Butterflied Grilled Chicken with a Chile-Lime Rub
A quick and efficient way to cook a whole bird on the grill is to butterfly, or “spatchcock” it. When cooking a whole chicken on the grill, try searing the chicken first over direct heat then finish cooking over indirect heat (as instructed in this recipe). Greek Lemon Chicken
The health benefits of the Mediterranean diet are well known, from helping with weight loss to improving heart health to enhancing cognitive function. Interested in trying it out for yourself? This low-carb and flavorful chicken dish is an authentic taste of Greece.
Yield: 4 servings.
Serving size: 1 breast.

Ingredients
4 boneless skinless chicken breasts (about 1/4 pound)
2 tablespoons lemon juice
2 teaspoons extra virgin olive oil
1 teaspoon grated lemon peel
1 teaspoon dried oregano
1 clove garlic, minced
1/4 teaspoon salt
1/8 teaspoon black pepper
Nonstick cooking spray
1 lemon, cut into wedges (optional)
Baby spinach leaves (optional)

Directions
1 – Place chicken in large resealable food storage bag. Add lemon juice, olive oil, lemon peel, oregano, garlic, salt, and pepper. Seal bag. Shake to coat chicken. Marinate in refrigerator at least 30 minutes or up to 8 hours.

2 – Spray large nonstick skillet with nonstick cooking spray; heat over medium heat. Remove chicken from marinade; discard marinade. Add chicken to skillet; cook 3 minutes. Turn chicken. Reduce heat to medium-low. Cook 7 minutes or until no longer pink in center.

3 – Remove from heat. Serve with lemon wedges and spinach leaves, if desired.

Today’s Menu: Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans

 

I had a cup of Bigelow Decaf Green Tea for Breakfast. 81 degrees and sunny, plus low humidity and no rain! After my Tea I went to Walmart and took my car and had it washed. Also stopped by the ATM and filled the car up with gas. Back home, I got some yard work done and did some packing and clean up the Spare Room. I’ll be glad to get this new flooring in and get back to normal! For Dinner tonight I heated up the leftover Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans. Leftovers are just as good as anything, especially this Chicken. I left the original post from last night for Ingredients and Directions. Enjoy and Take Care All!

So I had picked up a package of Katie’s Best Skinless and Boneless Chicken Breasts at Meijer and had it in the freezer, laid the package in the fridge overnight to thaw. For the BBQ Sauce I’m using Kraft Hickory Smoke BBQ Sauce. I’m seasoning it with Morton’s Lite Salt and Ground Black Pepper. I went out and fired the grill up first. Next I sprayed the Chicken with Pam Non Stick Cooking Spray on both sides of the Chicken Breast, then seasoned them with the Salt and Pepper and waited for the Grill to heat.

With the Grill ready I started. Added the Chicken and shut the lid on the grill. I let the chicken cook for 7 minutes, then used the tongs to flip the breasts over. Grilled for another 7 minutes longer. With about 1 minute of cooking time left I basted the Chicken with the Kraft Hickory Smoke BBQ Sauce and finished cooking. Checked the temperature of the Chicken with a thermometer reads it read just a tad over 165°. The Chicken came out fantastic! Moist and flavorful. Love this Katie’s Best Chicken!

 

As the Chicken was cooking I prepared the side dishes. For one side to go with the Chicken I prepared a can of Meijer Sliced Potatoes. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through and done!

 

Then for another side I prepared a can of Bush’s Country Style Baked Beans. Just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Bush’s Beans! I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. And Dinner is served! The Chicken was spot on and the Potatoes and Beans work perfect with the BBQ Chicken. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Diet Dr. Pepper to drink.

To start this rainy Saturday Morning off I made a packet of the Pioneer Peppered White Gravy. Next I toasted up a couple of slices of Aunt Millie’s Live Carb Smart 1 Net Carb Wheat Bread. Then I also heated up 2 Johnsonville Turkey Breakfast Sausage Links. I also had a cup of Bigelow Decaf Green Tea. 82 degrees and thunderstorms on and off all day. After Breakfast I took Mom over to where she has her Hair done in Fairfield. It’s an every Saturday thing for Mom going to have her hair done. We stopped by my cousin’s house on the way home. Not much else going on. For Dinner tonight Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans.

Grilled Chicken Adobo
This twist on the classic Filipino dish uses chicken breast to keep the fat content low. And with only 1 gram of carb per serving, it will have minimal impact on your blood sugar, but

maximum effect on your taste buds!

Ingredients
1/2 cup chopped onion
1/3 cup lime juice
6 cloves garlic, coarsely chopped
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/4 teaspoon ground red pepper
6 boneless skinless chicken breasts (about 1/4 pound each)
3 tablespoons chopped fresh cilantro (optional)

Directions
Yield: 6 servings
Serving size: 1 grilled chicken breast

1. Combine onion, lime juice, and garlic in food processor. Process until onion is finely minced. Transfer to large resealable food storage bag. Add cumin, oregano, thyme, and red pepper; knead bag until blended. Place chicken in bag; press out air and seal. Turn to coat chicken with marinade. Refrigerate 30 minutes or up to 4 hours, turning occasionally.

2. Spray grid with nonstick cooking spray. Prepare grill for direct cooking. Remove chicken from marinade; discard marinade. Place chicken on grid. Grill 5 to 7 minutes on each side over medium heat, or until chicken is no longer pink in center. Transfer to clean serving platter and garnish with cilantro, if desired.

Today’s Menu: Chicken and Dumplings and Cornbread

 

 

For Breakfast on this cold and snowy Thursday morning I Scrambled a couple of Eggs that I topped with Ortega Smoky Chipotle Taco Sauce. I also toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread and prepared a cup of Bigelow Decaf Green Tea. Outside a high of 87 degrees with rain and thunderstorms on and off all day. Well we finally can get out again without worry from the Chinese Covid Virus and can’t even enjoy it for the Cicadas and heat and humidity! No Breaks lately! So for Dinner tonight my Mom is making her melt-in-your mouth Chicken and Dumplings and some Cast Iron Skillet Cornbread.

 

My Mom is making her Chicken and Dumplings for Dinner Tonight! I guess if you can’t get out Chicken and Dumplings are the way to go! She used Bisquick Heart Smart Mix for the Dumplings and Tyson Split Chicken Breasts for the Chicken. She first made the Dumplings using a recipe found on Bisquick Boxes. Made those and set them aside until ready to use. My Grandmother and Mom both have used this same recipe since it came out on the Bisquick boxes. Not the best Dinner for calories and carbs but having 1 time every 4 months or so doesn’t hurt.

 

For the Chicken. She boiled the Chicken Breasts in a pot until they were done adding more water to them twice. After the Chicken was cooked she removed them from the pot and roughly shredded it. Returned it to the pot of Broth or Stew and added the Dumplings, reducing the heat. Cooked the two together uncovered for 10 minutes and then another 12 minutes covered until they were done.

 

As I said these Dumplings just melt in your mouth! Just incredible flavor with the Chicken being moist and adding it’s flavor. Plus that incredible and thick broth that’s created while its all cooking is the thing that ties it all together! I can’t have these often, having Diabetes 2, but once in a while is just fine! It’s hard to resist these pillowy Dumplings of goodness!

 

As the Chicken and Dumplings were cooking I made Mom Cornbread, Mom loves Cornbread! I made a small Cast iron Skillet of Cornbread. As always I used Martha White Corn Meal Mix, something I think I could eat every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight! For Dessert later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Coke Zero to drink.

For Breakfast this morning I prepared French Toast. For my Bread for the French Toast I used a new Bread from Aunt Millie’s I recently came across at Meijer, Aunt Millie’s Live Carb Smart 1 Net Carb Wheat Bread. For my Syrup I used Log Cabin Sugar Free Maple Syrup. I also had a cup of Bigelow Decaf Green Tea. Cloudy and 72 degrees outside, rain moving in tomorrow. Mom’s car had to be taken back to the Shop. The air and heat aren’t working right yet, so we dropped it off and picked it up later in the day. I dropped Mom back at home and I went to Walgreens to pick up a prescription for myself and then over to Walmart. Back home I did a few things outside around the house. For Dinner tonight Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans.

Asparagus and Cheddar Stuffed Chicken Breasts for Diabetics
Asparagus is packed with vitamins and minerals that have health benefits ranging from fighting bloating to aiding in weight loss to helping prevent urinary tract infections. Take advantage of this nutritious and delicious veggie, now in peak season, with our filling and low-carb entrée!

Ingredients

20 asparagus spears (about 2 bunches)
2 cups fat-free reduced-sodium chicken broth
1 medium red bell pepper, chopped
1/2 teaspoon roasted crushed garlic
1 teaspoon dried parsley
1/4 teaspoon black pepper
4 boneless skinless chicken breasts (about 1/4 pound each)
4 tablespoons shredded reduced-fat Cheddar cheese
4 tablespoons corn relish (optional)

Directions
Yield: 4 servings
Serving size: 1 stuffed chicken breast

1 – Snap woody stem ends off asparagus and discard. Cut off asparagus tips about 4 inches long; set aside. Slice asparagus stalks and combine with broth, red pepper, garlic, parsley, and black pepper in saucepan. Cook over medium-high heat 25 minutes, stirring occasionally.

2 – While vegetables cook, place each chicken breast half between plastic wrap, and pound with rolling pin until approximately 1/4 inch thick.

3 – Preheat electric indoor grill with lid. Lay 5 asparagus tips across one end of each pounded breast. Top each with 1 tablespoon cheese and fold in half. Place stuffed breasts on grill and cook with lid closed for 6 minutes.

4 – Spoon vegetable sauce onto serving plates and top with cooked breast. Garnish with corn relish, if desired.

* Gelatin Salad: If desired, serve with Gelatin Salad. Mix together 4 cups ready-to-use shredded cabbage, 1 cup mandarin orange segments, and 1/2 cup fat-free vinaigrette in medium bowl. Divide mixture evenly among 4 salad plates. Remove orange gelatin from 4 ready-to-use, sugar-free gelatin dessert cups and slice gelatin with egg slicer or knife. Top each salad with gelatin slices. Garnish each serving with 1/2 tablespoon dried cranberries. Refrigerate until ready to serve.

Today’s Menu: Grilled BBQ Chicken Breasts w/ Sliced potatoes and Baked Beans

 

For Breakfast this morning I prepared French Toast and Turkey Sausage Links. For my Bread for the French Toast I used a new Bread from Aunt Millie’s I recently came across at Meijer, Aunt Millie’s Live Carb Smart 1 Net Carb Wheat Bread. For my Syrup I used Log Cabin Sugar Free Maple Syrup. More on this Bread in a post later. Anyway, for my Sausage I used Johnsonville Turkey Breakfast Sausage Links. I also had a cup of Bigelow Decaf Green Tea. Now that’s a Breakfast! 70 degrees with rain showers out today. Got the cart out this morning before the rains moved in and sprayed for weeds, we have a lot of them. I had also bought some Mole Bait. Everyone has a problem with Moles this year. Cleaned the cart up before putting it away. For Dinner tonight Grilled BBQ Chicken Breasts w/ Sliced potatoes and Baked Beans.

 

Wanted to grill again today. So I had picked up a package of Katie’s Best Skinless and Boneless Chicken Breasts at Meijer and had it in the freezer, laid the package in the fridge overnight to thaw. For the BBQ Sauce I’m using Kraft Hickory Smoke BBQ Sauce. I’m seasoning it with Morton’s Lite Salt and Ground Black Pepper. I went out and fired the grill up first. Next I sprayed the Chicken with Pam Non Stick Cooking Spray on both sides of the Chicken Breast, then seasoned them with the Salt and Pepper and waited for the Grill to heat.

 

With the Grill ready I started. Added the Chicken and shut the lid on the grill. I let the chicken cook for 7 minutes, then used the tongs to flip the breasts over. Grilled for another 7 minutes longer. With about 1 minute of cooking time left I basted the Chicken with the Kraft Hickory Smoke BBQ Sauce and finished cooking. Checked temperature of the Chicken with a thermometer reads it read just a tad over 165°. The Chicken came out fantastic! Moist and flavorful. First time using the Kraft Sauce and it was excellent!

 

As the Chicken was cooking I prepared the side dishes. For one side to go with the Chicken I prepared A can of Meijer Sliced Potatoes. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through and done!

 

Then for another side I prepared a can of Bush’s Country Style Baked Beans. Just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Bush’s Beans! I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. And Dinner is served! The Chicken was spot on and the Potatoes and Beans work perfect with the BBQ Chicken. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Stick Pretzels with a Diet Raspberry/Tea Snapple to drink. Take care and stay safe everyone!

CHICKEN PAD THAI
Recipe for Chicken Pad Thai with only 9 grams of carbs per serving from our diabetic Thai recipes area. Includes nutritional info for diabetes meal planning.
Peanuts are a low glycemic index food. Their slow digestion causes sugar to gradually be released into the blood, which can have positive effects on blood sugar control.
Substituting plant-based proteins like peanuts for animal proteins and low-quality carbohydrates can reduce diabetes risk by up to 21-percent.
This recipe is also a good source of Vitamin A (109%), Vitamin C (47%), iron (10%) and calcium (7%).

Ingredients

1 pound chicken breast
Freshly ground pepper, to taste
1 tablespoon olive oil
1 tablespoon honey
2 teaspoons chili garlic sauce
3 tablespoons rice wine vinegar
2 tablespoons low-sodium soy sauce
1 tablespoon peanut butter
1/4 cup water
1 medium zucchini, spiralized (about 1 cup)
2 medium carrots, spiralized (about 1 cup)
1 cup cooked pad thai stir-fry noodles
1 cup bean sprouts
1 cup thinly sliced cabbage
1 lime, quartered
1/4 cup unsalted peanuts, crushed
2 tablespoons chopped cilantro

Directions

1 – Season chicken with pepper, to taste. In large, nonstick skillet over medium-high heat, heat olive oil and cook chicken until fully cooked and juices are clear.
2 – Remove chicken from pan and allow to rest 5 minutes before slicing.
3 – To make sauce: In small bowl, whisk together honey, chili garlic sauce, rice wine vinegar, soy sauce, peanut butter and water.
4 – Add zucchini, carrots, rice noodles and chicken to pan; pour sauce over and toss to coat.
5 – Toss in bean sprouts and cabbage.
6 – Serve with lime wedge, crushed peanuts and cilantro.
