A bowl of cooked hominy

Hominy is a food produced from dried maize (corn) kernels that have been treated with an alkali, in a process called nixtamalization (nextamalli is the Nahuatl word for “hominy”). “Lye hominy” is a type of hominy made with lye.

Hominy, also called nixtamal, emerged around Cahokia in the 9th century AD. The Maya used nixtamal to produce beers that more resembled chicha than pulque. When bacteria was introduced to nixtamal it created a type of sourdough.

Hominy is made in a process called nixtamalization. To make hominy, field corn (maize) grain is dried, then treated by soaking and cooking the mature (hard) grain in a dilute solution of lye (sodium hydroxide) (which can be produced from water and wood ash) or of slaked lime (calcium hydroxide from limestone). The maize is then washed thoroughly to remove the bitter flavor of the lye or lime. Alkalinity helps dissolve hemicellulose, the major glue-like component of the maize cell walls, loosens the hulls from the kernels, and softens the corn. Also, soaking the corn in lye kills the seed’s germ, which keeps it from sprouting while in storage. Finally, in addition to providing a source of dietary calcium, the lye or lime reacts with the corn so that the nutrient niacin can be assimilated by the digestive tract. People consume hominy in intact kernels, grind it into sand-sized particles for grits, or into flour.

In Mexican cooking, hominy is finely ground to make masa. Fresh masa that has been dried and powdered is called masa seca or masa harina. Some of the corn oil breaks down into emulsifying agents (monoglycerides and diglycerides), and facilitates bonding the corn proteins to each other. The divalent calcium in lime acts as a cross-linking agent for protein and polysaccharide acidic side chains. Cornmeal from untreated ground corn cannot form a dough with the addition of water, but the chemical changes in masa (aka masa nixtamalera) make dough formation possible, for tortillas and other food.

Previously, consuming untreated corn was thought to cause pellagra (niacin deficiency)—either from the corn itself or some infectious element in untreated corn. However, further advancements showed that it is a correlational, not causal, relationship. In the 1700s and 1800s, areas that depended highly on corn as a diet staple were more likely to have pellagra. This is because humans cannot absorb niacin in untreated corn. The nixtamalization process frees niacin into a state where the intestines can absorb it. This was discovered primarily by exploring why Mexican people who depended on maize did not develop pellagra. One reason was that Mayans treated corn in an alkaline solution to soften it, in the process now called nixtamalization, or used limestone to grind the corn. The earliest known use of nixtamalization was in what is present-day southern Mexico and Guatemala around 1500–1200 BC.

In Mexican and Central American cuisine, people cook masa nixtamalera with water and milk to make a thick, gruel-like beverage called atole. When they make it with chocolate and sugar, it becomes atole de chocolate. Adding anise and piloncillo to this mix creates champurrado, a popular breakfast drink.

The English term hominy derives from the Powhatan language word for prepared maize (cf. Chickahominy). Many other indigenous American cultures also made hominy, and integrated it into their diet. Cherokees, for example, made hominy grits by soaking corn in a weak lye solution produced by leaching hardwood ash with water, and then beating it with a kanona, or corn beater. They used grits to make a traditional hominy soup that they let ferment, cornbread, dumplings, or, in post-contact times, fried with bacon and green onions.

Hominy recipes include pozole (a Mexican stew of hominy and pork, chicken, or other meat), hominy bread, hominy chili, hog ‘n’ hominy, casseroles and fried dishes. In Latin America there are a variety of dishes referred to as mote. Hominy can be ground coarsely for grits, or into a fine mash dough (masa) used extensively in Latin American cuisine. Many islands in the West Indies, notably Jamaica, also use hominy (known as cornmeal or polenta, though different from Italian polenta) to make a sort of porridge with corn starch or flour to thicken the mixture and condensed milk, vanilla, and nutmeg.

Rockihominy, a popular trail food in the 19th and early 20th centuries, is dried corn roasted to a golden brown, then ground to a very coarse meal, almost like hominy grits. Hominy is also used as animal feed.

Today’s Menu: Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes

 

 

For Breakfast this morning I had my morning cup of Bigelow Decaf Green Tea. Well as usual we had a nice day yesterday followed by rain the next couple of days. Rain and only a high of 47 degrees out today. And of course the shift of weather my sinuses go crazy! Near 70 degrees yesterday and now a high of 47 degrees. It’s no wonder I have sinuses with this crazy Ohio weather! I did a couple of loads of laundry and cleaned around the house. Well in our area Meat is getting harder to find. Aldais, Jungle Jim’s, and Meijer are real low in Chicken, Pork, and Beef cuts. Plus Kroger is going to start limiting amounts of all Meat you can purchase per visit. Thankfully we are pretty well stocked. I’ve been putting away packages of all from time to time, good thing! So for dinner tonight I prepared Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes.

I had picked some Pork Chops a while back at Meijer. Had them in the freezer so I grabbed the Chops from the freezer last night and let them thaw overnight in the fridge. Then to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 160°, turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible tasty Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!

We love the trio of a Pork Chop, Golden Hominy, and Green Beans/ Potatoes. I have these 2 sides quite often when having Pork Chops. For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. My favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!

 

Then I also heated up a can of Del Monte Cut Green Beans and Potatoes. I also had Baked a Loaf of Multi Grain Loaf Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Sprite Zero to drink.

For Breakfast this morning I made a Breakfast Sandwich. To make it I toasted a Thomas Light English Muffin, lightly fried 4 slices of Kahn’s Deluxe Bologna, Scrambled a medium size Egg, and added a slice of Kraft Deli Style Sharp Cheddar Cheese. Nothing like a delicious Breakfast Sandwich to start the morning! Also had my morning cup of Bigelow Decaf Green Tea. Well like most of you still in house isolation. Outside its mostly sunny and 61 degrees. So for dinner tonight I prepared Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes.

 

On my last visit to Meijer a few weeks ago I picked up a couple of huge Bone – In Pork Loin Chops. Had them in the freezer so I grabbed the Chops from the freezer last night and let them thaw overnight in the fridge. Then to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Outside we had rain showers in the morning turning to snow showers later in the afternoon. Winter is back! Cleaned the house today, dusted and ran the vacuum. So for dinner tonight I prepared Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes.

For Breakfast this morning I toasted a Thomas Light English Muffin and topped it with some Smucker’s Sugarless Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. Outside cloudy, windy and 38 degrees. Very windy and made it feel like 30 degrees! I spent this last day of 2019 cleaning closets. Cleaned my bedroom and the pantry. I just want to wish you each and everyone a Happy and Healthy 2020! So for dinner tonight I prepared Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes.

Today’s Menu: Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes

 

 

 

For Breakfast this morning I prepared some Simply Potatoes Shredded Hash Browns, heated up some Kroger Diced Ham, and had a cup of Bigelow Decaf Green Tea. I made a bed of the Hash Browns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns. Also had a cup of Bigelow Decaf Green Tea. After Breakfast I went to Kroger up the road for a couple of items. Then stopped by a ATM and then picked up Breakfast at McDonald’s for Mom. Well the rains finally stopped! We ended up with over an inch of rain. Sort of breezy, cloudy and 64 degrees out today. Did a load of laundry and some light cleaning. So for dinner tonight I prepared Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes.

 

I’ve had the trio of Chops, Hominy, and Green Beans and Potatoes several times, but its been a while. So we are having tonight! I had purchased the Chops at Meijer and had them in the freezer. I set them in the fridge overnight to thaw. Cumin Spiced Pork Tenderloin Fillet w/ Golden Hominy and Cut Green Beans

Today’s Menu: Cumin Spiced Pork Tenderloin Fillet w/ Golden Hominy and Cut Green Beans

 

 

To start my morning off I had a cup of Bigelow Decaf Green Tea. 77degrees and cloudy with some light rain, a little more humid out today. Went to Kroger after Breakfast, just needed a couple of items. Back home did some laundry and light cleaning. Later I got the leaf blower out and cleaned off the deck and driveway areas. Spent the rest of the afternoon watching Football. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin Fillet w/ Golden Hominy and Cut Green Beans.

 

 

 

I bought a Pork Tenderloin while at Kroger along with some Chicken Thighs. I’m having the Pork Tenderloin for Dinner tonight. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe by far!

 

For one side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!

 

 

 

 

Then I also heated up a can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I just love Green Beans, all Beans! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Sprite Zero to drink.

Today’s Menu: Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes

 

 

For Breakfast this morning I toasted a Thomas Light English Muffin and topped it with Sumucker’s Sugar Free Blackberry Jam. Also had a cup of Bigelow Decaf Green Tea. 91 degrees, humid, and partly cloudy outside today. Went to Kroger for Mom and then by McDonald’s to pick up Breakfast for her. Not a thing to do today. It’s too hot and humid to even get my cart out of the shed. So I cleaned the fridge and freezer. Cleaned the counters and shelves next. So for dinner tonight I prepared Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes.

 

 

We’ve had the trio of Chops, Hominy, and Green Beans and Potatoes several times, but its been a while. So we are having tonight! I had purchased the Chops at Meijer and had them in the freezer. I set them in the fridge overnight to thaw. To prepare my Chops I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150°, turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chops with the inside being tender and moist! Love this seasoning on Pork!

 

 

I love the combination of the Hominy and Green Beans/Potatoes. I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. My favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!

 

 

 

 

 

Then I also heated up a can of Del Monte Cut Green Beans and Potatoes. As everything was cooking I also Baked a Loaf of Garlic Loaf Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Ice Water to drink.

For Breakfast this morning I toasted a Thomas Light English Muffins and heated up a couple of Johnsonville Turkey Sausage Links. I also made a cup of the Bigelow Decaf Green Tea. Outside a big change in the weather. We’ve had a heat wave for the past 6 days or so and to day it was still humid but a high of only 76 degrees. Showers and Thunderstorms around the area also. Took it sort of easy today, bad Sinus Headache. So for dinner tonight I prepared Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes.

Today’s Menu: Fried Red Snapper w/ Hash Browns and Golden Hominy

 

Skipped Breakfast this morning, not really hungry. I did  just have a cup of Bigelow Decaf Green Tea though. Went to Meijer for a few items and back home. Later went over to a Lawn and Garden Center and took a look at few plants and bushes. Back home I planted a couple of bushes I bought in the backyard. Not feeling up to par today so I kicked back the rest of the afternoon. We are watching my cousin’s 2 girls tonight for about 4 hours or so. For Dinner tonight it’s Red Snapper! I prepared a Fried Red Snapper w/ Hash Browns and Golden Hominy.

 

 

 

 

I had purchased the Red Snapper at the Kroger Seafood Department last week. I had it in the freezer so I laid the fillet in the fridge to thaw overnight. To prepare the the fillet, I first rinsed the Snapper off in cold water and patted dry with a paper towel. I seasoned it with McCormick Grinder Sea Salt. Then put the fillets in a Hefty Zip Plastic Bag and added Zatarain’s Lemon Pepper Breading Fish Fri. Then shook the bag until the fillets were well covered, removed from the bag shaking off the excess. I then pan fried it in a Cast Iron Skillet, that I had preheated, in Canola Oil. I fried it skin side down for 4 minutes and then flipped it over to the flesh side and fried it another 3 minutes. Golden brown and nothing but delicious! The fresh taste of the Snapper combined with the Zatarain’s Lemon Pepper Breading Fish Fri is a perfect pairing.

 

 

 

For one side I prepared some Simply Potatoes Hash Browns, I always use Simply Potatoes Hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley.

 

 

 

 

 

 

For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For a Snack later some Honeycrisp Apple Slices.
