Today’s Menu: Grilled Hardwood Smoked Turkey Sausages w/ Reduced Fat Potato Chips

 

For Breakfast this morning I had a cup of Bigelow Decaf Green Tea. 81 degrees and partly cloudy out today. Had my Tea and I headed out to Meijer for a few items and I purchased some outdoor flowers and flower baskets. I love the Springtime! I drove by Walmart also to check out their selections of flowers. Back home got the cart out and did some yard work. Our street is absolutely beautiful, all the flowering trees and most flowers are in full bloom! For Dinner tonight its a Grilled Hardwood Smoked Turkey Sausages w/ Reduced Fat Potato Chips.

 

It was so beautiful out I just had to fire the grill up! I decided to grill up some Butterball  Hardwood Smoked Turkey Sausage. These are delicious no matter how you prepare them! There’s 2 Sausages per package. I cut the Sausages in half so I’ll have 4 of them I grilled. So I Heated up the grill for about 5 minutes and added the Sausages. I kept turning them so not to burn them. Cooked until heated through and served. Why do things taste better when grilled! Served them on a Aunt Millie’s Reduced Calorie Hot Dog Bun and topped them with Emeril’s New York Deli Style Mustard.

 

To go with the Grilled Sausages we had Mike Sell’s Reduced Fat Potato Chips. For Dessert/Snack later a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Dr. Pepper. Take Care and Stay Safe All!

Today’s Menu: Lobster Rolls with Potato Chips

 

 

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. 31 degrees and sunny, wind chill in the low 20’s. I have a Hoveround Mobility Chair that I use here at and around the house. Well Medicare makes you get a new one every 5 years. There was a glitch in Medicare approving it over the type of seat. But they finally approved it. A big thank you to my Doctor and Hoveround for the time they spent on getting this Medicare approved! Then at about 10:30 I took my Mom to get her Driver License renewed. Mom is 93 next week and she is very hard of hearing. She was really worried she would fail the hearing test. But she passed and everything is fine! So good news today around our house! For Dinner tonight I prepared Lobster Rolls with Potato Chips.

 

I had purchased the Lobster from Luke’s Lobster (https://www.lukeslobster.com/) out of Maine a while back. We used 1/2 the order a few weeks ago and I’m preparing the other half for Dinner tonight!

 

To prepare the Lobster I took a small skillet, sprayed it with Pam Cooking Spray and added a tablespoon of Blue Bonnet Light Butter, and heated it on medium low. As the Butter was melting I increased the heat to in between low and medium heat. Let it heat for 2 minutes and added the Lobster Chunks. Heated it for 2 minutes, stirring several times. Removed it from the heat and put the Lobster in to a bowl. Then added a 1/2 tsp of Lemon Juice, a tsp of Kraft Light Mayo w/Olive Oil, and seasoned it with about 4 pinches of the Luke’s Seasoning. I’ll be using Aunt Millie’s Reduced Calorie Whole Wheat Buns to serve my Lobster on. I topped them with just a light coat of melted Butter and served! Wow, what a Lobster Roll! Huge Chunks of Lobster with that hint of Lemon, Butter, and Luke’s Seasoning. Lobster maybe pricey but worth every cent. The Lobster Meat tasted so Fresh and Sweet. We will be purchasing more from Luke’s Lobster again! Also the Luke’s Lobster arrives Frozen in secure Packaging along with a ship date of your choice!

We had some Mike Sell’s Reduced Fat Chips with the Lobster Rolls. Later for Dessert a Jello Sugar Free Dark Chocolate Pudding topped a dab of Cool Whip Free.

Today’s Menu: Lobster Rolls with Potato Chips

 

 

The last day of 2020, finally! We woke up to about 1/2 inch on the ground and 22 degrees. So to heat the morning up I made us a good Breakfast. I prepared some Glier’s Goetta, Simply Potatoes Shredded Hash Browns, Scrambled Eggs, Pillsbury Flaky Biscuits, and a cup of Bigelow Decaf Green Tea. Good start to the last day! Did a load of laundry and some light house cleaning. Then it was a day computer and TV. Relaxing day. For Dinner tonight for the first time, Lobster Rolls with Potato Chips.

 

I purchased the Lobster from Luke’s Lobster (https://www.lukeslobster.com/) out of Maine. I read about Luke’s from a blog that featured the Lobster Rolls that I’m preparing tonight. I purchased the Luke’s Lobster Roll Bundle – Serves 8. It comes frozen, 2 packages of 1 lb. each of Lobster Pieces (Chunks), an 8 pack of frozen Split Top Rolls, and a package of Luke’s Seasoning. I’m drooling while writing this! I laid 1 of the packages of Lobster and 4 of the Split Top Rolls in the fridge overnight to thaw.

Set aside and prepare the Rolls.

 

In another small skillet I heated the Rolls up. Heated the skillet on medium low heat. Added the Rolls on both sides for about 2 minutes and removed the Rolls on to plates. I spread the inside of the Rolls with a bit of the Mayo. Then filled each Split Roll with the now Chilled Lobster. I topped them with just a light coat of melted Butter and served! Wow, what a Lobster Roll! Huge Chunks of Lobster with that hint of Lemon, Butter, and Luke’s Seasoning. Lobster maybe pricey but worth every cent. The Lobster Meat tasted so Fresh and Sweet. We will be purchasing more from Luke’s Lobster again! Also the Luke’s Lobster arrives Frozen insecure Packaging along with a ship date of your choice!

 

We served the with some Mike Sell’s Reduced Fat Chips. Later for a Dessert/Snack a 100 Calorie Mini Bag of Snyder’s Pretzels with a Diet Peach Snapple to drink.

Today’s Menu: Honey Ham and Swiss on Ciabatta Roll w/ Chips

 

 

For Breakfast this morning I had Steak and Eggs! I heated up the leftover Wild Idea Buffalo Flat Iron Steak leftover from last night’s Dinner. These Steaks are so good, no way it going to waste! Then I also prepared a Sunny Side Up Egg, toasted a slice of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. This is a great way to start the day! I spent most of the afternoon at the hospital with a friend of mine who had some surgery a while back. He’s taken a turn for the worse and is back in the hospital. He’s not looking too good right now. Just praying that he’ll be okay. For Dinner tonight it was a Honey Ham and Swiss on Ciabatta Roll w/ Chips.

 

 

 

 

Well after a very long day of being with friends at the hospital I just wasn’t in the mood to cook. So I stopped by the Kroger up the road and grabbed a couple of Kroger Deli Honey Ham and Swiss on Ciabatta Roll Sandwiches. Excellent Sandwich! It’s made with Kroger Private Selection Honey Ham and Kroger Private Selection Baby Swiss Cheese. Then served on a Kroger Bakery Split Ciabatta Roll. I added some Kraft Reduced Fat Mayo w/ Olive Oil and French’s Yellow Mustard to my Sandwich. Really a fantastic and filling Sandwich! I also had a few Mike Sells Reduced Fat Potato Chips. For Dessert later a Jello Sugar Free Dark Chocolate Pudding. Till tomorrow!

For Breakfast I toasted a couple of Eggo’s – Nutrigrain Waffles. Topped both we some I Can’t Believe It’s Not Butter and Log Cabin Sugarless Maple Syrup. Also prepared a 1/2 a Butterball Hardwood Smoked Turkey Sausage and had my Morning cup of Bigelow Decaf Green Tea. Mostly Sunny , Humid, and 92 Degrees outside today. After Breakfast I did a load of laundry then later got the cart out of the shed and got some yard work done. Put on plenty of sunscreen, that sun was hot! For Dinner tonight the Kitchen is Closed. : For Dinner tonight, Izzy’s Lean Corned Beef Sandwich w/ Potato Chips.

 

 

 


With the Kitchen Closed it was Izzy’s tonight! I had an Izzy’s famous corned beef, 96% lean cut, on whole wheat bread. I also had some Ruffle’s Reduced Fat Chips along with a Diet Peach Snapple. There’s 360 calories and 32 carbs for a full sandwich. I had half of it and saved the other half for lunch tomorrow, half sandwich 170 calories and 16 carbs. Not only does it look delicious, it is delicious! Izzy’s by far has the best and most tender Corned Beef there is! I bought Mom a Reuben and Potato Pancake. For Dessert later a Jello Sugar Free Dark Chocolate Pudding Cup topped with Cool Whip Free.

Today’s Menu: Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip

 

 

 

To start my morning off I prepared a Poached Egg, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and made that morning cup of Bigelow Decaf Green Tea. After Breakfast I headed up to McDonald’s and picked up Breakfast for Mom. Outside it’s partly cloudy with passing showers, 75 degrees. But the pollen and mold count is sky high! My allergies kicked in this morning when I went out to grab the morning newspapers. I started sneezing all day and a headache. Stayed in all day and dealt with that. My allergies have never been this bad! For Dinner tonight I prepared a Grilled Pastrami and Swiss Sandwich w/ Chips and Ranch Dip.

 

 

 

 

I love Pastrami Sandwiches so when I went to Kroger the other day I purchased some more of the Boar’s Head Cap-Off Top Round Pastrami and Boar’s Head Imported Switzerland Swiss Cheese. Besides the Pastrami and Swiss Cheese I’ll need; Aunt Millie’s Light Whole Grain Bread, French’s Spicy Brown Mustard, and Blue Bonnet Light Butter.

 

 

 

 

 

To prepare it I used my flat top griddle. I gave it a light spray of Pam Non Stick Cooking Spray and a 1/2 tablespoon of the Blue Bonnet Butter. Heated the griddle on medium heat. Next I got 2 slices of the Aunt Millie’s Bread and spread the Brown Mustard on the inside of 1 slice. Added a slice of the Swiss Cheese and then the Pastrami. Top with another slice of bread. Finally I spread the Blue Bonnet Butter on the outside of both slices of Bread.

 

 

 

 

 

With the griddle heated and ready I grilled my Sandwich. Grilled each side until The Bread is toasted and the Cheese melted. Grilled and Ready! The Sandwich was delicious. The Pastrami and Swiss was so good, with the Spicy Brown Mustard adding all kinds of flavor. Swiss Cheese provides such great flavor, especially when it starts to melt. So Good!

 

 

 

 

 

To go with the Sandwich I had some Mike Sells Reduced Fat Potato Chips. I don’t have Potato Chips that often but with any Sandwich they go great! I also had some Lay’s Ranch Chip Dip for my Chip Dip. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Peach Diet Snapple to drink.
