Today’s Menu: Leftover Shrimp and Smoked Turkey Sausage Gumbo

 

For Breakfast I toasted a Thomas Light English Muffin, heated up a few slices of Boar’s Head Thick Cut Bacon, and had a cup of Bigelow Decaf Green Tea. 44 degrees and partly cloudy out. Not quite as nice as our 68 degrees yesterday! They delivered a new Hoveround Mobility Chair for me today. I still have my last one and it’s an excellent chair but under Medicare law they will not pay for repairs for a chair that’s 5 years old. Instead they buy a new one. It makes no sense to me, but who am I! I do appreciate it though but I would think it would save Medicare money to make repairs than buy a new one. The chair I had before that I got 10 years ago is still running! Oh well! For Dinner tonight I heated up the Leftover Shrimp and Smoked Turkey Sausage Gumbo. I left the original post from a night ago for ingredients and directions. Take Care and Stay Safe!

 

It’s Gumbo time! And Gumbo is always one of my favorite meals, Shrimp and Smoked Turkey Sausage Gumbo! To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Meijer Brand Jumbo Shrimp and Frank’s Red Hot Sauce. I precooked the Sausage and Shrimp, according to the package instructions, before adding it to the Gumbo.

 

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continue to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too, I took a small bowl over to my neighbor also. Then for Dessert/Snack later I had a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Leftover Shrimp and Smoked Turkey Sausage Gumbo

 

Just a cup of Bigelow Decaf Green Tea for Breakfast. 32 degrees, windy and cloudy out. After my Tea I went to Jungle Jim’s to pick up a few items for Mom and some Seafood for me! Love this Grocery Store! I picked up some Cooked Shrimp, Salmon Pieces, a Haddock Fillet, and 2 Red Snapper Fillets. Good Eating coming up! I stopped by McDonald’s and picked up Breakfast for Mom. Back home did laundry and cleaned the house. So for Dinner tonight I reheat Leftover Shrimp and Smoked Turkey Sausage Gumbo. The Leftovers are just as good as yesterday when made fresh! For Breakfast I toasted a Thomas Light English Muffin and topped it with some Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 38 degrees and cloudy out, but the wind made it feel a lot colder. I had to have Mom back at her Family Doctor this morning. They had all her blood work back and just wanted to go over it with her. They put her on a bit stronger blood pressure medicine but besides that they said all is good! She’ll be 93 next month! I then stopped by McDonald’s and picked up Breakfast for Mom. Did a few things outside around the house and inside. That was about it for today. So for Dinner tonight I prepared a personal favorite, Shrimp and Smoked Turkey Sausage Gumbo.

So not a lot to do today so I took care of a bunch of odd and end jobs that needed done. For Dinner tonight it was the Leftover Shrimp and Smoked Turkey Sausage Gumbo from the night before. Still raining early this morning and stopped about 10:00 this morning. Cloudy and a high of 60 degrees out. After Lunch I spent most of the day helping Mom clean out her walk in closet. We pitched a lot of stuff. Later I took some clothes she no longer wanted to the Good Will Store. So for Dinner tonight I reheat the Shrimp and Smoked Turkey Sausage Gumbo leftover from last night’s Dinner. I never let these leftovers go to waste! Today’s Menu: Shrimp and Smoked Turkey Sausage Gumbo

 

 

 

For Breakfast this morning I prepared a Diced Potatoes and Ham Skillet for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Off the Block Sharp Cheddar Cheese and a Sunny Side Egg. I also had a cup of Bigelow Decaf Green Tea. 58 degrees and rain, a lot of rain! Not a lot to do today. Cleaned and straightened the pantry and both freezers. Not much else to do. So for Dinner tonight I prepared a personal favorite, Shrimp and Smoked Turkey Sausage Gumbo.

Today’s Menu: Leftover – Shrimp and Smoked Turkey Sausage Gumbo

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off! One delicious Breakfast! We were fogged in this morning! Heavy fog until about 11:00 this morning. But then it turned sunny and a high of 46 degrees. The snow is melting! After Breakfast I went to Meijer to do some grocery shopping. I was at the Kroger up the road from us yesterday but their prices are so much higher than Meijer or Walmart! So after Meijer I stopped and got gas and then to McDonald’s to pick up Breakfast for Mom. Later on went outside and cleaned up around the driveway and deck. Then kicked back the rest of the afternoon. For Dinner tonight Leftover: Shrimp and Smoked Turkey Sausage Gumbo. I wasn’t going to let these leftovers go to waste! Today’s Menu: Shrimp and Smoked Turkey Sausage Gumbo

 

Just a cup of Bigelow Decaf Green Tea for Breakfast, not much of an appetite this morning. We just got the snow off the driveway and roads and it snowed again! This area is just used to this Winter weather for as long as its been now. We got about 2 inches I guess overnight and into the morning. So I cleared what I could from the driveway and then my neighbor came over and cleared the rest for me. It wouldn’t be so if I driveway wasn’t a hill! And then having to deal with it in a wheelchair makes it even harder. But you just to do what you can. I finally was able to get out and go check out the new Kroger they opened yesterday. It’s double the size of the old Kroger, which they really needed the space. The store is huge! They really did a great job with it. Many more selections and new items. For Dinner tonight I prepared a personnel favorite, Shrimp and Smoked Turkey Sausage Gumbo.

 

 

 

 

One of my favorite meals tonight, Shrimp and Smoked Turkey Sausage Gumbo! To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Meijer Brand Jumbo Shrimp and Frank’s Red Hot Sauce. I precooked the Sausage and Shrimp, according to the package instructions, before adding it to the Gumbo.

 

 

 

 

 

 

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced the Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Mango Snapple to drink.

Today’s Menu: Shrimp w/ Fettuccine and Baked Garlic Loaf Bread

 

 

For Breakfast this morning I Scrambled a couple of Eggs, seasoned them with Salt and Pepper and then topped them with some Sargento Reduced Fat Shredded Sharp Cheddar Cheese and some Ortega Smokey Chipotle Taco Sauce. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and had my morning cup of Bigelow Decaf Green Tea. For most of the day I was taking it easy. My allergies were running wild and I had a heck of a bad headache. The weeds are about all dead in the woods behind us so hopefully my allergies will die with them. For Dinner tonight I prepared Shrimp w/ Fettuccine and Baked Garlic Loaf Bread.

 

 

 

 

For the Shrimp part of the dish I used Meijer Brand Jumbo Shrimp. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.

 

 

 

 

To prepare the Buitoni Fettuccine; I filled a large Sauce Pan with 4 quarts Water and a couple of shakes of Morton’s Light Salt. Turned it on high heat. When it was a full boil I added the Fettuccine. Reduced the heat for a gentle boil of the Pasta for 2 minutes, stirred frequently. Removed from the heat and drained the water. Seasoned the Pasta with Extra Light Olive Oil, Blue Bonnet Light Butter, Morton’s Light Salt, and Dried Oregano.

 

 

 

 

 

To serve, in a bowl, I made a bed of the Fettuccine and topped it with the Shrimp. I love Shrimp and Pasta! The Fettuccine was tender and so delicious. Then with the added Shrimp it just made that much better! I topped it with some Kraft Grated Reduced Fat Parmesan Cheese.

 

 

 

 

 

 

I also heated up some of the RiverRoad Bake House Garlic Oval Loaf Bread I had yesterday for Dinner. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Mango Snapple to drink.

 

 

 

 

 

 

Buitoni Fettuccine Pasta

Flat ribbons of pasta made with extra fancy durum flour and eggs.
