Today’s Menu: Baked Fish Sticks / Mac and Cheese

 

 

For Breakfast this morning I prepared an Egg White Ham and Cheese Omelet. I used Egg Beater’s Egg Whites, Meijer Diced Ham, Sargento Off the Block Sharp Cheddar Cheese, and Ortega Smoky Chipotle Taco Sauce. Love these Omelets! I also toasted a slice of Aunt Millie’s Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Cloudy but had a high of 59 degrees, a litle light rain. I got my test results back from last week. My Diabetes 2 was well under control and all blood work including my liver were all normal. Not much to do today so I got the cart out of the shed and did a little yard work and took off for a ride around the neighborhood. I won’t have many more days where I can get the cart so I wanted to get it out and enjoy the day. For Dinner tonight I prepared Baked Fish Sticks / Mac and Cheese.

 

I wanted something light and easy to prepare and nothing easier than Baked Fish Sticks / Mac and Cheese. For the Fish Sticks I bought a box of Kroger Crunchy Fish Sticks. First time using these but Mom had bought a box a while back and I tried them then. So i heated the oven on 400° degrees. Grabbed a small baking pan and sprayed with Pam Non Stick Spray. Lined my Fish Sticks up in the pan and baked. I baked them for 15 minutes and done!

 

 

 

 

They baked up to a golden brown and were excellent! They make a perfect light Dinner. Nice crispness and the breading was well seasoned. They were 180 calories and 20 carbs per serving (5 Fish Sticks). Good one to have in the freezer. Served with a side of Tarter Sauce.

 

 

 

 

 

 

For the Mac Cheese I’m using Kraft Whole Grain Macaroni and Cheese. It comes in a 1 serving microwavable cup. To prepare it I removed lid and removed the Cheese Sauce packet from the cup. Added water to the cups fill line and stirred. Microwaved uncovered, on high for 3 1/2 minutes. Do not drain the excess water. Stir in the Cheese Sauce Mix and it was ready. I love the Kraft Mac and Cheese they always comes out perfect. Well Fish Sticks and the Mac and Cheese couldn’t have been any easier to prepare. One by oven and the other microwaved! For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Mini Pretzels with a Sprite Zero to drink.

Today’s Menu: Fried Ocean Perch w/ Mac and Cheese

 

 

 

To start my morning off I Scrambled a couple of Eggs and toasted a slice of Aunt Millie’s Light Whole Grain Bread that I Buttered with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. High Pollen and Mold count out today so I’m dealing with allergies again! Cloudy and 65 degrees outside. Went to Meijer, the Post Office, and then to the ATM, and stopped and got gas. Not much else going on today. For Dinner tonight I prepared Fried Ocean Perch w/ Mac and Cheese.

 

 

 

I picked up the Ocean Perch at Kroger the day before, cleaned them and had them in the fridge. Really love the Kroger Seafood Department, good selections. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Light Olive Oil, on medium heat. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

 

 

Then for a side I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Coke Zero to drink.

Buffalo Chicken Mac and Cheese
This isn’t your ordinary mac and cheese. Kick the flavor up a notch by adding JENNIE-O® Buffalo Style Chicken Breast and a heaping helping of heat. This crowd-pleaser is perfect for holiday, game day, or any day. With 240 calories per serving, it’s easy to say yes to seconds!

INGREDIENTS
1½ cups whole grain elbow macaroni
1 large egg
¾ cup milk
¼ cup non-fat plain yogurt
½ teaspoon granulated garlic
½ teaspoon onion powder
½ teaspoon dry mustard
2 tablespoons buffalo hot sauce
2 cups JENNIE-O® Buffalo Style Chicken Breast, diced
¼ cup diced onion
¼ cup diced celery
1½ cups shredded Cheddar cheese
pinch of paprika, if desired

 

DIRECTIONS
1) Heat oven to 350°F.
2) Cook macaroni until al dente, drain. In medium bowl, beat egg and add milk, yogurt, garlic, onion powder, mustard and hot sauce.
3) In 9×13-inch baking pan, evenly layer chicken, macaroni, onion, celery and cheese. Add milk sauce and stir. Bake 40 to 50 minutes or until golden. Garnish with paprika, if desired.

One-Pot Mexican Macaroni and Cheese

One-Pot Mexican Macaroni and CheeseAn old favorite, macaroni and cheese takes on a new role with the addition of zesty jalapeños teamed with shredded Monterey Jack cheese. The pasta doesn’t need draining in this one-pot recipe, which saves on dishes.

Recipe Ingredients:
3 cups dry rotelle or wagon wheel pasta (8 ounces)
3 cups water
1 cup NESTLÉ® CARNATION® Evaporated Milk
1 small red bell pepper, chopped
4 green onions, chopped
1/4 cup sliced ripe olives
1 tablespoon diced jalapeños
1 cup shredded Monterey Jack cheese

Cooking Directions:
1 – Boil pasta and water in large saucepan, stirring frequently, for 8 to 10 minutes or until pasta is tender and water is almost gone. Add evaporated milk, bell pepper, green onions, olives and jalapeños; bring to a boil.
2 – Reduce heat to medium; cook, stirring frequently, until sauce has thickened slightly. Add cheese; stir until cheese is melted and sauce is thickened. Season with salt.

Today’s Menu: Fried Ocean Perch w/ Mac and Cheese

 

It was Steak and Eggs to start my day off today. For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. It came out a perfect medium rare! It was so tender and juicy.Then I Scrambled a couple Eggs, toasted 1 slice of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Good way to start the day! Mostly sunny, humid, and 94 degrees out to day. Took my Hoveround Chair outside and gave it a good cleaning, a much needed cleaning! That was about it for the day. Still fighting with my insurance so I was on the phone again for about 40 minutes! Very upset over this! For Dinner tonight I prepared Fried Ocean Perch w/ Mac and Cheese.

Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese

Today’s Menu: Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese

 

 

For Breakfast this morning I toasted a healthy Life Whole Grain English Muffin and topped it with Smucker’s Sugar Free Blackberry Jam. I also had my morning cup of Bigelow Decaf Green Tea. Went out to grab the morning papers this morning and its 41 degrees. Another beautiful Fall Day out again, 70 degrees and sunny! After Breakfast I headed to Meijer and while there went to their Lawn and Garden and picked up a couple Fall Flowers they had in stock. Back home home after Lunch I got the cart out and did a few things around the yard. Took a spin around the neighborhood and enjoyed this beautiful weather! For Dinner tonight I prepared a Seasoned Gulf Coast Grouper Fish Sandwich w/ Mac and Cheese.

 

I love my Fish and Seafood, especially this Florida Gulf Coast Grouper. It’s good to have friends that also own a house off the Florida Gulf Coast. I had a fillet of it in the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. I served it on a Aunt Millie’s Reduced Calorie Whole Grain Hamburger Bun.

 

To go with Fish Sandwich I prepared a Stouffer’s Classic Mac and Cheese Mac Cup. Just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.
