Today’s Menu: Fried Walleye Fillet w/ Mac and Cheese

 

For Breakfast morning I prepared Scrambled Eggs, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated 2 Johnsonville Turkey Breakfast Sausage Links, and had a cup of Bigelow Decaf Green. Rain in the morning and cloudy in the afternoon, 68 degrees. After Lunch I went to Lowes and they had Gas Grills on sale. I purchased a Char – Broil Grill. I paid extra to have it assembled and delivered. I’ve put together my share of grills and having to build them while in a wheelchair is just too much trouble. Worth the extra money to have it done! Waiting on the arrival, we’ll finally have a grill again! For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

 

 

 

While at Meijer the other day I picked up a couple of Walleye Fillets. I’m Preparing one of the fillets tonight and froze the other one. To prepare it I first rinsed the fillet in cold water and patted it dry with paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

 

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Fried Walleye Fillet w/ Mac and Cheese

 

For Breakfast morning I prepared a Poached Egg, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, heated 2 Johnsonville Turkey Breakfast Sausage Links, and had a cup of Bigelow Decaf Green. Mostly cloudy and very windy out, 46 degrees. Not a lot to do today, I was all caught up with chores around the house. After Lunch I went over to a friend of mine I hadn’t seen in a while. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

 

 

 

 

While at Kroger yesterday I bought a couple of packages small fresh Walleye Fillets. To prepare it I first rinsed the fillets in cold water and patted it dry with paper towel. Next I cut the Fillets in half. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

 

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert later a Jello Sugar Free Dark Chocolate Pudding Cup.

For Breakfast morning I prepared Scrambled an Egg and served it with a toasted slice of Aunt Millie’s Light Whole Grain Bread. I Also had 2 Johnsonville Turkey Breakfast Sausage Links and a cup of Bigelow Decaf Green Tea. Cold out this morning, 19 degrees and a wind chill of 12 degrees. Windy, cloudy and 20 degrees for the day! Good day to stay in. After Lunch I helped Mom dig out all the Christmas Decorations from the closets and shed. Getting to be that time of year! For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

 

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert later a bowl of Breyer’s Carb Smart Vanilla Ice Cream topped with some Smucker’s Sugarless Hot Fudge Topping.

I Also had 2Johnsonville Turkey Breakfast Sausage Links and a cup of Bigelow Decaf Green Tea.Rain and 36 degrees out this morning. 46 degrees and cloudy for the rest of day. Cleaned the house and did a load of laundry. Everything else done for the day and not much else going on. For Dinner tonight I prepared Fried Walleye Fillet w/ Mac and Cheese.

 

 

 

 


While at Kroger yesterday I bought a package of 2 fresh Walleye Fillets. To prepare it I first rinsed the fillets in cold water and patted it dry with paper towel. Next I cut the Fillets in half. Humid and 87 degrees out today. Finished the cleaning and storing remaining outside lawn furniture. Everything else done for the day so it was an afternoon of College Football. Today’s Menu: Fried Walleye Fillet w/ Fresh Green Beans and AppleWood Smoked Bacon Potato Casserole

 

 

To start the morning off I had a cup of Bigelow Decaf Green Tea. No appetite this morning. After my Tea and morning workout I went to McDonald’s to pick up Breakfast for Mom. I headed back out and went to Menard’s. I’m looking for a battery operated weed trimmer. Stopped off at the Post Office and mailed a few letters for Mom. Partly sunny and humid out today, high of 84 degrees. For Dinner tonight I prepared a Fried Walleye Fillet w/ Fresh Green Beans and AppleWood Smoked Bacon Potato Casserole.

 

 

 

While at Meijer a while back I bought a few fillets of Walleye. I had used a couple of them and had the last one in the freezer. So I grabbed that bag and sit in the fridge overnight to thaw. To prepare it I first rinsed the fillet in cold water and patted it dry with paper towel. Then I seasoned it with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillet in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried it in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

For a side I cooked up the last bag of the fresh Green Beans for Dinner last night. Boiled them with a piece of Fatback Pork in the kettle. Reheating the leftovers tonight. Love these fresh Green Beans!

 

 

 

 

 

 

Then I also prepared a box of Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like the others this turned out fantastic! Very well seasoned, and you can taste that Applewood bacon flavor. I love my Potatoes! I also had a slice of Aunt Millie’s Light Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

The saying is “everything is better with bacon” and we couldn’t agree more. That’s why we incorporated Applewood Smoked Bacon in with our rich cheesy sauce for this homestyle casserole that is sure to become a family favorite.

Oven Preparation
Best for Golden Browning

1 – Preheat oven* to 450°F. Combine potatoes and sauce mix in 1 1/2-quart baking dish.
2 – Stir in 2 cups boiling water, 3/4 cup milk, and 2 Tbsp. butter or margarine with whisk.
3 – Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender. Remove from oven and let stand a few minutes before serving (sauce will thicken slightly when cooling).
* At 400 degrees, bake 30 – 35 min. or until tender

Today’s: Menu: Fried Walleye Fillet w/ Roasted Asparagus, Baked Potato, and Baked Garlic Bread Loaf

 

 

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin that I lightly Buttered with I Can’t Believe Its Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. After Breakfast i went to Walmart for a few items and went to their Garden Center also. I stopped at McDonald’s and picked up Breakfast for Mom. Outside had rain early and then partly sunny and 85 degrees. After Lunch I finished repotting some Pepper Plants and Herb Plants I had bought at Walmart. We finally got the shed cleaned out and organized! Now I have all kinds of room for storage and work. For Dinner tonight I prepared Fried Walleye Fillet w/ Roasted Asparagus and Baked Potato.

Then to prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

For one side dish I prepared Roasted Asparagus for one side. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Roasted Asparagus Garlic (minced), Sea Salt, Freshly grated Black Pepper, Lemon Juice, and Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until tender when pierced with a fork. Drizzle with a little fresh lemon juice and shredded Parm Cheese before serving.

 


For another side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. I had also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. This has became the family’s favorite Baked Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding Cup.

Today’s: Menu: Fried Walleye Fillet w/ Potato Pancakes and Green Beans

 

 

For Breakfast this morning I tried something new. I was at Meijer yesterday with Mom and I cam across some Ham, Artisan Crafted Kentucky Legend Hickory Smoked Ham. It was a small 2 1/2 lb. Ham, and it looked delicious! So I sliced off a few slices and heated it up in a skillet. Served it with a Sunnyside Up fried Egg and 2 slices of toasted Aunt Millie’s Bread (lightly buttered). Also had my morning cup of Bigelow Decaf Green Tea. The Ham was moist and absolutely delicious! I’ll be having this a lot more often, glad I came across it at Meijer!

 

 

 

 

 

Outside it was our warmest day in quite some time, 88 degrees and partly cloudy. We still have a lot of stuff to go through out in the shed so I spent most of the day doing that, and still things to go through! Dad has so many tools and things out there that’s never used anymore. For Dinner tonight its a Fried Walleye Fillet w/ Potato Pancakes and Green Beans.

 

 

While at Meijer yesterday I bought a couple of fillets of Walleye. I first rinsed the fillets in cold water and patted them dry with paper towel. Then to prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Put the fillets in a Hefty Plastic Bag and added some Progresso Italian Style Bread Crumbs, sealed the bag and shook till the fillet was well coated. I then fried them in Extra Light Olive Oil on medium heat, about 4 minutes per side till golden brown! I love Walleye, as I do most Fish. Walleye is so meaty and has such a fresh flavor!

 

 

So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). The whole family love’s these Potato Pancakes! They turn out so good and easy to reheat the leftovers.

 

 

 

 

For a second side I heated up a can of Del Monte Cut Green Beans. I also reheated a couple of slices of leftover Multi Grain Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Peach Snapple to drink.

Manischewitz Potato Pancake Mix

Directions Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

Today’s Menu: Fried Walleye Fillet w/ Seasoned Pinto Beans and Golden Hominy

 

 

For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. It was a beautiful Sunrise this morning the east horizon was just lit up with color. Finished up a few things around the yard before rain moved back in around 11::00 this morning. For the day it was 58 degrees with rain. The yard is looking a lot better! I was able to finally get caught up with a lot of yard work. Later in the day Hoveround came over to make some repairs on my Hoveround Mobility Chair. Being an amputee I don’t know what I would without my Hoveround! For Dinner tonight I prepared Fried Walleye Fillet w/ Seasoned Pinto Beans and Golden Hominy.

 


Last time I was at Costco yesterday I bought a package of fresh Canadian Walleye Fillets! There was 7 Fillets in the package, I gave Mom a couple of them that she froze and I had one that day and had froze the rest. So I laid a bag of 2 Fillets out in the fridge to thaw overnight.

 

 

 

So I’m preparing 2 Fillets. To prepare them I seasoned them with McCormick Grinder Sea Salt and Black Pepper Medley. Costco has an excellent Fish and Seafood selections!

 

 

As the Fillets were cooking I prepared my side dishes. I prepared a can of Margaret Holmes Seasoned Pinto Beans. It doesn’t get much better for a canned Beans than these! To prepare it just empty the contents into a medium saucepan. Cover it and bring it to a boil. Stir and reduce the heat to slow simmer and serve when ready. I love Beans of all kinds and these Seasoned Pinto Beans are at the top of the list, love the Seasoning.

 

 

 

For another side I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.
