Today’s Menu: Fried Ocean Perch w/ Mac and Cheese

 

It was Steak and Eggs to start my day off today. For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. It came out a perfect medium rare! It was so tender and juicy.Then I Scrambled a couple Eggs, toasted 1 slice of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Good way to start the day! Mostly sunny, humid, and 94 degrees out to day. Took my Hoveround Chair outside and gave it a good cleaning, a much needed cleaning! That was about it for the day. Still fighting with my insurance so I was on the phone again for about 40 minutes! Very upset over this! For Dinner tonight I prepared Fried Ocean Perch w/ Mac and Cheese.

 


I picked up the Ocean Perch at Kroger the other day, cleaned them and had them in the freezer. Really love the Kroger Seafood Department, good selections. I laid the bag in the fridge to thaw overnight. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Light Olive Oil, on medium heat. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

 


Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

 

 

 

 


Ocean Perch

Ocean perch is mild tasting yet a bit sweet, with a moderately firm texture. The meat is lean, moist and flaky. Large ocean perch develop a coarse texture. Deep-skinned ocean perch with the fat line removed has the most delicate flavor. The flesh is white, though not as light as cod, and it turns opaque white when cooked.Whole fish may have bulging eyes and distended air bladders, which is a result of being brought up from great depths, not an indication of poor quality.

Today’s Menu: Fried Rockfish Fillets w/ Long Grain and Wild Rice, Whole Baby Carrots, and Light Texas Toast

 

 

 

For Breakfast this rainy morning I prepared some al fresco Uncured Chicken Bacon, 1 Egg Sunnyside Up, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Outside its raining again, big shocker! We have a high of 62 degrees and heavy rain at times. Not much to do so it was house cleaning today. Dusted and vacuumed then cleaned the refrigerator. For Dinner tonight I tried a fish I had never tried before, Rockfish. Tonight its Fried Rockfish Fillets w/ Long Grain and Wild Rice, Whole Baby Carrots, and Light Texas Toast.

 

 

 

I was at Meijer yesterday to pick up a few items and going by the Seafood Department and noticed they had Rockfish Fillets in the display case. I had heard of Rockfish but never I had tried it, until now. Growing up there was a creek that ran across the street and we would go fishing and catch a Fish we called Rockfish. But this (Ocean) Rockfish is totally different. I was told it has a taste similar to Snapper, which I love. The Fillets cost lass than 1/2 than what you pay for Snapper. So I picked up a couple of Fillets to try it out. I’ll be cooking it in a Cast Iron Skillet and will need McCormick Grinder Sea Salt and Grinder Peppercorn Medley along with Zatarain’s Seasoned Seafood Breading Mix, and Extra Light Olive Oil.

 

 

To prepare it; I first washed and cleaned the Fillets in cold water. Pat the fillets dry with a paper towel. Seasoned on both sides with the Sea Salt and Peppercorn Medley. Then rolled the Fillets in the Zatarain’s Seasoned Fish Fri Mix.

 

 

 

 

 

Next heated a Cast-Iron Skillet over high heat. When the Pan is hot, added the Extra Light Olive Oil. Place the fillets in the pan, skin side down. Press down gently on the fillets with a spatula for about 20 seconds to prevent curling. Lower heat to medium and let cook until the fish is golden and caramelized around edges, about 2 to 3 minutes. Carefully flip fillets and until golden all over and cooked through, 45 to 90 seconds more.

 

 

 

The Rockfish fried up to a perfect Golden Brown. It does have a taste similar to Snapper. Really a delicious meaty version of Snapper, and costs a lot less! Really enjoyed it and will purchase more of it. Mom, who isn’t a huge Fish Lover, really liked them.

 

 

 

 

 

For one side dish I prepared a packet of Microwavable Uncle Ben’s Long Grain and Wild Rice. It comes in a microwavable bag. I microwaved it for 90 seconds and done! I guess my favorite among the Uncle Ben’s Ready Rice, all though I love using them all. Another tasty and easy to fix item, just microwave for 90 seconds and it’s ready.

 

 

 

 


Then I also heated up a can of Kroger Brand Whole Baby Carrots. These are so much easier to prepare than boiling fresh Baby Carrots, and they taste just as fresh and good. I also baked a loaf of Bake House RiverRoad Multi Grain Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

 

 

 

 

 

Rockfish – Sebastes

Sebastes is a genus of fish in the family Sebastidae (though some include this in Scorpaenidae), most of which have the common name of rockfish. A few are called ocean perch, sea perch or redfish instead. Most of the Sebastes species live in the north Pacific, although two (Sebastes capensis and Sebastes oculatus) live in the south Pacific/Atlantic and four (Sebastes fasciatus, Sebastes mentella, Sebastes norvegicus and Sebastes viviparus) live in the north Atlantic. The coast off South California is the area of highest rockfish diversity, with 56 species living in the Southern California Bight.

Rockfish are an important sport and commercial fish, and many species have been overfished. As a result, seasons are tightly controlled in many areas. Sebastes are sometimes fraudulently substituted for the more expensive northern red snapper.

Rockfish has a sweet, mild flavor, with a flaky, medium-firm texture. It is best baked, sautéed, broiled or poached. Since the flesh tends to flake easily, it is not the best fish for grilling. Try it with a little lemon to bring out the sweet flavor without overpowering.

For Breakfast on this cold March morning I Scrambled a couple of Eggs, toasted 2 slices of Healthy Life Whole Grain Fried Ocean Perch w Mac & Cheese 009Bread, and had my morning cup of Bigelow Decaf Green Tea. Well they say if March comes in like a Lion it will go out like Lamb. So we got the Lion part covered so now we”l wait and see if it goes out like a Lamb! Mid 20’s this morning with very light snow flurries and still windy out. But they say by Sunday it will be 60 degrees again, hope they have it right! Did some house cleaning today and cleaned up around the outside a bit. I didn’t go see Dad today, he had some testing and 2 therapy sessions today. For my dinner tonight I prepared Fried Ocean Perch w/ Mac & Cheese.

 

 

I picked up the Ocean Perch at Meijer yesterday. Really love the Meijer Seafood Department. Good selection, always Fried Ocean Perch w Mac & Cheese 001fresh and some good items on sale. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Virgin Olive, on medium heat. Rinsed the Perch with cold water and patted dry with a paper towel. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them for 6 minutes. 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

To start my Wednesday morning off I prepared some Simply Potatoes Shredded Hash Browns, 2 Jennie – O Turkey Breakfast Sausage Links, 1 toasted slice of Healthy Life Whole Grain Bread (lightly buttered), and my morning cup of Bigelow Decaf Green Tea. Outside it’s another day in the low 80’s and mostly sunny. The weather will be changing though, back into the low 60,s for tomorrow. Cleaned the house today, ran the vacuum and dusted. Then got the cart out to enjoy the rest of the day. For Dinner tonight, Seasoned Gulf Coast Grouper w/ Savory Herb Potatoes and Cut Green Beans.

 
I love Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back up! I had it in seasoned-gulf-coast-grouper-w-savory-herb-potatoes-and-cut-green-002the freezer so I grabbed 3 fillets and let them thaw overnight in the fridge. It’s more of those beautiful Grouper fillets! To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish, Love Seafood!

While at Meijer I picked up a package of the Little Potato Company Savory Herb Potatoes. I had these a few times now and really enjoyed them. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

Then I also heated up a can of Del Monte Low Sodium Cut Green Beans. Then I boiled some Green Giant Mini Ears of Sweet Corn for Mom and Dad. As good and sweeter than fresh Corn on the Cob. For dessert later a bowl of Dole Sliced Peaches.

Today’s Menu: Seasoned Gulf Coast Grouper w/ Savory Herb Potatoes and Cut Green Beans

 

 
It was scrambled Eggs and Toast for Breakfast this morning. I Scrambled 2 medium-sized Eggs and topped them with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Then I toasted 2 slices of Healthy Life Seasoned Gulf Coast Grouper w Savory Herb Potatoes and Cut Green 004Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Also the morning cup of Bigelow Decaf Green Tea. What a beautiful Summer morning! I went out about day break to get the morning papers and the East horizon was just bursting with dazzling colors – Blues, Pinks, Reds, and Orange had it lit up! Another nice day again, sunny and 79 degrees and a hair more humid. After Breakfast I headed to Meijer for most of the groceries and then by Kroger for a couple of items. Back home got the cart out and did what yard work I could get to and tided up the shed. Kept the cart out and rode around for a bit. For Dinner tonight I prepared a Seasoned Gulf Coast Grouper w/ Savory Herb Potatoes and Cut Green Beans.

 

Blackened Gulf Coast Grouper w Whole Kernel Sweet Corn and Seaso 004

I love having Fish and Seafood, especially this Florida Gulf Coast Grouper my friends keep bringing me back! I had it in the freezer so I grabbed a fillet and let it thaw overnight in the fridge. It’s another one of those beautiful Grouper fillet! To prepare the fillet I seasoned it with just a bit of Sea Salt and put the fillet in a Hefty Zip Plastic Bag where I then added Zatarain’s Seafood Breading Mix Seasoned. Shook until all it was well coated. Shook off the excess and pan fried it in Extra Virgin Olive Oil, frying about 3 minutes per side until golden brown. Grouper is so meaty and flavorful. Love Fish, Love Seafood! Plus as you can tell as big as these fillets are there will be plenty of leftovers for lunch tomorrow!
