Today’s Menu: Turkey and Black Bean Mini Street Tacos and Refried Beans

 

 

 

For Breakfast this morning I prepared a Poached Egg that I served on a toasted Thomas Light English Muffin. Also had a cup of Bigelow Decaf Green Tea. Partly cloudy with a passing shower, 89 degrees and a little humid out today. Took it easy today, allergies and sinuses are bad today! My head feels like those passing thunderstorms! Did a few things around the house then rested the rest of the afternoon. For Dinner tonight, Turkey and Black Bean Street Tacos and Refried Beans.

 

 

 

 

When making Turkey Tacos I always use Jennie -O Extra Lean Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. But Jennie -O Products are difficult to find in this area. Meijer is the only place that now carries it, and they have an okay selection of it. So I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O, Bush’s Beans, and Old El Paso together make one fine Taco!

 

 

 

 

For the rest of my toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Sliced Jalapenos, Shredded Lettuce, and Mission Street Taco Flour Tortillas. I usually use the Old El Paso Stand N’ Stuff Taco Shells (Whole Grain Corn) when making Tacos but tonight I’m using Mission – Street Tacos Flour Tortillas. First time using these and not the last! These are so good and taste so fresh. Love these Taco Nights. I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom.

This week’s It’s Chili, Chowder, or Stew Saturday is a recipe for Turkey and Black Bean Chili. A combination of two of my favorite foods, Ground Turkey and Black Beans. You’ll also need Onion, Tomatoes, and Spices. Sounds like a perfect recipe for these cold Winter Days. Enjoy and Make 2019 a Healthy One!

Turkey and Black Bean Chili
Ingredients
1 tablespoon Extra Light Olive Oil
1 Onion, diced
2 cloves Garlic, minced
1 pound Jennie – O Ground Extra Lean Turkey Breast
3 (15 ounce) cans reduced sodium Black Beans, undrained
1 (14.5 ounce) can crushed Tomatoes
1 1/2 tablespoons Chili Powder
1 teaspoon Ground Cinnamon
1 tablespoon dried Oregano
1 tablespoon dried Cilantro Leaves

Directions
* Heat the oil in a large heavy pot over medium heat; cook onion and garlic until onions are translucent. Add turkey and cook, stirring, until meat is brown. Stir in beans, tomatoes, chili powder, oregano, basil and vinegar. Reduce heat to low, cover and simmer 60 minutes or more, until flavors are well blended.

Today’s Menu: Turkey and Black Bean Tostadas

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Cloudy and 58 degrees out today. Then after Lunch I got the leaf blower out and cleaned off the deck and driveway areas. Did a few fix-it jobs around the house also. For Dinner tonight its Turkey and Black Bean Tostadas.

 

 

I believe it’s the first time I’ve prepared Old El Paso Tostadas (Shells). So to start I preheat the oven at 325 degrees. Next I got a baking sheet, unwrapped the Shells, and placed the Shells in a single layer on the sheet. Then baked them for 6 minutes.

 

 

 

 

 


When making Turkey Tacos or Tostadas I love using Jennie -O Ground Turkey Breast! Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Extra Light Olive Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added, 1 can OF Bush’s Chili Beans – Black Beans, 1 package of Old El Paso Low Sodium Taco Seasoning and 2/3 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Tostado!

 

For toppings I used; Sargento Reduced Fat 4 Cheese Mexican, Sliced Black Olives, Sliced Green Olives, Ortega Smoky Chipotle Taco Sauce, Daisy Light Sour Cream, Sliced Jalapenos, and Shredded Lettuce. For my Tostado Shells I used the Old El Paso Tostado Shells (Gluten Free). Add the Jennie – O Turkey and Black Bean Mix and you got you some mouth watering and delicious Tostados! I also heated up a can of Old El Paso Fat Free Refried Beans for a side for Mom and Dad. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: Turkey and Black Bean Tacos

 
For Breakfast this morning I fried up some Jennie – O Turkey Breakfast Sausage Links, SimTurkey and Black Bean Tacos 003ply Potatoes Shredded Hash Browns, and toasted a slice of Healthy Life Whole Grain Bread. Also had the morning cup of Bigelow Decaf Green Tea. After Breakfast I headed out for my yearly eye exam. Everything the same but I needed a new pair of glasses so I ordered them while there. While there, Mom needed a few things so I picked them up while there. We have some heavy storms moving into the area. They’ve already issued a severe thunderstorm, high wind and hail, and a Tornado watch for our area. Hope we avoid it! So for Dinner tonight I prepared Turkey and Black Bean Tacos.

Jennie -O and Old El Paso together make some fine Tacos!

And a note about my favorite dessert, Healthy Choice Dark Fudge Swirl Greek Yogurt. I went to Meijer yesterday and they told me that Healthy Life no longer produces the Dark Fudge Swirl! Sad, Sad, Day!

I’ll start off by wishing my Mom a “Happy Birthday”, she turns 88 today! I just hope if I reach that age that I’m able to get around and do things as good as she does. Love you Mom!! I made Breakfast this morning for all of us. I prepared what is quickly becoming our favorite Breakfast dish, Ham and Diced Potato Skillet.

 

 

 

 

Black Bean Chicken with Rice 009
I used Simply Potatoes Diced Steakhouse Potatoes and a package of Meijer Diced Ham. Using a Cast Iron Skillet I started by frying the Diced Potatoes. After about 9 minutes I then added the Diced Ham and stirred. In about 14 minutes it was ready! As the Potato/Ham was finishing I grabbed a small skillet and fried one Egg, Sunnyside Up. To serve made a bed of Potatoes and Ham and topped that with the Sunnyside Egg. Broke the Egg open and it just pulled the entire meal together! One hearty Breakfast and a favorite of Mom and Dad’s! After Breakfast I gave Mom her Birthday Presents and Birthday Cake. Afterwards I went to Meijer for a few items, I’m using Meijer more and more. For dinner tonight I tried a new recipe, Black Bean Chicken with Rice Recipe w/ Baked Italian Loaf Bread.

 

 

Black Bean Chicken with Rice 003
I came across this recipe in an issue of Simply Delicious (Taste of Home). Black Beans, Chicken, Rice and throw in Corn and Salsa I was sold For the Chicken I used Perdue Perfect Portions Chicken Breasts. I use the Perdue Perfect Portions Chicken Breasts quite often. They come in a package of 5 breasts and 2 types; Italian Seasoned and Plain Breasts. Anyway I grabbed 2 of the Breasts out of the freezer and let them thaw overnight in the fridge. To season the Chicken I’ll need 2 teaspoons Extra Virgin Olive Oil, 3 teaspoons Chili Powder, 1 teaspoon Ground Cumin, 1 teaspoon Pepper, and 1/4 teaspoon Sea Salt. To make the dish I’ll need; the Perdue Perfect Portions Chicken Breasts, 1 can Bush’s Low Sodium Black Beans, Sliced Black Olives, 1 container of Uncle Ben’s Natural Whole Grain Brown Rice, 1 can Del Monte Summer Crisp Golden Sweet Corn, and Kroger Organic Medium Salsa.

 

 

Black Bean Chicken with Rice 006
To prepare the dish In a small bowl, mix the seasonings; sprinkle over both sides of chicken. In a large nonstick skillet coated with Pam Cooking Spray, heat olive oil over medium heat. Brown the chicken on both sides. Add the beans, olives, corn and salsa to skillet; cook, covered, 10-15 minutes or until a thermometer inserted in chicken reads 165°. Remove chicken from pan; cut into slices. Serve with bean mixture and rice. Wow, INCREDIBLE! Another delicious recipe from Taste of Home! Just a fantastic combination of ingredients! Beans, Chicken, Olives, Rice, Corn, and the Salsa just seems to bring it altogether. Another one of those “Keeper Recipes”. Plus it’s a one pot meal, which I love, and easy cleanup. I also baked a loaf of Pillsbury Italian Loaf Bread. For dessert later a bowl of Breyer’s Carb Smart Chocolate Ice Cream.

 
Black Bean Chicken with Rice Recipe

Ingredients
3 teaspoons chili powderTaste of Home
1 teaspoon ground cumin
1 teaspoon pepper
1/4 teaspoon salt
4 boneless skinless chicken breast halves (4 ounces each)
2 teaspoons canola oil
1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn
1 cup salsa
2 cups hot cooked brown rice

Directions
1 – In a small bowl, mix seasonings; sprinkle over both sides of chicken. In a large nonstick skillet coated with cooking spray, heat oil over medium heat. Brown chicken on both sides.
2 – Add beans, corn and salsa to skillet; cook, covered, 10-15 minutes or until a thermometer inserted in chicken reads 165°. Remove chicken from pan; cut into slices. Serve with bean mixture and rice. Yield: 4 servings.

Nutritional Facts
1 chicken breast half with 3/4 cup bean mixture and 1/2 cup rice equals 400 calories, 7 g fat (1 g saturated fat), 63 mg cholesterol, 670 mg sodium, 52 g carbohydrate, 8 g fiber, 32 g protein.

After an early light Breakfast and morning workout i headed to Kroger to pick up a couple of items for the dinner tonight. While out I stopped by McDonald’s to pick up Mom and Dad’s Breakfast for them. Back home did a load of laundry and did a few chores around the house. For dinner tonight it’s Taco Night! Tonight I prepared Turkey and Black Beans Tacos.

 

 
And as always when making Turkey Tacos I always use Jennie -O Ground Turkey! I usually use the Extra Lean black-bean-and-turkey-tacos-0011Ground Turkey Breast but tonight I’m using the 93% Lean Ground Turkey. This is the Ground Turkey Jennie – O I had sent me a couple of weeks ago, I had it in the freezer and let it thaw in the fridge overnight. Love all the Jennie -O Turkey Products, always fresh and low calorie and low carb. I started by frying the Ground Turkey till it was no longer pink in Canola Oil and seasoning it with Sea Salt, Ground Roasted Cumin, Cilantro Flakes. As the Turkey was finishing cooking I added 1 can of Bush’s Low Sodium Black Beans and 1 package of Old El Paso Low Sodium Taco Seasoning and 3/4 cup Water, continued to cook and stir for an additional 6 minutes. Jennie -O and Old El Paso together make one fine Taco!

Today’s Menu: Bush’s One Pot Chicken, Rice & Beans

 

One Pot Chicken, Rice, Beans, and Corn 005
A sunny but cold morning starting off on the first day of 2015, about 15 degrees with a wind chill. But the sunshine is beautiful today. I guess about 5 years or so I had a total hip replacement on my right hip and haven’t had much pain since. The last few days though I’m having pain again in the hip, hope it’s nothing serious. May have to get it checked out if it continues to get worse. No Eating Out tonight, back in the Kitchen! I prepared a new recipe, Bush’s One Pot Chicken, Rice & Beans.

 

 

 

Came across this recipe in the latest issue of EatingWell, it was ad page for Bush’s Bean’s.And it looked and sounded so good I had to give it a try! So at Kroger earlier I bought the Bush’s Beans, Uncle Ben’s White Ready Rice, some Fresh Cilantro, and a Kroger Simple Truth Rotisserie Chicken. Which are all the main ingredients for tonight’s meal. Kroger has had Roasted Whole Chickens for quite a while now, but recently some Krogers have been using the Simple Truth Whole Chickens. It’s like a night and day difference between the two, Simple Truth is the best Rotisserie Chicken I have ever had.

 

 

One Pot Chicken, Rice, Beans, and Corn 002

So to prepare this new dish I’ll need the following; 3 cups cooked white rice, 1 can (16 ounce) BUSH’S® Reduced Sodium Vegetarian Baked Beans, 1 can (15 ounce) BUSH’S® Reduced Sodium Black Beans, drained and rinsed, 8 ounce rotisserie chicken, cut into ¾-inch pieces (1½ cups), and 1 cup frozen corn, thawed. I used a can of Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn instead of the Frozen Corn. Optional Topping include Frank’s Hot Sauce, Sargento Shredded Reduced-Fat Sharp Cheddar Cheese, Salsa, diced Avocado, Daisy Reduced Sour Cream, or Cilantro. With these ingredients you know why this just sounded delicious! To prepare it, it couldn’t be much easier! Place Rice, Beans, Chicken and Corn in large saucepan. Stir to combine. Heat over medium heat until warmed through, about 5 minutes. Stir frequently. Serve with optional toppings, and your done and you have one hearty and delicious Dish! We have another “Keeper Recipe”! All these ingredients combine so well, just fantastic flavor. Mom had prepared her and Dad something else for dinner, but they both started eating this Dish instead. For dessert later a Del Monte No Sugar Added Peach Chunk Bowl. Settling in for an evening of College Football Bowl Games.

 

 

 

 

 

BUSH’S® ONE POT CHICKEN, RICE & BEANSBush's Beans 1
A hearty meal doesn’t have to be time-intensive. Case in point? This satisfying dinner, which is ready in just 15 minutes.

Ingredients

3 cups cooked white rice
1 can (16 ounce) BUSH’S® Reduced Sodium Vegetarian Baked Beans
1 can (15 ounce) BUSH’S® Reduced Sodium Black Beans, drained and rinsed
8 ounce rotisserie chicken, cut into ¾-inch pieces (1½ cups)
1 cup frozen corn, thawed
Directions

Place rice, beans, chicken and corn in large saucepan. Stir to combine.
Heat over medium heat until warmed through, about 5 minutes. Stir frequently.
Serve with optional toppings.

Optional Toppings:
Shredded reduced-fat Cheddar cheese, salsa, diced avocado, light sour cream, cilantro

Today’s Menu: Beans and Smoked Turkey Sausage with a slice of French Bread

Not a bad day out, considering the weather we’ve been having. Partly sunny and it got up to around 28 degrees. Had a little skiff of snow this morning so I cleared that off around the door walk and ramp and my neighbor blew the rest off with a snow blower. Spent the day cleaning the computer and the disaster around it! Scanned and uninstalled some old programs and then cleaned the computer desk and around that. Amazing how much junk one person can accumulate! Wanted something different for dinner so tonight I prepared Beans and Smoked Turkey Sausage with a slice of French Bread.

 

 

 
Growing up who didn’t like the old-fashioned Campbell’s Beans and Weenies, that and Spaghetti-O’s! Well I wanted some Beans and Weenies but I jazzed it up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size pieces), 1 can of Joan of Arc Spicy Chili Beans, 1 can of Bush’s Reduced Sodium Black Beans (drained and rinsed), 1/4 of a medium-sized White Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 tablespoon Splenda Brown Sugar, a couple of shakes (or more) of Frank’s Red Hot Sauce, and a 1/3 cup of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

To prepare everything, it can’t be much easier. I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let simmer. Another set it and forget recipe! I started simmering everything around 1 pm this afternoon. You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan and get done even quicker. I like dishes that you can set low and let them simmer. After a couple of hours I sliced up one of the Butterball Hardwood Smoked Turkey Sausage and added it to the Beans. I then increased the heat to medium for about another hour an

 d then reduced it back down to medium low until it was time for dinner.

 

 
I had leftover Pillsbury Rustic French Bread from last night’s dinner that I warmed up to deserve with the Beans and Sausage. The Beans/Sausage came out delicious! It had a good Smokey Flavor to it and the Jack Daniel’s BBQ Sauce is perfect for Beans and the Turkey Sausage. Then I had a slice of the French Bread to mop up all the Sauce. A good Hearty Meal tonight. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.
