Grilled Chicken With Corn and Black Bean Salsa
Put a twist on your traditional grilled chicken with this recipe, featuring flavorful salsa with a spicy jalapeño kick!

Ingredients
1/2 cup corn
1/2 cup finely chopped red bell pepper
1/2 (15-ounce) can black beans, rinsed and drained
1/2 ripe medium avocado, diced
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon chopped sliced pickled jalapeño pepper
1/2 teaspoon salt, divided
1 teaspoon black pepper
1/2 teaspoon chili powder
4 boneless skinless chicken breasts (4 ounces each), pounded to 1/2-inch thickness
Nonstick cooking spray

Directions
Yield: 4 servings
Serving size: 1 chicken breast and 1/4 cup salsa

1. Combine corn, bell pepper, beans, avocado, cilantro, lime juice, jalapeño and 1/4 teaspoon salt in medium bowl. Set aside.

2. Combine black pepper, remaining 1/4 teaspoon salt and chili powder in small bowl; sprinkle over chicken.

3. Coat grill pan with cooking spray. Cook chicken over medium-high heat 4 minutes per side or until no longer pink in center.

4. Serve chicken topped with half of salsa; refrigerate remaining salsa for another use.

Tasty Teriyaki Chicken
A much requested reduced calorie chicken recipe, that’s easy to double for a large group.

Recipe Ingredients:

1 tablespoon cornstarch
1 tablespoon cold water
1/2 cup Splenda® Granulated No Calorie Sweetener
1/2 cup soy sauce
1/4 cup cider vinegar
1 clove garlic, minced
1/2 teaspoon ground ginger
1/4 teaspoon ground black pepper
12 skinless, boneless chicken breast halves

Cooking Directions:

1 – In a small saucepan over low heat, combine the cornstarch, cold water, Splenda® Granulated Sweetener, soy sauce, vinegar, garlic, ginger and ground black pepper. Let simmer, stirring frequently, until sauce thickens and bubbles.
2 – Preheat oven to 425°F (220°C).
3 – Place chicken pieces in a lightly greased 9×13 inch baking dish. Brush chicken with the sauce. Turn pieces over, and brush again.
4 – Bake in the preheated oven for 30 minutes. Turn pieces over, and bake for another 30 minutes, until no longer pink and juices run clear. Brush with sauce every 10 minutes during cooking.
Makes 12 servings.

Today’s Menu: Grilled BBQ Chicken Breasts w/ Sliced Potatoes and Baked Beans

 

 

For Breakfast this morning I prepared Hash Brown and Diced Ham Skillet. I used Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunny Side Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. 84 degrees, sunny, and low humidity, a perfect day out there today! After Breakfast I did a load of laundry and some light cleaning around the house. Then it was outside for most of the day, a little work and a little relaxing. For Dinner tonight Grilled BBQ Chicken Breasts w/ Sliced potatoes and Baked Beans. We had this same Meal about a month ago and Mom really enjoyed it so we are having it again!

I had picked up a package of Katie’s Best Skinless and Boneless Chicken Breasts at Meijer and had it in the freezer, laid the package in the fridge overnight to thaw. For the BBQ Sauce I’m using Kraft Hickory Smoke BBQ Sauce. I’m seasoning it with Morton’s Lite Salt and Ground Black Pepper. I went out and fired the grill up first. Next I sprayed the Chicken with Pam Non Stick Cooking Spray on both sides of the Chicken Breast, then seasoned them with the Salt and Pepper and waited for the Grill to heat.

 

With the Grill ready I started. Added the Chicken and shut the lid on the grill. I let the chicken cook for 7 minutes, then used the tongs to flip the breasts over. Grilled for another 7 minutes longer. With about 1 minute of cooking time left I basted the Chicken with the Kraft Hickory Smoke BBQ Sauce and finished cooking. Checked temperature of the Chicken with a thermometer reads it read just a tad over 165°. The Chicken came out fantastic! Moist and flavorful. First time using the Kraft Sauce and it was excellent!

 

 

As the Chicken was cooking I prepared the side dishes. For one side to go with the Chicken I prepared A can of Meijer Sliced Potatoes. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through and done!

 

 

 

Then for another side I prepared a can of Bush’s Country Style Baked Beans. Just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Bush’s Beans! I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. And Dinner is served! The Chicken was spot on and the Potatoes and Beans work perfect with the BBQ Chicken. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Stick Pretzels with a Diet Dr. Pepper to drink. Take care all!

Leftover Chicken and Dumplings and Cornbread!

Today’s Menu: Leftover Chicken and Dumplings and Cornbread

 

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. Partly sunny and 74 degrees outside today, 80 degree weather and dry on the way! I had to stick close to the phone and house. We are having trouble with our phone and cable TV and I had to wait around for the repairman to call and arrive. It was finally dry enough for them to mow our grass, and it needs it! It’s been so wet out that you couldn’t mow it. Did a few things around the house. For Dinner tonight its Leftover Chicken and Dumplings! No way these leftovers were going to go to waste! Mom makes the best Chicken and Dumplings there is! I have many an old room mate through the years that will back that up. I left the original post from yesterday for recipe and intsruction. Take care all!

My Mom is making her Chicken and Dumplings for Dinner Tonight! She used Bisquick Heart Smart Mix for the Dumplings and Tyson Split Chicken Breasts for the Chicken. She first made the Dumplings using a recipe found on Bisquick Boxes. Made those and set them aside until ready to use. My Grandmother and Mom both have used this same recipe since it came out on the Bisquick boxes.

 

For the Chicken. She boiled the Chicken Breasts in a pot until they were done adding more water to them twice. After the Chicken was cooked she removed them from the pot and roughly shredded it. Returned it to the pot of Broth or Stew and added the Dumplings, reducing the heat. Cooked the two together uncovered for 10 minutes and then another 12 minutes covered until they were done.

As I said these Dumplings just melt in your mouth! Just incredible flavor with the Chicken being moist and adding it’s flavor. Plus that incredible and thick broth that’s created while its all cooking is the thing that ties it all together! I can’t have these often, having Diabetes 2, but once in a while is just fine! It’s hard to resist these pillowy Dumplings of goodness!

 

As the Chicken and Dumplings were cooking I made the Cornbread. I made a small Cast iron Skillet of Cornbread. As always I used Martha White Corn Meal Mix, something I think I could eat everymeal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight! For Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels and a Sprite Zero to drink.

Today’s Menu: Chicken and Dumplings and Cornbread

 

 

For Breakfast this morning I Scrambled a couple of Eggs, heated up a couple of Johnsonville Turkey Breakfast Sausage Links, toasted a Thomas Light 100% Whole Grain English Muffin that I topped with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Rain showers on and off and 64 degrees outside. I got out my mask and gloves and headed off to Home Depot. I was going to buy a battery weed trimmer but they were already sold out. I’ll try again some time. Did a few things around the house. Anyway a real Dinner treat tonight! My Mom is making her melt-in-your mouth Chicken and Dumplings and some Cast Iron Skillet Cornbread.

Tomatillo Bean and Chicken Chili
A hearty and flavorful chicken chili made with fresh tomatillos and traditional chili seasonings.

Recipe Ingredients:
2 tablespoons canola oil
1 large onion, diced
2 cloves garlic, minced
3 chicken breasts, cubed into bite size pieces
8 tomatillos, husked and finely chopped
1 jalapeño pepper, seeded and finely diced
1 tablespoon lime juice
1 teaspoon ground coriander
1 teaspoon ground cumin
1 tablespoon chili powder
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 cups chicken broth
2 (19-ounce) cans cannellini beans
2 tablespoons freshly chopped cilantro

Cooking Directions:
1 – Pour canola oil into large saucepan. Sauté onion and garlic over low heat for 1 to 2 minutes. Add chicken and continue to cook until chicken is lightly browned, about 4 to 5 minutes.
2 – Combine tomatillos, jalapeño, lime juice, coriander, cumin, chili powder, salt, pepper, chicken broth, cannellini beans and chopped cilantro with chicken. Mix well, cover saucepan and cook over medium-low heat for 25 to 30 minutes, until mixture has thickened.
3 – Garnish with cilantro and serve.
Makes 8 (1 cup) servings.

After Breakfast I went to McDonald’s to pick up Breakfast for Mom. Partly Cloudy and 65 drees out today. Gave the grill a good cleaning. Took it apart and cleaned the burners and cleaned the shell. Week 5 of our home isolation this week. For Dinner tonight Grilled BBQ Chicken Breasts w/ Sliced potatoes and Baked Beans.

Today’s Menu: Cast Iron Baked Chicken w/ Sliced New Potatoes, Cut Green Beans, and Johnnny Cakes

 

 

For Breakfast this morning I toasted a Thomas Light 100% Multi Grain English Muffin and topped it with a Poached Egg. I also fried up 2 Jennie – O Turkey Breakfast Sausage Links and had a cup of Bigelow Decaf Green Tea. Partly cloudy and 49 degrees out today. Not too bad for late December! After Breakfast I went to Kroger to pick up a couple of last minute Gift Cards for Christmas. No more Christmas shopping, done! Stopped and got gas and then hit the car wash, my car needed it! Spent the rest of the afternoon watching Football and some Basketball. For Dinner tonight I prepared Cast Iron Baked Chicken w/ Sliced New Potatoes, Cut Green Beans, and Johnnny Cakes.

 

I cam across the recipe for the Cast Iron Baked Chicken on a episode of Cooks Country on our local PBS Channel. It looked and sounded delicious so that’s our Dinner tonight. To prepare it I’ll need; Hungarian Paprika, Salt, Pepper, Onion Powder, Granulated Garlic, 2 Chicken Breasts, Blue Bonnet Butter, Thyme, and a Cast Iron Skillet. The original recipe calls for a 3 pound bone-in chicken that you cut up. But being just me and Mom the 2 Chicken Breasts were enough. I also had to substitute Dried Thyme for the fresh Sprigs of Thyme. To prepare it; I got a Cast Iron Skillet and added 2 tablespoons of Extra Light Olive Oil to it and sit in the oven. I then heated the oven on 450 degrees. I love using Cast Iron Skillets. You can cook or sear something in it on the stove and then move it right into a heated oven. Plus they keep their heat so good. I have 5 different sized Cast Iron Skillets! As the Cast Iron and oven were heating I combined the Paprika, Salt, Pepper, Onion Powder, Dried Thyme, and Granulated Garlic in a bowl. Pat the Chicken Breasts dry with paper towels and sprinkled all over with the Spice Mixture.

 

When the oven is heated, remove hot skillet. Added Butter, let it melt. Placed the chicken in skillet. Transfer skillet to oven and bake for 15 minutes. Removed the skillet from oven and flip chicken. Return the skillet to oven and bake until breasts register 160 degrees. Let chicken rest in skillet for 10 minutes. Transfer chicken to a plate and spoon the pan juices over top. Its ready to serve! The Chicken came out moist and flavorful, browned up perfect! I’ve left the original recipe at the end of the post.

 

 

 

For one side I heated up a can of Del Monte Sliced New Potatoes. I use a lot of Del Monte Vegetable Products, always delicious and store a lot longer than fresh Vegetables. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through.

 

 

 

I also opened up a can of Del Monte Cut Green Beans. I heated them up in a small sauce pan on medium heat. Stirred often until heated, then served.

 

 

 

 

And finally I made some Johnny Cakes. To prepare them all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Light Olive Oil, 1 3/4 cups Low Fat Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. These Johnny Cakes work perfect with any meal! Excellent Dinner tonight. I’ll add this Chicken Recipe to my Keeper List for sure! The Chicken comes out so moist and delicious! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Cook’s Country Cast Iron Baked Chicken

INGREDIENTS
2 teaspoons paprika
2 teaspoons salt
1 teaspoon pepper
½ teaspoon onion powder
½ teaspoon granulated garlic
3 pounds bone-in chicken pieces (2 split breasts, 2 drumsticks, 2 thighs, and 2 wings with wingtips discarded), trimmed
2 tablespoons unsalted butter
6 sprigs fresh thyme

BEFORE YOU BEGIN
Our favorite cast-iron skillet is the Lodge Classic Cast Iron Skillet, 12″. Note that the cast-iron skillet should be preheated along with the oven; this is key to getting crispy, well-browned skin. You will not achieve the same type of browning with a conventional skillet. A 4-pound whole chicken will yield the 3 pounds of parts called for in the recipe. Our favorite paprika is The Spice House Hungarian Sweet Paprika.
INSTRUCTIONS

1 – Adjust oven rack to middle position, place 12-inch cast-iron skillet on rack, and heat oven to 450 degrees. Combine paprika, salt, pepper, onion powder, and granulated garlic in bowl. Pat chicken dry with paper towels and sprinkle all over with spice mixture.

2 – When oven is heated, carefully remove hot skillet. Add butter, let it melt, and add thyme sprigs. Place chicken in skillet skin side down, pushing thyme sprigs aside as needed. Transfer skillet to oven and bake for 15 minutes.

3 – Remove skillet from oven and flip chicken. Return skillet to oven and bake until breasts register 160 degrees and drumsticks/thighs register at least 175 degrees, about 15 minutes longer.

4 – Let chicken rest in skillet for 10 minutes. Transfer chicken to platter and spoon pan juices over top. Serve.
