Today’s: Menu: Fried Walleye Fillet w/ Roasted Asparagus, Baked Potato, and Baked Garlic Bread Loaf

 

For Breakfast this morning I Fried an Egg Sunny Side Up, heated up 3 slices of al fresco Chicken Bacon, and toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread that I topped with I Can’t Believe It’s Not Butter Light. I also had a cup of Bigelow Decaf Green Tea. It started raining last night around 9:00 and continued to rain all day. Had a high of 49 degrees. Mom’s blood work came back showing no major problems. They did change one of her medications though. So I went to Kroger to pick up the prescription. We have a lot of creeks and ditches that are overflowing from all the rain. Back home did some clean up work on the computer. For Dinner tonight I prepared Fried Walleye Fillet w/ Roasted Asparagus and Baked Potato.

 

I purchased the Walleye at Meijer and it in the freezer. I placed it in the fridge overnight to thaw. To prepare it I first rinsed the fillets in cold water and patted them dry with paper towel. Then to prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

For one side dish I prepared Roasted Asparagus for one side. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Roasted Asparagus Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving.

 

For another side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. Perfect Bread with any Dish! Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Just a cup of Bigelow Decaf Green Tea for Breakfast. 75 degrees and sunny out today. Not a lot going on today but rest. I’ve a bad sinus headache all day. Hopefully better later tonight! For Dinner tonight I prepared Fried Walleye w/ Baked Scalloped Potatoes.

 

 

So to prepare it I first rinsed the fillets in cold water and patted it dry with paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

For a side I tried another Reser’s Main Street Bistro side dish, Baked Scalloped Potatoes. I came across these Meijer. And we are hooked on them!. We had the Sliced Potato Casserole last night and having the Baked Scalloped Potatoes. This one also comes in a tray that you can microwave or bake in the oven, I’m going with the Oven Baking way.

 

 

 

Very easy to prepare , as the others were. Preheat the oven to 350 degrees. Just remove the tray from the package and remove the film covering the tray. Place the tray on a baking sheet and heat in the oven for 22 minutes. And it’s ready to serve! Seasoned with a shake of Salt and Pepper and a sprinkle of Kraft 2% Shredded Sharp Cheddar Cheese. Another delicious Potato Dish! Seasoned just right and you can hints of taste from the Butter and Sour Cream. For Dessert later a Jello Sugar Free Dark Cherry Jello.

Today’s Menu: Fried Walleye Fillet w/ Fried Potatoes and Baked Garlic Loaf Bread

 

 

For Breakfast morning I prepared a Poached Egg and served it on a Thomas Light English Muffin. Also had a cup of Bigelow Decaf Green. 72 degrees and rain out today. Much needed rain, everything is dry! We’ve been watering our lawn every other day to help out the front lawn and bushes. Couldn’t do much outside with the rain so I cleaned and straightened the Fridge and then the Pantry. For Dinner tonight I prepared Fried Walleye Fillet w/ Fried Potatoes and Baked Garlic Loaf Bread. I had Stouffer’s Mac and Cheese with mine Mom had the Potatoes.

 

I had a few packages of Walleye Fillets that I had bought from Meijer in the freezer. So I laid a package in the Fridge to thaw overnight. I had already cut the fillets into smaller pieces before freezing them. So to prepare it I first rinsed the fillets in cold water and patted it dry with paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

Then for a side I made a Cast Iron Skillet of Fried Potatoes. I love these! I bought a bag of Medium Size Red Potatoes, which we’ll be using. To prepare them; first wash the Whole Potatoes and dry with a paper towel. Next grab a Cast Iron Skillet and add 1 tablespoon of Extra Light Olive Oil and heat the Skillet on medium high.

 

With the skillet heated add the Potatoes. After adding the Potatoes add your Seasoning, we just used Salt and Pepper. Then fry until the Potatoes start to turn brown. Then flip them with a spatula and continue frying until done. I love these Potatoes and they are so easy to prepare.

 

 

Then I also baked a loaf of La Baguette Roasted Garlic Oval Bread For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Fried Walleye w/ Roasted Butternut Squash and Garlic & Herb Potatoes

 

 

No Breakfast or Tea this morning. I was fasting since Mid – Night because I had a Doctor’s Appointment at 7:30. Went in for my check up of Sugar, Cholesterol, and such. Afterward I picked Mom up and we went to Mejier. Picked up some fresh Vegetables and Fruit with a few other items. Back home did laundry and a few things around the house. We’ve had 3 neighbors here the past week having to be rushed to the Hospital for various things. So for Dinner tonight its Fried Walleye w/ Roasted Butternut Squash and Garlic & Herb Potatoes and Baked Multi Grain Bread Loaf.

 

While at Meijer yesterday I picked up some more of the Walleye Fillets. I really love the Meijer Seafood Department, good selection and decent prices. I first rinsed the fillets in cold water and patted them dry with paper towel. Then to prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious Butternut Squash! I purchased 2 small packages of Diced Butternut Squash at Meijer. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, Bacon Pieces, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley. To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash.

For another side I picked up a package of Little Potato Company Garlic and Herb Potatoes at Meijer. They come in a tin, ready for the oven container. Turned the oven to 450 and sat the container on a small baking sheet. It comes with a Seasoning Packet of Garlic and Herb. I first brushed the Potatoes with Extra Light Olive Oil and then Seasoned them with Seasoning Packet. Baked the for 45 minutes. The Potatoes came out perfect. Really enjoyed the Seasoning on them. Served them with a side of Daisy Light Sour Cream. For Dessert/Snack later a Diet Peach Snapple. Take Care All and Stay Safe!

I had a cup pf Bigelow Decaf Green Tea for Breakfast. After my Tea I went to Kroger to finish up my grocery shopping. Stopped by McDonald’s to pick up Breakfast for Mom. I had to make another Doctor’s appointment for my Sinuses. They have been driving me crazy for the past 2 weeks. He wrote another prescription to see if it would work any better than the last one. Just rested the rest of the day. For Dinner tonight its a Fried Walleye w/ Roasted Butternut Squash and Garlic & Herb Potatoes and Baked Multi Grain Bread Loaf.

For Breakfast this morning I had the same thing as I did the day before, I had a Poached Egg that I served on a slice of Aunt Millie’s Light Whole Grain Bread. Then I also fried up a few slices Turkey Spam. I also had a cup of Bigelow Decaf Green Tea. The Poached Egg and Spam was so delicious that I wanted it again. Cloudy and a high of 31 degrees out there today. After Breakfast I did some light house cleaning. Then I finished up on baking the Quick Bread Christmas Gifts for neighbors and relatives. For Dinner tonight I prepared Fried Walleye Fillet w/ Roasted Asparagus and Baked Potato.

Today’s Menu: Lemon Pepper and Cumin Crusted Walleye Fillet w/ Baked Tater Tots

 

 

To start this Friday morning off I had a Jimmy Dean Simple Scramble – Turkey Sausage, Egg Whites, Shredded Cheddar Cheese. Love these, so easy to prepare and make a good Breakfast. Plus they are only 150 calories and 3 carbs per cup! The same weather outside again. Passing rain and thunderstorms, humid, and 79 degrees. Had to go to the local Kroger to pick up a couple of items and a prescription for Mom. Cleaned the Kitchen and then took it easy for the afternoon. I’m still dealing with my allergies, everyone around here is suffering! For Dinner tonight Cumin Crusted Walleye Fillet w/ Baked Tater Tots.

 

 

 

I came across the recipe on the Diabetic Gourmet Magazine website, CUMIN-CRUSTED FISH FILLET WITH LEMON. I’ll be using Walleye as my Fish of Choice. Then for Seasoning I’ll need; Ground Cumin, Thyme, Paprika, Lemon Pepper, and Parsley. I left the original recipe and it’s web link at the end of the post. But after thinking about it I’m going to use Zatarain’s Lemon Pepper Breading Mix. I did add a bit of Ground Cumin to the Breading Mix. I’m all for making Cooking easier while keeping the flavors and taste. I had the Walleye in the freezer in a plastic Hefty Bag. Laid it in the fridge overnight to thaw. To prepare it, in a pie pan I added the Zatarain Mix. Rubbed the mix on both sides of fillets.

 

 

 

Then in a large skillet, set over medium heat, heat Extra Light Olive Oil. Add the Walleye and cook until browned on both sides, about 4 minutes per side. Sprinkled with parsley and done! Love all the Zatarain’s Mixes on Fish and Seafood!

 

 

 

 

 

 

To go with my Walleye, as it was cooking I preheated the oven on 425° to bake some Ore Ida Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

 

 

CUMIN-CRUSTED FISH FILLET WITH LEMON

Ingredients

1/2 to 1 Tbsp ground cumin
1/4 tsp thyme
1 tsp paprika
1/2 tsp lemon pepper
1 lb whitefish fillets (like cod, walleye or halibut)
1/2 Tbsp canola oil
2 Tbsp chopped parsley
lemon wedges

Directions

1 – In a small bowl, mix together cumin, thyme, paprika, and lemon pepper.
Rub spice mixture on both sides of fillets.
2 – In a large skillet, set over medium heat, heat canola oil. Add fish fillets and cook until browned on both sides and fish is opaque in the center about 4 minutes per side.
3 – Sprinkle with parsley and serve immediately with lemon wedges.

Recipe Yield: Yield: 4 servings.Serving Size: 4 oz (125 g) fish.

Today’s Menu: Fried Walleye Fillet w/ Mac and Cheese

 

For Breakfast morning I prepared Scrambled Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated 2 Johnsonville Turkey Breakfast Sausage Links, and had a cup of Bigelow Decaf Green. Rain in the morning and cloudy in the afternoon, 68 degrees. After Lunch I went to Lowes and they had Gas Grills on sale. I purchased a Char – Broil Grill. I paid extra to have it assembled and delivered. I’ve put together my share of grills and having to build them while in a wheelchair is just too much trouble. Worth the extra money to have it done! Waiting on the arrival, we’ll finally have a grill again! For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

 

 

 

While at Meijer the other day I picked up a couple of Walleye Fillets. I’m Preparing one of the fillets tonight and froze the other one. To prepare it I first rinsed the fillet in cold water and patted it dry with paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

 

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Mostly cloudy and very windy out, 46 degrees. Not a lot to do today, I was all caught up with chores around the house. After Lunch I went over to a friend of mine I hadn’t seen in a while. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

 

 

 

 

While at Kroger yesterday I bought a couple of packages small fresh Walleye Fillets. To prepare it I first rinsed the fillets in cold water and patted it dry with paper towel.
