Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries

Went out early this morning to get the papers and what a beautiful morning! The sun just coming up in the East and the morning sky was incredible. Orange, Yellow, Red, Purple, and Blue had it just a beautiful morning sky! Started off the morning with a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg Whites, and Shredded Cheddar Cheese. 79 degrees, mostly sunny, and no humidity outside today! Got the cart out and did some yard work. Then rode around and enjoyed the beautiful day! Then settle in for some College Football. So for dinner tonight I prepared a Panko Crusted Cod Fish Sandwich w/ Baked Crinkle Fries.

I had purchased the Cod from Kroger and had it in the freezer. I laid the Cod in the fridge overnight to thaw. To prepare the Cod I rinsed the fillet off with cold water and patted dry. I then cut the fillet in half. Then seasoned them Panko Crusted Cod Fish Sandwich w Baked Crinkle Fries 001with McCormick Grinder Sea Salt and Peppercorn Medley. Combined the flour and both Garlic Powder and Onion powder then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish.

I also baked some Ore Ida Crinkle Fries, served these with a side of Hunt’s Ketchup for dipping. For dessert later Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

For Breakfast this morning I toasted a Thomas Light English Muffin. Next I heated up a al fresco Country Style Chicken Sausage. Topped that with a 1/2 slice of Kraft Deli Style Sharp Cheese. Served it all on the English Muffin, love those Breakfast Sandwiches! I also made a cup of Bigelow Decaf Green Tea. Partly cloudy and 95 degrees out! I thought Fall was almost here! For the date it was a record high around here yesterday and today. More hot weather on the way. Did some yard work early before it was too hot. Then settled in for an afternoon and evening of College Football! So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

I’m using the Wild Idea Buffalo Pulled Chuck Roast. This is so tender and incredibly flavorful. It comes already cooked and seasoned, so just heat and serve! It’s Seasoned with, Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. And that’s why it’s so flavorful! Delicious Pulled Buffalo that you just heat and serve.

I used a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. Added the Buffalo and heated it on medium low until heated through. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun and topped it with some Jack Daniel’s Honey Smokehouse BBQ Sauce. What a sandwich, just incredible flavor! The Wild Idea Buffalo Pulled Buffalo Chuck Roast is so flavorful and tender. It just has such a deep and rich flavor to it.

For my Fries I’m using Ore Ida Crinkle Cut Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper.

Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

For Breakfast it was Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. Just love this skillet meal! Cloudy and 84 degrees out there today. I had to have Mom at the Dermatologist at 11:30. Just a follow up to the precancer cells that were on her face. Plus she’s still moving slow from the fall she took on Monday. We stopped by Meijer after the Doctor visit, Meijer just a 1/2 mile down the road. So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

Today’s Menu: Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries

For Breakfast this morning I had a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg White, and Shredded Cheddar Cheese. Passing showers and 63 degrees out today. A whole lot of flooding in the area, way too much rain! After Breakfast I went to Kroger for a couple of items and then to McDonald’s to pick up Breakfast for Mom. Finished a couple of things around the house then I had to go to Walgreens to pick up a prescription for Mom. Caught up on some shows I had recorded the rest of the afternoon. For Dinner tonight its a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

I had picked up a couple of Orange Roughy Fillet at Jungle Jim’s International Market a while back and had it in the freezer. I sat the bag in the fridge overnight to thaw. To make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, Egg Beater’s (1/2 cup), Hungarian Paprika, and Shake and Bake Panko Bread Crumbs. I’ll also need An Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. I first Seasoned the Fillet with the McCormick Grinders of Sea Salt and Peppercorn Medley. Next I seasoned the Flour with the added Hungarian Paprika. Then rolled the Fillet in the Flour, next to the Egg Beater’s, and finally in the Panko Bread Crumbs.

I grabbed a skillet, sprayed it with Pam Non Stick Cooking Spray, added 1/2 tablespoon of Extra Light Olive Oil, and heated the skillet on medium heat. With the skillet heated I added my Fillet. I fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I served it on the Aunt Millie’s Bun. Orange Roughy has such a good taste to it, it’s a very mild Fish. Makes the perfect Fish Sandwich!

As my Orange Roughy was cooking I turned the oven up to 425 degrees and baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Fries

No Breakfast this morning . I had to be at my Family Doctor for my 4 month checks of Sugar, Cholesterol, and such. I’ll get the results next week, hopefully all good! Afterward I needed a few things from the West Chester Meijer and then I took Mom to Kroger to let her shop. Back home did a few chores around the house. For Dinner tonight I prepared Panko-Crusted Fish Sandwich and Baked Fries.

I had a Cod Fillet in the freezer that I had purchased from Kroger. I laid it in the fridge overnight to thaw. I had washed them off in cold water and sliced them into Sandwich size Fillets before I froze them.

Slow Cooker BBQ Pulled Pork Sandwich w/ Baked Fries

Today’s Menu: Slow Cooker BBQ Pulled Pork Sandwich w/ Baked Fries

For Breakfast this morning I prepared a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg Whites, and Cheddar Cheese. I really love these. So easy to prepare and very good! Plus they are only 150 calories and 3 carbs per serving, which is excellent. Mostly cloudy and 54 degrees out this afternoon. After Breakfast I went up to the local Kroger I needed a few items and Mom did also. Then stopped by McDonald’s and picked up Breakfast for her. Later on I went to Walmart, I needed some potting soil to repot some indoor plants. For Dinner tonight its a Pork Boston Butt! Tonight its Slow Cooker BBQ Pulled Pork Sandwich w/ Baked Fries.

The other day when we went to Jungle Jim’s they had Pork Boston Butt Roasts on sale so I grabbed one. I used a real easily prepared recipe for it. Using one of my favorite cooking vessels, the Crock Pot. To make this I’ll need the following; Pork Boston Butt Roast, 1/4 cup of Water, JB’s Fat Boy Premium All-Purpose Rub, and JB’s Fat Boy HaugWaush BBQ Sauce.

Last night before I went to bed I applied the Rub all over Pork Shoulder and sealed it in a plastic bag. Let it Refrigerate until ready to use the next day. Pulled the Pork Shoulder from the fridge, shaking off any excess Rub. Then to prepare it I lined my Crock Pot with a Reynolds Crock Pot Plastic Bag Liner and sprayed that with Pam Cooking Spray w/ Olive Oil. Love these Crock Pot Liners, makes for an easy cleanup! Turned the Crock Pot on High. Placed the Meat in the slow cooker with Water. Covered and cooked on High for 1 hour. Turned it to Low and cooked 7 to 9 hours longer, until fall apart tender.

Removed the Roast with the Bear Claws into a bowl. A word about these Bear Claws; I love these things to remove meat and roasts from whatever you’re cooking it in on to a plate. Word of caution though, these things are very sharp so be careful with them. I used the bear Claws to Shred the Pork. I normally re add to the Crock Pot with BBQ Sauce but Mom just wanted to add the BBQ Sauce to her Sandwich so we did it that way. I needed the Crock Pot anyway to cook the other 1/2 of the Boston Butt. It was too big to cook it all at once so I cooked the 1/2 and took it out later tonight. We are using JB’s Fat Boy HaugWaush BBQ Sauce for our BBQ Sauce. Served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun, with extra BBQ Sauce on the side. Nothing but a winning Pork Butt Dish! So tender and seasoned just right with Rub and BBQ Sauce. A lot of leftovers for some delicious Sandwiches and Meals the rest of the week!

I also baked some Ore Ida Golden Fries, served with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Crock Pot BBQ Pork Shoulder or Boston Butt

Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

For Breakfast on this Sunday Morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off! One delicious Breakfast anytime of the week! Its a Wintery Morning out today. We’ve had Rain, Sleet, Snow Flurries, and Freezing Rain. Snowing or raining most of the day. Sort of down and out today, still dealing with my Sinuses. Rested most of the day. So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.
