Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Fries

For Breakfast this morning I toasted a Thomas Light 100% Multi Grain English Muffin, heated up a al fresco Chicken Sausage Patty, added a 1/2 slice of Kraft Deli Style Sharp Cheddar Cheese, and a cup of Bigelow Decaf Green Tea. Cloudy and 66 degrees out today. I got all my work around the house done early because today is Opening Day of Baseball, and around here in the Cincinnati area its a Holiday. It should be a local Holiday because everyone is going to the game or watching the game through out the area! For Dinner Tonight a Panko Crusted Cod Fish Sandwich w/ Baked Fries. Play Ball, Go Reds!

I purchased a Pacific Cod Loin at Kroger yesterday. I had washed it off in cold water and I cut in in half. Put it in a plastic storage bag and into the fridge until ready to prepare.

I seasoned the fillets with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Placed the fillets, one at a time, in Panko Bread Crumbs, and lightly toss fillets until both sides are covered. Meanwhile, heated the Extra Virgin Olive Oil in a skillet and placed the fillets in and cooked 3 minutes each side. Served on a Aunt Millie’s Reduced Calorie Whole Grain Bun. I love making Fish Sandwiches with Cod and the Panko Bread Crumbs. Cod cooks up great no matter how you prepare it. Plus it’s a very meaty Fish which makes for one excellent Fish Sandwich.

For my Fries I’m using my favorite, Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. It’s an easy prepared but hot and filling Sandwich. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Fries

No Breakfast this morning . I had to be at my Family Doctor for my 4 month checks of Sugar, Cholesterol, and such. I’ll get the results next week, hopefully all good! Afterward I needed a few things from the West Chester Meijer and then I took Mom to Kroger to let her shop. Back home did a few chores around the house. For Dinner tonight I prepared Panko-Crusted Fish Sandwich and Baked Fries.

I had a Cod Fillet in the freezer that I had purchased from Kroger. I laid it in the fridge overnight to thaw. I had washed them off in cold water and sliced them into Sandwich size Fillets before I froze them.

To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Today’s Menu: Slow Cooker BBQ Pulled Pork Sandwich w/ Baked Fries

For Breakfast this morning I prepared a Jimmy Dean Simple Scramble Cup – Crumbled Turkey Sausage, Egg Whites, and Cheddar Cheese. I really love these. So easy to prepare and very good! Plus they are only 150 calories and 3 carbs per serving, which is excellent. Mostly cloudy and 54 degrees out this afternoon. After Breakfast I went up to the local Kroger I needed a few items and Mom did also. Then stopped by McDonald’s and picked up Breakfast for her. Later on I went to Walmart, I needed some potting soil to repot some indoor plants. For Dinner tonight its a Pork Boston Butt! Tonight its Slow Cooker BBQ Pulled Pork Sandwich w/ Baked Fries.

The other day when we went to Jungle Jim’s they had Pork Boston Butt Roasts on sale so I grabbed one. I used a real easily prepared recipe for it. Using one of my favorite cooking vessels, the Crock Pot. To make this I’ll need the following; Pork Boston Butt Roast, 1/4 cup of Water, JB’s Fat Boy Premium All-Purpose Rub, and JB’s Fat Boy HaugWaush BBQ Sauce.

Last night before I went to bed I applied the Rub all over Pork Shoulder and sealed it in a plastic bag. Let it Refrigerate until ready to use the next day. Pulled the Pork Shoulder from the fridge, shaking off any excess Rub. Then to prepare it I lined my Crock Pot with a Reynolds Crock Pot Plastic Bag Liner and sprayed that with Pam Cooking Spray w/ Olive Oil. Love these Crock Pot Liners, makes for an easy cleanup! Turned the Crock Pot on High. Placed the Meat in the slow cooker with Water. Covered and cooked on High for 1 hour. Turned it to Low and cooked 7 to 9 hours longer, until fall apart tender.

Removed the Roast with the Bear Claws into a bowl. A word about these Bear Claws; I love these things to remove meat and roasts from whatever you’re cooking it in on to a plate. Word of caution though, these things are very sharp so be careful with them. I used the bear Claws to Shred the Pork. I normally re add to the Crock Pot with BBQ Sauce but Mom just wanted to add the BBQ Sauce to her Sandwich so we did it that way. I needed the Crock Pot anyway to cook the other 1/2 of the Boston Butt. It was too big to cook it all at once so I cooked the 1/2 and took it out later tonight. We are using JB’s Fat Boy HaugWaush BBQ Sauce for our BBQ Sauce. Served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun, with extra BBQ Sauce on the side. Nothing but a winning Pork Butt Dish! So tender and seasoned just right with Rub and BBQ Sauce. A lot of leftovers for some delicious Sandwiches and Meals the rest of the week!

I also baked some Ore Ida Golden Fries, served with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Crock Pot BBQ Pork Shoulder or Boston Butt

INGREDIENTS
Pork Shoulder or Boston Butt, about 4 to 7 pounds, bone-in or boneless
1/4 cup of Water
JB’s Fat Boy Premium All-Purpose Rub
JB’s Fat Boy HaugWaush BBQ Sauce

PREPARATION

1 – The night before apply the Rub all over Pork Shoulder and seal in a plastic bag. Refrigerate until ready to use the next day.

2 – Place the meat in the slow cooker with water.

3 – Cover and cook on HIGH for 1 hour. Turn to LOW and cook 7 to 9 hours longer, until very tender. Remove roast and discard fat and juices. Chop or shred the pork; return to slow cooker. Mix a little barbecue sauce into the meat for flavor. Cover and cook on LOW for about 1 hour longer, until hot.

4 – Serve on sandwich buns with coleslaw (Optional) and extra barbecue sauce on the side.

Today’s Menu Leftover BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

Just a cup of Bigelow Decaf Green Tea for Breakfast, not much of an appetite this morning. More rain and 50 degrees outside today. There is flooding all over this area, the Ohio River is up over its banks. They say no rain tomorrow and I hope they are right we need to dry out around here. Cleaned the house today and did a couple of loads of laundry. Today is Mom’s Birthday, she turns 91! I hope that if I reach her age that I’m as in good as health as her! People see her and how she gets around and they can’t believe she’s 91. Happy Birthday Mom, I love you! For Dinner tonight I heated up the leftover BBQ Pulled Buffalo Chuck Roast . Tonight its BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

I’ve left the original post from the other night for description and recipe. Enjoy!

I used a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. Added the Buffalo and heated it on medium low until heated through. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun and topped it with some Jack Daniel’s Honey Smokehouse BBQ Sauce. What a sandwich, just incredible flavor! The Wild Idea Buffalo Pulled Buffalo Chuck Roast is so flavorful and tender. It just has such a deep and rich flavor to it.

Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

For Breakfast on this Sunday Morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off! One delicious Breakfast anytime of the week! Its a Wintery Morning out today. We’ve had Rain, Sleet, Snow Flurries, and Freezing Rain. Snowing or raining most of the day. Sort of down and out today, still dealing with my Sinuses. Rested most of the day. So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

Today’s Menu: Panko Crusted Cod Fish Sandwich w/ Baked Fries

I just had a cup of Bigelow Decaf Green Tea. I wanted to get an early start to go to Menard’s and stop by Kroger for Mom but the roads in some areas were real slick. We had some fog in some areas and the fog was freezing on the roads. So after that cleared up I headed out. I went to Menard’s to pick up some new blinds and then on to Kroger to grab a couple of items for Mom. Then stopped at McDonald’s and picked up Breakfast for Mom. After Lunch cleaned the house, dusted and ran the vacuum. For Dinner tonight I prepared Panko-Crusted Fish Sandwich and Baked Fries

When I went to Kroger earlier and I picked up a couple of North Atlantic Cod Fillets that were on sale. Washed them off in cold water and sliced them into Sandwich size Fillets. I kept one out for my Sandwich and froze the other.

To prepare the Cod I rinsed the fillet off with cold water and patted dry. Then seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Combined flour and both Garlic Powder and Onion powder. Then pressed both sides of fillet into flour for a light dusting , shaking off any excess flour. Dipped the floured fillets into the Paprika seasoned Egg Beater’s, allowing excess to drip off. Today’s Menu: Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries

For Breakfast this morning it was Gravy, Toast, and Sausage. I made the gravy using a packet of Pioneer Peppered White Gravy. As that cooking I toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread. I also heated up a couple of Johnsonville Turkey Breakfast Sausage Links. One Comfort Food Breakfast to start morning off. After Breakfast I went to Kroger for a couple of items and then to McDonald’s to pick up Breakfast for Mom. Finished a couple of things around the house then I had to go to Walgreens to pick up a prescription and some stamps. Caught up on some shows I had recorded the rest of the afternoon. For Dinner tonight its a Panko Crusted Orange Roughy Fish Sandwich w/ Baked Fries.

I had picked up a couple of Orange Roughy Fillet at Jungle Jim’s International Market earlier in the week. I sliced the Fillet in 1/2, rinsed them in cold water, and put them in Hefty Plastic Freezer Bags and froze them. So I put 1 of them in the fridge overnight to thaw. To make it I’ll need; the Orange Roughy Fillet, McCormick Grinder Sea Salt and Peppercorn Medley, Flour, Egg Beater’s (1/2 cup), Hungarian Paprika, and Shake and Bake Panko Bread Crumbs. I’ll also need An Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun. I first Seasoned the Fillet with the McCormick Grinders of Sea Salt and Peppercorn Medley. Next I seasoned the Flour with Hungarian Paprika. Then rolled the Fillet in the Flour, next to the Egg Beater’s, and finally in the Panko Bread Crumbs.

I grabbed a skillet, sprayed it with Pam Non Stick Cooking Spray, added 1/2 tablespoon of Extra Light Olive Oil, and heated the skillet on medium heat. With the skillet heated I added my Fillet. I fried it for 3 minutes per side. It fried up perfect! Golden Brown on the outside and a moist center. I served it on the Aunt Millie’s Bun. Orange Roughy has such a good taste to it, it’s a very mild Fish. Makes the perfect Fish Sandwich!

As my Orange Roughy was cooking I turned the oven up to 425 degrees and baked my Fries. I used Ore Ida Crinkle Cut Fries. Like all the Ore Ida Products, they are easy to prepare and delicious. I just baked them for 19 minutes and done! Served them with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Orange Roughy Fillet

Today’s Menu: Montgomery Inn Pulled Pork BBQ Sandwich w/ Baked Fries

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl. Next I put the Diced Ham over top the Hash Browns and served. Love those Potatoes and Ham! Had a brief shower and overall its mostly sunny and 82 degrees. Spent most of the day doing yard work and cleaning the outdoor furniture. Cleaned the chairs and a small table off. Then stored them in the shed until next Spring. That’s all for the day. For Dinner tonight I prepared a Montgomery Inn Pulled Pork BBQ Sandwich w/ Baked Fries.

When it’s Pulled Pork BBQ Sandwiches around here it’s almost always Montgomery Inn Hardwood Smoked Pulled Pork with BBQ Sauce. Montgomery Inn is one of the original Barbecue and Ribs Restaurant in the Cincinnati area. It has some of the finest BBQ food anywhere! They also sell their Ribs and Pulled Pork and Chicken at all Kroger. So when it’s Pulled Pork I almost always use the Montgomery Inn brand. Anyway you just heat it in a medium sauce pan until it’s warmed and you have BBQ. It’s the perfect combination of the Pork and the mouth watering Montgomery Inn Sauce that makes this so delicious! Plus it’s only 110 calories and 8 carbs per serving. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Bun.

For the Fries I’m using Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later tonight I had some Kraft 2% Sharp Cheddar slices and Honey Crisp Apple Slices.

Had a very restless night and bad morning, allergies are running wild! So I couldn’t do a lot outside so I caught up on some rest, or tried. For Dinner tonight its a Chicken Bacon, Mushrooms, and Cheddar Turkey Burger w/ Baked Fries.

I hadn’t had a Turkey Burger in a while so today it’s a Chicken Bacon, Mushrooms, and Cheddar Turkey Burger. To make this Burger I’ll need; Jennie – O Turkey 93% Lean Patties, al fresco Uncured Chicken Bacon, Mushrooms, Kraft Deli Deluxe Sharp Cheddar, Aunt Millie’s Reduced Calorie Whole Grain Hamburger Buns, Pam Non-Stick Cooking Spray, and Extra Light Olive Oil.

To prepare the Burger I grabbed a skillet sprayed it the Pam and added 2 teaspoons of Extra Light Olive Oil, heated it on medium heat. When ready I added the Turkey Burger and cooked it for 16 minutes flipping it several times. With a minute of cooking time left I added a slice of Kraft Deli Deluxe Sharp Cheddar Cheese. And done! As the Burger was cooking, in another skillet, I sauteed my Mushrooms. Sauteed them in Olive Oil, Butter, and seasoned them with Morton’s Light Salt, Ground Cumin, and Parsley. Set both the Burger and Mushrooms off the heat until needed.

As the Burger was finishing I got another skillet and sprayed it with Pam Non Stick Cooking Spray and heating it on medium heat. For the Bacon I’m using al fresco Uncured Chicken Bacon. It fries up perfect with an excellent taste. I buy it at Meijer, it’s the only store I’ve found to carry it. I need to 2 slices but fried up 5 slices. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it or so. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

I served the Turkey Burger on a Aunt Milli’s Reduced Calorie Whole Grain Hamburger Bun. Topped the Burger Patty with Chicken Bacon and Mushrooms. Another excellent Burger. The Jennie – O Turkey Burger fries up perfect and has such a fresh taste and the Sharp Cheddar Cheese, Mushrooms, and Chicken Bacon added great taste and flavor.

To go with my Burger I baked some Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.
