PARMESAN CHICKEN TOPPED WITH SPINACH AND ALMONDS
Recipe for Parmesan Chicken Topped with Spinach and Almonds from our Main Dishes recipe section.

Ingredients

1-1/2 tablespoons Hellmann’s or Best Foods Real Mayonnaise
1 cup loosely packed baby spinach leaves, chopped
1 tablespoon chopped almonds
2 teaspoons grated Parmesan cheese
1 teaspoon plain dry bread crumbs
4 boneless, skinless chicken breasts (about 1 pound)

Directions

1 – Preheat oven to 425F.
2 – In medium bowl, combine all ingredients except chicken.
3 – On baking sheet, arrange chicken.
4 – Evenly top with mayonnaise mixture.
5 – Bake 15 minutes or until chicken is thoroughly cooked.

Recipe Yield: Yield: 4 servings

CHICKEN SALAD STUFFED AVOCADO
Recipe for Chicken Salad Stuffed Avocado from our Main Dishes recipe section.

Ingredients

2 medium avocados
Juice of 1 lime
2 cups chopped cooked chicken breast, about 1/2-inch pieces
2 Tbsp. chopped red cabbage
2 Tbsp. diced carrots
2 Tbsp. diced radish
4 tsp. spicy brown mustard
1/2 tsp. garlic powder
1 tsp. extra virgin olive oil
Salt and freshly ground black pepper, to taste
Lime wedges for garnish

Directions

1 – Carefully cut avocados in half lengthwise. Remove pits. Scoop out pulp into mixing bowl and set avocado shells aside.
2 – Add lime juice and mash avocado. Add chicken, cabbage, carrots, radish, mustard, garlic powder, olive oil, salt and pepper to taste and mix gently to combine.
3 – Spoon mixture into avocado shells, mounding in the center and serve immediately with lime wedges. Or serve immediately on whole-grain bread for sandwiches or whole-wheat tortilla for wraps.

Recipe Yield: Makes 4 servings.

Chicken Skillet With Pearl Onions
If you’ve been craving onions, don’t cry! You’ll love this recipe. Juicy chicken breasts combine with pearl onions, new potatoes, and a variety of herbs and spices for a satisfying dinner.

Ingredients

1/2 teaspoon salt

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon chili powder

1/2 teaspoon dried oregano

4 boneless skinless chicken breasts

2 cups water

1 pound small new potatoes

8 ounces fresh pearl onions, blanched and peeled, or frozen pearl onions, thawed

2 tablespoons olive oil, divided

Directions
Yield: 4 servings
Serving size: 1 chicken breast and 1 cup potatoes and onions

1. Combine salt, onion powder, garlic powder, chili powder, and oregano in small bowl; sprinkle evenly over both sides of chicken.

2. Combine water, potatoes, and onions in large nonstick skillet; bring to a boil over medium-high heat. Cover and boil 12 minutes, or until potatoes are tender when pierced with fork. Drain well.

3. Add 1 tablespoon oil to same skillet; heat over medium-high heat until hot. Add chicken; cook 4 minutes and turn. Add potatoes and onions; drizzle with remaining 1 tablespoon oil. Cover and cook 4 to 5 minutes, or until chicken is no longer pink in center and onions are slightly browned, stirring occasionally. Let stand 3 minutes before serving.

Note: Always use tongs to turn chicken pieces over during cooking. This prevents the surface from being pierced, keeping the natural juices sealed inside.

Orange Jalapeño Chicken Party Pinwheels
Served with a refreshing grapefruit salsa, these zesty pinwheels are sure to delight.

Recipe Ingredients:
1 (8-ounce) package cream cheese, softened
1 tablespoon jalapeno chilies, chopped
2 tablespoons orange marmalade
1 tablespoon green onions, chopped
1 tablespoon fresh parsley, chopped
6 (10-inch) flour tortillas
4 baked or grilled chicken breasts, cut in thin strips
1 avocado, sliced
2 cups fresh spinach, cut in very thin strips

For Grapefruit Salsa
1 cup pink Florida grapefruit, sectioned
1 cup white Florida grapefruit, sectioned
2 tablespoons green onions, chopped
2 tablespoons fresh parsley, minced
2 tablespoons raspberry vinegar
2 teaspoons brown sugar
2 tablespoons chili sauce
2 drops Tabasco sauce
Black pepper, Lawry’s seasoning salt, and rum to taste

Cooking Directions:
1 – Mix softened cream cheese with jalapeno chiles, orange marmalade, green onions and parsley.
2 – Spread mixture on middle of flour tortillas, making sure to leave at least 1/2 inch around edge.
3 – Top with several thin chicken strips.
4 – Top with avocado and shredded spinach.
5 – Top with dollop of salsa.
6 – Roll tortillas and refrigerate until chilled (approximately 4 hours).
7 – Cut tortillas into 1 inch slices.
8 – Arrange on plate and garnish with Florida citrus fruit.
Makes approximately 48 pinwheels.

Creamy Baked Chicken with Artichokes and Mushrooms
With only 14 grams of carbohydrate per serving, this dish is sure to delight your taste buds — and your blood sugar!

Ingredients
6 boneless skinless chicken breasts (about 4 ounces each)
1 1/2 teaspoons paprika
1 1/2 teaspoons dried thyme
1/2 teaspoon salt
1/2 teaspoon black pepper
1 can (14 ounces) artichokes packed in water, drained
1 tablespoon butter
1 package (8 ounces) sliced cremini mushrooms
2 tablespoons all-purpose flour
3/4 cup low-sodium chicken broth
1/2 cup fat-free half-and-half

Directions
Yield: 6 servings
1 – Preheat oven to 375°F.
2 – Place chicken in 13X9-inch baking dish. Combine paprika, thyme, salt, and pepper in small bowl; mix well. Reserve 1 teaspoon seasoning mixture; set aside. Sprinkle remaining seasoning mixture evenly over chicken. Cut artichokes in half; arrange around chicken.
3 – Melt butter in large saucepan over medium heat. Add mushrooms and reserved 1 teaspoon seasoning mixture; cook and stir 5 minutes or until tender. Sprinkle flour over mushrooms; cook and stir 1 minute. Stir in broth; simmer 3 minutes or until thickened. Stir in half-and-half; cook 1 minute. Pour evenly over chicken and artichokes.
4 – Bake 30 minutes or until no longer pink.

Serving Suggestion: Serve with a steamed green vegetable such as asparagus, broccoli, or green beans.

Chicken, Peach, and Cabbage Salad
For days when you’re craving a homemade meal but don’t have much time, this low-carb and colorful salad comes together quickly and provides a hearty dose of protein to keep

you fueled.

Ingredients
1 1/2 cups diced cooked chicken breast, chilled
1 cup shredded red cabbage
1 medium ripe peach, peeled, pitted, and cut into 1-inch pieces or 1 small mango, peeled and diced
1 stalk celery, diced
1/4 cup fat-free plain yogurt or 2 tablespoons fat-free yogurt plus 2 tablespoons fat-free sour cream
3 tablespoons peach nectar or orange juice
1/4 teaspoon curry powder
1/8 teaspoon salt
1/8 teaspoon black pepper

Directions
Yield: 3 servings
Serving size: 1 cup

1. Combine chicken, cabbage, peach, and celery in medium bowl. Toss gently but well.

2. Stir together yogurt, juice, curry powder, salt, and pepper in small bowl. Stir into salad mixture. Mix gently but well.

CHUNKY CHICKEN, VEGETABLE AND ROSEMARY STEW

Ingredients

1 Tbsp canola oil
12 oz boneless chicken breasts, cut into 1-inch pieces
1 Tbsp canola oil
1 medium onion, cut in 8 wedges
3 medium carrots, quartered lengthwise and cut into thirds
1 medium celery stalk, cut into 1-inch (2.5-cm) pieces
2 cups water
2 dried bay leaves
1/4 tsp crushed red pepper flakes
1 can (15 oz) reduced-sodium navy beans, rinsed and drained
1 cup grape tomatoes, quartered
1/2 cup chopped fresh Italian parsley
1 Tbsp chopped fresh rosemary
3/4 tsp salt

Directions

1 – In Dutch oven, heat 1 Tbsp canola oil over medium-high heat. Add chicken and cook about 3 minutes per side or until it begins to brown. (Center will still be slightly pink.) Remove from oven and set aside.
2 – Add remaining 1 Tbsp canola oil, onion, carrot and celery. Saute for 5 minutes or until just beginning to lightly brown on edges, stirring frequently. Add water, bay leaves and pepper flakes. Bring to boil over high heat. Reduce heat to medium low and simmer, covered, 20 minutes or until vegetables are tender.
3 – Stir in chicken, beans, tomatoes, Italian parsley, rosemary and salt. Cover and cook 5 minutes or until tomatoes are tender and chicken is cooked.
NOTES:
Here’s a great one-pot meal to warm and soothe a hungry, weary body after a hard day.

Recipe Yield: Yield: 6 servings.

Leftover Chicken and Dumplings

Today’s Menu: Leftover Chicken and Dumplings and Cornbread

 

For Breakfast on I toasted a Thomas Light English Muffin that I topped with I Can’t Believe It’s Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. 55 degrees and mostly cloudy out today. Got the cart and yard tools out of the shed and raked the yard and cleaned up around the yard and deck. Helped Mom put away our indoor Christmas Decorations. Back to normal! For Dinner tonight Leftover Chicken and Dumplings and Sides. I just couldn’t let these Leftovers go to waste! I’ve left the original post from yesterday below for directions and descriptions. Take Care All!

 

My Mom is made her Chicken and Dumplings for Dinner yesterday! She used Bisquick Heart Smart Mix for the Dumplings and Tyson Split Chicken Breasts for the Chicken. She first made the Dumplings using a recipe found on Bisquick Boxes. Made those and set them aside until ready to use. My Grandmother and Mom both have used this same recipe since it came out on the Bisquick boxes. Not the best Dinner for calories and carbs but having it a couple times a year isn’t too bad!

 

For the Chicken. She boiled the Chicken Breasts in a pot until they were done adding more water to them twice. After the Chicken was cooked she removed them from the pot and roughly shredded it. Returned it to the pot of Broth or Stew and added the Dumplings, reducing the heat. Cooked the two together uncovered for 10 minutes and then another 12 minutes covered until they were done.

 

As I said these Dumplings just melt in your mouth! Just incredible flavor with the Chicken being moist and adding it’s flavor. Plus that incredible and thick broth that’s created while its all cooking is the thing that ties it all together! I can’t have these often, having Diabetes 2, but once in a while is just fine! It’s hard to resist these pillowy Dumplings of goodness!

 

 

We also opened up a quart jar of the Canned Green Beans. I love these Green Beans! And also sas the Chicken and Dumplings were cooking I made Mom Cornbread, Mom loves Cornbread! I made a small Cast iron Skillet of Cornbread. As always I used Martha White Corn Meal Mix, something I think I could eat every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight! For Dessert later a Jello Sugar Free Dark Cherry Jello Cup.

Today’s Menu: Christmas Dinner – Chicken and Dumplings and Cornbread

 

First off, a Merry Christmas to Everyone! For Breakfast on this Christmas Morning I prepared a Potatoes and Ham Breakfast Skillet. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham. Just cooked the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Off the Block Shredded Cheddar Cheese. I also had a cup of Bigelow Decaf Green Tea. A very Delicious way to kick-off Christmas! No White Christmas around here. It’s 66 degrees and rain. So not a thing going on today except cooking and relaxing. I gave Mom a hand in the Kitchen preparing Christmas Dinner. So for Dinner tonight my Mom is making her melt-in-your mouth Chicken and Dumplings and some Cast Iron Skillet Cornbread.

 

My Mom is making her Chicken and Dumplings for Christmas Dinner! She used Bisquick Heart Smart Mix for the Dumplings and Tyson Split Chicken Breasts for the Chicken. She first made the Dumplings using a recipe found on Bisquick Boxes. Made those and set them aside until ready to use. My Grandmother and Mom both have used this same recipe since it came out on the Bisquick boxes. Not the best Dinner for calories and carbs but having 1 time every 4 months or so doesn’t hurt.

 

For the Chicken. She boiled the Chicken Breasts in a pot until they were done adding more water to them twice. After the Chicken was cooked she removed them from the pot and roughly shredded it. Returned it to the pot of Broth or Stew and added the Dumplings, reducing the heat. Cooked the two together uncovered for 10 minutes and then another 12 minutes covered until they were done.

 

 

As I said these Dumplings just melt in your mouth! Just incredible flavor with the Chicken being moist and adding it’s flavor. Plus that incredible and thick broth that’s created while its all cooking is the thing that ties it all together! I can’t have these often, having Diabetes 2, but once in a while is just fine! It’s hard to resist these pillowy Dumplings of goodness!

 

We also opened up a quart jar of the Canned Green Beans. I love these Green Beans! Also made some Bob Evan’s Mashed Potatoes and also as the Chicken and Dumplings were cooking I made Mom Cornbread, Mom loves Cornbread! I made a small Cast iron Skillet of Cornbread. As always I used Martha White Corn Meal Mix, something I think I could eat every meal. I like a nice fresh and hot slice with Butter on it. When I make this I just make it by the instructions on the package but I only use half the ingredients because I use a small cast iron skillet to make it. I use Egg Beaters and Extra Virgin Oil instead of Eggs and Vegetable Oil the recipe calls for. Bake at 450 degrees for about 25 minutes and you have some golden brown piping hot Cornbread! If you use a small cast iron skillet just cut the recipe in half and it comes out just right for the skillet size. What a dinner tonight! For Dessert later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink. Merry Christmas Everyone!
