Lime Grilled Chicken Recipe for Diabetics
Ingredients
1/4 cup fresh-squeezed lime juice (the juice ofapproximately of 2–3 small limes; do not uselime juice concentrate)
2 teaspoons corn oil
2 tablespoons chopped, fresh cilantro leaves
1 clove (or 1 teaspoon) minced garlic
1/2 teaspoon chili powder
2 four-ounce boneless, skinless chicken breast cutlets(alternatively, pound chicken breasts to 1/4-inch thickness with a meat mallet)
2 teaspoons grated lime peel

Directions
In a small bowl, whisk together lime juice, oil, cilantro, garlic, and chili powder. Pour into a large, zip-top bag. Add chicken cutlets and shake to coat well. Marinate at least 6–8 hours (or overnight) in the refrigerator, gently shaking the bag 2 or 3 times during marinating to recoat the chicken. Preheat grill to medium-high heat. Place chicken on grill rack and grill until juices run clear when meat is pierced with a fork, about 15 minutes. Discard remaining marinade. Sprinkle cooked chicken with lime peel. Chicken is tasty topped with salsa and served over rice, wrapped in warm flour tortillas, or sliced over salad greens.

Yield: 2 chicken cutlets.

Serving size: 1 chicken cutlet.

Today’s Menu: Tomato and Fresh Ricotta Chicken Breasts w/ Olive Oil and Italian Herb Linguine

 

 

For Breakfast this morning I toasted a Thomas English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. 85 degrees and a bit more humid, passing rain showers around the area. Well spent the day breaking up Half Runner Green Beans and helping Mom can 14 quarts! Plenty of Green Beans for a while. I’m glad I’ve learned how to can. Not a lot of people can anymore. For Dinner tonight I prepared Tomato and Fresh Ricotta Chicken Breasts w/ Olive Oil and Italian Herb Linguine.

 

 

 

I picked the Chicken up at Meijer, Katie’s Best Skinless and Boneless Chicken Breasts, and had the package in the freezer. Sat the package in the fridge overnight to thaw. To prepare it I’m seasoning the Chicken with Morton’s Lite Salt and Ground Black Pepper. I grabbed a skillet and sprayed it with Pam Non Stick Cooking Spray and a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat.

 

 

 

 

 

When the skillet was heated I added the Chicken Breasts. Cooked the Chicken for 7 minutes a side. With a couple of minutes of cooking time left I turned the heat down to medium low and added the jar of Prego Cooking Sauce. Flipped the Chicken one last time with a minute left. I cooked it an extra minute to let those flavors of the Tomato and Fresh Ricotta marinate the Chicken Breasts. Checked temperature of the Chicken with a thermometer and it read just a tad over 165°. Removed the skillet from the heat and let it sit a couple of minutes until the Pasta finished. I came across the Prego Cooking Sauce – Tomato and Fresh Ricotta Sauce at Meijer last week, looking forward to trying their other Sauces!

 

 

 

I’m serving the Chicken with Pasta Roni Rustic Recipes Olive Oil and Italian Herb. I’ve had this many times but usually with Shrimp. Easy to preapre and makes a delicious Pasta Dish, I’m preparing this as my Chicken is cooking. To prepare it In medium saucepan, bring Water and Olive Oil to a boil. Then slowly stir in Pasta and Special Seasonings. Return to a boil. Reduce the heat to medium. Boil uncovered, 10-12 min., stirring frequently. The Sauce will be thin so just let it stand for 3min. to thicken. Pasta Done! I love these Rice A Roni and Pasta Roni products! Added a sprinkle of Morton’s Light Salt to it.

 

 

 

 

To serve it I made a bed of the Pasta in a bowl and top it with a one of the Chicken Breasts and the Sauce. Topped it all with some Kraft Reduced Fat Grated Parmesan Cheese. I really like this Prego Cooking Sauce! Excellent flavor and Seasoning, perferct for the Chicken. Then I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. For Dessert later a bowl of South Carolina grown fresh sliced Peaches, love these Peaches!

Pasta Roni Rustic Recipes Olive Oil and Italian Herb

Inspired by the flavors of Italy, our Pasta Roni® Rustic Recipes Olive Oil and Italian Herb combines linguini with olive oil, Italian herbs and other natural flavors. This mouth-watering side dish contains no preservatives and no artificial flavors.

Preparation:

Chicken Cacciatore
Ingredients
2 cups All-Purpose Flour for coating
1/2 teaspoon Sea Salt
1/4 teaspoon Ground Black Pepper
2 Chicken Breasts and 4 Chicken Thighs, cut into pieces
2 tablespoons Extra Light Olive Oil
1 Onion, chopped
2 cloves Garlic, minced
1 Red Bell Pepper, chopped
1 (14.5 ounce) can Diced Italian Tomatoes
1/2 teaspoon dried Oregano
1 teaspoon dried Rosemary, crushed
1/4 cup coarsely chopped fresh Basil Leaves
1/2 cup White Wine
2 cups fresh Mushrooms, quartered
Sea Salt and Pepper to taste

Directions
1 – Combine the flour, salt and pepper in a plastic bag. Shake the chicken pieces in flour until coated. Heat the oil in a large skillet (one that has a cover/lid). Fry the chicken pieces until they are browned on both sides. Remove from skillet.
2 – Add the onion, garlic and bell pepper to the skillet and saute until the onion is slightly browned. Return the chicken to the skillet and add the tomatoes, oregano, rosemary, basil, and wine. Cover and simmer for 30 minutes over medium low heat.
3 – Add the mushrooms and salt and pepper to taste. Simmer for 10 more minutes. Dinner is served!

Grilled BBQ Chicken Breasts w/ Roasted Butternut Squash and Green Beans

Today’s Menu: Grilled BBQ Chicken Breasts w/ Roasted Butternut Squash and Green Beans

 

 

For Breakfast this morning I was starving so I made favorite of mine, Hash Browns and Diced Ham. I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham, and had a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald’s to pick up Breakfast for Mom. Rain and thunderstorms out today, high of 82 degrees. Not a lot going on today with the rain outside. Did a few things around the house. For Dinner tonight its Grilled BBQ Chicken Breasts w/ Roasted Butternut Squash and Green Beans.

 

 

 

 

I picked the Chicken up at Meijer, Katie’s Best Skinless and Boneless Chicken Breasts, and had the package in the freezer. Sat the package in the fridge overnight to thaw. I had the Dinner Trio a while back and it was so good having it again tonight. For the BBQ Sauce I’m using Kraft Hickory Smoke BBQ Sauce. I’m seasoning the Chicken with Morton’s Lite Salt and Ground Black Pepper. I went out and fired the grill up first. Next I sprayed the Chicken with Pam Non Stick Cooking Spray on both sides of the Chicken Breast, then seasoned them with the Salt and Pepper and waited for the Grill to heat.

 

 

 

 

 

With the Grill ready I started. Added the Chicken and shut the lid on the grill. I let the chicken cook for 7 minutes, then used the tongs to flip the breasts over. Grilled for another 7 minutes longer. With about 1 minute of cooking time left I basted the Chicken with the Kraft Hickory Smoke BBQ Sauce and finished cooking. Checked temperature of the Chicken with a thermometer reads it read just a tad over 165°. The Chicken came out fantastic! Moist and flavorful. Love that Kraft Sauce, and it was excellent! The Katie’s Best Skinless and Boneless Chicken Breasts has become our favorite Chicken Breasts.

 

 

 

 

 

Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious Butternut Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

 

 

 

 

 

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, add the Walnut Pieces, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash. I really love Butternut Squash!

 

 

 

 

 

As the Squash was roasting I had also opened up a Mason Jar of our Canned Green Beans, canned last summer, and had them cooking. Love these Beans, they taste just as fresh as the day we bought them. Just heat them up in a large sauce pan and serve. Fresh Green Beans any time you want. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Diabetic Lemon Chicken Recipe
Preparation time: 5 minutes. Cooking time: 30 minutes.

Ingredients
Nonstick cooking spray
1 pound boneless, skinless chicken breast (4 pieces)
1 tablespoon olive oil
1 large lemon
1/2 teaspoon onion powder
1/2 teaspoon white pepper
1 1/2 teaspoons oregano

Directions
Preheat oven to 375˚F. Tear off a piece of aluminum foil that’s large enough wrap up all four pieces of chicken. Spray the aluminum foil with nonstick cooking spray (on one side only), and lay the chicken breasts on the sprayed foil. Drizzle with olive oil. Grate 1 tablespoon of lemon zest and set aside. Juice the lemon, removing the seeds. Pour lemon juice over chicken, then sprinkle chicken with lemon zest, onion powder, white pepper, and oregano. Fold the aluminum foil over the chicken and roll the edges of the foil together to make a sealed packet. Place packet on a jelly roll pan or in a large, shallow casserole dish. Bake 30 minutes. Remove from oven and carefully open foil, using tongs to remove chicken to serving plate.

Yield: 4 servings.

Serving size: One 4-ounce breast.

Garden Chicken
Chicken breasts are quick-braised in an Italian-seasoned tomato and white wine sauce with fresh asparagus.

Recipe Ingredients:
2 tablespoons olive oil
6 boneless, skinless chicken breast halves
1 3/4 cups (14.5-ounce can) recipe-ready diced tomatoes, undrained (1 3/4 cups)
1 cup chicken broth or dry white wine
1 (6-ounce) can Italian tomato paste (2/3 cup)
2 tablespoons chopped fresh flat-leaf parsley or 1 teaspoon dried parsley, crushed
1/4 teaspoon salt
1 pound fresh asparagus, stemmed and cut into 2-inch pieces

Cooking Directions:
1 – Heat olive oil in large skillet over medium-high heat. Add chicken; cook for 3 to 4 minutes on each side or until browned. Push chicken to side of skillet.
2 – Add tomatoes with juice, broth, tomato paste, parsley, and salt to skillet; stir. Add asparagus; spoon sauce over chicken and asparagus. Bring to a boil. Reduce heat to low; cover. Cook for 20 to 25 minutes or until chicken is no longer pink in center.
Makes 6 servings.

After Breakfast I went to McDonald’s to pick up Breakfast for Mom. Partly cloudy and 76 degrees outside. After Lunch I got my cart out of the shed and planted 3 plants Mom had bought yesterday. Swept out the shed and straightened it up before putting the cart back up. For Dinner tonight its Grilled BBQ Chicken Breasts w/ Roasted Butternut Squash and Green Beans.

 

 

 

 

I picked the Chicken up at Meijer the other day, Katie’s Best Skinless and Boneless Chicken Breasts. For the BBQ Sauce I’m using Kraft Hickory Smoke BBQ Sauce. I’m seasoning it with Morton’s Lite Salt and Ground Black Pepper. I went out and fired the grill up first. Next I sprayed the Chicken with Pam Non Stick Cooking Spray on both sides of the Chicken Breast, then seasoned them with the Salt and Pepper and waited for the Grill to heat.

 

 

 

 

 

With the Grill ready I started. Added the Chicken and shut the lid on the grill. I let the chicken cook for 7 minutes, then used the tongs to flip the breasts over. Grilled for another 7 minutes longer. With about 1 minute of cooking time left I basted the Chicken with the Kraft Hickory Smoke BBQ Sauce and finished cooking. Checked temperature of the Chicken with a thermometer reads it read just a tad over 165°. The Chicken came out fantastic! Moist and flavorful. Love that Kraft Sauce, and it was excellent!

 

 

 

 

 

Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious Butternut Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

 

 

 

 

 

To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, add the Walnut Pieces, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash. I really love Butternut Squash!

 

 

 

 

 


As the Squash was roasting I had also opened up a Mason Jar of our Canned Green Beans, canned last summer, and had them cooking. Love these Beans, they taste just as fresh as the day we bought them. Just heat them up in a large sauce pan and serve. Fresh Green Beans any time you want. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Grilled BBQ Chicken Breasts w/ Sliced potatoes and Baked Beans

 

 

For Breakfast on this Sunday Morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. And that’s how you start a Sunday Morning! After Breakfast I went to McDonald’s to pick up Breakfast for Mom and stopped by Dunkin Donuts and picked up a couple of Donuts for her. Mom usually goes to Church but she had some pre-cancer places taken off her face, she’s still recovering so she stayed home today. Sunny and 71 degrees out today! Got the cart out after Lunch and did some yard work. Then I helped out and older neighbor get caught up with his. Really nice out today! As the Chicken was cooking I prepared the side dishes. For one side to go with the Chicken I prepared A can of Meijer Sliced Potatoes. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through and done!

 

 

 

 

 

Ten for another side I prepared a can of Bush’s Country Style Baked Beans. Just open the can and empty the Beans Into Saucepan. Heat To Simmer until heated through. Love these Bush’s Beans! I also baked a loaf of La Baguetterie Roasted Garlic Oval Bread. And Dinner is served! The Chicken was spot on and the Potatoes and Beans work perfect with the BBQ Chicken. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.
