Today’s Menu: Seasoned Striped Bass w/ Mac and Cheese
For Breakfast I toasted a Thomas Light English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam. I also had my morning cup of Bigelow Decaf Green Tea. 89 degrees and sunny out, low humidity. I spent some of the afternoon canning Green Beans that we had purchased at Jungle Jim’s yesterday. I love canning and stuff like this! It’s so interesting to learn a food preserving method that’s been around for so long. Later I got the leaf blower out and cleaned off the deck and driveway areas. For Dinner tonight Seasoned Striped Bass w/ Mac and Cheese.
While at Jungle Jim’s I came across fresh Striped Bass Fillets! I haven’t had this in many of a year. I’m not sure if any other place besides Jungle Jim’s huge and incredible Seafood Department would carry this or if ever have it available! To prepare the Bass I’ll need Salt, Ground Pepper, Zatarain’s Seasoned Fish Fri, Pam Non Stick Cooking Spray, and Extra Light Olive Oil. Before I seasoned I rinsed off the Bass and then cut the Bass in half.
To prepare it I seasoned the Bass. Next I lightly coat a frying pan with olive oil then placed the pan over a medium-high heat. Once the pan was hot placed the Fillets in the pan skin-side down. Cooked them for 3–4 minutes until the skin is nicely golden and crisp then carefully turn the fillets over to cook for 1 minute. And done!
This is so incredibly good! So fresh and flavorful. The Zatarain’s Breading is the best there is for all Fish and Seafood! Plus I have another Striped Bass Fillet in the freezer!
To go with my Bass I prepared a cup of Kraft 50% Whole Grain Mac and Cheese. They come in a microwavable plastic container. To prepare it just remove the lid, add water and stir, microwave for 3 1/2 minutes, and stir in the packet of cheese sauce. And you have your Mac and Cheese! Another nice item to have in the pantry. Easy to prepare, nothing like good old-fashioned Kraft Mac and Cheese! Container makes 1 serving. Love these Kraft Mac and Cheese! For Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels and a Diet Half and Half Diet Snapple.
Striped Bass
The striped bass, also called Atlantic striped bass, striper, linesider, rock or rockfish, is an anadromous perciform fish of the family Moronidae found primarily along the Atlantic coast of North America. It has also been widely introduced into inland recreational fisheries across the United States.
Sstriped bass tastes absolutely delicious. The flesh is white and flaky with enough fat to make it seem almost buttery (even when no butter has been added) but not so much as to make it seem oily. Moreover, the primary flavor is sweet and briny, without a hint of fishiness.

Just a cup of Bigelow Decaf Green Tea for Breakfast. 17 degrees this morning and 31 for a high and mostly cloudy out today. I struggled overnight with Phantom Pains. They were bad through out the night. They started about 10:00 last night and continued to almost 10:00 this morning! So little to no sleep or rest. I went back to bed about 11:00 this afternoon and rested and slept till almost 4:00 this afternoon. I needed it! I wanted a good hot meal that was easy to prepare. I went with Baked Clam Strips/Whole Grain Mac and Cheese and Baked Multi Grain Bread Loaf. Couldn’t get much easier!
For the Clam Strips; I had bought a box of Sea Best Oven Ready Breaded Clam Strips at Meijer last week and had it in the freezer. To prepare them; I first preheat the oven to 425°F. Remove breaded clams strips from package and arrange in single layer on a foil lined baking sheet. Placed the sheet on middle rack of oven and baked for 15 minutes until they were golden brown and internal temperature reached 145°F. These made one good Clam Strip Meal! They browned up perfect and they had just the right amount of Breading. I’ll be buying more of these for sure.

Today’s Menu: Baked Jumbo Butterfly Shrimp w/ Whole Grain Mac and Cheese
For Breakfast this morning I just had a cup of Bigelow Decaf Green Tea. Didn’t get a lot of sleep last night, Phantom Pains kept me up. They weren’t that painful but just annoying enough to keep waking me up. After I had my Tea I went to McDonald’s to pick up Breakfast for Mom. Then later I drove Mom over to spend the afternoon with Dad. I didn’t stay long, too tired. I went back home and caught up on some sleep. Then later went back to pick her up. For Dinner tonight its Baked Jumbo Butterfly Shrimp w/ Whole Grain Mac and Cheese.
For the Shrimp I prepared a box of SeaPak Jumbo Shrimp. I preheated the oven on 425°f. I then got a small baking sheet, covered with aluminum foil and sprayed it with Pam Cooking Spray. I arranged the frozen shrimp in single layer on the baking sheet. Then baked at 425 degrees for 13-14 minutes turning over once after 6 minutes. They came out Golden Brown and delicious. Hard to beat these always great tasting. I served them with a side of Heinz Shrimp Cocktail Sauce.

Same weather outside as yesterday except it’s a bit hotter and more humid. Our heat index is over 100. Not a good day to be doing a whole lot outside. After Lunch I headed up to the hospital and spent the afternoon with Dad. He’s doing good, they just have to clear the pneumonia up in his right lung. Stopped and got gas on the way home and that was about it for the day. For Dinner tonight its Baked Jumbo Butterfly Shrimp w/ Whole Grain Mac and Cheese.

Today’s Menu: Seasoned Gulf Coast Grouper w/ Hush Puppies and Mac and Cheese
For Breakfast this morning I toasted a couple of Nutri Grain Low Fat Eggo Waffles and had my morning cup of Bigelow Decaf Green Tea. After Breakfast and my morning workout I started a load of laundry for Mom and then headed to Marsh and Kroger. I needed quite a few things from Meijer and then stopped by Kroger to pick up a few things for Mom. Back home, after Lunch I got out the leaf blower and cleaned the deck and driveway areas. Trimmed the vine along the driveway and then picked some Basil and Cilantro for tonight’s meal. This is the best my Herb Plants have ever grown, nice size plants. Love watching stuff grow. As a child growing up my Grandparents always live on a farm with huge fields of Vegetables. Lucky to get to see all that while growing up. So for Dinner tonight I prepared Seasoned Gulf Coast Grouper w/ Hush Puppies and Mac and Cheese.
I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back up from Florida! It’s good to have friends that also own a house off the Florida Gulf side. I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish and Love this Grouper!
For one side for my Grouper I prepared a box of the McCormick Hush Puppy Corn Meal Mix. First time I’ve made these and they turned out great! Just followed the easy instructions and served. I left the full instructions at the end of the post. First time I’ve had Hush Puppies in a long time, really enjoyed these!
Also to go with the Grouper prepared some Kraft 50% Whole Grain Mac and Cheese. I normally have the regular Mac and Cheese but I seen the 50% Whole Grain at Meijer and picked up a 4 pack of them.
