Today’s Menu: Fried Ocean Perch w/ Cheddar Potato Bake

 

 

 

To start my morning off I had a bowl of Cheerios’s and also had my morning cup of Bigelow Decaf Green Tea. 82 degrees and sunny outside, and low humidity! A beautiful day out! After Breakfast I went and had Mom’s car washed and I vacuumed the inside out. Then to McDonald’s to pick her Breakfast. Got some work done inside and then it was outside. Got the leaf blower and cleaned off the deck and driveway areas. Then raked the front yard again. So many leaves for this time of year. Then kept the cart out and enjoyed the beautiful day! For Dinner tonight I prepared Fried Ocean Perch w/ Cheddar Potato Bake.

 

 

 

 

 

I picked up the Ocean Perch at Kroger the other day, cleaned them and had them in the freezer. Really love the Kroger Seafood Department, good selections. I laid the bag in the fridge to thaw overnight. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Light Olive Oil, on medium heat. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

 

 

 

 

For a side I prepared a Stouffer’s Cheddar Potato Bake. Another easy to prepare and delicious dish. To prepare this one I’m using the microwave. It comes in a microwavable tray. I just slit the film cover on the tray and microwaved it for 6 minutes, Done! I love this side by Stouffer’s! Delicious Potato Dish, really like the bread crumb topping. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Sprite Zero to drink.

Today’s Menu: Lemon Pepper Seasoned Ocean Perch w/ Mac and Cheese and French Bread

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning, not hungry this morning. Dealing with allergies again! Everyone seems to be dealing with it this year. Nothing seems to work to get it to ease up but rest and quiet. So that was my day today. Mostly sunny, humid and a high of 90 out today. For Dinner tonight its Lemon Pepper Seasoned Ocean Perch w/ Mac and Cheese and French Bread.

 

 

 

 

 

I wanted something light and easy to prepare for Dinner tonight. So I had bought a small package of Lemon Pepper Seasoned Ocean Perch from Kroger yesterday and I’m having it tonight.

 

 

 

 

 

 

 

Its Wild Caught Ocean Perch and it comes seasoned with a Lemon Pepper Blend Seasoning. There’s a little over 1/2 a pound of the Fillets and they came packaged in a ready bake tin pan. I decided to pan fry them instead. I used a medium size skillet. Heated the skillet on medium heat and added a tablespoon of Extra Light Olive Oil. Added the Perch and fried them for 2 minutes. Flipped them over and continued to cook them for 2 minutes and they were done. The fillets were not that big but big enough for a light Dinner. The seasoning was perfect and they cooked up perfect.

 

 

 

 

For a side I prepared I microwaved Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Peach Snapple to drink.

Today’s Menu: Fried Ocean Perch w/ Mac and Cheese

 

It was Steak and Eggs to start my day off today. For my Steak I fried up a SayersBrook 4 oz. Bison Fillet Mignon. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. It came out a perfect medium rare! It was so tender and juicy.Then I Scrambled a couple Eggs, toasted 1 slice of Aunt Millie’s Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Good way to start the day! Mostly sunny, humid, and 94 degrees out to day. Took my Hoveround Chair outside and gave it a good cleaning, a much needed cleaning! That was about it for the day. Still fighting with my insurance so I was on the phone again for about 40 minutes! Very upset over this! For Dinner tonight I prepared Fried Ocean Perch w/ Mac and Cheese.

Today’s Menu: Fried Ocean Perch w/ Sharp White Cheddar Mac and Cheese

 

 

 

To start my Friday morning off I Scrambled a couple of Eggs, toasted 2 slices of Healthy Life Whole Grain Bread, and as always my morning cup of Bigelow Decaf Green Tea. Mostly sunny out today and 80 degrees. Went up and had my car washed, really needed it! Drove on over to Walmart, I wanted to check out the Lawn and Garden Department for a few things. Back home got the cart out for a while and drove around the neighborhood and down by the lake. Relaxing day! For Dinner tonight it’s Fried Ocean Perch w/ Sharp White Cheddar Mac and Cheese.

 

 

I picked up the Ocean Perch at Kroger the day before. Really love the Kroger Seafood Department. Good selection. I first rinsed the fillets off in cold water and patted dry with a paper towel. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Light Olive Oil, on medium heat. Rinsed the Perch with cold water and patted dry with a paper towel. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

 

For a side dish it was leftover Cracker Barrel Macaroni and Cheese Dinner – Sharp White Cheddar. I just reheated the Mac and Cheese leftover from Dinner last night. I put it into a bowl, covered the bowl with a paper towel, and microwaved it for 1 minute and 10 seconds. Heated up great and still delicious. Really enjoyed the Cracker Barrel Mac and Cheese. For Dessert later a Weight Watcher’s Cookies and Cream Ice Cream Bar.

Today’s Menu: Fried Ocean Perch w/ Shells and Cheese

 

 

For Breakfast this morning I had a bowl of Golden Puffs Cereal along with my morning cup of Bigelow Decaf Green Tea. Growing up I loved Sugar Crisps Cereal. Well while at Meijer yesterday I came across a bag of Malt O Meel Golden Puffs, only 100 calories per serving. These taste just like the old Super Sugar Crisps! After Breakfast I grabbed a broom and the leaf blower and cleaned the deck and driveway areas. After that I watered all the new plants outside. Then got some empty plant pots out of the shed and filled them with potting soil and planted Wild Flower Seeds in them. Later after Lunch I headed over to see Dad for a while. Outside it’s a bit cooler out. In the 80’s the past couple of days with lots of sunshine and today cloudy and 65 degrees. For my dinner tonight I prepared Fried Ocean Perch w/ Shells and Cheese.

Then for a side I prepared a box of Annie’s Shells and Real Aged Cheddar. I’ve used Annie’s products in the past and always enjoyed them. The reason I choose Annie’s is on Friday’s Kroger runs an online special of a free product. You just log in to the Kroger site and click on it and it goes on your Kroger Card, very good deal every Friday!

 

 

To prepare it is preparation like most boxed Mac and Cheese. Boil 6 cups of water in a medium sauce pan. Stir in the Pasta and cook 8-10 minutes.When done drain the Pasta. Next add 3 tbsp of low fat Milk to a warm sauce pan. Sprinkle the Cheese packet over the Milk and stir to combine. Finally add the Pasta back to that saucepan and stir until well mixed. And done! Excellent Mac and Cheese! Tender and nice flavor, goes great with the Perch! For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Mid 20’s this morning with very light snow flurries and still windy out. But they say by Sunday it will be 60 degrees again, hope they have it right! Did some house cleaning today and cleaned up around the outside a bit. I didn’t go see Dad today, he had some testing and 2 therapy sessions today. For my dinner tonight I prepared Fried Ocean Perch w/ Mac & Cheese.

For Breakfast this morning it was just a cup of Bigelow Green Decaf Green Tea and an Eggo Waffle. After Breakfast started a load of laundry for Mom. So for Dinner tonight its Fried Ocean Perch w/ Potato Pancakes.

 

 

I picked up the Ocean Perch at Meijer a couple of weeks ago. I had used half and had the other half in the freezer. I Fried Ocean Perch w Mac & Cheese 001laid a bag of Perch in the fridge overnight to thaw. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Virgin Olive, on medium heat. Rinsed the Perch with cold water and patted dry with a paper towel. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. For a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). For dessert later a Healthy Life Dark Fudge Swirl Frozen Greek Yogurt.

 

 

 

 

Manischewitz Potato Pancake Mix

Ingredients
Potatoes ( Contains Sulfites to Maintain Whiteness), Potato Starch, Salt, Onion, Vegetable Shortening (Partially Hydrogenated Cottonseed Oil).

DirectionsMANISCHEWITZ Potato Pancake Mix
Makes 18-24 pancakes. You Will Need: Medium bowl, 2 eggs, 2 1/4 cups cold water, vegetable oil, large skillet. 1. Mix: In a medium bowl, beat two eggs with a fork until blended. Add 2 1/4 cups cold water and mix well. Stir in the contents of this package. Allow batter to thicken for 3 to 4 minutes. Stir. 2. Fry: Drop tablespoons of batter into 1/8 inch hot vegetable oil in a large skillet and brown on both sides.

I just had a cup of Bigelow Decaf Green Tea for breakfast, just not hungry this morning. I then headed to Kroger for Mom, she just needed a couple of items. I stopped by McDonald’s then to pick up her breakfast and coffee. Did some house cleaning today and cleaned up around the outside before the rains moved back in, lot of rain here. I didn’t go see Dad today, he some testing and 2 therapy sessions today. For my dinner tonight i prepared Fried Ocean Perch w/ Mac & Cheese.

I picked up the Ocean Perch at Meijer yesterday. Really like the Meijer Seafood Department. Good selection, always fresh and some good items on sale. To prepare them I preheated a medium size skillet, that I had sprayed with Pam Cooking Spray and added Extra Virgin Olive, on medium heat. Rinsed the Perch with cold water and patted dry with a paper towel. Lightly seasoned them with the McCormick Sea Salt. I then put them in a Hefty Zip Lock Bag and added Zatarain’s Seasoned Fish Fri, shaking the bag then until the Perch Fillets were coated. Added the Fillets to the heated skillet and fried them for 6 minutes. 3 minutes per side. They came out Golden Brown! Delicious and fresh tasting, I love all Fish and Seafood!

Then for a side I microwaved Stouffer’s Classic Mac & Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Finally a great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

We had our first frost of the Fall Season this morning! Went out to get the morning papers and it was a bit nippy, 31 degrees. Beautiful Fall Day out though, mostly sunny and a high in the 50’s. After breakfast and the morning workout I cleaned up around the house and later in the day swept up the leaves on the deck and driveway. Not much else going on today. Spent the remainder of the afternoon watching College Football. For dinner tonight I prepared Fried Ocean Perch w/ Mac & Cheese.

Our streak of beautiful days is still going, sunny and a high near 70. But rain on the way possibly by tomorrow. Had to have our ice maker in the fridge replaced today. Then did some house cleaning and on to the outside. I bought a miniature Blue Berry Bush and replanted it into a bigger pot, it’s been doing okay I’ve only had it a few days. I also bought a few Herb plants that I replanted in bigger pots. Had the cart out for a while enjoying the day. For dinner tonight I prepared Baked Parmesan Perch w/ Jalapeno Cheese Fried Potatoes.

 

 

 

While at Jungle Jim’s International Market yesterday I had picked up some Ocean Perch fillets and wasted no time Baked Parmesan Perch Jalapeno Cheese Fried Potatoes 001in using them. I’m trying a new recipe with them, Baked Parmesan Perch. I was looking for Perch recipes and came across this one on the Taste of Home website, a site I have found many a recipe on. it’s an easily prepared and delicious recipe! I’ll need the following to prepare it; 2 tablespoons dry Bread Crumbs (Progresso Italian Style Bread Crumbs), 1 tablespoon grated Parmesan Cheese (Kraft Reduced Fat Parmesan Grated Cheese), 1 tablespoon Paprika (Hungarian Paprika), 1 teaspoon dried Basil, 1 pound Perch or Fish fillets of your choice, and 1 tablespoon melted Butter (Blue Bonnet Light Butter). To prepare it; In a shallow bowl, combine the Bread Crumbs, Parmesan Cheese, Paprika and Basil. Brush Fish fillets with Butter, then dip into the Crumb Mixture. Place in a greased baking pan. Bake, uncovered, at 400° for 12 minutes or until fish flakes easily with a fork. The original recipe calls for a baking temperature of 500° but I opted for 400° instead and an extra 2 minutes of baking time. I just think Fish bakes up better at 400°. The Perch came out delicious! Fantastic flavor from all the ingredients and came out very moist. I have another “Keeper Recipe”.

 

 
Then for a side dish I prepared Jalapeno Cheese Fried Potatoes. I had come across the Jalapeno Cheese Fried Baked Parmesan Perch Jalapeno Cheese Fried Potatoes 003Potatoes some time back in an issue of Cuisine at Home Magazine. Made some changes from the original recipe. I used Simply Steakhouse Seasoned Diced Potatoes, Canola Oil instead of Peanut Oil, Scallions, 1 Jalapeno (sliced), Sea Salt and Ground Pepper, Sargento Reduced Fat Mexican Style Shredded Cheese, and I also added some diced Red Onion. To prepare it; Add the Canola Oil to a Cast Iron Skillet and heat on medium. Prepare the Diced potatoes according to the package instructions. About midway through the cooking process add the Diced Red Onion and continue cooking. Then Scallions and Jalapeno; saute 2 more minutes, then season with Sea Salt & Pepper. Off the heat sprinkle with the Sargento Reduced Fat Mexican Style Shredded Cheese. And presto another keeper Potato Dish! This has turned out to be one of my favorite Potato Side Dishes. Everything just comes together to make this dish the perfect Potato Dish! Quite a meal tonight. For dessert later a Jello No sugar Added Double Chocolate Pudding topped with Cool Whip Free.

 

 

 

 

Baked Parmesan Perch Recipe

Ingredients
2 tablespoons dry bread crumbs
1 tablespoon grated Parmesan cheese
1 tablespoon paprika
1 teaspoon dried basil
1 pound perch or fish fillets of your choice
1 tablespoon butter, melted
Directions
In a shallow bowl, combine the bread crumbs, Parmesan cheese, paprika and basil. Brush fish fillets with butter, then dip into the crumb mixture. Place in a greased baking pan. Bake, uncovered, at 500° for 10 minutes or until fish flakes easily with a fork. Yield: 4 servings.

Nutritional Facts
One serving (1/4 pound) equals 158 calories, 6 g fat (2 g saturated fat), 52 mg cholesterol, 176 mg sodium, 4 g carbohydrate, 1 g fiber, 23 g protein. Diabetic Exchanges: 2-1/2 lean meat, 1/2 fat.

Jalapeno Cheddar Fried Potatoes

1 -Package Simply Potatoes Steakhouse Seasoned Diced PotatoesJalapeno Cheddar Fried Potatoes
2 Tbsp. Canola Oil
1/4 cup chopped Scallions
1 Jalapeno, sliced
1/2 Medium sized Red Onion, diced
Sea Salt & Pepper to taste
1/2 cup Sargento Reduced Fat Mexican Style Shredded Cheese

Directions:

To prepare it; Add the Canola Oil to a Cast Iron Skillet and heat on medium. Add the Potatoes and prepare the Diced potatoes according to the package instructions. About midway through the cooking process add the Diced Red Onion and continue cooking. Then Scallions and Jalapeno; saute 2 more minutes, then season with Sea Salt & Pepper. Off the heat sprinkle with the Sargento Reduced Fat Mexican Style Shredded Cheese.
