Today’s Menu: Popcorn Shrimp w/ Mac and Cheese
Today’s Breakfast Menu included Jennie -O Turkey Breakfast Sausage Links, 1 Egg Sunnyside Up, 2 slices of toasted Healthy Life Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. That’s a very good way to start the day! After Breakfast I headed out to see a friend of mine who’s been moved to assisted living. It might have to be a permanent move for him, hope not though. It’s another beautiful Fall Day out, but a bit warmer out at 82 degrees. Back home did some cleanup outside and that was about it for the day. And for Dinner tonight I prepared Popcorn Shrimp w/ Mac and Cheese.
I used my favorite frozen boxed Shrimp, SeaPak. I love all the SeaPak Seafood Products. Easy to prepare and fresh tasting. To prepare it; arrange the frozen Shrimp in single layer on baking sheet and place on middle rack of oven. Bake the Shrimp on 450 degrees for 11 minutes, turning the shrimp over after 5 minutes. And your done! If you don’t have fresh Shrimp this is the way to go. Had a side of Heinz Cocktail Sauce for dipping.
Then for a side I microwaved Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

For Breakfast toasted up a couple of Low Fat Eggo’s. Easy to prepare and I’ve always loved them. Morning workout and a shower, then off to Kroger for a few items I needed. Stocked up on those Honey Crisp Apples, huge and sweet tasting crop this season! I wanted to purchase some Haddock but they said they no longer carry it, said they don’t sell enough of it. Had some nice looking Walleye but at $14.98 a pound! Anyway back home I finished up some laundry for Mom, ran the vacuum, and cleaned up around the house outside. It’s a huge change in our weather. In the 50’s this morning and a high in the low 60’s, and no humidity. For dinner tonight something easy to prepare and a comfort food, Popcorn Shrimp w/ Mac and Cheese.

Rain, rain, and more rain! Anywhere from 2″ to 3″ inches around here and even more South of us. Started my day off with an Egg Beater’s Egg Whites Cheese Omelet. I used Sargento Reduced Fat Shredded Sharp Cheddar for the filling. I also had a couple of Eckrich Smoked Turkey Sausage Links along with my morning cup of Bigelow DeCaf Green Tea. So with all the rain going on outside it was a good day to stay in and get some things done inside. Repaired a drawer in the kitchen and dusted and ran the vacuum. Then outside I did repair a down spout replacing the clamp that kept it in place. For dinner tonight it’s Surf (Pop Corn Shrimp) and Turf 5 oz. Buffalo Top Sirloin.
It’s a Surf and Turf night here at old homestead! For the Surf part I used my favorite frozen boxed Shrimp, SeaPak. I love all the SeaPak Seafood Products. Easy to prepare and great tasting. To prepare it; arrange the frozen Shrimp in single layer on baking sheet and place on middle rack of oven. Bake the Shrimp on 450 degrees for 11 minutes, turning the shrimp over after 5 minutes. And your done! If you don’t have fresh Shrimp this is the way to go.
For the Turf part I’ll be using Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a 1 teaspoon of Extra Virgin Olive Oil. Then seasoned it with McCormick’s Grinder Sea Salt and Black Peppercorn. As the Steak rested I preheated a small Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, I cooked it 4 1/2 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and the best flavor of any Steak, Beef or Buffalo, I’ve ever had. I also prepared some Sauteed Baby Bella Mushrooms to go with the Buffalo. For dessert later a Jello Sugar Free Dark Chocolate Pudding, only 60 calories and 10 net carbs per cup!

Clam Strips and Pop Corn Shrimp w/ Caribbean Rice

Today’s Menu: Clam Strips and Pop Corn Shrimp w/ Caribbean Rice
It’s been one of those gloomy and cold Winter’s Day out today. Caught up on housework and a load of laundry. Went to Walgreen’s for Mom and that was my day. Ran my new cordless sweeper and it works fantastic! Having not to deal with the cord issue makes it’s easy to vacuum. Rummaged through the freezer and found a couple of items that sounded good for dinner tonight. Tonight I prepared Clam Strips and Pop Corn Shrimp w/ Caribbean Rice.
For the Clam Strips and Shrimp I used Seapak Clam Strips and Seapak Popcorn Shrimp. Both come frozen and breaded. Just bake the Clam Strips at 425 degrees for about 17 minutes and the Shrimp on 450 degrees for 11 minutes. Both come out hot and delicious, Seapak has always been one of the best in Frozen Seafood.
Then for the Caribbean Rice I used a box of Zatarain’s Caribbean Rice Mix. First time using this but as all Zatarain’s Products they’re easy it’s easy to prepare with spot on flavors. To prepare it start by mixing 2 cups water, Rice Mix and 1 tbsp. butter or margarine (optional) in 2-quart saucepan until well blended. Bring to boil. Reduce heat to low. Cover. Then simmered for about another 22 minutes, until the rice was tender. Remove it the from heat. Let stand 5 minutes. Fluff with fork before serving and done! Wow, a perfect blend of sweet pineapple and the coconut with the vegetables and just the right amount of curry and the other spices. Found another new one for the Pantry! To serve I made a bed of the Caribbean Rice and topped it with the Clam strips and Popcorn Shrimp. This turned out to be one winning dish! Looking for a new Seafood Dish, you got to try this one out! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Usage Tips
