Today’s Menu: Salmon Patties w/ Mac and Cheese

 

For Breakfast I toasted a Thomas Light English Muffin and I topped it with Smucker’s Sugar Free Blackberry Jam. I also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and 62 degrees out, another Fall like day. Not complaining though! I headed to Meijer for a few items and then back home. Later on I took a neighbor of mine to Home Depot, he needed a new Water Hose. He didn’t have a car, in the shop. So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. Then for Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper to drink.

Both canned and fresh fish are a good source of protein and other important nutrients, and one isn’t necessarily healthier than the other. … In fact, a USDA study found slightly higher levels of two omega-3s in canned pink and red salmon than it found in fresh. Canned salmon has other merits, too. Canned salmon is also rich in protein, vitamin D, calcium (from the bones) and healthy omega-3 fats. Omega-3 fats are heart healthy fats. They also promote healthy brain development in babies.

Just a cup of Bigelow Decaf Green Tea for Breakfast. 69 degrees and cloudy out today. Helped out Mom with her Spring cleaning. Then after Lunch I got the 4 wheel cart and got the leaf blower out and cleaned around the flower beds, driveway and the ramp. I went back to the Family Doctor because my sugar tested a little high and we decided to keep everything the same. If it’s still the same he’s going to increase the dosage strength. So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

After Lunch a good friend of mine from High School days came over to help me change the tires on my Hoveround Mobility Chair. We replaced the rear Caster Wheels, only took about 20 minutes. He stayed for a bit and we caught up a bit. He’s going to be a Grandfather in a couple of weeks, his first and he’s excited! I’ve known him and his brother since our Freshman year in High School and have been great friends ever since. Afterward I did a few things out in the shed and got the leaf blower out and cleaned around the driveway and the ramp. So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

Just a cup of Biglow Decaf Green Tea for Breakfast. 70 degrees and sunny out today, beautiful Fall Day out there! I had to pick a Pick and Click order up at Kroger at 10:40. After Lunch I got the cart and rake out and raked some leaves in the backyard, and there were plenty of them! For Dinner tonight I prepared Salmon Patties w/ Baked Mac and Cheese.

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. I’ll be baking it, you can also microwave it. I prefer baking items in the oven. First preheat the oven to 350°F. Next I removed the tray from the package and removed the film. I placed the  container on baking tray and heated it in the oven for 22 minutes. Nice and bubbly around the edges. Let it cool a bit and it’s ready! The Mac and Cheese is delicious! Fantastic Elbow Macaroni with plenty of Cheese, seasoned just right! Excellent Salmon Patty and Baked Mac and Cheese Dinner tonight! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Just a cup of Bigelow Decaf Green Tea for Breakfast. Mostly cloudy and 80 degrees and partly cloudy out today. I went and had a new battery put in Mom’s Car. Besides that not a thing going on today. So I caught up on some little jobs in and around the house. For Dinner tonight I prepared Salmon Patties w/ Baked Shredded Potato Casserole.

 

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. For a side dish we had something new I came across at Meijer a couple of weeks ago, RESER’S MAIN STREET BISTRO – BAKED SHREDDED POTATO CASSEROLE. 2nd time we’ve had it, and love it! It comes in a tray that you can microwave or bake in the oven. As usual I’m going with the Oven Baking way.

 

 

It’s very easy to prepare. Preheat the oven to 350 degrees. Just remove the tray from the package and remove the film covering the tray. Place the tray on a baking sheet and heat in the oven for 22 minutes. And it’s ready to serve!

 

 

 

 

Seasoned with a shake of Salt and Pepper along with a sprinkle of Kraft 2% Shredded Sharp Cheddar Cheese. This turned out delicious! Came out bubbling hot. Plenty of Potatoes and loaded with flavor! Fantastic Potato item to have in the fridge. I also baked a loaf of Pillsbury French Bread. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels along with a Diet Peach Snapple to drink.

I’ve been dealing with some severe Phantom Pains since about 10:00 this morning, not a good day! So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Meat is becoming tougher and tougher to find now. I hope things get back to normal one day. So after Lunch I got the cart out along with the rake and leaf blower and cleaned around the outside of the house and yard. Took a ride around the neighborhood in the cart. Done for the day my Allergies are kicking in! So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

For Breakfast this morning I made Mom and myself Steak and Eggs with Toast. I fried up a couple of the SayersBrook 4 oz. Fillet Mignons, Scrambled up 4 Eggs, and toasted a few slices of Aunt Millie’s Light Whole Grain Bread. I also had a cup of Bigelow Decaf Green Tea and made Mom a cup of Coffee. Mostly cloudy and 60 degrees outside today. After Breakfast I headed off to Meijer. I needed a few items and Mom needed a couple of things also. Back home I hooked up the water hose and sprayed down the wooden deck, a lot dirt build up through the Winter. Then while I had the hose out I sprayed down our outside trash container. Done for the day my Sinuses are kicking in! So for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. After Breakfast I headed off to Meijer. I needed a few items and Mom needed a couple of things also. It seems to be getting tougher to coming up with new things to have for Dinner, especially keeping in mind I have to watch carbs because of my Diabetes 2. There’s a lot of food and recipes out there you just have to stay motivated and find them! Anyway for Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

 

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

 

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s of Hanover Pretzels with a Diet Dr. Pepper to drink.

Both canned and fresh fish are a good source of protein and other important nutrients, and one isn’t necessarily healthier than the other. … In fact, a USDA study found slightly higher levels of two omega-3s in canned pink and red salmon than it found in fresh. Canned salmon has other merits, too. Canned salmon is also rich in protein, vitamin D, calcium (from the bones) and healthy omega-3 fats. Omega-3 fats are heart healthy fats. They also promote healthy brain development in babies.

Today’s Menu: Salmon Patties w/ Mac and Cheese

 

 

For Breakfast this morning I toasted a Thomas Light English Muffin then I lightly fried some slices of Boar’s Head Sweet Slice Ham. Topped the the Ham with a 1/2 a slice of Boar’s Head Yellow Vernont Cheddar. Love a good Breakfast Sandwich! I also had a cup of Bigelow Decaf Green Tea. Rain on and off all day, high of 40 degrees. Cleaned and straightened up the pantry and then spent the the afternoon watching College Football. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.
