Today’s Menu: Montgomery Inn Pulled Pork BBQ Sandwich w/ Baked Fries

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl. Next I put the Diced Ham over top the Hash Browns and served. Love those Potatoes and Ham! Had a brief shower and overall its mostly sunny and 82 degrees. Spent most of the day doing yard work and cleaning the outdoor furniture. Cleaned the chairs and a small table off. Then stored them in the shed until next Spring. That’s all for the day. For Dinner tonight I prepared a Montgomery Inn Pulled Pork BBQ Sandwich w/ Baked Fries.

 


When it’s Pulled Pork BBQ Sandwiches around here it’s almost always Montgomery Inn Hardwood Smoked Pulled Pork with BBQ Sauce. Montgomery Inn is one of the original Barbecue and Ribs Restaurant in the Cincinnati area. It has some of the finest BBQ food anywhere! They also sell their Ribs and Pulled Pork and Chicken at all Kroger. So when it’s Pulled Pork I almost always use the Montgomery Inn brand. Anyway you just heat it in a medium sauce pan until it’s warmed and you have BBQ. It’s the perfect combination of the Pork and the mouth watering Montgomery Inn Sauce that makes this so delicious! Plus it’s only 110 calories and 8 carbs per serving. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun.

 


For the Fries I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later tonight I had some Kraft 2% Sharp Cheddar slices and Honey Crisp Apple Slices.

Product Details

Directions
Refreeze or keep refrigerated. Microwave Oven: 1. Remove desired amount of barbecue from tray and place in microwave safe bowl. 2. Cover with plastic wrap and heat on High power (100%) for two (2) minutes. 3. Pull film back from edge of container and stir product thoroughly. 4. Replace film and heat for an additional 1-2 minutes or until hot! 5. Remove from oven and stir well before serving. Stove Top: 1. Place desired amount of barbecue in a medium size sauce pan. 2. Heat over medium low heat 6-12 minutes (covered) and occasionally stir so as not to burn. 3. Remove product from stove and serve. We highly recommend cooking our barbecue from a thawed state. Remove any uncooked barbecue from original packaging and place in a sealable container and refrigerate.

Today’s Menu: Chicken Bacon, Mushrooms, and Cheddar Turkey Burger w/ Baked Fries

 

 

For Breakfast this morning I Scrambled an Egg, toasted a Healthy Life Whole Grain English Muffin, and had my morning cup of Bigelow Decaf Green Tea. 78 degrees and rain showers out today. Had a very restless night and bad morning, allergies are running wild! So I couldn’t do a lot outside so I caught up on some rest, or tried. For Dinner tonight its a Chicken Bacon, Mushrooms, and Cheddar Turkey Burger w/ Baked Fries.

 

 

 

 

I hadn’t had a Turkey Burger in a while so today it’s a Chicken Bacon, Mushrooms, and Cheddar Turkey Burger. To make this Burger I’ll need; Jennie – O Turkey 93% Lean Patties, al fresco Uncured Chicken Bacon, Mushrooms, Kraft Deli Deluxe Sharp Cheddar, Aunt Millie’s Reduced Calorie Whole Grain Hamburger Buns, Pam Non-Stick Cooking Spray, and Extra Light Olive Oil.

 

 

 

 

To prepare the Burger I grabbed a skillet sprayed it the Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 16 minutes flipping it several times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done! As the Burger was cooking, in another skillet, I sauteed my Mushrooms. Sauteed them in Olive Oil, Butter, and seasoned them with Morton’s Light Salt, Ground Cumin, and Parsley. Set both the Burger and Mushrooms off the heat until needed.

 

 

As the Burger was finishing I got another skillet and sprayed it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

 

 

I served the Turkey Burger on a Aunt Milli’s Reduced Calorie Whole Grain Hamburger Bun. Topped the Burger Patty with Chicken Bacon and Mushrooms. Another excellent Burger. The Jennie – O Turkey Burger fries up perfect and has such a fresh taste and the Sharp Cheddar Cheese, Mushrooms, and Chicken Bacon added great taste and flavor.

 

 

 

 

 

To go with my Burger I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Fries

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns and served.And had my morning cup of Bigelow Decaf Green Tea. I had to be at our Family Lawyer at 10:00. I made some changes to my Will. Then on the way back home stopped the ATM, got gas, and then got the car washed before heading back home. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

 

Purchased the Cod Loin Fillets at Kroger and had them in the freezer. So I laid a fillet in the fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish which makes for one excellent Fish Sandwich.

 


For my Fries I’m using my favorite, Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling meal. For Dessert later some Honey Crisp Apple slices.

 

 

 

 

Panko Crusted Cod Fish Sandwich

Ingredients:

(4) 4oz. Cod Fillets
1c. Panko Bread Crumbs
Sea Salt and Ground Black Pepper, to taste
1 tsp. Onion Powder
1/2 tsp. Garlic Powder
1/2 tsp. Paprika
1/2 c. Egg Beater’s
1/2 c. Flour
1 Tbs. Light Olive Oil

Directions:

* Rinse fillets and pat dry the fillets and season with Sea Salt and Pepper.
* Combine flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour.
* Dip floured fillets into Paprika Seasoned Egg Beater’s, allowing excess to drip off.
* Place fillets, one at a time, in Panko Bread Crumbs and lightly toss fillets until both sides are covered.
* Meanwhile, heat canola oil in skillet and place the fillets in oil and saute 4 minutes each side, or until fillets are heated through and Panko Crust has browned.

Today’s Menu: Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries

 

 

For Breakfast this morning I prepared a Breakfast Sandwich. I toasted a Thomas Light 100 Calorie Multi Grain English Muffin. Then I lightly fried some slices of Boar’s Head Sweet Slice Ham, Scrambled some Egg Beater’s Egg Whites, and topped it all with a 1/2 slice of Boar’s Head Longhorn Colby Cheese. Also had my morning cup of Bigelow Decaf Green Tea. Sunny, 86 degrees, and not quite as humid out today. So good to see the sunshine again! After I had Breakfast I went to McDonald’s and picked up Breakfast for her. She went on to Church afterward. I stayed home and did a load of laundry. Then got the cart out of the shed and did some yard work this afternoon. Feels great to get out. For Dinner tonight a Fish Sandwich! I prepared a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

 

 

I had picked a New Zealand Orange Roughy Fillet at Jungle Jim’s International Market earlier in the week. I sliced the Fillet in 1/2, rinsed them in cold water, and put them in Hefty Plastic Freezer Bags and froze them. So I put 1 of them in the fridge overnight to thaw. To make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, Egg Beater’s (1/2 cup), Hungarian Paprika, and Shake and Bake Panko Bread Crumbs. I’ll also need An Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. I first Seasoned the Fillet with the McCormick Grinders of Sea Salt and Peppercorn Medley. Next I seasoned the Flour with Hungarian Paprika. Then rolled the Fillet in the Flour, next to the Egg Beater’s, and finally in the Panko Bread Crumbs.

 

 

I grabbed a skillet, sprayed it with Pam Non Stick Cooking Spray, added 1/2 tablespoon of Extra Light Olive Oil, and heated the skillet on medium heat. With the skillet heated I added my Fillet. I fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I served it on the Aunt Millie’s Bun. Orange Roughy has such a good taste to it, it’s a very mild Fish. Makes the perfect Fish Sandwich!

 

 

 

As my Orange Roughy was cooking I turned the oven up to 425 degrees and baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

For Breakfast this morning I prepared a Chicken Sausage Patty Breakfast Sandwich. I toasted a Healthy Life Multi Grain English Muffin, heated up a al fresco Country Style Chicken Sausage Patty, and topped it with a 1/2 slice of Kraft Deli Deluxe Sharp Cheddar Cheese. Love these Breakfast Sandwiches! Also I had my morning cup of Bigelow Decaf Green Tea. It’s a hot one out there today! Humid and a high of 97 degrees. Had a few things to do outside around the house and I got those done right after Breakfast. I don’t mind the heat but I can’t take the humidity! Mom went to a Church Picnic about 2:00 this afternoon. She didn’t last long though, just too hot out. Me, I just did a few things around the house. For Dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Fries.

For Breakfast this morning I Scrambled an Egg, heated up a couple of Johnsonville Turkey Breakfast Sausage Links, toasted a Healthy Life Whole Grain English Muffin, and had my morning cup of Bigelow Decaf Green Tea. Hot, Humid, and Thunderstorms out today. My neighbor came over today and varnished my ramp leading into the Kitchen. So I couldn’t use that until late today. So I stayed in an did some house cleaning. Dusted, vacuumed, cleaned the oven, and so on. For Dinner tonight its a Chicken Bacon, Mushrooms, and Cheddar Turkey Burger w/ Baked Fries.

 

 

It’s Burgers for the 2nd day in a row. Yesterday Pastrami and Swiss Buffalo Burgers and today a Chicken Bacon, Mushrooms, and Cheddar Turkey Burger. To make this Burger I’ll need; Jennie – O Turkey 93% Lean Patties, al fresco Uncured Chicken Bacon, Mushrooms, Kraft Deli Deluxe Sharp Cheddar, Aunt Millie’s Reduced Calorie Whole Grain Hamburger Buns, Pam Non-Stick Cooking Spray, and Extra Light Olive Oil.

 

 

 

To prepare the Burger I grabbed a skillet sprayed it the Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 16 minutes flipping it several times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done! As the Burger was cooking, in another skillet, I sauteed my Mushrooms. Sauteed them in Olive Oil, Butter, and seasoned them with Morton’s Light Salt, Ground Cumin, and Parsley. Set both the Burger and Mushrooms off the heat until needed.

 

 

As the Burger was finishing I got another skillet and sprayed it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

 

I served the Turkey Burger on a Aunt Milli’s Reduced Calorie Whole Grain Hamburger Bun. Topped the Burger Patty with Chicken Bacon and Mushrooms. Another excellent Burger. The Jennie – O Turkey Burger fries up perfect and has such a fresh taste and the Sharp Cheddar Cheese, Mushrooms, and Chicken Bacon added great taste and flavor.

 

 

 

 

To go with my Burger I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Chicken Bacon and Vermont Cheddar Cheese Buffalo Burger w/ Baked Fries

 

 

I just had a cup of Bigelow Decaf Green Tea for Breakfast. Rain Showers, Humid, and 86 degrees out. Not looking forward to the Funeral tomorrow for Dad. We are hoping there’s no rain but it doesn’t look good. Cleaned the house and cleaned up around the outside between showers. For Dinner tonight I prepared a Chicken Bacon and Vermont Cheddar Cheese Buffalo Burger w/ Baked Fries.

 

 

 

 

I started by grabbing a skillet and spraying it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

 

 

 

For the Buffalo Burger I used my favorite, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Their meaty, juicy and just flat out delicious! Preheated up a small skillet, on medium heat, that I sprayed with Pam Non Stick Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side. After flipping the Burger I added a slice of Boar’s Head Vermont Cheddar with about 1 minute of cook time left. Topped with the Chicken Bacon and served the Burger on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. The Burger was juicy and delicious, as all the Wild Idea Burgers are. Just love a good Burger, Buffalo Burger!

 

 

For the Cheese I used Boar’s Head Vermont Cheddar. I tried a sample of it at Kroger a while back and really loved the taste. It melts perfectly and has an excellent Cheddar taste. Our Cheese of choice lately!

Today’s Menu: Seasoned Gulf Coast Grouper w/ Baked Tater Tots

 

 

To start this rainy Friday morning off I prepared one of my favorites, Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Sunnyside Up Fried Egg. We had Thunderstorms overnight and into the morning here. Mostly cloudy and 76 degrees in the afternoon. Finished up on the Kitchen painting, looks 100% better! For Dinner tonight its a Seasoned Gulf Coast Grouper w/ Baked Tater Tots.

 


I love my Fish and Seafood, especially this Florida Gulf Coast Grouper. I had a couple small fillets of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful.

 

As my Grouper was cooking I preheated the oven on 425° to bake some Ore Ida Tater Tots. Just bake at 425 degrees for about 15 minutes and done! The Tater Tots come out golden brown and delicious! I served them with a side of Hunt’s Ketchup. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

For Dinner tonight I prepared a Chicken Bacon and Vermont Cheddar Cheese Buffalo Burger w/ Baked Fries.
