Today’s Menu: Salmon Patties w/ Mac and Cheese

 

 

For Breakfast this morning I toasted a Thomas Light English Muffin that I topped with some Smucker’s Sugar Free Blackberry Jam, love that stuff! Also had a cup of Bigelow Decaf Green Tea. Sunny and 80 degrees out today. After Breakfast I went to Kroger for Mom and then stopped by McDonald’s and picked up Breakfast for her. Very high Pollen count out so I was inside most of the day. Got the leaf blower out early evening and cleaned off the deck and drive way areas. Spent the the afternoon watching College Football. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

 

 

 

 

Ready for the skillet!

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

 

 

 

Golden Brown!

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Light Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

After Breakfast I went to Kroger for Mom and then stopped by McDonald’s and picked up Breakfast for her. Very high Pollen count out so I was inside most of the day. Got the leaf blower out early evening and cleaned off the deck and drive way areas. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

Went to Lowe’s and checked out some new outdoor chairs for Mom. She’s been wanting some new ones so Lowe’s had some on sale. They were okay but I’m going to look around some more. Today’s Menu: Salmon Patties w/ Mac and Cheese

 

 

For Breakfast this morning it was Ham and Eggs. I had purchased a small Kentucky Artisan Smoked Ham at Meijer the other day. So I sliced several pieces up and fried them in a small skillet until heated through. Then in another skillet I fried a Sunny Side Up Egg. Then I toasted 2 slices of Aunt Millie’s Light Whole Grain Bread that I lightly Buttered with I Can’t Believe It’s Not Butter. Also had a cup of Bigelow Decaf Green Tea. Good Breakfast to start to a cold morning. Around 12 degrees this morning then into low 30’s with freezing rain and snow moving in later in the day. I got the snow shovel and a bag of Salt out of the shed to use for later. Not much else going on today. Did a few chores around the house then got caught up on some shows I had recorded. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

Today’s Menu: Salmon Patties w/ Mac and Cheese

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns and served.And had my morning cup of Bigelow Decaf Green Tea. Mostly sunny and a high of 85 degrees. Got the cart out and took a spin around the neighborhood before it got too hot out this morning. After Lunch I cleaned and straightened the pantry and then straightened up both freezers. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

For Breakfast I had my morning cup of Bigelow Decaf Green Tea. It’s a beautiful day out there today, 78 degrees and mostly sunny! After Breakfast I went to Meijer for a few items and then on the way back home I picked up Breakfast for Mom at McDonald’s. After she ate we headed out to go see Dad. His health is really declining and not a thing we can do about it. Back home I got the cart out and did some yard work and then repotted a couple of plants for Mom. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

Today’s Menu: Panko Crusted Cubed Pork Steak w/ Gravy, Mashed Potatoes and Green Beans

 

 

For Breakfast this Tuesday Morning I prepared some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. After Breakfast I took Mom up to spend some time with Dad. He seems to be doing good but he’s just so confused anymore. The Dementia has really advanced the past few months. So sad. For dinner tonight I prepared a Panko Crusted Cubed Pork Steak w/ White Gravy, Mashed Potatoes and Green Beans.

 

 


I bought a of packages of 2 Cubed Pork Steak at Kroger yesterday. So I got the big three out to bread it with; Flour,Egg Beater’s, and Panko Bread Crumbs. I seasoned the Steak with Sea Salt and Black Ground Pepper. Next I seasoned the Flour with Hungarian Paprika and rolled the Cube Pork in that and shook off the excess. Then I dipped it in the Egg Beater’s shaking off the excess and then pressed both sides in the Shake and Bake Seasoned Panko Bread Crumbs, making sure both sides was well covered.

 

 


I heated up a medium size skillet, that I drizzled with Extra Virgin Olive Oil, on medium high heat. Added my Cubed Pork and fried both sides about 4 minutes per side, till each side was golden brown. Topped it with some Pioneer Peppered White Gravy. The Cubed Pork Steak came out delicious! Moist and very tender with a good flavor from the Paprika and all the other ingredients. I prepared both Cubed Steaks, Mom had the other one.

 

 


For one side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready. To top my Mashed Potatoes and Cubed Pork Steak I made some Pioneer Peppered White Gravy. Another quick and easy prep and comes out piping hot and delicious. I topped both my Mashed Potatoes and Cubed Steak with it. Then I also heated up a small can of Del Monte Cut Green Beans. Comfort Food Dinner Heaven tonight! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

 

 

Pioneer Brand Peppered White Gravy

Ingredients
Vegetable Shortening (Partially Hydrogenated Soybean and/or Cottonseed Oil), Bleached and Enriched Wheat Flour (Bleached Wheat Flour, Niacin, Reduced Iron, Thiamine Mononitrate, Riboflavin, Folic Acid), Food Starch-modified, Corn Syrup Solids, Salt, Maltodextrin, Sodium Caseinate (A Milk Derivative), Mono and Diglycerides, Black Pepper, Sodium Citrate, Dipotassium Phosphate, Carrageenan, Artificial Flavor, Artificial Color.

Directions
1. Blend Peppered Gravy Mix with 1/2 cup cool water. Mix or whisk until lump free. Set Gravy Mix blend aside. 2. Bring 1-1/2 cups water to a full rolling boil. 3. Pour the Gravy Mix Blend into the boiling water. Stir vigorously with a fork or whisk until thickened. Remove from heat.

To start my Saturday morning off I Scrambled a couple of Eggs, fried 2 Johnsonville Turkey Breakfast Sausage Links, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. I was hungry! Sunny and 47 degrees out but not windy as it has been. It was house cleaning today, dusted and ran the sweeper. Later on cleaned and straightened up the pantry. So for dinner tonight I prepared a Panko Crusted Cubed Pork Steak w/ White Gravy, Mashed Potatoes and Green Beans.

Started my morning off with a light Breakfast of a toasted Healthy Life Whole Grain English Muffin and heated a couple of slices of Smithfield Anytime Favorites Hickory Smoked Ham. I love this Ham. Nice thick slices with excellent flavor. I made a Breakfast Sandwich and I topped the Ham with 1/2 a slice of Kroger Swiss Cheese. I also had my morning cup of Bigelow Decaf Green Tea. And the hot cup of Tea sure hit the spot on a frigid morning. Outside its 9 degrees, with colder weather on its way! Had a of 23 degrees but the wind chill kept in the teens. So I stayed in all day. Helped Mom with laundry and did a few things around the house. For Dinner tonight I prepared Salmon Patties w/ Mac and Cheese.

To make the Salmon Patties I used Kroger Low Fat Saltine Wheat Crackers, 10 Crackers. By using these Crackers instead of a regular Saltine Cracker, such as Zesta Saltine Crackers, I saved on Fat, Calories, Carbs, and Sodium. Also instead of 1 Egg I used a 1/4 cup of Egg Beater’s. Make cuts where you can, it all adds up! I’m also using a can of Kroger Brand Pink Salmon, Old Bay Seasoning, and Dried Parsley.

 

 

 

 

Golden Brown

In a large bowl I mixed all the ingredients until it well mixed and thickened up. Made the mixture into patties and pan fried them in Extra Virgin Olive Oil on medium heat. Fried until cooked through and golden brown on both sides. Golden brown and delicious!

 

 

 

 

 

For a side I heated up a Stouffer’s Classic Mac and Cheese Mac Cup. Frozen individual Mac Cups, just microwave and serve. Tastes great, excellent Cheesy Mac. I like using these because there’s one serving in each cup. So no waste if I’m just cooking for myself. For Dessert later a bowl of Breyer’s Low Carb Vanilla Bean Ice Cream.

Today’s Menu: Pan-Fried Oysters Recipe w/ Baked Steak Fries

 

 

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. After I finished Breakfast I went to McDonald’s and picked up Breakfast for Mom and Dad. Back home finished up a couple of things around the house then went outside and got the leaf blower out. Cleaned off the deck and drive way areas of leaves. Had everything done so I watched a few shows I had recorded during the week. For Dinner tonight I prepared Pan-Fried Oysters Recipe w/ Baked Steak Fries and a Slice of Texas Toast.

 


I said a while back I was going to start having Oysters more often, and I have been. So anyway to prepare my Fried Oysters I’ll need; 12 large-medium Oysters (shucked), 1 tablespoon Flour, 1/4 cup Egg Beaters, 1 cup Shake and Bake Seasoned Panko Bread Crumbs, Sea Salt and Pepper (to taste), 2 to 3 tablespoons Extra Light Olive Oil. Hot sauce, Seafood Cocktail Sauce are all optional.

 

 

 

I used Hilton’s Fresh Farm Raised Pacific Willapoint Oysters. To prepare them; Place shucked oysters in a colander rinse in cold water and drain. Dredge drained oysters in the Flour, then Egg Beater’s, and then in Panko Crumbs seasoned with Sea Salt and Pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. An easy way to coat the oysters with the Panko Crumbs is to place the Crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

 

 

 

Next, heat Oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot. Fry oysters until golden brown on one side, then turn over each oysters carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately. Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce. I served mine with some Tarter Sauce with a side of my favorite hot sauce Frank’s Hot Sauce. I don’t know why I don’t have these more often! They’re so delicious, golden brown, and with an incredible fresh flavor.

 

 

For a side I baked some Ore Ida Steak Fries and had a side of Hunt’s Ketchup for dipping.Also baked a loaf of Pillsbury French Bread. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

 

 

 

Pan-Fried Oysters Recipe:

Ingredients:

12 large-medium Oysters, shucked
1 tablespoon Flour
1 Eggs, beaten or 1/4 cup egg Beater’s
1 cup Shake and Bake Seasoned Panko Bread Crumbs
Sea Salt and Pepper, to taste
2 to 3 tablespoons Extra Light Olive Oil
Lemon Wedges, optional
Hot sauce, optional
Seafood Cocktail Sauce, optional

Preparation:
