Today’s Menu: Prime Rib w/ Savory Herb Potatoes, Cut Green Beans, and Whole Baby Carrots

 

 

For Breakfast on this Easter Morning I toasted a Healthy Life Whole Grain English Muffin, Scrambled 1 Egg, and a cup of Bigelow Decaf Green Tea. Not much going on today. Mom went on to Church early, she was meeting some friends for Breakfast. I stayed home and did a load of laundry and cleaned the house. Cloudy this morning and rain moved in by the afternoon. Went over to see Dad for a while and back home to fix an Easter Dinner for me and Mom. I prepared a Prime Rib w/ Savory Herb Potatoes, Cut Green Beans, and Whole Baby Carrots.

 

 

 

 

 

We had a Prime Rib Roast in the freezer that I had purchased at Mejier. I like Prime Rib but it’s so overpriced. This was one that weighed just over 3 lbs., 3.7 lbs. Just the right size for myself and Mom.

 

 

 

 

 

I preheated the oven on 325 degrees. I took a small roaster pan and sprayed it Pam Cooking Spray and I rubbed a light coat of Extra light Olive Oil on it. Once the oven was heated I put the Roast in the pan and baked it for about 75 minutes. I took the pan out and checked the internal temperature with my meat thermometer and it was right where we wanted at 121 degrees.

 

 

 

 

 

I let the Roast sit for 10 minutes before slicing it. The Roast was cooked to a perfect Medium Rare. The Roast came moist and juicy! Cutting in to it was very tender and has an excellent taste. We’ll definitely purchase this again from Meijer!

 

 

 


Mom loves having multiple side dishes with meals so I prepared a good variety. For one side I prepared some Little Potato Company Savory Herb Potatoes. Then I prepared a can of Del Monte Cut Green Beans. Then I opened up a can of Kroger Brand Whole Baby Carrots. I also baked some of Mom’s favorite Rolls, Hawaiian Rolls. For my Dessert later a Breyer’s 100 Calorie Cup of Vanilla Ice Cream. Hope everyone had a great Easter!

Today’s Menu: Dry Rubbed Chili Lime Boneless Pork Brisket w/ Savory Potatoes and Golden Hominy

 

 

 

For Breakfast on this March morning I toasted a Healthy Life Whole Grain English Muffin, lightly fried slices of Boar’s Head Sweet Sliced Ham, and 1 slice of Sargento Reduced Fat Swiss Cheese.Love these Breakfast Sandwiches! I also had that morning cup of Bigelow Decaf Green Tea. After Lunch went to see Dad at the rehab center. For Dinner tonight a couple of new items. I prepared a Dry Rubbed Chili Lime Boneless Pork Brisket w/ Savory Herb Potatoes and Golden Hominy.

 

 

 

Second time we’ve had these, and love them! I wasn’t a fan of Brisket of any kind but this one has changed my mind on Brisket! It comes already seasoned; Dry Rubbed Chili Lime. It comes packaged in 2 pieces. I used our large Cast Iron Skillet to cook it in. To prepare it; Preheated a lightly oiled, used Extra Light Olive Oil, Cast Iron skillet over medium-high heat. Removed meat from package and coated the Brisket lightly with Pam Cooking Spray and placed in skillet. Sauté approximately 10 to 12 minutes before turning. Turn the brisket and cook another 6 to 7 minutes. Sauté until the internal temperature reached 145˚F in the thickest part of the meat.

 

 

 

 

Removed from skillet and let it rest for 3 minutes. Sliced and served! It came out delicious! It had a nice char on the outside and was tender and moist, cooked perfectly. Another good item to have handy from Swift Premium.

 

 

 

Another favorite I always pick up at Meijer are the Little Potato Company Savory Herb Potatoes. I have these quite often and really enjoy them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

 

 

 

For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy, and its been a while since I’ve any. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

 

 

 

 

 

 

 

Swift Premium Dry Rubbed Chili Lime Boneless Pork Brisket

Cooking Directions:
Grill:

1 – Preheat grill to medium-high heat.
2 – Remove meat from package.
3 – Coat brisket lightly with oil or cooking spray and place on grill.
4 – Grill approximately 6 to 7 minutes before turning.
5 – Turn the brisket and grill another 6 to 7 minutes. Grill until internal temperature reaches 145˚F in the thickest part of the meat.
6 – Remove from grill and let rest 3 minutes.
7 – Slice and serve.
Pan Sear:

1 – Preheat lightly oiled skillet over medium-high heat.
2 – Remove meat from package.
3 – Coat brisket lightly with oil or cooking spray and place in pan.
4 – Sauté approximately 10 to 12 minutes before turning.
5 -Turn the brisket and cook another 6 to 7 minutes. Sauté until the internal temperature reaches 145˚F in the thickest part of the meat.
6 – Remove from pan and let rest 3 minutes.
7 – Slice and serve.
*Grill temperatures may vary, adjust cooking times accordingly.

For Breakfast on this Christmas Morning I toasted a Healthy Life Whole Grain English Muffin and added a few slices of Boar’s Head Sweet Slice Ham, for a light Breakfast Sandwich. After we were done with Breakfast we opened gifts and afterwards mad a few phone calls to friends and relatives wishing them a Merry Christmas! For our Christmas Dinner we are having Prime Rib w/ Savory Herb Potatoes, Cut Green Beans, and Whole Baby Carrots.

We couldn’t decide on what to have for Christmas Dinner. While I was at Meijer a few days ago I seen they had some small Prime Ribs so I grabbed one of those. I like Prime Rib but it’s so overpriced. This was one that weighed just over 3 lbs., 3.11 lbs. Just the right size for myself and Mom and Dad. As most Prime Rib Roasts it was very easy to prepare.

Today’s Menu: White Lake Perch w/ 3 Cheese Potatoes and Whole Baby Carrots

 

 
For Breakfast I prepared some Simply Potatoes Shredded Hash Browns and fried 2 Jennie – O Turkey Sausage Mini white-lake-perch-w-3-cheese-potatoes-and-whole-baby-carrots-012Links. Also had my morning cup of Bigelow Decaf Green Tea. Wow, it poured the rain last night and then rained some more. Last night it was even thundering and lightening. If this had come in as snow we have got around 10 inches! But by morning the rains had stopped and it started getting windy and colder, cloudy out all day. Our new Hoover Cordless Sweeper came in yesterday, so I put that together and got it charged. While that was charging I used the old sweeper and vacuumed and dusted. Had everything done by Lunch so I could kick back and watch an afternoon of NFL Football. Then for Dinner tonight I prepared White Lake Perch w/ 3 Cheese Potatoes and Whole Baby Carrots.

I had purchased the White Lake Perch at Meijer and had already cleaned it and had it in the freezer. I laid the bag of Perch in the fridge overnight to thaw. To prepare the fillets; I first took a large skillet and sprayed it with Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil to the pan and heated it medium heat. With the pan heating I got the fillets ready. I’ll be seasoning them with Morton’s Lite Salt and Zatarain’s Seasoned Fish-Fri Seafood Breading Mix.

Using a tin pie pan, I filled it with 3 tablespoons of the Zatarain’s Mix. Next I seasoned the Perch with the Lite Salt. Then rolled the fillets in the Breading mix, completely covering them. Then added a few of them to the preheated skillet. I fried them 3 minutes per side. They came out a golden brown! The Perch was delicious, just love fresh water fish as I do all Fish. Meijeris about the only store that carries the White Perch and they also will have Yellow Lake Perch from time to time.

 

 
For one side I prepared a package of the Little Potato Company, 3 Cheese Potatoes. While at Meijer I picked up a Cumin Spiced Pork Chops w Savory Herb Potatoes and Cut Green Bea 012package of the Little Potato Company 3 Cheese Potatoes. I had tried the Savory Herb a couple of times now and really enjoy them, being the Potato Freak I am! So tonight I gave the 3 Cheese a try and everyone enjoyed it. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have on hand! So easy to prepare and no clean up.

Ohh baby its Cold Outside! The temperature was around 7 degrees but the windchill was minus 7! So for Breakfast on this cold morning I prepared a Ham and Cheese Omelet. I made the Omelet with 2 Eggs, Meijer Diced Ham, and Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I also toasted a slice of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Topped it off my morning cup of Bigelow Decaf Green Tea, which tasted real good in this Winter weather.

Outside we only had a high of 18 degrees but the windchill kept it around 11 degrees. Staying in today, so I baked a few loaves of Pillsbury Nut quick Bread. Then I hit the closet in my bedroom that looked more like a dump! Straightened that up and got my Winter coats Sweats out of our storage closet. Washed a few of the Pullovers and Sweaters. For Dinner tonight I prepared some Fried Shrimp w/ Mini Ears of Sweet Corn and Green Beans/ Diced Potatoes.

While at Kroger yesterday I seen they had more of that huge Freshwater Shrimp, and just can’t pass those up! To prepare them I rinsed them off in cold water and removed the shells, they were already deveined. Then I’m using Zatarain’s Shrimp Fri – Seasoned Seafood Breading Mix. I used this for the first time a while back and really like the coating it gives the Shrimp.

Poured about 1 inch of olive oil into large skillet. Heat oil to 350°F on medium heat. Take the peeled shrimp, mix 1/2 cup Zatarain’s Seasoned Shrimp Fri with 1/2 cup water in medium bowl. Pour additional 1/2 cup Shrimp Fri onto plate or into plastic bag. Dip shrimp in the batter. Shake off excess. Roll or shake shrimp in remaining 1/2 cup Shrimp Fri until evenly coated. Discard any remaining batter in bowl or Shrimp Fri on plate or in plastic bag. Fry the shrimp, a few pieces at a time, in hot oil until light golden brown. Drain on paper towels and served. The Zatarain’s Shrimp Fri is an excellent breading for Shrimp! Nice light coating with good flavor.

Then I boiled some Green Giant Mini Ears of Sweet Corn. As good and sweeter than fresh Corn on the Cob. As all frozen Green Giant Products, the items always taste fresh when prepared.

For another side I heated up a can of Del Monte Cut Green Beans and Potatoes. I really like using the Del Monte Cut Green Beans and New Potatoes, contains 2 of my favorite vegetables (Green Beans and Potatoes). I also baked a loaf of Pillsbury French Bread, for Mom and Dad. For dessert later a Weight watcher’s Cookies and Cream Ice Cream Bar.

 

 

 

 

 

 

Green Giant® Extra Sweet Corn-on-the-Cob Mini EarsGreen Giant Mini Ears of Corn

2 mini-ears of extra sweet corn-on-the-cob. Picked at the Peak of Perfection®, Kosher

Instructions: Cooking Directions: Stove-Top: 1. Place desired amount of frozen corn-on-the-cob in large saucepan. Add cold water to cover corn. Heat to boiling over high heat. 2. Cover; reduce heat slightly. Boil 8 to 10 minutes or until thoroughly heated. Do not overcook. Remove from water with tongs. Microwave: 1. Place 1/4 cup water and up to 8 ears of frozen corn-on-the-cob in 8-inch square (2-quart) microwavable dish. 2. Cover; microwave on high as directed below, turning corn over halfway through cook time, until thoroughly heated. Do not overcook. Caution: Hot! Avoid steam! Remove from water with tongs. Cook 2 ears 6 to 12 minutes. Cook 4 ears 10 to 16 minutes. Cook 6 ears 12 to 18 minutes. Cook 8 ears 14 to 20 minutes., Keep frozen.

Today’s Menu: Cumin Spiced Pork Tenderloin w/ Roasted Savory Herb Potatoes and Whole Baby Carrots

To start the morning off I toasted a Healthy Life Whole Grain English Muffin and topped it with I Can’t Believe It’s Not Butter. I also had my early morning cup of Bigelow Decaf Green Tea. After Breakfast and my morning workout I headed of to Meijer. Mom needed some items as I did also. Cold morning, in the 20’s with a cold breeze. For the day it was a high around 45 degrees and partly sunny. After Meijer I had to stop by the bank and stopped and got gas. Not a lot going on this afternoon so I relaxed and got caught up on shows I had recorded. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Roasted Savory Herb Potatoes and Whole Baby Carrots.

 
Most of the time when I’m preparing Pork I use the Cumin Spiced Rub, as I did tonight. I had the Simple Truth Cumin Spiced Pork Tenderloin Red Potatoes Sugar Snap Peas 008Tenderloin Roast, Kroger Brand, in the freezer, I sat it in the fridge overnight to thaw. To prepare it I’ll need; 1 Simple Truth Pork Tenderloin, For the Rub: 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add Pork to pan; cook 4 minutes, browning on all sides. Bake at 375° for 15 minutes or until a thermometer registers 145° (slightly pink), turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe!

Today’s Menu: Seasoned Gulf Coast Grouper w/ Savory Herb Potatoes and Cut Green Beans

To start my Wednesday morning off I prepared some Simply Potatoes Shredded Hash Browns, 2 Jennie – O Turkey Breakfast Sausage Links, 1 toasted slice of Healthy Life Whole Grain Bread (lightly buttered), and my morning cup of Bigelow Decaf Green Tea. Outside it’s another day in the low 80’s and mostly sunny. The weather will be changing though, back into the low 60,s for tomorrow. Cleaned the house today, ran the vacuum and dusted. Then got the cart out to enjoy the rest of the day. For Dinner tonight, Seasoned Gulf Coast Grouper w/ Savory Herb Potatoes and Cut Green Beans.

 
I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back up! I had it in seasoned-gulf-coast-grouper-w-savory-herb-potatoes-and-cut-green-002the freezer so I grabbed 3 fillets and let them thaw overnight in the fridge. It’s more of those beautiful Grouper fillets! To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish, Love Seafood!

While at Meijer I picked up a package of the Little Potato Company Savory Herb Potatoes. I had these a few times now and really enjoyed them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

Then I also heated up a can of Del Monte Low Sodium Cut Green Beans. Then I boiled some Green Giant Mini Ears of Sweet Corn for Mom and Dad. As good and sweeter than fresh Corn on the Cob. For dessert later a bowl of Dole Sliced Peaches.

Today’s Menu: Seasoned Gulf Coast Grouper w/ Savory Herb Potatoes and Cut Green Beans

 

 
It was scrambled Eggs and Toast for Breakfast this morning. I Scrambled 2 medium-sized Eggs and topped them with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Then I toasted 2 slices of Healthy Life Seasoned Gulf Coast Grouper w Savory Herb Potatoes and Cut Green 004Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Also the morning cup of Bigelow Decaf Green Tea. What a beautiful Summer morning! I went out about day break to get the morning papers and the East horizon was just bursting with dazzling colors – Blues, Pinks, Reds, and Orange had it lit up! Another nice day again, sunny and 79 degrees and a hair more humid. After Breakfast I headed to Meijer for most of the groceries and then by Kroger for a couple of items. Back home got the cart out and did what yard work I could get to and tided up the shed. Kept the cart out and rode around for a bit. For Dinner tonight I prepared a Seasoned Gulf Coast Grouper w/ Savory Herb Potatoes and Cut Green Beans.

I love having Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back! I had it in the freezer so I grabbed a fillet and let it thaw overnight in the fridge. It’s another one of those beautiful Grouper fillet! To prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added Zatarain’s Seafood Breading Mix Seasoned. Shook until all it was well coated. Shook off the excess and pan fried it in Extra Virgin Olive Oil, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish, Love Seafood! Plus as you can tell as big as these fillets are there will be plenty of leftovers for lunch tomorrow!

Hectic morning! We had to have Dad at the hospital for some blood tests at 7:30 this morning. Got back home and my battery light was flashing. Dropped the car off at the Mechanics and he called about an hour later and had bad news, the alternator went of the car and also a small motor in the heater was done also, won’t say the cost I’ll get depressed! Anyway things could be worse I guess. Also heard a good friend of mine I worked with many years had passed away, died of Lung Cancer. Not a bad day out sunny, windy, and high in the 60’s. For dinner tonight I prepared a Wild Idea Buffalo – 5 oz. Petite Top Sirloin Steak w/ Zesty Italian Potatoes and Cut Green Beans.

 

Wild Idea Buffalo – 5 oz. Petite Top Sirloin Steak 008

I’ll be using Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a 1 teaspoon of Extra Virgin Olive Oil. Then seasoned it with Dried Rosemary, McCormick’s Grinder Sea Salt and Peppercorn Medley. As the Steak rested I preheated a Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, cooked it 4 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So juicy and the best flavor of any Steak, Beef or Buffalo I’ve ever had.

For one side I prepared some of the Little Potato Company – Zesty Italian Potatoes. I came across these while at Jungle Jim’s International Market a while back. I tried the Savory Herb, which we loved, and this time I’ve got the Zesty Italian. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. Excellent Italian Seasoning and flavoring.These are definitely a good to have in the pantry! So easy to prepare and no clean up.

 
Then I also heated a small can of Del Monte Cut Green Beans, love those Green Beans! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Wow what a beautiful full moon last night and a total lunar eclipse on top of it! We were able to watch the whole thing as the clouds cleared up about an hour before it started. Started my day off with a Healthy Life Whole Grain English Muffin topped with 2 servings of Egg Beater’s Egg Whites. Good little sandwich, also had a cup of Bigelow Decaf Green Tea to get me started. Didn’t get a chance to go see Dad at rehab today but he’s doing a lot better, hopefully back home before long. Stayed home and got caught up on some house cleaning and yard work. Had to get the 4 wheel mobility cart out and the leaf blower and do a little yard work. For dinner tonight, Cumin Spiced Pork Chops w/ Savory Herb Potatoes and (Fresh) Cut Green Beans.

 

 

 
On my last visit to Costco I picked up a huge package of Pork Chops and had them in the freezer. I got 2 of the Chops from the freezer and let it thaw overnight in the fridge. Then to prepare my Chop I’ll need; The Cumin Spiced Rub Cumin Spiced Pork Chops w Golden Hominy and Cut Green Beans and 005which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork. Hard to beat these Costco Pork Chops, always top quality.

While at Jungle Jim’s I was going through the their huge Produce Department and came across a new Potato Product, the Little Potato Company Savory Herb Potatoes. I also picked up a package of the Italian seasoned Potatoes. I prepared the Savory Herb Potatoes tonight. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good to have in the pantry! So easy to prepare and no clean up.

Then for another side I also picked up a beautiful mess of Green Beans while at Jungle Jim’s. This afternoon Mom and myself broke the Beans up and then I prepared them. Just use a large kettle or sauce pan. Fill it with water add the Beans, add Sea Salt and 2 tablespoons of Extra Virgin Olive Oil (cover), and heat on high until a boil. Then turn the heat to medium and cook until tender. A really delicious mess of Green Beans! Canned Green Beans are great but nothing beats the fresh Green Beans! I also baked a loaf of Pillsbury Rustic French Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
