: Grilled BBQ Chicken Breasts w/ Roasted Butternut Squash and Green Beans

For Breakfast this morning a favorite of mine, Hash Browns and Diced Ham. Partly cloudy and 76 degrees outside. After Lunch I got my cart out of the shed and planted 3 plants Mom had bought yesterday. Swept out the shed and straightened it up before putting the cart back up. For Dinner tonight its Grilled BBQ Chicken Breasts w/ Roasted Butternut Squash and Green Beans.

I picked the Chicken up at Meijer the other day, Katie’s Best Skinless and Boneless Chicken Breasts.

Checked temperature of the Chicken with a thermometer reads it read just a tad over 165°. The Chicken came out fantastic! Moist and flavorful. Love that Kraft Sauce, and it was excellent!

For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
