Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

 

 

For Breakfast this morning I toasted a Thomas Light English Muffin. Next I heated up a al fresco Country Style Chicken Sausage. Topped that with a 1/2 slice of Kraft Deli Style Sharp Cheese. Served it all on the English Muffin, love those Breakfast Sandwiches! I also made a cup of Bigelow Decaf Green Tea. Partly cloudy and 95 degrees out! I thought Fall was almost here! For the date it was a record high around here yesterday and today. More hot weather on the way. Did some yard work early before it was too hot. Then settled in for an afternoon and evening of College Football! So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

 

I’m using the Wild Idea Buffalo Pulled Chuck Roast. This is so tender and incredibly flavorful. It comes already cooked and seasoned, so just heat and serve! It’s Seasoned with, Organic Apple Cider, Organic Lime Juice, Onion Powder, Cumin, Sea Salt, Black Pepper, Chili Powder, Paprika, Garlic Powder, Oregano, Cayenne Pepper. And that’s why it’s so flavorful! Delicious Pulled Buffalo that you just heat and serve.

 

 

 

 

I used a small sauce pan that I sprayed with Pam Non Stick Cooking Spray. Added the Buffalo and heated it on medium low until heated through. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun and topped it with some Jack Daniel’s Honey Smokehouse BBQ Sauce. What a sandwich, just incredible flavor! The Wild Idea Buffalo Pulled Buffalo Chuck Roast is so flavorful and tender. It just has such a deep and rich flavor to it.

 

 

 

For my Fries I’m using Ore Ida Crinkle Cut Fries. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper.

Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

 

For Breakfast it was Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with a sprinkle of Sargento Reduced Fat Cheddar/Jack Cheese. Just love this skillet meal! Cloudy and 84 degrees out there today. I had to have Mom at the Dermatologist at 11:30. Just a follow up to the precancer cells that were on her face. Plus she’s still moving slow from the fall she took on Monday. We stopped by Meijer after the Doctor visit, Meijer just a 1/2 mile down the road. So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

Just a cup of Bigelow Decaf Green Tea for Breakfast, not much of an appetite this morning. More rain and 50 degrees outside today. There is flooding all over this area, the Ohio River is up over its banks. They say no rain tomorrow and I hope they are right we need to dry out around here. Cleaned the house today and did a couple of loads of laundry. Today is Mom’s Birthday, she turns 91! I hope that if I reach her age that I’m as in good as health as her! People see her and how she gets around and they can’t believe she’s 91. Happy Birthday Mom, I love you! For Dinner tonight I heated up the leftover BBQ Pulled Buffalo Chuck Roast . Tonight its BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

Today’s Menu: BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries

 

 

For Breakfast on this Sunday Morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off! One delicious Breakfast anytime of the week! Its a Wintery Morning out today. We’ve had Rain, Sleet, Snow Flurries, and Freezing Rain. Snowing or raining most of the day. Sort of down and out today, still dealing with my Sinuses. Rested most of the day. So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Crinkle Fries.

Today’s Menu: Pulled Chicken Sandwich w/ Baked Fries

 

 

For Breakfast I had a Poached Egg and served it on a slice of toasted Aunt Millie’s Light Whole Grain Bread. I also had my morning cup of Bigelow Decaf Green Tea. Cloudy, passing light shower, and 44 degrees outside today. After Breakfast I did a load of laundry. Later after Lunch I went to Kroger to pick up a couple of things for tonight’s Dinner. Back home cleaned the Kitchen and the fridge. For Dinner tonight, Pulled Chicken Sandwich w/ Baked Fries

 

 

 

 

 

 

I picked a Kroger small Rotisserie Chicken at Kroger earlier. I pulled all the Meat of the Chicken to make the Sandwiches. The Kroger Rotisserie Chicken is about 1/2 the size of the Simple Truth Rotisserie Chickens, but just as good!

 

 

 

 

 

To make the Sandwiches I’ll need; 1 Kroger Rotisserie Chicken, Boar’s Head Swiss Cheese, Jack Daniel’s Hickory Barbecue Sauce, Butter Lettuce, Kroger Bakery White Slider Rolls.

 

 

 

 

 

 

After Pulling the Chicken Meat I seasoned it with just a bit of Morton’s Light Salt and Ground Black Pepper. I then heated it up in a skillet for about 4 minutes. Then to make the Sandwiches; I took a couple of the Slider Rolls and cut them in half. Next I took a leaf of the Lettuce and placed it on the bottom bun. Next a 1/2 slice of Swiss Cheese. Next the Pulled Chicken and topped all off the Jack Daniel’s Hickory Barbecue Sauce. And this is one great tasting Sandwich! I love Rotisserie Chicken, you can use it in so many different ways. Then the Jack Daniel’s Hickory Barbecue Sauce just adds that extra flavor. First time using the Kroger Bakery Slider Rolls. They are only 90 calories per roll, so not too bad. Excellent Sandwiches.

 

 

 

 


I also baked some Ore Ida Crinkle Fries, served with a side of Hunt’s Ketchup. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

For Breakfast on this Saturday Morning Mom prepared some French Toast. For our Syrup for the French Toast we used Log Cabin Sugar Free Maple Syrup, only 20 calories per serving! Then I heated up some Johnsonville Turkey Breakfast Sausage Links. And as always I had my morning cup of Bigelow Decaf Green Tea. Mom makes the French Toast around! Love a good Breakfast! Partly cloudy and 57 degrees out, I actually seen some sunshine! Finally drying out after 2 days of heavy rain, but more showers on the way Sunday. Got the cart out of the shed along with the rake and leaf blower. Leaves and limbs everywhere after the wind and rain of two days. Got the front yard and deck all raked and clean. The backyard and side yards were to wet for me to get my cart on. Watched some College Football for the rest of the afternoon. So for Dinner tonight I prepared a BBQ Pulled Buffalo Chuck Roast Sandwich w/ Baked Fries. I had been wanting the Pulled Buffalo Chuck Roast for a while. I went to the freezer to find a package and thought I was out of it but then found a 1/2 pack of it in bottom pull out drawer of the freezer. I laid the package in the fridge overnight to thaw. For Breakfast on this Saturday Morning I prepared a Cheese Omlet. I made it using Egg Beaters and a slice of Sargento Ultra Thin Sharp Cheddar Cheese. I also heated up a couple of Johnsonville Turkey Breakfast Sausae Links and toasted a slice of Aunt Millie’s Light Whole Grain Bread. And as always I had my morning cup of Bigelow Decaf Green Tea. After Breakfast I took my car up and washed, much needed! Then to McDonald’s to pick up Breakfast for Mom. Did some laundry and house cleaning. Really tired and stressed today. Dad is at a local assisted living center for 5 days and he’s taken a turn for the worse and now we are scrambling to find a permanent place for him to stay. There’s just no way we can handle him here at the house. I’m in a wheelchair and Mom is 90 and we are not able to properly care for all his needs now. We are heart-broken and just nothing we can do. I had a Roast in the fridge that I’ll be fixing for me and Mom tonight.

 

 

 

Dry Rubbed Carnitas Boneless Petite Pork Shoulder Roast and i thought I should get one. I figured the Roast would come in handy for a quick Sandwich when you’re on the run. I had picked up a Swift Premium Dry Rubbed Carnitas Boneless Petite Pork Shoulder Roast at Kroger the day before. The Dry Rubbed Carnitas Boneless Petite Pork Shoulder Roast comes packaged already seasoned. You can roast this in the oven or use the Slow Cooker as like I am today. I got my Crock Pot out and put a plastic liner in it and sprayed that with Pam Cooking Spray.First remove the Shoulder Roast from the package and place in slow cooker with 1 inch of water in bottom. Put the lid on and cook on high for 4 hours or until fork tender. And as always a special “Thank You” goes out to whomever invented the Crock Pot Liners! You’ve made cooking so much easier! Cover and cook on high for 4 hours.

 


Removed the Roast from slow cooker and allow to cool slightly. Then shred meat with two forks for my Sandwiches. The Roast came out mouth-watering delicious! Tender, moist, and well seasoned. So tender it broke apart while taking it out of the Slow Cooker. I’m serving it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun and topped with some Jack Daniels Honey Smokehouse BBQ Sauce.I’ll use the leftovers for Sandwiches the next few days.

 

 

 

To go with our Sandwiches I baked some of my favorite Fries – Alexia Organic Yukon Select Fries. Seasoned them with McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

 

 

 

 

Swift Premium Dry Rubbed Carnitas Boneless Petite Pork Shoulder Roast
Cooking Directions:

Slow Cooker (preferred method):

1 – Remove meat from package.
2 – Place in slow cooker with 1 inch of water in bottom.
3 – Cover and cook on HIGH for 4 hours or until fork tender. Increase cooking time to 6 hours if cooking from frozen.
4 – Remove from slow cooker and allow to cool slightly.
5 – Shred meat with two forks.
Oven:

1 – Preheat oven to 350°F.
2 – Remove meat from package.
3 – Place pan on stovetop, add two tablespoons of oil and heat pot briefly on medium-high heat.
4 – When oil is hot, brown the roast on all sides.
5 – Place roast in oven safe dish with 1/2 cup of water. Cover and cook for 4 hours.
6 – Remove from oven and allow to rest for 15 minutes.
7 – Shred meat with two forks.
*Slow cooker and oven temperatures may vary, adjust cooking times accordingly.

Seasoning Ingredients: Sugar, salt, dehydrated onion & garlic, spices, yeast extract, lime juice powder (corn syrup solids, lime juice solids, natural flavor), natural flavors including smoke (contains modified food starch), maltodextrin and citric acid.

Today’s Menu: Beans and Smoked Turkey Sausage (Beans and Weenies)

 

 


For Breakfast this morning I poached an Egg and served it on a toasted Healthy Life Whole Grain English Muffin. I also had a cup of Bigelow Decaf Green Tea. Big change in the weather out there. 24 degrees, snow flurries, and windy, which makes it feel a lot colder out there! Had a high of 40 degrees but it sure felt colder. Had a good nights sleep last night, no Phantom Pains! Did some house cleaning and that was about it. For Dinner tonight it’s Beans and Smoked Turkey Sausage (Beans and Weenies). Comfort Food tonight, Good Ole Beans and Weenies!

 

 

Been a while since I’ve prepared Sausage and Beans. So tonight it’s Beans and Weenies, but I kicked this version up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into thin bite size pieces), 3 slices of Jennie – O Turkey Bacon (Fried and Crumbled), 1 can of Bush’s White Chili Beans, 1 can Bush’s Vegetarian Reduced Sodium Baked Beans, 1/4 cup of Red Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 teaspoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and 2 cups of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

 

I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let it simmer. Another set it and forget recipe! After I got the Beans started I fried up 1 1/2 Butterball Hardwood Smoked Turkey Sausages. I first sliced them up into bite size pieces then fried them on medium until they started to brown and removed them from the heat and put them in a small bowl and set aside.

 

 

Then using the same skillet I fried the Sausage in I fried 3 slices of Applegate No Sugar Added Uncured Bacon, actually I fried 5 slices. Always remember when preparing Bacon to always add 2 extra slices. Because you know you’ll grab a couple of slices, it’s called the Bacon Factor or Bacon Math. First time I’ve tried the Applegate Bacon. I normaly use Turkey or Chicken Bacon but this looked like an excellent Bacon. It fried up perfect and very good flavor to it. Plus it’s only 60 calories for 2 slices. As I said it fried up nice and crisp and when done crumbled it up into small pieces and added it to the Beans. Sausage, Bacon, and Beans are such a natural combo, Bacon gives it that wonderful smoky flavor.

 


I love dishes that you can set and let them simmer, to me it seems to give food a much richer and deeper flavor. After a couple of hours I added the Butterball Hardwood Smoked Turkey Sausages to the Beans. Kept the heat on low until it was time for dinner. A good Hearty Meal tonight. You have the smokiness of the Bacon and Liquid Smoke, the Sweetness and Tang of the BBQ Sauce, the Spices, along with the Smoked Turkey Sausage and Beans. I just love all the flavors, a real comfort food favorite! Another plus is the cleanup, just one dutch Oven and 1 skillet to clean. Also reheated the leftover Bakehouse Multigrain Bread. For Dessert later a So Delicious Coconut Milk Ice Cream Sandwich.

 

 

 

 

Butterball Hardwood Smoked Turkey Sausage

Today’s Menu: Crock Pot – Boneless Pork Loin Roast w/ Roasted Butternut Squash and Cut Italian Green Beans

 

 

I just had a cup of Bigelow Decaf Green Tea for Breakfast. I wanted to go to Walmart, so when going there the earlier the better. If you don’t go early and you rely on the mobility electric carts you won’t get one or it will not be charged up. They have very few. Our Church is helping some low-income families and I purchased some plate settings, cutlery trays with the cutlery, dish towels, pot holders, and 3 piece skillet sets. I love helping others if I’m able to! Another reason I went early was I wanted to beat the rains moving in for the afternoon. For Dinner tonight Crock Pot – Boneless Pork Loin Roast w/ Roasted Butternut Squash and Cut Italian Green Beans

 


I purchased the Pork Loin Roast from Kroger yesterday and had it in the fridge. This morning got it out of the fridge and Seasoned it with Morton’s Lite Salt and Fat Boy All Natural BBQ Steak Rub. Rubbed the Seasoning on all sides of the Roast and let it sit for 10 minutes.

 

 

 

 


As the Roast sat I got the Crock Pot ready. I lined the Crock Pot with a Crock Pot Liner. Then sprayed it with Pam Non Stick Cooking Spray and then added a 1/3 of a cup of Water. I then turned the Crock Pot on low to heat up. After 10 minutes I added the Roast to the Crock Pot. That’s when I added the Jack Daniel’s Honey Smokehouse BBQ Sauce. I added about a 1/2 bottle of it across the top of the Roast. Cover and cooked on low for 7 hours. Always check the temperature of the roast before removing. An instant-read thermometer should register at least 145 F. If overcooked, the pork can become dry and could be difficult to slice or shred.

 

At the end of 7 hours the Roast was ready. Just by opening the lid I could tell right away this was going to be a good one! Removed it from the Crock Pot and it was already falling apart, very good sign. I started shredding it and it was just falling apart. The Roast was so tender and flavorful! This turned out to be the best Roast I think I have ever prepared. Mom agreed, she loved it! I served it on Aunt Millie’s Reduced Calorie Whole Grain Hamburger Buns. We topped it with a bit more BBQ Sauce. One DELICIOUS Sandwich!

 

 


I made a couple of sides Roasted Butternut Squash and Allens Cut Italian Green Beans. For the Butternut Squash; I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Crumbled Bacon Bits, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.

 

 


To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash.

 

 

 


Next I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans of any kind every day and never get tired of having them. For Dessert later a Jello Sugar Free dark Chocolate Pudding.
