Fajita-Seasoned Grilled Chicken
Give your grilled chicken a bit of flair with this quick and easy low-carb recipe! It requires just four ingredients and only about 10 minutes of prep time.

Ingredients
2 boneless skinless chicken breasts (about 4 ounces each)
1 bunch green onions, ends trimmed
1 tablespoon olive oil
2 teaspoons fajita seasoning mix

Directions
Yield: 2 servings
Serving size: 1 chicken breast

1. Prepare grill for direct cooking.

2. Brush chicken and green onions with oil. Sprinkle both sides of chicken breasts with seasoning mix. Grill chicken and onions 6 to 8 minutes or until chicken is no longer pink in center.

3. Serve chicken with onions.

Grilled Chicken With Corn and Black Bean Salsa
Put a twist on your traditional grilled chicken with this recipe, featuring flavorful salsa with a spicy jalapeño kick!

Ingredients
1/2 cup corn
1/2 cup finely chopped red bell pepper
1/2 (15-ounce) can black beans, rinsed and drained
1/2 ripe medium avocado, diced
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon chopped sliced pickled jalapeño pepper
1/2 teaspoon salt, divided
1 teaspoon black pepper
1/2 teaspoon chili powder
4 boneless skinless chicken breasts (4 ounces each), pounded to 1/2-inch thickness
Nonstick cooking spray

Directions
Yield: 4 servings
Serving size: 1 chicken breast and 1/4 cup salsa

1. Combine corn, bell pepper, beans, avocado, cilantro, lime juice, jalapeño and 1/4 teaspoon salt in medium bowl. Set aside.

2. Combine black pepper, remaining 1/4 teaspoon salt and chili powder in small bowl; sprinkle over chicken.

3. Coat grill pan with cooking spray. Cook chicken over medium-high heat 4 minutes per side or until no longer pink in center.

4. Serve chicken topped with half of salsa; refrigerate remaining salsa for another use.

Tasty Teriyaki Chicken
A much requested reduced calorie chicken recipe, that’s easy to double for a large group.

Recipe Ingredients:

1 tablespoon cornstarch
1 tablespoon cold water
1/2 cup Splenda® Granulated No Calorie Sweetener
1/2 cup soy sauce
1/4 cup cider vinegar
1 clove garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon ground black pepper
12 skinless, boneless chicken breast halves

Cooking Directions:

1 – In a small saucepan over low heat, combine the cornstarch, cold water, Splenda® Granulated Sweetener, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
2 – Preheat oven to 425°F (220°C).
3 – Place chicken pieces in a lightly greased 9×13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.
4 – Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.
Makes 12 servings.

Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans

Today’s Menu: Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans

 

 

For Breakfast this morning I prepared Hash Brown and Diced Ham Skillet. I used Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunny Side Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. 84 degrees, sunny, and low humidity, a perfect day out there today! After Breakfast I did a load of laundry and some light cleaning around the house. Then it was outside for most of the day, a little work and a little relaxing. For Dinner tonight Grilled BBQ Chicken Breasts w/ Sliced potatoes and Baked Beans. We had this same Meal about a month ago and Mom really enjoyed it so we are having it again!

I had picked up a package of Katie’s Best Skinless and Boneless Chicken Breasts at Meijer and had it in the freezer, laid the package in the fridge overnight to thaw. For the BBQ Sauce I’m using Kraft Hickory Smoke BBQ Sauce. I’m seasoning it with Morton’s Lite Salt and Ground Black Pepper. I went out and fired the grill up first. Next I sprayed the Chicken with Pam Non Stick Cooking Spray on both sides of the Chicken Breast, then seasoned them with the Salt and Pepper and waited for the Grill to heat.

 

With the Grill ready I started. Added the Chicken and shut the lid on the grill. I let the chicken cook for 7 minutes, then used the tongs to flip the breasts over. Grilled for another 7 minutes longer. With about 1 minute of cooking time left I basted the Chicken with the Kraft Hickory Smoke BBQ Sauce and finished cooking. Checked temperature of the Chicken with a thermometer reads it read just a tad over 165°. The Chicken came out fantastic! Moist and flavorful. First time using the Kraft Sauce and it was excellent!

 

 

As the Chicken was cooking I prepared the side dishes. For one side to go with the Chicken I prepared A can of Meijer Sliced Potatoes. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through and done!

 

 

 

Then for another side I prepared a can of Bush’s Country Style Baked Beans. Just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Bush’s Beans! I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. And Dinner is served! The Chicken was spot on and the Potatoes and Beans work perfect with the BBQ Chicken. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Stick Pretzels with a Diet Dr. Pepper to drink. Take care all!

Leftover Chicken and Dumplings and Cornbread!

Today’s Menu: Leftover Chicken and Dumplings and Cornbread

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Partly sunny and 74 degrees outside today, 80 degree weather and dry on the way! I had to stick close to the phone and house. We are having trouble with our phone and cable TV and I had to wait around for the repairman to call and arrive. It was finally dry enough for them to mow our grass, and it needs it! It’s been so wet out that you couldn’t mow it. Did a few things around the house. For Dinner tonight its Leftover Chicken and Dumplings! No way these leftovers were going to go to waste! Mom makes the best Chicken and Dumplings there is! I have many an old room mate through the years that will back that up. I left the original post from yesterday for recipe and intsruction. Take care all!

My Mom is making her Chicken and Dumplings for Dinner Tonight! She used Bisquick Heart Smart Mix for the Dumplings and Tyson Split Chicken Breasts for the Chicken. She first made the Dumplings using a recipe found on Bisquick Boxes. Made those and set them aside until ready to use. My Grandmother and Mom both have used this same recipe since it came out on the Bisquick boxes.

 

For the Chicken. She boiled the Chicken Breasts in a pot until they were done adding more water to them twice. After the Chicken was cooked she removed them from the pot and roughly shredded it. Returned it to the pot of Broth or Stew and added the Dumplings, reducing the heat. Cooked the two together uncovered for 10 minutes and then another 12 minutes covered until they were done.

As I said these Dumplings just melt in your mouth! Just incredible flavor with the Chicken being moist and adding it’s flavor. Plus that incredible and thick broth that’s created while its all cooking is the thing that ties it all together! I can’t have these often, having Diabetes 2, but once in a while is just fine! It’s hard to resist these pillowy Dumplings of goodness!

 

As the Chicken and Dumplings were cooking I made the Cornbread. I made a small Cast iron Skillet of Cornbread. As always I used Martha White Corn Meal Mix, something I think I could eat everymeal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight! For Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels and a Sprite Zero to drink.

For Breakfast this morning I Scrambled a couple of Eggs, heated up a couple of Johnsonville Turkey Breakfast Sausage Links, toasted a Thomas Light 100% Whole Grain English Muffin that I topped with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Rain showers on and off and 64 degrees outside. I got out my mask and gloves and headed off to Home Depot. I was going to buy a battery weed trimmer but they were already sold out. I’ll try again some time. Did a few things around the house. Anyway a real Dinner treat tonight! My Mom is making her melt-in-your mouth Chicken and Dumplings and some Cast Iron Skillet Cornbread.

Tomatillo Bean and Chicken Chili
A hearty and flavorful chicken chili made with fresh tomatillos and traditional chili seasonings.

Recipe Ingredients:
2 tablespoons canola oil
1 large onion, diced
2 cloves garlic, minced
3 chicken breasts, cubed into bite size pieces
8 tomatillos, husked and finely chopped
1 jalapeño pepper, seeded and finely diced
1 tablespoon lime juice
1 teaspoon ground coriander
1 teaspoon ground cumin
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 cups chicken broth
2 (19-ounce) cans cannellini beans
2 tablespoons freshly chopped cilantro

Cooking Directions:
1 – Pour canola oil into large saucepan. Sauté onion and garlic over low heat for 1 to 2 minutes. Add chicken and continue to cook until chicken is lightly browned, about 4 to 5 minutes.
2 – Combine tomatillos, jalapeño, lime juice, coriander, cumin, chili powder, salt, pepper, chicken broth, cannellini beans and chopped cilantro with chicken. Mix well, cover saucepan and cook over medium-low heat for 25 to 30 minutes, until mixture has thickened.
3 – Garnish with cilantro and serve.
Makes 8 (1 cup) servings.

Week 5 of our home isolation this week. For Dinner tonight Grilled BBQ Chicken Breasts w/ Sliced potatoes and Baked Beans.
